I L-O-V-E all the winter citrus that I am seeing in stores right now. Living in Florida I am pretty spoiled by having access to some of the most amazing citrus right in my own backyard…well, I don’t have the best green thumb, but you know what I mean 😉  I went to Sprouts last week to do some grocery shopping and I saw such a variety of winter citrus.

And seeing the variety of citrus when I walked into Sprouts definitely got my creative juices for meal planning flowing. I have always wanted to make a citrus salad…that fresh splash from the citrus paired with the crunch of greens and then the chicken…Yes, juicy chicken with perfectly cooked skin. We are talking perfection my friends! We’re talking about my Winter Citrus Salad with Chicken.

Oh, and the best part…you can have this incredible meal that I just described in about 30 minutes. Prep time is just minutes, as the only thing you have to prep is the winter citrus and make the marinade.

Speaking of my Winter Citrus Salad with Chicken, here’s the main ingredients:

  • Navel Orange
  • Pummelo
  • Mandarins
  • Lime
  • Cilantro
  • Chicken thighs
  • Rosemary
  • Orange juice
  • Honey
  • Greens

The marinade is made with the orange juice, honey and rosemary. Which makes it light yet flavorful, which makes it the perfect pairing to my Winter Citrus Salad.

Winter Citrus Chicken

Fresh, light and absolutely delicious. Crispy chicken thighs served with a fresh winter citrus salad makes for an easy weeknight meal.

Equipment

Ingredients

Marinade Ingredients

  • 1 cup fresh orange juice
  • ½ cup honey
  • 2 tbsp. rosemary chopped
  • salt and freshly ground black pepper to taste
  • 2 lb. skin on chicken thighs

Winter Citrus Salad Ingredients

  • 1 navel orange peeled and sliced into wedges
  • 1/2 pummelo peeled and sliced into wedges
  • 2 mandarins peeled and sliced into wedges
  • ½ cup cilantro and tender stems chopped
  • 1 lime
  • 3 cups baby spinach and arugula mix

Instructions

  • Add orange juice, honey, rosemary, salt, and pepper in a medium bowl stir well; add chicken.
  • Place bowl in fridge and allow to marinate 30 minutes, or until ready to use.
  • Heat a cast-iron grill pan over medium-high heat. (Alternatively, heat a gas grill to medium.)
  • Remove chicken from marinade, and transfer to heated cast iron pan cook skin-side down, flipping once.
  • Cook thoroughly, approximately 12–15 minutes.
  • While chicken is cooking prepare citrus and place the segments in a small bowl.
  • Add cilantro and squeeze in juice from one lime. Stir well and set aside.
  • Transfer chicken to a plate once cooked, and let rest for 5 minutes before serving.
  • Place spinach and arugula mixture on plate, top with winter citrus salad and chicken.
  • Garnish with additional winter citrus if desired.
  • Enjoy!

How To Plan Your First Trip To Cancun

In a quest for a vacation that offers an unforgettable good time, is Cancun, Mexico is an excellent choice. As you probably already know, Cancun is very adventurous and fun. And, you don’t need to speak Spanish to go! So, let’s start planning your trip to Cancun.

First of all, how do you plan on getting there? Depending on how far away you live, the obvious choice would be the airlines. Cancun’s International Airport (CIA) is the second-largest terminal in Mexico, and it’s serviced by all major airlines.

There are even separate terminals for charters, commercial flights, and private jets. The CIA comes fully equipped with duty-free shopping, restaurants, waiting for lounges, telephones, and ATM’s. If there are any delays, you will feel right at home. When you arrive in Cancun, note that there are no buses allowed in the airport, so your available options for travel in the big city are taxis or vans. You can buy the tickets for the vans at the counter near the baggage claims area, but you’ll be looking at about $40 per ticket, depending on your destination.

By taxi, believe it or not, going to the airport is actually cheaper than leaving. The same applies to your hotel. It is cheaper to hail a cab from outside on the curb than to call for one from your room. Although flagging down taxis seems like it’s fairly easy in Cancun, depending on when you vacation, it can be difficult.

Planning Your First Vacation To Cancun

The travel industry designates several business seasons during the year: High, Swing, or Low. Those coming from the Northern Climates find Cancun more enjoyable in the winter. However, those coming from other areas of North America and Europe find the other seasons equally enjoyable. Take advantage of these somewhat arbitrary dates; they may help save you as little as one day, hailing a cab or as much as several hundred dollars.

If you prefer not to be chauffeured around, rest assured that finding a rental in Cancun will be fairly easy as all the major car companies have locations in the airport. Or if you prefer to wait to rent a car, you will find plenty of choices downtown and in the Hotel Zone, including motorcycles, mopeds, and bicycle rentals.

