Blackberry season starts here in Florida in late April early May…that means you are going to want some suggestions on what to do with all those beautiful berries here soon. Well, I’m glad to help 🙂

If you don’t like fresh blackberries, they can be cooked and used in pies, made into jam and jellies, added to cake toppings for delicious blackberry and apple crumbles or added to baked brie. Personally, I love blackberries and will happily eat them by the handful, but they are also incredible in this baked brie recipe.

Now, brie is a complete indulgence for me. I love brie. I love all cheese actually. But there’s something about brie. Oh and it pairs perfectly with fruit. Especially fresh, in season fruit. Like these blackberries.

Did you know that one cup of blackberries contains 62 calories, no fat, 7.6 grams of fiber, 233 milligrams of potassium and 2 grams of protein. I can’t say the same for the brie though 😉

Blackberries also contain vitamin A. Vitamin A is an immune system building vitamin, and it also helps cellular health for cancer prevention.

These berries are nice and rich in vitamin K too. Vitamin K is the vitamin that helps the blood clot in a proper manner. This vitamin also helps calcium to process better in the blood. In blackberries, you’ll get 28.5 micrograms of this vitamin, which is excellent.

There is also folate, Magnesium, and vitamin E in blackberries…so while you are baking them on top of this decadent brie, feel good that you are also getting in some vitamins and minerals 😉

Ingredients

  • 1 brie cheese wheel
  • 1/2 clove garlic sliced thinly
  • 2 tablespoons honey
  • 1/2 cup fresh blackberries

Instructions

  • Preheat the oven to 350°
  • Unwrap the brie and remove and plastic packaging. Put the brie back into its box.
  • Use a sharp knife to score the top of the brie. Make 5 small incisions going both ways across the top of the brie. You will be left with a pattern of small squares.

  • Poke the sliced garlic into the incisions you made in the top of the brie. Drizzle over the honey.

  • Scatter the blackberries on top.

  • Wrap in tin foil then bake in the oven for 15 minutes.

  • Once baked, the cheese will be oozing and runny. Unwrap it carefully then serve immediately using crackers or fresh bread.

Notes

You do not need to buy the more expensive brie wheel. If your brie comes without a box you can wrap it in baking paper and then tin foil to bake it.

Because it’s not always 5 o’clock somewhere. Or maybe you want to make something fun for the kids. Or maybe you just don’t want the extra calories found in alcohol. Or maybe you just don’t drink. Those are all wonderful reasons to make a mocktail. Another reason to make a mocktail is that this one in particular is absolutely delicious. You can never really go wrong with strawberries, chocolate and milk, can you? I didn’t think so.

For the strawberry flavor in my Chocolate Strawberry Mocktail, I actually made a strawberry simple syrup. Now, strawberries are, of course, sweet enough on their own, but by making the simple syrup you get an extra touch of sweetness and you don’t have to worry about blending the strawberries. I used Florida strawberries in my recipe, well, because they are the best 😉 But Florida Strawberry season is coming to a close, so if you don’t see them in store, then just be sure to buy strawberries from the US. California strawberries are in season through April and sometimes into May, then look for berries from the north. Just make sure they are grown here in the USA 🙂

Speaking of delicious things from Florida, I used Florida Milk in my Chocolate Strawberry Mocktail…I actually like calling it a Mock-tini too, get it….it’s a mock martini??  🙂  Ok, enough of my bad mom jokes….Why Florida Milk? Well, because like Florida Strawberries, it’s the best!  I have actually had the opportunity to go to a dairy farm here in Central Florida and it was an incredible experience. Florida Dairy Farmers don’t have a job in dairy, it’s their life. It’s a 365 day job that they truly love…because why else would you opt to work every single day?! They care and love their cows! Can you make your mocktail with chocolate milk instead of mixing white milk and chocolate syrup?

Sure can! But I do recommend still having chocolate syrup on hand to make those fun swirls in the glass…that makes your mocktail extra fancy! And everyone likes to be extra fancy.

So, what exactly is a mocktail?

