So, how come if you go to the store right now, in June, when it’s hot and humid out and you would just LOVE a sweet and juicy (and nutritious) snack, you can’t find tangerines?

Well, because tangerines aren’t in season over the summer. Bummer, I know….

Juicy Crunch tangerines are only in season for about 60 days. SO, mark your calendars RIGHT NOW for late December – February. I know, that’s prime holiday time, so just remember that one of your gifts every year is Juicy Crunch tangerines 😉

Why are Juicy Crunch tangerines one of my favorite tangerines? Oh, let me count the ways!

  • They are sweet – I mean, the sweetest. They have a brix level of up to 17! HOLY SWEETNESS BATMAN! Are you familiar with what brix is? Its’ okay if you aren’t…I just learned myself not too long ago. The brix gives you an idea of how sweet the fruit is, so the higher the brix, the more sweet the fruit is. As sweet as it tastes, its sweetness comes from natural vs. added sugar. Overall eating natural sugars along with the essential nutrients found in fruits helps to keep you healthy…thank you Juicy Crunch!
  • They are easy to peel.

If you don’t help to reduce food waste and recycle packaging, all of that ends up in landfills and eventually we are going to run out of room. I don’t know about you, but I am hoping to leave a beautiful world for my grandkids and great grandkids to enjoy.

Living a zero waste lifestyle helps to reduce waste, pollution, and helps conserve resources.

I know it may seem hard to commit to being zero waste 100% of the time, but committing to do your part when you can will indeed help the environment.

Best Zero Food Waste Frittata

Why am I calling this frittata recipe a Zero Food Waste Frittata? Well, I opened up the refrigerator and grabbed out leftover veggies and some chicken sausage and used those.

We had leftover zucchini from dinner the night before, some cherry tomatoes from salads, onions and jalapenos from when I made those BBQ Beef Sliders, and my hubby bought mushrooms to make some fancy beef dish a few nights ago. Oh, and chicken breakfast sausage was BOGO at Publix and they are low in WW points, so I have been having one with breakfast but according to the package, you are supposed to use them within 3 days of opening.

So…..

I grabbed out all of the above, sauteed everything, and added eggs and Florida Milk to make an incredible Zero Food Waste Frittata. *You can use half and half if you have that leftover and are needing to use that up.

Easy Zero Food Waste Frittata

My frittata has about six servings, if you are serving it for brinner (breakfast for dinner) and serve it with a nice salad and some fruit, you may get 8 small servings.

Tasty Zero Food Waste Frittata

No matter how you slice it, I used produce that would have ended up in my trash or garbage disposal in a few days and created a nutritious meal that my whole family could enjoy. Not only did I help with zero food waste, but it didn’t cost me a penny to make it…as I was using all the ingredients I had in the house. And I didn’t have to drive to the grocery store, which is great because have you all seen gas prices?! Yikes!

How To Make A Zero Food Waste Frittata

Another wonderful thing to mention about this Zero Food Waste Frittata recipe is that it’s ready in under 30 minutes, making it an excellent option for breakfast, brunch, lunch or dinner.

Ingredients

  • 6 eggs
  • 1 cup Florida Milk – I used 2%
  • 1 – 1 1/2 cups diced veggies I used mushrooms, mini sweet peppers, cherry tomatoes, zucchini, red onions and jalapenos
  • 1/2 cup meat of choice I had 3 breakfast chicken sausages so I used those!
  • Salt, pepper and seasonings to taste

Instructions

  • Preheat oven to 400 degrees
  • Clean and dice all veggies
  • Warm an oven-safe skillet, I used cast iron
  • Saute vegetables and sausage
  • While vegetables and sausage are cooking, mix 6 eggs and the milk in a small bowl
  • Once the vegetables are soft, gently pour in the milk/egg mixture to the skillet
  • Bake for 15-18 mins until eggs are thoroughly cooked and top is slightly brown
  • Serve with fresh fruit and a glass of Florida Milk
  • Enjoy!

Notes

I didn’t add in the nutritional info on this one because the idea is for you to use what’s in YOUR fridge! I will tell you that mine was about 1 WW point, so very healthy and very delicious.
Open your fridge and make something delicious today to help reduce food waste.
We also had some leftover parsley from that fancy beef recipe my hubby made, so I used that as garnish. Feel free to use basil, thyme, cilantro or whatever you have for serving if desired.

Best Loaded BBQ Chicken French Fries

Prepped in just a few minutes, these loaded BBQ Chicken Fries are the ultimate easy appetizer or fun weeknight meal idea.

There is nothing quite like a plate of loaded fries, am I right? And, when you load them with protein, veggies, and cheese, that’s a quick dinner on a busy night.

That’s how these Loaded BBQ Chicken Jalapeno Fries came to be. With the kiddos back in school, and doing extracurricular activities, I’m always on the hunt for easy meals that can come together fast.

With the help of a rotisserie chicken and a few extra ingredients, this yummy meal comes together in less than 30 minutes!

Best Loaded BBQ Chicken Fries

What are loaded French fries?

Typically, they are fries topped with cheese, bacon, and ranch dressing or sour cream. But, they can honestly be topped with anything.