Now, hitting the byways in a foreign land may seem simple enough, but it can offer quite a challenge to some. The highway systems between major cities are modern and fairly similar to the freeways seen further north. What makes them so unique, however, is their dependence on toll funding rather than taxation costs, so be prepared to ‘pay as you go.’

Auto insurance is a MUST, whether you’re driving your own car or a rental. Don’t expect your home policy to be valid in Mexico. Don’t worry; you can easily find insurance companies on both sides of the border crossing. But a better idea is to do that before you go.

Now that you know how you are getting to Cancun and how you’ll be getting around once you are there, let’s talk about some of the things to do in Cancun.

Cancun is the Mayan word for ‘pot of snakes,’ but that doesn’t stop millions of visitors that flock to the tropical paradise each year. Thirty years ago, the tourist hot spot was little more than an uninhabited, sandy-bottomed jungle inaccessible by road. But thanks to the vision and determination of former President Echeverilla, Cancun evolved into one of the premier coastal tourist destinations in the world.

140+ hotels, comprised of over twenty-four thousand hotel rooms plus hundreds of restaurants, cater to the city’s visitors. Some of them decide to stay, which is why Cancun is home to over ten thousand ex-patriots from the United States, Canada, and from as far away as Italy. But what draws tourists to Cancun year after year? The answer would depend greatly on who you ask.

The majority of tourists flock to Cancun for its beaches. The powdery white sand that’s cool even in the baking sun and the glistening aquamarine waters act as beacons for those seeking a tropical escape. Along the fifteen-mile coastline of Cancun, beachgoers can find everything from a secluded spot from which to relax and take in the stunning scenery to livelier spots with great nightlife, bars, clubs, and a party scene, and every kind of beach in between.

How To Plan A Vacation To Cancun

For tourists wanting to bring the beach party indoors, there are several beach hot spots with a party atmosphere such as Bulldog Cafe’, Carlos & Charlie’s, Dady’O, and La Boom, to name a few. Still, other visitors may want to take the party out on the water. Party boats or ‘booze cruises’ as they are commonly referred to offer floating party-goers an opportunity to get their ‘sea legs’ while dancing the night away atop the Caribbean.

The Caribbean Carnaval Cancun is a party barge that offers costumed dancers putting on shows, Reggae music, an open bar, and buffet, as well as a moonlight cookout once the barge reaches its destination. Other party cruises in the area are the Cancun Queen, which is a Mississippi paddlewheel boat, Pirate’s Night, Captain Hook, and Romance Cruise.

For the tourists searching for adventure, Cancun can deliver that as well. There are many points of interest waiting to be explored. Zona Arqueologica de Tulum is one of the most prominent archaeological sites of the Yucatan peninsula. The historical site is situated on a cliff, includes its own beach, and is chock full of Mayan ruins.

Explore the caverns, caves, and lagoons, and swim with the ‘kissing fishes’ in Cancun’s natural aquarium Xel-Ha. Kayak through the Sian Ka’an Reserve and get up close and personal with a variety of wildlife, most of which are on the verge of extinction, or tour the twenty Mayan ruins sites in the area.

For the active tourist, Cancun offers some of the best snorkeling in the Caribbean, along with scuba diving, horseback riding along the coast, deep-sea fishing, sailing, and jet skiing. For those wanting to try their hand at a new experience, scuba instructors and water sports guides are readily available at many locations within Cancun.

There are also many areas in Cancun where the kids and the kids-at-heart can have fun, too. El Mirador at Playa Delfines has a terrace specially designed for kite flying. Watching the colors and shapes soaring in the tropical breeze is a favorite pastime for many visitors.

Swim with the dolphins at Xcaret, or simply enjoy the local atmosphere at one of the city’s many shopping plazas such as Plaza Kulkan or Plaza Flamingo.

Whichever types of recreation you choose to fill in your vacation itinerary, you may find that you just don’t have time to do it all. That’s okay; Cancun understands. You can pick up where you left off next time, just like the rest of the tourists do who return to the city year after year.

The fact remains that Cancun is the number one destination for North American holidays, and it ranks as number ten in the world for a holiday travel destination, making it a very popular city, and therefore, keeping its name front and center when it comes to news.

More than 23 million tourists visit Mexico each year, almost half of them repeating American visitors. Is there anything tastier than hot cocoa on a cool evening? I can think of one thing – spiked hot cocoa!

What is spiked hot cocoa? And what is the best thing to use to create it? I’m answering all of this and more in the words that follow!

What is Spiked Hot Cocoa?

Spiked hot chocolate is literally hot chocolate with booze in it. That’s it! I’ll bet you were expecting a fancier answer, but really there’s not much more to it.

