The Broadmoor rests at the foot of the Rockies on 5,000 break-taking acres on the Cheyenne Lake. Enjoy golf, tennis, horseback riding, hiking, biking, and your 3 to 12 year old can enjoy the Broadmoor Summer Bee Bunch Camp. The spa even offers services just for the kids.

Yogi Bear’s Jellystone Park Camp-Resort: Estes

This family-friendly resort includes two playgrounds, a swimming pool, mini-golf, game room, theater, wagon rides, and theme weekends. Local attractions include an Aerial Tramway and the Great Rockies.

Lion Square Lodge: Vail

The largest ski resort in the US, Vail is perfect for families because it has options for everyone. Vail’s Website has information on lodging options and activities that are perfect for families, including skiing lessons and condos nearby, suiting multiple budgets even for large families. There are two ways of getting to Vail from far away: a shuttle from a more affordable Denver International Airport (which has discount carriers like Southwest) or a direct flight into Vail Airport, which is closer. But, you don’t have to visit during the winter to enjoy Vail. This Lodge has a swimming pool and an arcade & game room. Enjoy first-class golfing, biking, and or one of the many nature trails nearby.

The Peaks Resort and Golden Door Spa: Telluride

This resort includes many amenities, including golf, dog sledding, horseback riding, skiing access, and 3 onsite restaurants, so you don’t have to drive for dinner, indoor and outdoor pools. There is special children’s program named Base Camp. Base Camp has arts & crafts, playgrounds, swimming, gondola rides, tumbling, and other activities to keep your kids busy and having fun. This resort fills fast, so book your vacation early.

The Curtis: Denver

The capital of Colorado is known as the Mile High City since it sits at 5280 feet in elevation. Family-friendly attractions here include the Downtown Aquarium, the Denver Museum of Nature and Science, the Denver Children’s Museum of Denver, and the Denver Zoo. Seasonal Elitch Gardens, known as Elitches among locals, is a 70-acre amusement and water park located in the heart of downtown. Kids love taking the free trolley up and down the 16th street pedestrian mall. This Curtis is located in downtown and is close to the Performing Arts Complex and the Sixteenth Street Mall. There are special activities designed just for the kids, like a trip to the Downtown Aquarium and Children’s Museum. There is also a nearby theme park, Elitch Gardens, which boasts of having over 50 rides. You can also visit the Denver Zoo, the planetarium, or the Museum of Nature which is also nearby. Best of all, the Curtis is not just kid-friendly. It is also pet-friendly.

If you are looking for something to do just outside of the city, be sure to do an ATV tour. We booked ours with ATV Tours Colorado, they are located about an hour from the city center. We actually went right from the airport when we landed! It was the perfect way to start our Colorado vacation. You have to be over 16 to drive, but you can have your smaller kiddos on with you while you ride. It’s a true Rocky Mountain experience that you and your family will always remember. Trust me, it’s worth the short drive from the city! The views are AMAZING.

The Breckenridge Resort: Breckenridge

This charming Victorian-style resort offers a family-friendly vacation experience. Enjoy biking, hiking, skiing, horse-drawn sleigh rides, ice skating, fishing, and mini-golf. There is year-round fun at Breckenridge. Childcare is available.

Snowmass Mountain Chalet: Snowmass Village

Activities at this charming chalet include skiing, snowboarding, biking, hiking, golf, swimming, rafting, and music festivals, all within a short drive or shuttle. The room rate includes lift tickets, breakfast, and in the summer, you get a free hot soup lunch.

Park Hyatt Beaver Creek Resort: Avon

This 1,700-acre mountain resort has great views of the ski slopes and the Black Family Ice Rink. The Camp Hyatt Children’s Program keeps the kids happy by hiking, wall climbing, mini-golf, bungee trampoline, board games, swimming, storytime, movies, and crafts.

C Lazy U Ranch: Granby

The dude ranch has great walking trails, lakes, fishing, horseback riding, and a kid’s only program. Your kids can learn how to be a cowboy, or you can do an activity with the whole family. Kids are grouped by age.

Durango Mountain Resort: Durango

Parents of train-loving preschoolers should check the Day Out with Thomas website to find out when that blue train rolls into Durango’s Main St. railroad station every summer. Otherwise, visitors can take a historic ride on the Durango-Silverton Railroad or check out the fun on-mountain activities at Durango Mountain Resort, such as disc golf, a climbing wall, bungee trampoline, and alpine slide. Mesa Verde National Park, where families can tour the ruins from the Ancestral Pueblo people, is also nearby.

