Making pancakes from scratch is actually pretty easy. In fact, if you knew just how easy it was, you may never buy store bought again!  And that is precisely what we are going to chat about today, how you can make incredible homemade blueberry pancakes.  These homemade pancakes are my husband’s favorite.  And I love that they are ready in under 10 minutes!  Easy breakfast recipes are a weekend savoir in my house.  Who wants to wake up extra early and slave in the kitchen?! Not this momma!  Good news is that when I make these pancakes I get compliments from my crew…they don’t have to know that I made them in just a few minutes, right??

The fresh blueberries in the homemade pancakes are an explosion of flavor when you bit into them. I just love blueberries!  These beautiful little berries not only taste amazing, but they are known as the king of antioxidants. Blueberries are also packed with potassium and vitamin C. So, not only will your homemade blueberry pancakes taste absolutely amazing, but they are even good for you 😉

I did add ground flax seed to my pancake batter, I did that for the extra nutrients, if you don’t have ground flax seed or if you would prefer to leave that step out, you definitely can, it won’t affect the taste of your pancakes.  I am all about adding in a boost of healthy stuff when I can…especially if my husband and kids can’t tell the difference 😉

Blueberry Pancakes From Scratch

There is nothing quite like homemade pancakes topped with fresh blueberries. Oh and don't forget to add some berries in the batter!

Equipment

  • Stove or Griddle

Ingredients

  • 1 cup flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • dash salt
  • 1 tbsp ground flax seed
  • ½ tsp cinnamon
  • 1 tbsp butter melted
  • 1 egg
  • 1 cup milk – I used skim
  • ½ cup fresh blueberries

Instructions

  • In a medium bowl combine flour, baking powder, baking soda, salt, ground flax seed, and cinnamon.
  • Mix well.
  • Add melted butter, egg, and milk and mix until batter forms.
  • Gently fold in blueberries.
  • Spoon batter onto a hot skillet and cook until bubbles start to form.
  • Then flip and cook a little longer until golden brown.
  • Serve with favorite toppings and extra blueberries!
  • Enjoy!

Notes

I added in the ground flax seed for the extra nutrients, you can easily leave that out if you prefer.  It will not affect the taste of your pancakes.
You can add protein powder to the pancake mix if you would like an extra boost of protein. A general guideline is to add one scoop of protein powder (20-25 grams) per cup of dry mix and gradually stir it in. If the batter is too thick, add more liquid and whisk well.