What is the best alcohol to put in hot chocolate? Well, the answer to what to spike hot chocolate with really depends on your tastes. With that in mind, here are 8 ways I like to make boozy hot cocoa. Read through them all, and decide which one sounds the best to you.

  1. Coffee liqueur – To put it mildly, it’s simply damn delicious. I’ve even seen people just mix hot cocoa into their coffee for a chocolate latte in the mornings. The idea of making a hot toddy with coffee liqueur sounds heavenly to this coffee lover.
  2. Peppermint vodka or peppermint schnapps – The winter months wouldn’t be complete without a generous dose of mint-flavored goodness.
  3. Amaretto liqueur – A popular brand of amaretto liqueur is Disaronno, and the almond-like flavor works perfectly with pretty much any of your favorite hot cocoa recipes.
  4. Tequila – But not just any tequila. I recommend espresso tequila such as Patron XO Cafe. This gives you the bite of tequila with the delicious flavors of coffee and cocoa. It’s perhaps the best spiked hot chocolate recipe addition that will please an entire crowd.
  5. Bourbon – What turned me onto this idea was Dough in South Tampa. They sold a boozy chocolate milkshake with bourbon. Who knew that chocolate went that well with bourbon? Apparently they did!
  6. Whipped cream vodka – Pinnacle sells a yummy one that would be perfect for your boozy hot chocolate recipe. Marshmallow vodka by Smirnoff or Pinnacle would be delicious too if you can’t find the whipped cream vodka
  7. Red wine – Now bear with me here. Red wine pairs amazingly well with chocolate. So why not try it with hot chocolate?
  8. Spiced rum – Spiced rum has more spices and caramel coloring in it giving it a sweet signature spice taste that goes together with chocolate as if they were meant to be.

What to Add to Hot Cocoa

Some of the most common additions for hot cocoa are marshmallows, caramel, whipped cream, and even maple syrup. For peppermint flavored hot cocoa you could add a peppermint stick or a candy cane. Atop your whipped cream you could also add powdered sugar or the shavings from bittersweet, semisweet, or a blend of both chocolates.

How to Make Spiked Hot Chocolate – The Right Way

First, make your hot cocoa. You don’t want to add any booze before heating your beverage because it will cook out the alcohol, and can often distort the intended flavor as a result.

After you have made your hot cocoa add 2 oz of your favorite booze. If you’re opting for red wine you may want to add 4 oz to get more of the flavor into your cup.

Stir in your booze, and then add your whipped cream and toppings. Serve immediately.

How to Make a Boozy Hot Chocolate Bar

If you will be entertaining for the holidays, a boozy hot chocolate bar might be a fun addition. To make a spiked hot chocolate bar you will need:

  • Cups
  • Stirring sticks
  • Whipped cream
  • Chocolate shavings
  • Caramel syrup
  • Maple syrup
  • Marshmallows
  • Peppermint sticks/crushed peppermints
  • Toffee bits
  • Pirouette cookies
  • Biscotti
  • Coarse sea salt – perfect for a salted caramel topping
  • Hot chocolate – I recommend making a large batch of your favorite homemade or instant hot cocoa and putting it in a crockpot, and then leave it on low heat throughout the party. Make sure it’s heated up before you pour it into your crockpot though! Then, add a ladle so people can serve themselves
  • 2 oz bottles of a variety of liquors – or to save money you could put out the full sized bottles of several liquors with some shot glasses for people to fill up the amount of booze they would like to add to their own beverage
  • Coffee – in case people want to add coffee to their spiked hot cocoa or want a spiked coffee in place of cocoa

The possibilities for what you can add to your hot chocolate bar are truly endless. You could also place some desserts on your bar as well.

Instructions

  • Heat the water to the perfect beverage temperature.
  • Stir in Hot Chocolate Mix and mix until dissolved.
  • Add Vanilla Vodka & Caramel Vodka.
  • Top with whipped topping.

Every year we bake a LOT of cookies and deliver them to neighbors in our subdivision. My friends and I used to walk or drive the golf cart with the kids as they rang doorbell after doorbell to spread a little holiday cheer. Now, the kids are older, but they still make their cookie deliveries. We schedule a day or two in the kitchen where my daughter actually heads up the baking process and her and her friends bake dozens of cookies. Since they do all the baking, my friends and I handle the packaging them up so that the kids can deliver them safely.

Milk is an important part of any diet, milk is not only good for you but it tastes great too.

Incorporating dairy products into your daily diet and recipes can enhance nutrition, vitamins, and minerals which are important for growing children and adults.