The Springs Resort: Pagosa Springs

The big draw here is the terraced hot springs pools at The Springs Resort. Guests who stay at the hotel have free access to the pools, or visitors can purchase day passes. The pools, with fun names like Lobster Pot and Coffee in the Clouds, are stacked along the banks of the scenic San Juan River. The bravest souls hop in a steamy pool, then cool off with a freezing plunge into the river!

Copper Mountain: Frisco

Not far from Vail, but smaller, more personable, and more affordable, Copper Mountain may make a great choice for families with younger children. It has the full range of lessons that the bigger mountains offer but also has quaint and affordable lodging opportunities. It is also less than two hours from Denver International Airport.

Black Mountain Ranch: McCoy

There are many horseback riding trips available in Colorado, from the Eastern Plains to the base of the Rocky’s, all of them offering great opportunities to sight wildlife. Some are posh, and some involve camping out. But, if you want to combine horseback riding with visiting a working ranch, Black Mountain Ranch would certainly be a memorable experience for a family to bond over.

Wingate by Wyndham Pueblo: Pueblo

Enjoy complimentary breakfast and visit the nearby Pueblo Children’s Museum and Pueblo Zoo. At the Pueblo Nature Center, your family can picnic, view the local wildlife, fish, hiking, and go kayaking.

Colorado’s State Park System and National Parks Colorado can make an affordable and fun family vacation. It is possible to either road trip to Colorado, or fly into Denver, rent a minivan or car, and then head into the rural and mountainous West of the state with a family camping tent (some are now increasingly luxurious). Be sure to plan your trip in advance and use common sense safety practices at campgrounds.

The above-mentioned Colorado ski resorts don’t just close shop when spring rolls around. All of the major resorts open their trails and lifts for hikers in the summer and also have exciting golf courses. For example, at Vail, in addition to the onsite Golf, if you want to hike to the top of a peak for a view, you can spare the walk back down with small kids by taking a chair lift.

Peanut Butter-Chocolate & Chardonnay

Though usually served with poultry, pork or seafood, Chardonnay does a fantastic job when paired with chocolate. In my experience, peanut-butter chocolate products yield the best results. Reese’s Pieces or Reese’s Peanut Butter Cups both taste absolutely delicious when shared with the smoky, caramel flavor that Chardonnay so richly exerts.

White Chocolate & Bordeaux

White chocolate can be absolutely breath-taking when paired with the right wine. At the same time, it can not be as amazing when given the wrong mate. In my experience, white chocolate pairs best with a nice Bordeaux. The two compliment each other quite nicely. White chocolate with its sweet, smooth flavor and the Bordeaux with its subdued taste.

Crunchy-Chocolate & Riesling

Riesling can be difficult to pair with most chocolates. This mostly derives from how extreme the flavor change can be depending on whether or not it’s allowed to rot or not. Because of this inconsistency, it is best to pair with not a flavor- but a texture. Crunch bars, 100 Grand Bar, and other crunchy varieties match up delightfully with the crisp Riesling taste.

Milk Chocolate & Sparkling Wine

Sparkling wine and Champagne go perfectly with any sort of chocolate. It’s hard to find a pairing that doesn’t work well. However the fizzy, lighthearted nature of sparkling has a certain chemistry with milk chocolate that puts it above the rest. The addition of strawberries to the mix creates a potent aphrodisiac.

Dark Chocolate & Merlot

Not my favorite, but respectable nonetheless. Dark chocolate is difficult to find a suitable match for due to its overpowering flavor and lengthy aftertaste. The only decent pairing I have come upon is Merlot– thanks to its roasted flavor. Drink slowly and take small bits- savor this rare match for dark chocolate.

Yes, I am going to say it again. My son is a JUNIOR. IN HIGH SCHOOL. Where in the world has the time gone?! Seriously, he is now getting letters from colleges in the mail. LETTERS FROM COLLEGES! Wasn’t this adorable young man just playing with hot wheels and taking naps on the floor? Ok, maybe he actually was….BUT, he is a lot bigger now. Now we aren’t talking about ABCs and colors, we are talking about COLLEGES. Does it seem like I am yelling? I AM! I am in complete disbelief that this is happening!