All you need for loaded fries is:

  • French fries that you either make from scratch or that you heat and eat (such as Ore-Ida fries)
  • Meat – could be shredded chicken, beef brisket, ground beef, bacon bits, or shredded pork. I’ve also seen people use chili on top of their loaded fries!
  • Cheese – most places use shredded cheddar, but I’ve seen loaded fries with pepper jack, nacho cheese sauce, and even mozzarella with marinara sauce for a fun Italian take
  • Veggies – okay, this is technically optional, but you gotta get your veggies in somewhere, right? I’ve seen chopped green onion, sliced jalapenos, salsa, fried onions, and diced tomatoes

What is the traditional way to make loaded French fries?

If you’re making your French fries, bake or fry them first! Then, on a sheet pan lined with foil and greased with non-stick spray, layer with fries, then meat, next cheese, and finally veggies. Bake until at about 425°just until the cheese is bubbling or until everything is warmed through. Should only take between five and ten minutes.

Some people prefer to put their veggies on after cooking so they maintain their crispness. That’s a matter of what you like though. It’s your loaded fries, do what you like!

Are loaded fries like Canadian poutine?

Yes and no. Like Poutine, loaded fries start with potatoes as a base and are loaded with delicious flavors. What sets authentic Canadian poutine apart from its Americanized counterpart though is that the dish is made with gravy and cheese curds as the toppings.

A few years ago at a food and wine conference I attended, they had a poutine bar sponsored by a potato company. Interestingly enough, they had all the toppings you would expect for American loaded fries, but I don’t recall gravy or cheese curds!

Still, the loaded fry bar was a hit, and could be a fun idea for a party if you’re stumped for food ideas! Add various toppings and a big bowl of French fries for people to load up, and voila! You have the makings of a unique buffet that is sure to be a real crowd-pleaser. 

Loaded BBQ Chicken Jalapeno Fries

How do you make loaded BBQ chicken jalapeno fries?

After posting about these on Instagram, I just knew I needed to share them here on the blog too.

The big secret to my loaded fries is the cheese. Rather than adding heaps of shredded cheddar, I opted to make a cheese sauce that is easier to make than you might think.

To make the cheese sauce you will need milk, cheddar cheese, butter, flour, and a little bit of hot sauce. You begin by making a roux, which is a really fancy way of saying whisk melted butter and flour in a pan until it becomes like a thick paste. Then, add your milk and shredded cheese. Finally, splash in a dash of hot sauce to finish the sauce.

You can bake the fries, and have your kiddos pull the meat off the rotisserie chicken while you’re making the sauce.

Then, once all of your ingredients are ready, it’s time to assemble.

On top of the fries, layer the chicken, drizzle the BBQ sauce, pour on the cheese sauce, and top with jalapenos and green onion. Serve and enjoy immediately.  If you like an extra kick of heat, add a little more hot sauce too.

Ingredients

  • ¾ cup 2% milk
  • 1 cup shredded cheddar cheese
  • 2 tbsp butter
  • 2 tbsp flour
  • 1 tsp Quibos Original Hot Pepper Sauce
  • 2 pounds French fries I used a 32 oz bag of heat and eat fries
  • ½ cup your favorite BBQ sauce
  • 1 pound shredded chicken I used a rotisserie chicken
  • 1 jalapeno sliced and de-seeded
  • ¼ cup green onion chopped

Instructions

  • Bake frozen french fries according to package
  • While french fries are baking, make the cheese sauce
  • Melt the butter in a small pan
  • Add the flour, whisk until mixed well
  • Slowly add in the milk
  • Add in the cheddar cheese
  • Whisk until thickened and looking amazing
  • Add 1 tsp of Quibos Original Hot Pepper Sauce
  • Stir well
  • Once fries are done, layer the chicken, then BBQ sauce, then cheese sauce, then more Quibos Original Hot Pepper Sauce, then the jalapenos and green onion. OH MY!
  • Enjoy!

In my subdivision, we are very fortunate to have so many people that we consider close friends…and that means we love hosting, preparing, and attending parties and gatherings. I mean, who doesn’t like a good party?!

There are plenty of reasons to host a block party. First, it’s a great way to meet your neighbors and get to know them better. It’s also a fun way to celebrate events such as the start summer, the holidays, or just that the fact that it’s a random Thursday. Having a block party great way to have some fun and bring the community together and build strong relationships within it.

What is a Block Party?

When most people think of a block party, they imagine a fun-filled event that brings the neighborhood together. But what is a block party, exactly? A block party is a get-together of neighbors who live on the same street or in the same apartment complex. They can be as small as 5 people or as large as 500, and they can be held for any reason – from celebrating a holiday to mourning a loss.

To throw a block party, all you need is some good food, good drinks, and games are always a good idea. You can ask your neighbors to bring something, or set up a potluck dinner. Planning a block party can be a lot of fun, but it’s important to keep things organized and manageable.

Here are some tips to help you get started planning a block party:

1. Decide on your date and if you want a theme.

Having a date and theme for your block party will help to ensure that everyone knows when it will be and what to expect. That’s kind of obvious I guess, but with summer schedules and having kids, sometimes picking the date for a party is sometimes the hardest part!

Having a theme can be a fun way for everyone to get involved and dress up or bring a specific type of food for the occasion. A theme can also help to set the tone for the party and provide some direction for activities.