Mocktails are drinks that don’t contain any alcohol. They’re perfect for people who don’t drink or for those who are looking for a healthier alternative to cocktails. Mocktails are often made with juice, soda, sparkling water, or milk. You can even add Zero-Proof liquors if you want the flavor that a certain alcohol can provide. You can also add in some of your favorite herbs or spices to give your mocktail a bit of extra flavor.

Mocktails let you appreciate the flavor of the mixers without having to worry about alcohol dominating the flavor. And in this case, you really want to enjoy the flavor of the chocolate and strawberry.

Why should you make mocktails with milk?

Drinking milk can help you stay healthy and strong. Milk does do the body good after-all 😉 Milk is a good source of protein, calcium, and other essential nutrients. It can also help you maintain a healthy weight, and may reduce your risk of developing some diseases. Making mocktails with milk is not only delicious, but it’s nutritious. That’s a win-win!

  • Martini glasses

Ingredients

Strawberry Simple Syrup

  • 1/2 cup sugar
  • 1/2 cup water
  • 1/2 cup sliced strawberries – I used Florida strawberries

Mock-tini

  • 1 cup Florida milk – I used 2%
  • 2 tablespoons chocolate syrup
  • 2 tablespoon strawberry simple syrup
  • 2 strawberries for garnish
  • Ground cinnamon and grated chocolate for garnish

Instructions

Strawberry Simple Syrup

  • Combine the sugar and water in a small saucepan and bring to a boil over medium-high heat.
  • Add sliced Florida strawberries.
  • Using a large spoon or fork, gently press the strawberries to release their juice.
  • Allow the mixture to boil for 1 to 2 minutes.
  • Shut off the heat and let it rest for at least 10 minutes.
  • Strain the mixture into a resealable jar.
  • Cover and keep in the refrigerator until ready to serve.

Chocolate Strawberry Mock-Tini

  • Combine the milk, chocolate syrup and strawberry simple syrup in a measuring cup. You can use a cocktail shaker with ice to be extra fancy 😉
  • Drizzle chocolate syrup in the empty martini glasses.
  • Pour the chocolate strawberry mocktail into the prepared martini glasses.
  • Place a strawberry on the rim of the glass and dust the top with ground cinnamon and grated chocolate.
  • Enjoy!

8 Tips for Smoking a Whole Brisket Plus a Sandwich Recipe!

We love using the smoker at my house on the weekends. One thing we love smoking is brisket! It takes awhile to cook, but man, it’s worth it. Plus, we end up with a bunch of leftovers so I can meal plan, and create all sorts of brisket recipes throughout the week.

What You Need to Know About Smoking a Whole Brisket

  1. Temperature is everything!

If you are considering smoking a whole brisket, the first thing you need to know is that temperature is key. Your smoker should be heated to 225°, and you shouldn’t wrap your brisket until it reaches 165°, but more on that in a moment.

Most smokers come with a thermometer for you to use, but if not, we also like the Taylor Measurement Rapid Response Thermometer. It gets a quick and accurate reading without us having to leave the smoker lid open long.

  1. Thaw your brisket and heavily season it

Smoking a whole brisket usually means there’s a lot of meat. All that meat needs seasoning. We use a variety of seasonings, but you need to make sure it’s seasoned all over.

What are the best seasonings for brisket?

The best brisket rubs typically have salt and pepper blended with paprika, garlic powder, and onion powder. Some of them will also have brown sugar and mustard powder. This blend will give a barbecue flavor which is perfect for the smoker.

You can also use ready made blends like Jack Daniel’s Beef BBQ Rub, Weber Dry Smoking Rub, VooDoo Chef Dust or VooDoo Chef Black, or any rub that is specifically made for beef.

  1. After seasoning let it marinate

You should cover your seasoned brisket and refrigerate it for between 12 and 24 hours. Let all those spices seep into every ounce of your meat.

  1. Don’t trim the fat yet!

While you can trim some of the fat off your brisket, when smoking it’s best to leave at least a quarter inch of fat to avoid the meat drying out. It’s best to keep all that moisture in during the long cooking process.

  1. When cooking, the meat should be fat side down

This helps retain moisture because all the juices will drip to the bottom, but will have nowhere to go. If you want tender brisket not beef jerky, you’ll thank me for this tip!