Not like he isn’t ready. I am very proud of myself as a parent that I feel like he is ready for this new stage of life…But, am I ready? Is my husband ready? And, oh my goodness….I have no idea how my daughter is going to handle the day that my son moves out. They are like best friends. It’s gonna be hard.

Ok, well, there’s my emotional rant for the day.

What I really wanted to tell you guys about are some of the things that I never thought about until this year. Well, maybe I did, but it was when I was in high school…and let’s just say that was over 25 years ago 😉

Like ACTs, SATs, college tours, volunteer hours, is there paperwork that we should be filling out somewhere about something? Seriously, it can be overwhelming.

The only thing I do know about this next stage of my son’s education is that we have a Florida Prepaid College Plan. And thankfully, last year I researched how we actually go about using our Florida Prepaid College Plan. BECAUSE WE WILL HAVE TO DO THAT SOON. EEEEKKKKK!!! Ok, sorry…back on track….

Planning for college, during the last two years of high school, is something not to put off. Here are some suggestions for what juniors and seniors should be doing now, to plan for their college futures.

Tips For Juniors Getting Ready For College

  • Stay on track for graduation. Assess your extracurricular activities. Plan to make sure that you are doing everything necessary, to build an appealing resume for college. Make it relevant to who you are. Colleges want well rounded individuals that can add to their campus in many ways.
  • Start researching colleges. Determine what is important to you. Things like location, housing, transportation, work study, faculty and programs should be evaluated for each school. Look and examine admission requirements and align your resume and application with each school. Note; Your resume may be slightly different for each school. Do not use a standard resume for all schools.
  • Attend college fairs. Get to know college admission directors. Learn the admissions process. Visit a school, even if you don’t plan to go there. You never know where you might end up.
  • Examine tuition and fees between all the schools you are considering. Attend financial aid programs.
  • Plan to take the ACT and SAT. Steven is taking the SAT in school in March. Good news is that I didn’t even have to sign him up for it, so if I missed in the email or phone call about it, he still takes it.
  • Prepare for the ACT and SAT. Steven is taking the free study-course from Khan Academy right now. Tuesday and Thursday are his study days 🙂

Tips For Seniors Getting Ready For College

  • Make sure you are on track to graduate in the Spring.
  • Continue taking college prep and AP classes. Keep your grades up and your extracurricular commitments.
  • Avoid senioritis. I don’t see anything wrong with enjoying your senior year…but be sure to stay on track!
  • Make a list of your top five college picks. Then make a list of five schools that have what you really want. somewhere in these ten, should be where you end up.
  • Make a large calendar to keep track of important dates strictly for college. Keep it on your wall. Phones are great, but having an actual visual is very helpful.
  • Begin work on your application essays. Remember to align them with each school. Spell check everything. Have your school counselor double check it for you. Most are glad to help.
  • Determine who will write your letter of recommendations. Give each writer a self addressed envelope. You want them to arrive at the correct place. Leave nothing to chance.
  • Let your counselor know what schools to give your transcripts to. Give your high school two weeks to get them delivered. Make photo copies of everything going in and place them in a labeled folder.

Acceptance Day

Sit down and examine the letters of acceptance. You still have to make the final decision. If you get a rejection, it’s okay! Move on. You can list in order, the schools as they come in with best to worst. Remember, sometimes the best on your list may not be the right fit for you.

Once this final step is taken, everything turns towards financial preparation.

That’s a trick question 😉 Yes, financial preparation can start WAY before the day you decide what college you are going to.

In fact, saving for college can start as early as that amazing day you are born. We actually opened my son’s Florida 529 Prepaid College Plan when he was just 6 months old. And by the time he was 5, he’s future college tuition was paid for.

Florida is filled with beautiful wildlife. There is so much to see and appreciate in our beautiful state. There are 11 National Parks in Florida and they are all very unique. In fact, the National Parks in Florida are some of the most unique in the country.

Perhaps, one of our most “famous” National Parks here in Florida is the Florida Everglades National Park. The featured attraction of this National Park is the wildlife. Some of these animals in Florida can’t be seen anywhere else in the United States.

At one and a half million acres, Everglades National Park is the largest subtropical wilderness in the United States. Located in southern Florida, about 10 miles from Miami, it’s the only place on Earth where alligators and crocodiles coexist. A haven for tourism and recreation, Everglades was authorized by the National Park Service on May 30, 1934.