A theme can help to dictate what type of food and drinks are served, what music is played, and even what decorations are used. If you’re stuck for ideas, here are a few popular block party themes to get you started:

  • A backyard BBQ party is always a hit – grill some burgers and hot dogs, set up a few lawn games, and serve up some refreshing cold drinks.
  • For a more elegant affair, try a outdoor cocktail party – mix up some tasty cocktails and serve them on tray tables with appetizers.
  • A family picnic is also a great idea – set up a big table with a variety of foods and drinks, and let the kids play games outside.
  • Finally another entertaining theme is the classic movie night.

2. Choose a location.

When planning a block party, choosing the right location is also important. You’ll want to find a spot that’s easily accessible for party-goers and that offers plenty of room for activities. A busy street or one with limited parking may not be the best choice.

Make sure to check with your local authorities before scheduling your party if you are actually planning to have the party ON the street. Some neighborhoods have restrictions on street closures and noise levels. Once you’ve found a suitable location, start planning the fun! Decide on a theme, invite your neighbors, and get ready to celebrate!

3. Get your permits in advance.

In order to throw a block party, you may need to get a permit. It may be the law. In most cases, you need a permit to host a block party. This is because they can be disruptive and may cause traffic problems.

4. Ask for help.

Don’t take on all the tasks yourself! Ask friends, family and neighbors to help with tasks such as food procurement, entertainment, and decoration, making the party more enjoyable for everyone. Plus, by having volunteers in place, you’ll avoid any potential conflicts or drama that could occur if one person is left in charge of everything.

5. Figure out the entertainment.

After all, what’s a party without some music and games? You can either bring your own speakers and DJ set-up, or hire a band or DJ to come play for you.

6. Determine what you’ll do for food.

Food is a big part of any party, and block parties are no exception. Determining what to serve can be a challenge, but it’s important to get it right. You want something that will appeal to everyone and that won’t take too much work to prepare.

One option is to grill out. This is always popular with party goers, and it’s easy enough to do, but it does leave someone manning the grill for long periods of time. I made these super simple s’mores pops, they are prepped in minutes and a perfect dessert for a crowd. Drinks, well, it’s no secret that I love wine, so, of course, I recommend having a variety of wine available.

Ingredients

  • 2.5 – 3 lb Chuck Roast
  • 1 cup ketchup – I used sugar-free
  • 1/4 cup brown sugar
  • 1/4 cup your favorite BBQ sauce – I used Sweet Baby Rays Sugar Free Sweet & Spicy
  • 2 tablespoons Worcestershire sauce
  • 2 tablespoons Dijon mustard
  • 1 tsp salt
  • 1 tsp red pepper flakes
  • 1 tsp onion powder
  • Slider buns for serving
  • Red onion slices jalapeno slices and/or coleslaw for toppings if desired

Instructions

  • Turn the slow cooker on low
  • Place the chuck roast in the slow cooker
  • Mix the remaining ingredients (besides the buns and toppings 😉) in a medium size bowl
  • Pour the sauce over the chuck roast
  • In about 6-7 hours come back and shred the beef
  • Allow friends and family to assemble their sliders and add desired toppings
  • Serve with CK Mondavi and Family Dark Cabernet Sauvignon
  • Enjoy!

The simplest individual dessert you will ever make! These s'mores pops taste just as good as the real thing, no fire required!

  • You will need toothpicks or party toothpicks

Ingredients

  • Jumbo marshmallows
  • Chocolate Chips
  • Graham Crackers

Instructions

  • Crumble graham crackers – I put about 5 in a ziploc bag and crushed them with my hands
  • Place the graham crackers in a shallow bowl
  • Melt chocolate chips according to package instructions – be careful not to overcook!
  • Put the marshmallows on the toothpicks
  • Dip the marshmallows into the chocolate and then into the graham crackers crumbs
  • Place on parchment or wax paper until the chocolate hardens
  • Store in an airtight container until ready to serve to friends and family!

The western state of Colorado offers a vast array of things to do and see. Many visit Colorado to go skiing, while others enjoy traveling this beautiful state’s parks and other forms of recreation. There are museums to see, hikes to take, cities to shop, and much more. Whatever you choose to do, there is something to do and see for everyone in the state of Colorado.

The city of Denver and its surrounding areas offer a multitude of attractions and things to see and do. There are a variety of museums which include the Denver Children’s Museum, the Denver Art Museum; the Denver zoo is exceptional with a beautiful walking area. There are many restaurants which are situated throughout the town with anything from fast food to fine dining.

One place not to miss is the Santa Fe Art District, which features walking areas with fine arts that are displayed throughout the duration of the year. This occurs on the first Friday of every month. Visitors can walk around and look at the many galleries while having refreshments and cocktails. The Denver Aquarium is a good choice for a place to see in Denver as well and is fun for adults and children alike. If you are in Denver during the spring or summer, be sure to catch a baseball game at the mile-high city’s Coors Field. You don’t have to stay at this luxury destination resort to appreciate all it has to offer. Visitors can go to Seven Falls (there is an admission fee), dine at one of the 19 restaurants or cafes, visit the museum, or simply walk the stunning grounds.

The Broadmoor is about an 1.5 hour drive from Denver.