  1. Let the smoker do its work until the internal temp reaches 165°, and then wrap it with butcher paper

This will take approximately 2 hours per pound. After you wrap it in butcher paper, place it back in the smoker until the internal temperature gets up to between 203-205°.

Why not foil? When you use foil, the meat can’t breathe as much, and it can actually change the flavor.

  1. After cooking, let it rest 

Once your meat has reached 203-205°, remove it from the smoker, making sure the butcher paper is still on it, wrap the entire bundle in a clean towel, and place it in an empty cooler with the lid shut.

This simple step is one many people forget, but is critical! When you do this, it allows all those delicious juices to reincorporate into the meat, and it will be so much more tender when you cut it.

When can I eat?!? Wait at least an hour. It WILL be worth the wait, I promise. Sometimes, we wait up to 6!

  1. When you cut it, slice against the grain

Using a long serrated carving knife, slice it flat against the grain. Why should you slice against the grain? This will break up the muscle fibers of the meat, and make it much more tender and easier to eat. Look for that beautiful smoke ring….

There are lots of recipes you can create. One is a brisket BBQ sandwich. The recipe for that is below. Other ideas include brisket tacos, brisket hash and eggs, chili, grilled cheese and brisket sandwiches, pizza, quesadillas, soup, even shepherd’s pie. Honestly, the possibilities are only as limited as your imagination.

  • 1 cup coleslaw I used homemade mango and jalapeno coleslaw
  • 2 cups smoked beef brisket
  • BBQ sauce
  • 4 Pretzel Buns or Hamburger Buns
  • 1 jalapeno, sliced optional

  • Cut open your pretzel buns
  • On one half, scoop out about ½ cup of your smoked beef brisket
  • Drizzle with your BBQ sauce
  • Spoon on about ¼ cup of your coleslaw
  • Top with slices of jalapeno
  • Place the top on your sandwich, and serve with chips
  • Enjoy!

Blackberries are high in Vitamins A and C, fiber, and potassium, studies even suggest that blackberries help to reduce the risk of cancer and heart diseases, as well as work to slow the aging process. That is why I try to preserve as many of these sweet, juicy berries as I can.

Blackberries are in season for a relatively long period compared to other wild fruit – from August to late October in good years – and although it takes longer, the fruit are smaller and you run the risk of some of the fruit being spoiled bugs and nature, there is nothing as good as fresh wild blackberries picked and eaten with cream and sugar, or straight from the bush!

Here in Florida, blackberries are in season starting at the end of April. You can usually find U-pick blackberries available from May – early July. If you go pick your own, be sure to grab the black blackberries…blackberries turn from red to black before they are fully ripe.

Opt for plump, juicy blackberries that are fully ripe for the best flavor and natural sweetness. If you’re picking your own blackberries, aim for those that are deeply colored and easily release from the stem with a gentle tug.

Have you made your own jam or jelly before? I made Merlot Cherry Habanero Jelly a few years ago and I will openly it, it sacred me a little. I didn’t have a cherry-pitter, so I used my hands to get the pits out of the cherries. Imagine cherry juice all over me, my counter, MY WALLS. It was indeed one of those recipes that after about 20 minutes in I questioned why the hell I was doing it anymore.

If you are a bourbon fan, we will notice that bourbon bottle immediately….if you happen to have a coveted bottle of Blanton’s at home, don’t fear, you don’t have to use it on this recipe…but I recommend sipping on it, maybe make an Old Fashioned, while you make it. That’s what I did 😉

Ingredients

  • 1 1/2 lbs fresh blackberries about 5-6 cups
  • 3 tbsp Bourbon
  • 1 tsp vanilla extract
  • 1 lemon zested plus 1 tbsp fresh lemon juice
  • 1 cup sugar

Instructions

  • Place washed blackberries in a medium sized saute pan.
  • Use a wooden spoon or masher to mash the blackberries a bit to help break them open.

  • Next add in the bourbon, vanilla, lemon zest, lemon juice, and sugar.