Sightseeing and recreation opportunities in the park are numerous and available for tourists of all fitness levels. Bicycling, canoeing, hiking, and kayaking are among the activities afforded to people with active lifestyles. Various outfitters in the area can supply the required equipment, or the visitor can bring their own. For those who seek less strenuous activities, birdwatching, picnicking, fishing, and air-boat riding can all be enjoyed. There are no restaurants in the park, but groceries and related supplies can be purchased.

It’s easy for people to enjoy themselves in all the Florida sunshine, but some attractions in the park need to be admired with a healthy dose of caution, especially when they’re hungry.

Reasons to visit the Florida Everglades

Wildlife in Florida can be Really Wild

With vast areas of fresh, estuarine, and saltwater, Everglades National Park is home to creatures that can’t survive in other places. Among the more intimidating of the park’s permanent residents are the alligator and the crocodile. The easiest way to tell the two apart is by their heads. The alligator, or gator, has a broad snout, whereas the croc’s snout is more pointed and narrow. (Don’t get close enough to measure either one) The croc will grow larger than the gator, with older males reaching 20 feet. These beasts are fewer in number than the smaller gators, which rarely exceed 15 feet. The American Alligator is at the top of the food chain in the Everglades, and anything within reach is on its menu. Attacks on humans are rare, but the damage that either of these armor-plated beasts inflicts can be nasty.

Park Gets New, Unwanted Visitors

Stories of enormous snakes living in the Everglades have been told for years and have been largely unfounded….until now. A population of Burmese pythons now live in the park, and their numbers, like the snakes themselves, are growing. Some people buy these snakes as pets, but when they outgrow their homes, the snakes are released into the Everglades. Pythons are among the largest snakes on Earth, and they feed on anything unfortunate enough to get in their way. There are recorded instances of snakes and gators found in the wild, locked in a fight to the death.

There is concern that these animals will upset the natural order of life among the park’s wildlife, and efforts are being made to remove the snakes from the park. The numbers would suggest that the snakes are winning the battle.

Even with the help of the National Park System and the visitors who enjoy it, the Everglades faces an uncertain future. Urban sprawl, pollution, and even global warming are all factors that will have an effect on the park and the plants and animals that call it home. From the colorful flamingo to the humble manatee to the prehistoric alligator, the animals in the Everglades and the tourists who visit the park can appreciate the unique ecosystem that brings them all together.

Just don’t feed the gators. I’m serious…don’t feed the alligators. It’s not only dangerous for you, but it’s harmful to them.

Yep, you read that right. Sweet Spicy. Tangerine. Chicken. All on a pizza. Well, technically a naan flatbread. Because let’s be honest, when am I going to find the time to make pizza dough from scratch. One day I guess….my sister-in-law has a killer pizza dough recipe…maybe when I pull the trigger and buy one of those cool Ooni pizza makers I’ll make it from scratch. Maybe. Maybe not. Ok, that’s all a bit off topic…so let’s get back to my killer pizza recipe shall we??

I love spicy food. My whole family does. I think we have about 10-15 hot sauce readily available at all times. And I don’t think there’s many recipes I make that I don’t add red pepper flakes (Flat Iron are the best in my opinion) to, I think my family would be disappointed if I didn’t!

I also love sweets. That’s why I love Juicy Crunch tangerines. They not only tackle my killer sweet tooth, but they are a lot better for me than a candy bar 😉

So, when I was looking at my 4 Juicy Crunch Tangerines on the counter and trying to figure out what to make for dinner, I decided pizza was in order. And not just any pizza. One that’ll make your mouth water.

Just think about it….

Spicy ricotta cheese mixture layered on top of a naan flatbread
Topped with sweet tangerine slices and chicken
Then drizzle on a tangerine balsamic reduction
Bake until hot and bubbly

Spicy Tangerine Chicken Pizza

The ricotta cheese mixture is the perfect creamy texture. Adding the red pepper flakes to the cheese mixture ensures that every bite you take will have a bit of heat. Which is perfect, since each bite will also have a touch of sweetness thanks to those Juicy Crunch tangerines and the balsamic reduction. The sliced chicken adds in some needed protein and balances out the sweet and spicy. I suppose you could leave the chicken off if you wanted to or try it with steak, but then you wouldn’t really have a Sweet and Spicy Chicken Pizza then would you??