Pike’s Peak

One of my favorite places for an enjoyable hiking day trip from Denver is Pikes Peak in El Paso County. The famous Colorado mountain range is one of the greatest and most visited mountain ranges in the state, and the range is 10 miles long.

Pike’s Peak is a 2.5 hour drive from Denver.

Garden Of The Gods

The sheer beauty of the awesome red rock formations is unmatched anywhere. Although I would have thought this was a National Park, Garden of the Gods belongs to the city of Colorado Springs and is registered as a National Natural Landmark.

In 1809 the children of the deceased Charles Elliott Perkins, a railroad tycoon, fulfilled his wishes by donating this land to the city of Colorado Springs. In turn, the city had to agree to always allow this park to be enjoyed at no charge, and to this day, there are no entrance fees to the Garden of the Gods.

Huge red sandstone formations characterize this awesome natural wonder known as the Garden of the Gods. Legend says that the Ute Indian tribe believed that their Great Manitou lived in nearby Pikes Peak, and when giants came to invade their territory, they were turned into these red stones.

Many of the formations have been given names based on their shapes and positions. Balanced Rock looks like it is leaning to one side and precariously balancing on another rock. This 700-ton rock has not fallen off its narrow pedestal for thousands of years. There are the Siamese Twins formation and Three Graces, Steamboat Rock and Kissing Camels, to name a few.

Rock climbing enthusiasts can be seen at any given the time of day climbing these natural rock formations, and they are required to register at the Garden of the Gods Visitor Center. Every year 2500 technical climbers register for an annual pass to climb the rocks here, using proper equipment. There are strict regulations for rock climbing in the Garden of the Gods to promote the safety of the climbers as well as onlookers.

This 1367 acre park is open year-round, and there is no admission charge. Hours are from 5 am till 9 pm and till 11 pm in the summer. The Visitor Center is open daily from 9 am – 5 pm (Labor-Memorial Day) and from 8 am – 8 pm (Memorial-Labor Day). For a fee, you can watch a very moving film about the history and geology of the Garden of the Gods on a 23-foot screen in Blue Ray High Definition Surround Sound. The movie runs every 20 minutes.

Dumont, Colorado

Ok, this is a small town, but it has a lot of history. Dumont, Colorado is a small town located in Clear Creek County, and while it may not have as many attractions as larger cities, there are still some things you can do in and around the area. Dumont is located in the Colorado Rockies, so you can enjoy the stunning natural scenery. Take a hike or a leisurely walk in the surrounding forests or simply enjoy the mountain views. Plus, there’s an ATV tour that will take you up the side of a mountain for an amazing ride and views that you will remember for a lifetime!

We booked our ATV tour with ATV Tours Colorado for the first day we landed in Denver and it was the perfect way to start our vacation.

We did the two hour tour and our guide was AMAZING…Plus, he was from our hometown here in Florida 🙂 I will admit that those Rocky Mountains are definitely rocky, making our ride up the mountain slow, steady and a lot of fun! And when you got to the top…WOW…the views! We went in the beginning of October, so we got to see some of the trees changing color, it was absolutely stunning. You can drive the ATV on your own as long as you are over 18, but you can have a rider that’s younger, making an ATV tour perfect for all ages of the family. I definitely recommend doing something fun like this out of the Mile High City so that you can really experience the mountains.

Dumont is about an hour from Denver.

Vail

Vail is one of the most popular places for world-class skiing, frequented by people of all ages. The reason for this is that the Vail ski resorts have accommodations for beginners as well as the more advanced skier. Ski instructions are offered for those who are interested in learning or improving their skills.

Vail features a city-wide farmers market in the summer months, where local farmers sell their produce, and other products, arts and crafts, and even a few thrills ride at fantastic prices. When you visit the area, be sure to take a look around at the vendors to see if there is something that may interest you.

Vail is about a 2 hour drive from Denver.

Heritage Museum in Leadville

If you are a tourist who enjoys learning about history and heritage, one excellent place to visit is the Heritage Museum in Leadville. The museum features artifacts from the famous Colorado city and a number of memorabilia that are associated with the pristine Colorado mountains.

Heritage Museum in Leadville is about a 2.5 hour drive from Denver.

Black Canyon of the Gunnison National Park

One of my favorite tourist attractions in the great state of Colorado is the Black Canyon of The Gunnison National Monument. This historic national park is conveniently located in Montrose County, and the park is one of the most popular parks in Colorado. If you have enough time, do a tour of the national parks of Colorado. These include the Rocky Mountains National Park just north of Boulder, the Black Canyon of Gunnison National Park in the southwest of Colorado, Great Sand Dunes National Park & Preserve in south-central Colorado, Mesa Verde National Park in the southwest, and a variety of national sites and landmarks.

Black Canyon of the Gunnison National Park is about a 5 hour drive from Denver.

Telluride

Be sure to stop in Telluride as you travel through the state of Colorado. Telluride is a picturesque town, surrounded by mountains with an array of things to do. Check out the Sheridan Opera House, which includes the Young People’s Theatre. Take the free gondola from Telluride up to the top of the mountain, take a scenic hike and visit the nature center and gift shop. Afterward, take the gondola down the other side of the mountain to visit Mountain Village and visit the quaint shops. If you fancy visiting during ski season, go for a run down the slopes. If you are a veteran skier or tend to enjoy skiing, one ski resort that I highly recommend is the Telluride Ski Resort. The Mountain Village ski resort has a total of 125 runs and is great for skiers of all abilities and talents, but it is mostly designed for advanced skiers. Another reason to visit one of my favorite ski resorts in the United States is that there is a total of 2,000 acres at the resort, and there are three terrain parks.