  • Let the mixture sit for about 10 minutes before cooking /simmering
  • Stir and cook over medium-high heat until the mixture begins to bubble.
  • Turn the heat to low and let simmer for about 20-25 minutes or until desired thickness. ** For a thicker consistency, boil a bit longer.
  • If consuming immediately, let cool and spoon into jars or containers of choice. **Note: If canning the jars, spoon hot mixture into hot sterilized jars and process.
  • Refrigerate or freeze until ready to use.

Canning Instructions

  • Fill a pot of water and place 2 (8 oz) jelly jars in the water with the lids making sure the jars are completely submerged.
  • Bring the water to a boil and leave the jars in there for about 10 minutes.
  • Use a pair of tongs to carefully remove hot jars and lids from the water bath.
  • Spoon hot jam mixture into jars, wipe the jars to remove any liquid or jam.
  • Place lids and seals and screw on the top.
  • Use tongs to carefully place the jars back into the boiling water for another 5 minutes.
  • Carefully remove jars and set on a kitchen towel.
  • As the jars seal properly, you will hear a popping noise.

Labneh is a type of creamy cheese that is made from whole milk yogurt. It has a creamy texture and can be used in a variety of dishes, such as dips, spreads, and salads. It can also be eaten on its own as a snack. I especially love it with pita.

No, labneh is not hard to make…AT ALL. All you need is yogurt and salt. You can find these ingredients at your local grocery store, heck, you may have them in your house right now! The most time-consuming part of making labneh is straining the yogurt. However, this step is important in order to achieve the correct consistency. Once you’ve strained the yogurt, the rest of the process is easy.

  • 32 oz Whole Milk Yogurt – It’s very important to use whole milk.
  • 3/4 teaspoon salt.
  • Za’atar spice – if you can’t find this use Everything Bagel Seasoning.
  • Olive oil.
  • Red Pepper Flakes if desired.

Instructions

  • Pour the yogurt into a large bowl. Stir in salt.
  • Line another large bowl with a cheesecloth. I folded the cheesecloth in half, so that the yogurt will be placed over 2 layers. Make sure a large spoon can fit over the top of the bowl. You will be tying the cheesecloth with the yogurt in it to the spoon so that it is suspended above the bottom of the bowl. I know that sounds tricky, but it’s not 🙂
  • Pour the yogurt mixture into the cheesecloth.
  • Place a large spoon over the top of the bowl.

  • Bring the edges of the cheesecloth together, tie it around the wooden spoon.
  • The labneh will hang in the center of the bowl, but make sure it does not touch the bottom of the bowl. I actually had to switch bowls twice! I found that my 8-cup measuring bowl would have been the perfect option from the start.

  • Chill for 24 hours or at least overnight.
  • When ready to serve, place the labneh in a bowl and top with olive oil and seasonings.
  • Serve with fresh veggies, pita, and/or crackers for dipping.
  • Enjoy!

Notes

Labneh can be stored in the fridge for up to two weeks.

Personally, I have 3 packages of Noble New Crop Blueberries in my refrigerator all Florida Blueberry Season long.

  • Eat em as a snack. When healthy and delicious options are made easy, you will chose them. Forget the chips and candy! Instead, leave a bowl of fresh blueberries on your kitchen counter to snack on between meals.
  • Use as a topping. This is another easy option that involves nothing but washing these delicious berries. Top the berries on cereal, yogurt, waffles, french toast, low-fat pudding, or ice cream. To increase the nutritional impact, sprinkle some on ground flax-seed.
  • Drizzle with dark chocolate.
  • Make a Frozen Blueberry Yogurt Pie.
  • Use as a salad topping. I love making an arugula salad topped with sliced almonds, grated pecorino romano, and blueberries. Drizzle with a little olive oil. and/or balsamic vinegar. Finish your salad off with a pinch of sea salt and black pepper. You can also make your own blueberry vinaigrette.
  • Make a blueberry parfait. Select a parfait glass. Alternate layers of low-fat Greek vanilla yogurt, granola, and fresh blueberries.
  • Make a blueberry smoothie.
  • Create a blueberry dessert topping. Mix fresh blueberries with chopped mint and sugar. Use as a dessert topping for ice cream or on top of a low calorie angel food cake.