Ingredients

  • 2 store bought naan flatbreads My package had 2 in it
  • 1 Juicy Crunch Tangerine peeled and sliced
  • 1 cup cooked chicken I used baked leftovers from the night before. Rotisserie chicken would also be great!
  • ½ cup part skim ricotta
  • ¼ cup Parmesan cheese
  • 1 tsp Red pepper flakes

Tangerine Balsamic Reduction

  • ½ cup balsamic vinegar
  • ½ cup Juicy Crunch Tangerine cut into small segments
  • 1 tbsp honey
  • pinch of salt

Instructions

  • Preheat oven to 350°
  • Spraying baking sheet with cooking spray or olive oil
  • Place the naan flatbreads on the sheet and bake for approximately 5 mins
  • While the flatbreads are baking, make the cheese mixture.
  • In a small bowl mix the ricotta, parmesan and red pepper flakes. Set aside.

Tangerine Balsamic Reduction

  • In a small sauce pan add the balsamic vinegar, tangerine segments, honey and salt.
  • Heat over medium heat until liquid reduces into about half.
  • Once ready, strain out (or use a spoon) the tangerine segments and set aside. It will continue to thicken as it cools.

Pizza

  • Once the flatbread has cooked for about 5 mins, remove it from the oven and spread on the spicy ricotta cheese mixture.
  • Layer on the tangerine slices and chicken.
  • Bake for an additional 5-10 minutes until the edges of the pizza start to brown and all the ingredients are heated.
  • Drizzle on tangerine balsamic reduction.
  • Enjoy!

You all know that I love a good smoothie. Making a smoothie for breakfast is one of the easiest ways to start your day! I have only make one juicing recipe here on Food Wine Sunshine, and that was YEARS ago. Honestly, I think that was my attempt on a smoothie before I start using frozen fruit or adding in any protein to thicken things up. But, when I was visiting my brother and sister-in-law, I watched my sister-in-law make my niece a juicing recipe. Stef (my sister-in-law) explained to me that my niece loves homemade juices and she likes that it’s an easy way for her to ensure that she is getting in some extra fruits and vegetables. #MomWin

Because you can sneak vegetables into homemade juices just like you can a smoothie!

So, I had to try juicing again.

Juicing vegetables and fruits is the gateway to your good health.Juicing recipes make it easy to consume vital nutrients that can build the immune system, help prevent disease, improve your memory, clear up your complexion, have a beneficial effect on both your skin and hair, as well as energize, cleanse and help restore the body’s organs, nerves and overall systems.

How to make Carrot Orange Pineapple Juice

Florida Oranges are in season October thru June, and since I love using in season produce, now seemed like the perfect to use some Florida oranges.

And pineapple. I love pineapple, plus pineapple also has nutritional benefits. Pineapple is a good source of Vitamin C or ascorbic acid. Vitamin C helps wounds and burns to heal and it also builds strong bones and teeth. Vitamin C helps to strengthen the walls of blood vessels and increases the absorption of iron and helps in the metabolism of folate, protein and fats. It also helps to prevent atherosclerosis or hardening of the arteries. When there is a deficiency of Vitamin C in the diet, the apparent symptoms are fatigue, joint pains, easy bruising, sore and bleeding gums, the bones are weakened and fracture easily and wounds take long to heal. So, this Carrot Orange Pineapple Juice is THE juice to make! We all know that oranges are also loaded with Vitamin C!

Another nutritional benefit of the pineapple is Vitamin B6. This vitamin promotes the proper working of protein and carbohydrates in the body. It releases energy. It encourages the proper functioning of the nervous system and synthesize the red blood cells. Deficiency of the vitamin may cause depression and confusion, itchy scaling skin, smooth red tongue and weight loss.

Besides being extremely tasty, pineapple juice is loaded with the protein digesting enzyme mixture known as, bromelain.

Although Tuberculosis is not as common as it used to be, the juice was instrumental in dissolving mucus and helping the recovery from the disease. It should not be used, though, by people with Hemophilia or people with kidney or liver disease, because it reduces the time taken to coagulate the blood, which is why it can be used for heart patients.

Pineapple juice is also good for women with a painful menstrual cycle. That’s never fun, so what better way to remedy that then with a natural juice, as opposed to popping a pill? Sore throats and bronchitis are relieved by sipping pineapple juice, not to mention, juice is better than soda any day, especially when you are sick. I warned you that I added some veggies into my juice, I would say that from the title of the recipe, you guess there were carrots. Carrots are loaded with vitamin A and beta-carotene, and have calcium and vitamin K.