Telluride is about 6.5 hours from Denver.

Canyons of the Ancient National Monument

Another excellent idea for an enjoyable day trip from Colorado is the Canyons of the Ancient Monument. Conveniently situated in Montezuma County and Dolores County, the monument is part of a protected area of Montezuma County, and the total acreage of the area is 163,892 acres. Similar to the Black Canyon of the Gunnison National Park, the monument is a very popular tourist attraction, and tourists should be aware of the scorching summer heat.

Canyons of the Ancient National Monument is about a 7 hour drive from Denver. If you are visiting this one in a day, I would recommend getting a hotel for the night.

How To Make The Best Grilled Blackened Fish Sandwich

Looking for a flavorful meal that will be ready fast, but is also delicious too? Then, you have to try my blackened fish sandwich recipe! My family loves fish, especially around the summertime when there is plenty of fishing and grilling going on. And, living in Florida, the weather is summer-like almost year round, so I like to whip up this dish pretty often. There is something special about blackened fish on the grill. The smokiness combined with a kick of flavor is already delicious.

Combine it with some of my homemade mango and jalapeño slaw and serve it on a hamburger bun, and you’ll have your family thinking you slaved away cooking all day. It can be our little secret just how quickly you made it though!

Seasoning Suggestions for Fish Sandwiches

While I used blackening seasoning for this sandwich, there are lots of other flavor combinations you could use as well. Some of my favorites are:

  • Garlic, salt and pepper
  • Lemon juice and butter
  • Soy sauce with dijon mustard, and if you like heat like I do, throw in some chili flakes
  • Lemon juice and garlic
  • Lime with basil
  • Paprika and garlic

There are so many flavors that work well with fish!

Best Grilled Blackened Fish Sandwich

Is Blackened Fish Spicy?

It can be. That is the simplest answer to the question of whether or not blackening seasoning is spicy. Chilli Pepper Madness calls blackening seasoning “spicy and piquant.” It marries the flavors of creole and cajun seasonings.

My best advice if you don’t care for spicy foods is either to sprinkle less on your fish, or opt for a different seasoning altogether. The good news is, the slaw cools down some of the heat, and you can remove the jalapeño from the homemade slaw too if you want to cool the dish down further.

What Type of Fish is Best for the Blackened Fish Sandwich?

I used cod, but grouper and mahi would also be delish. You definitely want a more mild fish with this dish. In other words, one that isn’t as fishy. Ask your grocery store for their recommendations, and don’t be afraid to try the local catch of the season.

What Exactly is Blackened Fish?

It’s fish that is cooked with blackening seasoning. The difference between it and charred is it’s not burnt, or well done. What gives it the smoky flavor is the seasoning itself.

What if You Don’t Have a Grill? Can I Still Make a Blackened Fish Sandwich?

Yes! In a pinch you could pan fry your fish on your stovetop. It won’t be as smoky and flavorful as on the grill, but it gets the job done!

Grilled Blackened Fish Sandwich

How to Make a Blackened Fish Sandwich:

  1. To get started, season both sides of your fresh fish with blackening seasoning
  2. Preheat your grill to about 350 degrees. This will give your seasoning some time to marinade into the fish
  3. Grill fish until cooked throughout, it will be flaky 
  4. While the fish is grilling, make your mango and jalapeño slaw (recipe below). Who doesn’t like a little island flair?!?
  5. Grab a hamburger bun, and place a nice-sized filet of your blackened fish on one side – I used King’s Hawaiian Sweet Hamburger Buns. They are uniquely soft and have a fluffy texture and just a touch of sweetness, making them perfect for my Blackened Fish Sandwich and all our grilling.
  6. Then, top with your fresh slaw.

Why top a blackened fish sandwich with coleslaw at all, you ask? Topping with slaw adds some sweetness to the spicy seasonings of the fish. And, it’s just really tasty!

Pair it with a glass of Pinot Grigio, and a side dish of sweet potato fries for a truly filling lunch or dinner.

Blackened Fish Sandwich

How to Make Mango and Jalapeño Slaw

  1. Dice your mango and jalapeño (leave seeds in for extra heat)
  2. Pour 1/2 bag of shredded coleslaw into a medium size bowl. You can use fresh sliced cabbage if you prefer, but it’s much easier to use bagged slaw on those busy nights when the kiddos have baseball practice or karate!
  3. Add jalapeño, mango, mayo, olive oil, red wine vinegar, and sugar to the coleslaw
  4. Stir well, and either use immediately, or chill and serve later

  • 2 pounds of fresh fish - I used cod but you can substitute with grouper or mahi
  • 2 tsp Blackening seasoning
  • 8 oz shredded coleslaw 1/2 bag
  • ½ mango peeled and diced
  • ½ jalapeno diced, seeds removed if desired
  • 1 tbsp mayo
  • 1 tbsp olive oil
  • 1 tbsp red wine vinegar
  • 1 tbsp sugar
  • 4 hamburger buns I used King’s Hawaiian Sweet Hamburger Buns