Ingredients

  • 4 slices bakery bread
  • 2 slices thick cut sharp cheddar cheese
  • ½ cup fresh blueberries I used Noble New Crop Blueberries
  • 1 tbsp butter

Instructions

  • Place butter in the cast iron pan and warm it over medium heat.
  • Once the butter starts to melt, rub the bread slices in the pan. This way the bread gets buttered. Be sure to do both sides.
  • "Toast" one side of the bread, then flip it.
  • Place a half slice of cheese on each slice of bread.
  • Scoop on 1/4 cup of blueberries (gently mash if needed) onto two slices of bread.
  • Top with the other slice of bread to form your sandwich.
  • Allow cheese to melt, but be careful to not burn your bread. Turn down heat if necessary.
  • Carefully remove blueberry grilled cheese from pan.
  • Enjoy!

Notes

Add arugula for an added flavor dimension. The peppery flavor is a fun twist!

Do you guys remember that TikTok trend awhile back that had us all folding our tortillas into yummy quesadillas? I made some killer BBQ Cheeseburger Folded Quesadillas. And this week, I made this Honey Mustard Chicken Quesadillas. You all gotta try ’em. They were actually inspired by these Chicken Apple Enchiladas over on Healthy Family Project. I love the combination of sweet and spicy, so adding the apples, caramelized onions, and jalapenos together is like a match made in heaven in my house. Toss in the chicken for protein and spread on the honey mustard for an incredibly delicious meal.

If you follow WW, you know how exiting it is to find some sauces/condiments that aren’t a bunch of points. Did you realize how much sugar is added to sauces and condiments? Tips for making Honey Mustard Chicken Quesadillas:

  • Don’t use the snack size tortillas. They will be too small once you fold them! I used the fajita size, but the burrito size will also work.
  • Don’t forget the cheese. It helps hold the layers together.
  • Don’t overload the fillings, they will spill out when you fold the sections.
  • Do make the sauce the first section you fold, if you fold the chicken or cheese first, it will fall out.

Now, I will openly admit that my husband wasn’t at all happy that I was cooking with his favorite apples. Envy apples are a cross between Braeburn with Royal Gala apples, they taste like pure bliss. Sweet, crunchy, delicious. But, since we all absolutely LOVE Envy apples in my house, I knew they would be the perfect apple to use in my Healthy Honey Mustard Chicken Quesadillas. Plus, you only need one….so you and the family can eat the rest anyway you would like 🙂 Since they stay white longer, they are perfect for charcuterie boards!

Ingredients

  • 1 apple I used an Envy Apple
  • 1 sweet onion I used RealSweet Sweet Onion
  • 1 jalapeno seeds removed if desired
  • 4 low carb tortillas
  • 1 cup shredded chicken I used rotisserie chicken
  • ¼ cup shredded cheddar cheese
  • ½ tbsp olive oil I used extra virgin
  • ¼ cup True Made Foods Zero Sugar Added Honey Mustard

Instructions

  • Heat oil in the skillet.
  • Slice onion and add it to the skillet, stir well to coat all the onion slices.
  • While the onions cook, dice the apple and jalapeno.
  • Once the onions start to caramelize, add the diced apple and jalapeno.
  • Lay tortilla flat. Cut to the center of the tortilla.
  • Add the cooked shredded chicken to the quarter directly below the cut.
  • Add the cheese to the next quarter.
  • Next add the caramelized onion/apple/jalapeno mixture to the quarter above the cheese.
  • In the final quarter, add the honey mustard.
  • Now, start folding the sections. First fold the honey mustard sauce section over the caramelized onion mixture.
  • Fold that section over the cheese quarter.
  • Finally, fold the stacked portion over the chicken section.
  • Repeat these steps with all the tortillas.
  • Add olive oil or butter to a skillet.
  • Warm the skillet over medium heat.