I also added in cucumber, I feel like cucumber is one of those produce items that you can add to just about anything. They are great for hydration and are rich in electrolytes. Adding cucumbers to juices and smoothies barely changes the taste, so I add them in a lot. I’ll take the extra nutrients while I can!

  • Prep for Success: Wash your produce thoroughly and peel fruits like oranges to avoid bitterness. For carrots, you can skip peeling if they’re organic—just give them a good scrub.
  • Mix and Match Flavors: Experiment with ratios! Love a sweeter juice? Add more pineapple. Want a more earthy flavor? Increase the carrots or toss in some leafy greens.

  • 1 pineapple
  • 3 naval oranges peeled

  • Cut the top and rind off of the pineapple. Then cut the pineapple down and around the core.
  • Place all ingredients in small batches into the juicer chute.
  • Turn the juicer on and start the juicing process.

What Are Shin Splints And How To Prevent Them

Both new runners and seasoned veterans of the sport have likely heard of the dreaded “shin splints.” However, most people don’t know what exactly shin splints are, why they occur and how to prevent them; and most importantly, the best ways of mitigating or completely eradicating them.

I used to get the worst shin splints when I ran track in high school. I am talking about crippling, can’t walk, tears rolling down my face shin splints. I used to have to tape my legs. It was absolutely horrible. Thankfully, I learned how to prevent shin splints…or at least lessen my chances of getting them as frequently.

What Exactly Are Shin Splints

“Shin splints,” in its most commonly used sense, refers to pain around the shin area of the leg. The medical term for this is tibial stress syndrome (either medial TSS or anterior TSS, depending on the specific area).

The shin, specifically, is the bone that stretches between the knee and foot (on the other side of the calf muscle). The pain actually results from muscle stress around the shin bone, not from the bone itself. Shin splints can run the gamut regarding severity, anywhere from a slight nagging ache that goes away when the muscles are warmed up to an intense pain that does not go away.

The pain can occur in the form of an aching sensation, a stabbing sensation, or even a throbbing sensation. Shin splints are not the same thing as a stress fracture – a small crack in the bone. A stress fracture is usually a more serious condition. If the pain is intense and perpetually present (even minimal walking causes you much pain, and/or warming up the muscles does not do any good) – see a doctor because it might be a stress fracture or some other type of shin-related injury.

How to prevent shin splints

Why Do Shin Splints Happen

Shin splints may be caused by many factors, such as an abrupt change in running intensity, mileage (the distance usually run), the surface run on, the shoes, improper stretching, and/or some sort of non-running related trauma. Adhering to the following basic principles will help every runner have a happy running life, free of shin splints.

How to Prevent Shin Splints

Running Intensity/Mileage: Thou shalt not increase mileage and intensity at the same time. In other words, if you are planning on running 50 miles next week instead of your previous 40, don’t add any intensity to what you were running at 40. Your body first needs to get adjusted to running an average increased distance.

Surface: Ideally, thou shalt run on soft surfaces (grass, bark, soft dirt) when possible, or between 3-5 times per week. However, run on a firm surface (asphalt, firm dirt, track) 2-3 times per week to keep speed and muscle memory up.

Shoes: Wear running shoes only, and replace the shoes when their expected life is up or when they feel like they have lost cushioning. All running shoes’ lifespan is based on a mileage estimate. However, you may feel that the shoe is either done a hundred miles short of the estimate or that it can go on for much longer.

Stretching: Always stretch after finishing the run and never stretch cold muscles; therefore, if you want to stretch before you run, warm-up first. It is not always necessary to stretch before the run, but you should always warm-up for at least a mile before doing any high-intensity running.  And don’t forget to stay hydrated!

Trauma: Don’t let it happen. Just be smart! This is where common sense comes in.  Be careful, listen to your body, eat well, and rest as needed.

Following these principles should help avoid all types of injuries.

  • ¾ cup superfine sugar *tip: you can blend regular sugar until it's fine

  • gel food color: red or dark pink

Instructions

  • Set oven to 200°F.
  • Line baking sheet with parchment paper.
  • Place egg whites and salt in the stand mixer and mix at medium speed until frothy.

  • To prep your pastry bag for creating striped meringues: turn the pastry bag inside out, keeping an inch pulled through the bottom as you'll be trimming this and inserting your pastry tip.