Instructions

  • Season both sides of your fresh fish with blackening seasoning
  • Preheat the grill to about 350 degrees
  • Grill fish until fully cooked - approx 3-5 mins per side depending on the thickness of your fish filet
  • While the fish is grilling, make your slaw
  • Dice 1/2 mango and roughly chop 1/2 jalapeno (leave seeds in for extra heat)
  • Pour 1/2 bag of shredded coleslaw into a medium size bowl
  • Add the jalapeño, mango, 1 tbs of mayo, 1 tbs olive oil, 1 tbs red wine vinegar, 1 tbs sugar to the coleslaw. Stir well.
  • Top your favorite Hamburger Buns with the blackened fish and mango jalapeño slaw
  • Serve immediately
  • Enjoy!

Last week I scheduled myself a massage and facial in honor of Mother’s Day. I firmly believe in self care, so I try to get a massage every other month or so, and when I went to make the appointment, I noticed the new service of a facial, so I decided to add that in too. I mean, I’m not getting any younger and I understand that we have to take of skin, especially here in Florida where we spend a lot of time outside in the sun.

I love massages, so that was great. But the facial…OH MY GOODNESS.

She spent a full hour actually massaging my face muscles, it’s those muscles that hold our skin up, so they are important too! She also applied a mask that consisted of mango, avocado and other good-for-you ingredients. I asked her why mango and avocado, and she explained that mango is filled with vitamins (including vitamin C) and antioxidants that are great for our skin, it may even help with sun damage! Avocado is also loaded with vitamins and (including vitamin C) and antioxidants, but that they also help hydrate the skin. So, making mango and avocado the perfect ingredients for my facial mask.

Mango

Mango contains antioxidants that can help with sun damage to the skin by reducing skin cell oxidation. There was even a study that said mango can help reduce wrinkles due to sun damage. Sign me up 😉 Mango is loaded with vitamin C and vitamin C reduces UV ray damage and helps keep free radicals away. Mango is also a good source of vitamin A, which supports collagen production which helps with those stubborn lines with get on our faces. Mangoes also have lots of other vitamins and minerals in them that help with hydration, reducing inflammation, and encouraging skin elasticity.

Your skin can actually store vitamin C and vitamin E, making it very beneficial to your beauty routine to make sure you have a diet that includes foods that have vitamin C and vitamin E.

Avocado

Avocado also contain antioxidants, vitamin C and vitamin E which are essential for healthy, glowing skin. Like with mango, avocado can help with elstacity, protection against free radicals, and can help prevent the breakdown of collagen. Avocados also contain Lutein which helps keep your skin hydrated. Hydration is very important to a healthy complexion. Like…really important. Avocados are also loaded with Monounsaturated fatty acids and Polyunsaturated fatty acids which help to moisturize the skin and help protect against harmful UV rays of the sun and help to reduce inflammation.

Milk contains retinol. So does the lotion I put on my face twice a day 😉 Therefore, it definitely makes sense to drink it! Retinol is said help to promote skin health and have anti-aging properties. Milk contains antioxidants, which as we discussed with mango and avocado, antioxidants can help keep our skin healthy and glowing. Loaded with vitamin D, milk promotes bone growth but vitamin D is also said to having anti-aging benefits.

Milk has anti-inflammatory properties that is said to help our skin to fight the damages caused by UV rays. Milk also acts as an excellent moisturizer…you all have heard of a milk bath, right?!

Pineapple

Pineapple is rich in antioxidants, vitamin C…noticing a theme here yet? Antioxidants and vitamin C are essential to your skin’s health. Science says vitamin C helps promote collagen production, which makes skin smooth and potentially firmer. Pineapple is also rich in bromelain which can help keep free radicals away and give your skin that glow we all love. Pineapple also helps with inflammation.

Banana

Bananas do have some vitamin C, not as much as pineapple, avocados and mango, but they do still have some! Bananas are an excellent source of potassium, which helps maintain the flow of both oxygen and blood to the skin cells, therefore helping to keep your skin bright and beautiful.

Kale

Guess what? Kale is rich in vitamins C and vitamin E! Kale is also loaded with vitamin K. Together, these vitamins help your skin look healthier…and dare I say…younger?! Vitamin K helps to reduce dark spots. Kale also has anti-inflammatory benefits help prevent your skin from looking bloated and help your complexion.

  • 1 cup Florida Milk – I used 2%
  • 1/2 cup diced fresh mango
  • 1/2 cup diced fresh pineapple
  • 1 cup kale

  • Add all ingredients to your favorite blender.
  • Blend until smooth
  • Enjoy!

Notes

If you use frozen fruit or add ice to this smoothie, you will have to add in extra Florida Milk, otherwise it will be super thick….which is okay, but you may have to eat it with a spoon 🙂

And let’s not fail to mention the award-winning beers and breweries that you’ll find tucked away in the Great Lakes Region. Unfortunately, states like Florida typically get passed up but don’t write her off just yet.  

While it may have taken a little longer than we would have liked, Florida has come a long way in just a short period of time pertaining to its beers and breweries. And we’d like to take a few moments to brag a little about them. Here’s what we feel are Florida’s top 10 breweries that you should strongly consider visiting.