It’s almost blueberry season here in Florida and what better way to celebrate than with an easy blueberry dessert recipe?!  Florida blueberry season typically starts around mid-March and it will last until the end of May.  Look for Florida New Crop Blueberries, they are my favorite, you can typically start seeing them in store by the end of February! So, you have enough time to make this frozen blueberry yogurt pie a few times! This Frozen Blueberry Yogurt Tart is prepped in under 30 minutes and ready to serve in about 2 hours. You gotta give it some time to freeze 😉

This Frozen Blueberry Tart makes about 8 servings, so if you end up with leftovers…even though I doubt you will…simply toss it back into the freezer. I recommend covering it with freezer wrap and putting the pieces in a ziploc bag or freezer container.  You can leave the leftovers in the freezer for about 2 months. But again, I am thinking that you are your family will eat it long before that!

Can you use a pie pan instead of a tart pan?

Absolutely! I like using the tart pan because it was easy to get out and serve. But you could definitely use a regular pie pan…just make sure it’s freezer safe. When you are ready to serve, use a pie server to cut and serve. Then you will have a blueberry frozen yogurt pie 🙂

Ingredients

  • 8 oz lite cool whip or other brand whipped topping thawed
  • 18 oz low fat blueberry yogurt
  • 2 cups finely crushed low fat graham crackers 2 sleeves
  • 1 stick butter
  • 3 Tbsp sugar
  • 1 cup fresh blueberries

Instructions

  • Crush graham crackers in a blender or food processor. If you don't have a blender handy, you can place the grahams in a ziploc bag and roll with a rolling pin or pound with a meat tenderizer. 2 packages of graham crackers make 2 cups.

  • Melt butter.

  • In a small bowl, mix together graham crumbs and melted butter.

  • Firmly press graham mixture into tart pan, making sure to press up the sides as well.

  • Bake graham crust at 350° for 10 minutes, or until lightly browned. Set aside to cool.

  • In a medium-size bowl, blend yogurt and whipped topping until creamy and smooth.

  • Spread yogurt filling into tart pan.

  • Freeze yogurt tart for 2 hours.
  • When it's time to serve, allow 10-20 minutes thaw time depending on the ambient temperature.
  • Prep a baking sheet or cutting board with parchment paper. Carefully and gently lift tart away from the pan by pressing the bottom movable piece. An extra set of hands is helpful.
  • Place the tart on the parchment covered surface and decorate the tart with fresh blueberries and set aside graham crumbs.

  • Cut on the diagonal for extra pizzazz.

Breakfast. The most important meal of the day. But also sometimes the most complicated! I mean, there are only so many days in a row that the kids will eat the same cereal or eat a toasted bagel. Sometimes I am lucky and they will ask for a fruit breakfast wrap, and I actually have the ingredients on hand. But, the mornings where I have about 5 minutes to spare, I like to make croffles.

Croffles are a fun mix of croissant rolls and waffles. In fact, a croffle is simply a croissant roll cooked in a waffle maker. Yep, that’s it! Well, you can sprinkle them in some sugar before baking, but really folks…that’s it! And the result is delicious! Whoever thought of this trend is genius! I used our cute little XO Dash Waffle Maker, but you can use any size or style you would like.

So, the fun part is, I can make croffles even during the week for the kids before school and it only takes me a few minutes. They love ’em and feel like I am spoiling them. I serve them up with a glass of milk and a side of fruit and they have a complete meal. #momwin

There’s not much better than washing down your deliciously sweet treat with a glass of Florida Milk. If you want to get a little fancy, try this Whipped Chocolate Milk.

Ingredients

  • 1 package refrigerated crescent rolls

Homemade Whipped Cream

  • cups heavy whipping cream
  • ½ cup confectioners’ sugar
  • 1 tsp vanilla extract

Instructions

  • Open the container of crescent rolls and roll the dough into crescent shapes
  • Place the rolled dough on the waffle maker and cook until cooked throughout

Homemade Whipped Cream

  • Place your metal mixing bowl in the refrigerator for about 10 minutes before making the whipped cream

  • When ready, add the heavy whipping cream, sugar and vanilla extract to the bowl
  • Begin mixing on low and gradually increase the speed
  • Continue to mix until peaks start to form. It will be thicker (like cool whip).
  • Top your croffles with your favorite dairylicious toppings, like this homemade whipped cream!
  • Enjoy!

Notes

You can also roll your crescent roll dough in sugar before putting it in the waffle maker for a little extra sweetness. Personally, we enjoyed adding on all the toppings so that step wasn’t needed!