  • Place bag over a glass to keep it in place.
  • Dip your paintbrush into the gel food color and draw stripes on the outside of the bag.

  • Take the bag off the glass, reach your hand in the bottom and pull the tip through so the stripes are now on the inside of the bag. Trim the bottom of the bag and drop your flower pastry tip inside.

  • Fill your bag with Meringue. Try to poke any air bubbles with the back of the paintbrush or skewer. Twist the top of the bag. *Tip: set aside enough meringue to make the plain white meringues that you’ll be decorating.
  • Hold the pastry bag straight up and down on the pastry sheet and squeeze pulling up to create peaks. *Tip: meringues don’t spread, however, you don’t want to place them too close as we need proper air flow during baking and dry time.

  • To create the white meringues, simply fill a pastry bag fitted with your round pastry tip and squeeze the meringue through the bag. *Tip: to create the ice cream cone look, in a very small movement, move the bag around in a circle and pull up to create a peak.

  • Bake 1 hour and let stand in oven to dry 2 hours or over night.
  • For decorating: melt white chocolate in a double boiler or microwave, if you prefer. Crush candy canes and set out any other decorations.

  • Drizzle white chocolate over meringues, sprinkle red sanding sugar and crushed candy canes over the white chocolate before it sets up.

  • These will keep for a few days and are pretty good frozen. Store them in a non humid area as they will absorb the moisture and be less crisp…but still delicious

We stay in St. Augustine when we head to east coast for the Daytona 500 and every year for Spring Break. We have been vacationing in St. Augustine for over 20 years. St. Augustine is an easy Florida road trip for us, it’s only about a 3 hour drive from Tampa Bay.

Caps On The Water

While Caps On The Water has been there for awhile, we have only been visiting for the last few years and it has quickly become a favorite. Caps On The Water is an incredible outdoor dining experience right on the river. You can sit and watch the boats go by while enjoying a great meal. I recommend the fish and chips and jambalaya.

The Reef

Here you will find seasonal foods cooked well and served up with an unbeatable view of the ocean. They have great happy hour deals, so be sure to stop in and enjoy those from 3:00-7:00PM Monday – Saturday and on Sunday from 4:30-7:00PM.

Playa Chacmool

This quaint family-owned Mexican restaurant is located right across the water. Come for the authentic Mexican food and stay for the hospitality. Grandpa is usually singing and playing the guitar making you feel like you are a part of the family. The queso with chorizo is delish!

Panama Hatties

Panama Hatties recently underwent a huge renovation, so stop in and see what it’s all about! They offer a wide variety of your favorite foods; such as coconut shrimp, crab cakes, burgers, unique sandwiches, and specialty cocktails. If it’s not too hot, I recommend sitting on the deck upstairs for the best views.

Columbia Restaurant

One of my favorite restaurants in Tampa also has a location in St. Augustine. Right in the heart of the historic district of St. Augustine you can enjoy the infamous 1905 salad and delicious Cuban-inspired cuisine.

St. Augustine Seafood Company

St. Augustine Seafood Company located in the Historic downtown area is a great stop to catch a quick bite to eat. The St. Augustine Seafood Company has a Nautical atmosphere and is casual atmosphere.  You will find many great fish selections all of which are American wild caught fish, many are local as they partner with local fisherman and markets. Their fresh catch of the day is always a good choice, and there are many options for how it is prepared. We really enjoy the Conch Fritters as well as the New England Clam Chowder, or if you like they also have a Minorcan Conch Chowder. If you are not sure which one to choose they will serve you a ½ serving of each!  If you happen to be here closer to dinner time, be sure to check out their live music offered in the Colonial Oak Music Park which is located right next door for some night life entertainment. It is a fun ambience in the sitting area, be sure check for the scheduled entertainers.

Meehans Irish Pub and Seafood House

Looking for some Irish fare with Florida flare, check out this restaurant for traditional Irish selections such as Shepherds Pie, Corned Beef & Cabbage, Bangers and Mash and a family favorite is their Fish & Chips which is Guinness Blonde Battered and fried. The Irish Cuban has a nice kick and is a favorite of my mom’s. Be sure to stop in to their Backyard Island Café located behind the restaurant where the conch fritters are delicious, the cocktails have an island flare and the tables that have fire insets.