Aardwolf Brewing Company

Jacksonville

It’s safe to say that Jacksonville has something very special brewing at Aardwolf Brewing Company. They have a fabulous beer menu selection of IPAs, stouts, sours, and even hard seltzers. The brewery also has daily food trucks, and you can go onto their website to find out which one will be there the day you plan on visiting. It’s up to you whether you enjoy your flight of brews in their cozy brick taproom, or mosey around outside in their Biergarten. Come thirsty and leave happy.      

Calusa Brewing Company

Sarasota 

We’re not exactly sure how Calusa Brewing Company has managed to stay under the radar for so long, because this hidden gem brews some of the best IPAs and NEIPAS in the entire country! And that’s no exaggeration. The company strives towards making nothing but excellent beer, while each and every week they come up with yet another delicious-tasting brew they can’t wait for you to try. Their taproom has a laid-back and relaxing atmosphere with friendly employees, along with some of the tastiest food trucks that we’ve ever tried are there on a daily basis. Fingers crossed, but we hope at some point Calusa starts distributing.

Cigar City Brewing  

Tampa Bay

No doubt one of Florida’s top breweries, Cigar City Brewing never seems to disappoint. In fact, some of CCB’s top beers can be found in most grocery stores throughout Florida as well as other parts of the country, including their Jai Alai, Guayabera Pale Ale, and Maduro Brown Ale. And if you love bourbon barrel-aged stouts as much as we do, make sure you try their Yes, Always! It’s outstanding! The brewing company also has scrumptious eats on their menu that pair perfectly with each of their beers. It’s a no-brainer stop to make when you’re in the Tampa Bay area, or before you head over to catch a Buccaneers game.     

Civil Society Brewing Company 

Jupiter 

This next brewing company more than deserves our recognition as one of Florida’s top breweries. Civil Society Brewing Company is family-owned, yet with two different locations, one in Jupiter, and the other in West Palm Beach. It’s pretty obvious that IPA’s and NEIPAs are their specialties, but if that doesn’t sound like you, don’t count them out just yet. Besides their fruity beers, the company does a remarkable job with stouts and other styles as well. And if you live, or are visiting the Central Florida region, be sure to keep an eye out for their Fresh IPA that you can find on tap at several locations.

Deviant Wolfe Brewing

Sanford 

For those of you that enjoy breweries with distinctly-flavored beers, you’ll certainly find what you’re looking for at Deviant Wolfe Brewing. Located in historic Sanford, the brewery takes pride in its broad selection of beers, especially their Disco Wizard, Matturdays Berliner, and even their surprisingly-good Sourmangaro Coffee Sour. They have small snacks and hot sandwiches to munch on, but you’re more than welcome to bring your own food in from any of the local restaurants in the area. Families with children are also most welcome in their taproom.    

Funky Buddha Brewery

Oakland Park (Fort Lauderdale

The brewery that’s next up on our list has been around for a little over a decade, as they’ve continued making huge strides with adding to their awesome selection of world-class beers. Not only does Funky Buddha Brewery have at least 25 flavorful beers on tap, but they also have an in-house restaurant that has plenty of delicious food choices available. You’ll also notice that their taproom is one of the largest in the state that can easily handle the crowds. Cheers to that! Brewery tours are available on the weekends. If you’re ever in the area, make sure you don’t pass this brewery up.

Green Bench Brewing Company 

St. Petersburg

Beer-lovers could make an entire weekend out of visiting some of the awesome breweries that are scattered all throughout St. Pete. If that’s a road trip you’d eventually like to take, make sure that Green Bench Brewing Company is amongst your plans. Without even realizing it, you’ve probably already tried their tropical Sunshine City IPA or their Skyway Hazy Double IPA. And that’s just the tip of the iceberg. The brewery also specializes in german-style lagers, Irish stouts, sour ales, and of course, mouth-watering IPA’s. You’ll also enjoy their kid and pet-friendly Biergarten where they have a few games to keep everyone entertained. 

J. Wakefield Brewing 

Wynwood

Wondering where you’ll find one of South Florida’s most popular breweries? Then look no further than J. Wakefield Brewing that’s located in the Wynwood Arts District of Miami. It’s a Star Wars-themed brewery that’s received worldwide recognition over the years for its unique brews. We personally have several favorites there, including their Miami Madness, Dragonfruit Passion Fruit, and their Berliner Weisse. They also have regular food trucks available on-site so you don’t have to go anywhere else to grab a bite to eat.

7venth Sun Brewery

Dunedin and Tampa 

Maybe currently you don’t consider yourself much of a sour beer drinker? Man, have we got some surprising news for you! Neither did we that long ago. That is until we tried sour beers like the ones that you’ll find at 7venth Sun Brewery. But that’s not where their story ends. Their brewery has plenty of fruity IPAs that will wet your whistle along with chocolatey stouts to warm your belly as the weather starts to get cooler. 

Swamp Head Brewery 

Gainesville 

Not far from where the Florida Gators play football, Swamp Head Brewery is a popular brewery destination to hit up afterward. Swamp Head has done an excellent job setting itself apart from the competition when it comes to their beer. They also offer a drive-thru service if you want to get your beer on the go. Allow us to recommend their Big Nose IPA or their Wild Night Honey Cream Ale. Just remember to get on their website beforehand to find out more about their food truck schedule.

I have a new cocktail for you all to try and I couldn’t be more excited about it! It combines two of my favorite things…CK Mondavi and Family wine and fresh from Florida blueberries from Noble Citrus.

Almost 5 years ago, I created the Call Me A Cab Vodka Wine Cocktail and to this day, it is still the most popular cocktail recipe on my site. Why? One, it’s pretty 😉  And you all love the idea of sweet and dry! So, I made this Blueberry Vodka Wine Cocktail. I think you will like it just as much.

Did you spot my play on the name of this one…my other cocktail is called Call Me A Cab…and since not too many people actually call cabs anymore, I decided that after a few of these, you’ll need to call for an Uber 😉

Best Blueberry Vodka Wine Cocktail

To make this Blueberry Vodka and Wine Cocktail you only need a few ingredients, one of them being homemade blueberry simple syrup. I’ve been on a homemade simple syrup kick lately. It’s so….well….simple to make…and it adds so much flavor to your cocktail.

Plus, using blueberry simple syrup makes your vodka cocktail absolutely beautiful! And who can resist a beautiful blueberry cocktail?? Not me!

Now, I used fresh Noble New Crop blueberries to make the blueberry simple syrup for this vodka wine cocktail, but you can also use frozen blueberries. I still recommend that they are Noble New Crop Florida blueberries though 😉 Fresh or frozen will work great.  I know Florida blueberries will be out of season here soon, so this is the perfect excuse to head to the store and up.

Easy Blueberry Vodka Wine Cocktail

Blueberry Simple Syrup Ingredients

Wine Cocktail made with Vodka and Blueberry Simple Syrup

Now that we have your blueberry simple syrup ready to go for this cocktail, you need the wine. I used CK Mondavi and Family Cabernet Sauvignon. CK Mondavi and Family Cabernet Sauvignon has a classic, deep red color, rich with cherry and blackberry flavors with a hint of oak. Cabernet Sauvignon is typically a dry red wine, making it a lovely pairing for the blueberries. Not too sweet, not too dry…just perfect.

This Call Me an Uber Blueberry Vodka Wine Cocktail is the perfect balance of sweet, tart, and refreshing, making it a standout choice for gatherings, happy hours, or even a relaxing evening at home.

And let’s be honest—any cocktail with the name “Call Me an Uber” is bound to be a good time! 😉

CK Mondavi and Family actually has a new Cabernet Sauvignon that will be coming out soon, it will be a darker cab and will also be perfect in this blueberry vodka and wine cocktail. I’ll let you know when it’s officially in stores so you can keep a look out for it.

The complete CK Mondavi and Family collection is available nationwide and includes Moscato, Pinot Grigio, Sauvignon Blanc, Chardonnay, Cabernet Sauvignon, Merlot, and Red Blend, all available for a suggested retail price of $6.99 for a 750 ml bottle., and $13.99 for a 1.5L magnum. The white wine labels feature color-changing thermochromic ink. They change from a light cream to full color when chilled, at approximately 45-50 degrees, showing just the right serving temperature.  And like I mentioned, keep a look out for that new dark cab too.

OH, you also need vodka to make this cocktail! Now, I would argue that the most important pieces are the blueberry simple syrup and the wine, but the vodka adds that extra punch. Since you are mixing this one, I wouldn’t say you have to go top-shelf.

Alright, now that you have the blueberry simple syrup, wine and vodka let’s make that Call Me An Uber Blueberry Vodka Wine Cocktail shall we?

Call Me An Uber Blueberry Vodka Wine Cocktail

After a few of these wine cocktails, you'll need to call an uber to get home! Easy to make, sweet, but not too sweet. Dry, but not too dry. This is an incredible wine cocktail.

Ingredients

Blueberry Simple Syrup

  • ½ cup blueberries fresh or frozen
  • ½ cup sugar
  • ½ cup water
  • ½ lemon juice from half a lemon

Call Me An Uber Blueberry Vodka Wine Cocktail

  • ½ oz homemade blueberry simple syrup
  • 1 oz vodka
  • 1 tsp lemon juice just give a slice a good squeeze
  • 2-4 oz CK Mondavi and Family Cabernet Sauvignon depending on the size of your glass
  • ice

Instructions

Blueberry Simple Syrup

  • Combine the sugar and water in a small saucepan and bring to a boil over medium-high heat.
  • Add Noble New Crop blueberries.

  • Using a large spoon or fork, gently press the blueberries to release their juice.
  • Allow the mixture to boil for 2 - 5 minutes.
  • Shut off the heat and let it rest for at least 10 minutes.
  • Strain the mixture into a resealable jar or container. This will make enough at least 6 blueberry cocktails.
  • Cover and keep in the refrigerator until ready to serve.

Call Me An Uber Blueberry Vodka Wine Cocktail

  • Place ice in your desired glass.
  • Add ½ oz chilled blueberry simple syrup.
  • Pour in the vodka.
  • Squeeze in the lemon juice.
  • Top with CK Mondavi and Family Cabernet Sauvignon.
  • Garnish with blueberries.
  • Enjoy!