Café Alcazar

Café Alcazar is located in the Lightner Museum. Actually, the Café is located inside (yes inside) what was once the largest indoor swimming pool of the historic Alcazar Hotel build in 1887. More of an elegant setting where you will be entertained by a Piano player as you enjoy visualizing yourself swimming in this grand pool area. They have a menu that gives you beautifully presented entrees, I recommend the Shrimp Giovanni. But you will also see offerings of sandwiches and salads, as well as a children’s menu. It is worth the visit to walk through the shops in the surrounding courtyard and if so inclined go through the Lightner Museum for a nominal fee for an added attraction to your day. You can walk around some areas for free, you just can’t enter the actual museum without paying a fee.

Ice Plant Bar

To follow along historical buildings this unique eatery dates back to 1927 when it was a functioning ice plant serving many in the area at that time. The walls have many tools from that era which they have kept and placed on the walls throughout. They offer imaginative cocktails and farm to table offerings equally unique and delicious. Since you are in the area go next door and check out The Distillery! A free tour will give you more on the process of distilling and more history of the ice manufacturing from 1917. Tastings are also offered.

Our family’s favorite spot for a great burger, the PK Signature Burger you will not be disappointed! The kids love the German Style Pretzel that is huge and their handspun Milkshakes are fun and delicious.

Beachcomber

Now if you have enjoyed all the history that downtown St. Augustine has to offer and would like to experience the beautiful beaches head south over the Bridge of Lions and follow signs to The Beaches one of our favorite restaurants is right off the beach. The Beachcomber is very casual, if you have kids they have a large sand area they can play in while you enjoy a tropical cocktail. They offer great burgers, and sandwiches my favorite is The Big Fish Reuben made from the Catch of the Day!  Sandwiches are large enough to share, especially if you would like to try one of their great appetizers, which include Steamed Shrimp, Gator Tail, or their house made smoked Fish Dip.

The Conch House Restaurant

Head over to The Conch House Restaurant and Lounge if you are looking for a truly unique tropical dining experience. You can choose to sit in a thatched tree house over looking the water or if you prefer, outdoor and indoor seating is also available. This is definitely my favorite spot for conch fritters which are served with key lime mustard sauce. The menu has something for everyone from Caribbean flare to Jamaican Jerk Chicken and an incredible Conch House Cuban. This fun restaurant is well worth the stop for good food and an amazing atmosphere. It’s a great spot to watch the pelicans and be sure to visit the in house alligators. Live entertainment is also offered on scheduled nights.

Salt Life Food Shack

Located right across the street with spectacular views and incredible Happy Hour specials, this is a great one to add to your list for fun times and relaxation. Sit outside and watch the locals and vacationers play volleyball while listening to live music. Sushi night is my favorite night to go!

Salt Water Cowboys

This have been a favorite of your family for many years. Many years. They open at 5:00 P.M. – 9:00 P.M. only and they are busy about 100% of the time. Reservations are recommended, you can also call ahead. We love getting the bucket of crawfish for an appetizer and you can’t go wrong with the ribs for dinner. I also love the Cucumber Fish, I definitely recommend getting the fish blackened as the cool from the cucumber sauce is the perfect balance to the spice of the blackening. And be sure to catch the sunset while you are there!

Les Petits Pleasures. French Pastry and Bakery

This wonderful bakery is situated at 125 A1A Beach Blvd. Open from 7 am to 2pm only. If you love authentic French inspired food you have got to stop here even if it is just to pick up a fresh loaf baguette bread and I guarantee you won’t leave without taking home one or many of their amazing pastries. We love their breakfast offerings, the crepes are made just as if you were in France, omelets, and the croissants all excellent. Speak French? Have fun chatting with the staff, I know I tried to remember a few things from when we last visited.

O’Steens

Now, I haven’t been here yet, but every time I drive by, there’s a line out the door! This is a cash-only restaurant that is all about the fried seafood…especially shrimp! And they must be doing it right as it’s been around since 1965. They are closed Sunday and Monday.

Tini Martini Bar

A quick mention to a great stop if you need a martini at the end of a long day, the Tini Martini Bar in the historic Casablanca Hotel. Selection of a wide of variety of Martinis and made special to your required taste. Quite possibly the best martini I have had! We drop in several times when we are visiting St. Augustine. This year we enjoyed the Bikini Martini, Pear Martini, the Espresso Martini and…well, you get the idea 😉 *No food is served here

The Kookaburra