There are obvious ways to include dairy in meals. You can always serve a fresh, cold glass of milk at meal, snack time, or cookie time.   • 16 oz. melting white chocolate
  • ½ cup approx crushed candy canes

Instructions

  • Preheat oven to 350 degrees. Prepare baking sheets with silicone liners or parchment paper or by using cooking spray.
  • In a medium mixing bowl whisk together flour, cocoa powder, baking soda and salt and set aside.
  • In the bowl of an electric stand mixer fitted with the paddle attachment mix together butter, granulated sugar and brown sugar until well combined.
  • Mix in one egg at a time then blend in milk, vanilla extract and peppermint extract.
  • With mixer set on low speed slowly add in flour mixture and mix just until combined.
  • Scoop dough out by a rounded tablespoon and place on cookie sheets about 1-2 inches apart.
  • Bake in preheated oven about 8 minutes (cookies should appear slightly under-baked). They will be soft and a little chewy.
  • Let cool on baking sheet several minutes then transfer to a wire rack or plate to cool.
  • Once cookies are completely cool, melt white chocolate in a microwave safe bowl per package instructions.
  • Dip half of each cookie in white chocolate or drizzle with white chocolate then transfer to parchment paper and sprinkle with peppermint bits. Chill to let chocolate set about 10 minutes or more.
  • Enjoy with a cold glass of Florida milk.
  • Store leftover cookies in an airtight container or, better yet, share them with friends and family!

Many travel to Cancun every year for the warm weather and beautiful beaches. But is it just another day in paradise? Well, the sound of the rain against the window can wake you up in the morning. Fifteen minutes later, it can go back to being sunny, hot, and humid. Thirty minutes after that, and a patch of dark storm clouds can roll in. Welcome to the summer weather in Cancun, Mexico. Welcome to paradise. Personally, I am okay with a little bit of rain if I get to be in Cancun!

On average, Cancun gets about two hundred forty-five sunny days a year. The other one hundred twenty days of the year, it can be cloudy, rainy, and once in a while, there is even have a little hurricane or two. Cancun has several tourist seasons per year. From mid-December through April, Cancun is in the midst of its highest season.

From July 1 through the end of August, schools let out, and its summer season. The rest of the year, you will experience a low season, when hotels have lower occupancy rates in May and June, and when it is in the throes of hurricane season from September through mid-December.

Traveling to the area in the fall off-season might just be the ticket for you. Fewer crowds, lower temperatures, and lower prices may just offset a mid-afternoon shower.

Weather In Cancun Mexico

The water in the Caribbean may be cooler in the fall, but we’re still talking about temperatures that may climb into the ’80s, so an 80-degree dip might be a beautiful thing. Tours to places like Chichen Itza, Coba, or any other Mayan ruins are also more enjoyable during the fall unless you have no qualms about 100-degree temperatures and 100% humidity in the interior of the Peninsula.

If you do go in the summer (or any time really), make sure to take items like sunscreen, very light clothing (even for nighttime outings), and maybe even mosquito repellent in your suitcase, as these items are in shorter supply and at higher prices in the Hotel Zone.

The whiteness of the sand makes sunburn a real possibility (think snow burn from your winter ski trips), so make sure you apply and reapply sunscreen and drink plenty of liquids to avoid dehydration. Tequila and Coronas do not count as rehydrating fluids, as much as we’d like them to.

One of the most important seasons to take note of isn’t a tourist season, but rather jellyfish season. Jellyfish, called medusas in these areas, like to come down to the warmer waters of the area and do a little partying of their own the last couple of weeks in April. Before jumping into the sea, it’s advisable to check with hotel personnel first to avoid these little critters.

Sometimes the weather can be just a tad unpredictable, no matter what the season, so take precautions. If you are taking a trip south to one of the virgin beaches along the coast, take a collapsible umbrella or plastic poncho. This could be a lifesaver. Boy scouts aren’t the only ones who should be prepared.

Though generally considered safe and effective, human studies of resveratrol’s effects are still very limited. This red wine antioxidant is said to have therapeutic and health-promoting benefits. Maybe that’s why I find drinking wine relaxing?? Hmmmm…..

Since the early nineties, resveratrol, a compound found in red wine, has achieved significant attention in the media for its amazing antioxidant powers. Several new studies about resveratrol have led to a piqued interest in this interesting phytoalexin, and some doctors and nutritionists now believe that it can combat nearly every health problem: obesity, heart disease, cancer, and even exposure to radiation. Though generally considered safe and effective, human studies of resveratrol’s effects are still limited.

Scientific Studies of Resveratrol’s Positive Effects

There is no question that resveratrol offers antioxidant benefits and other positive influences on living organisms. Several studies of simple, short-lived animals have demonstrated an increased lifespan for worms and fruit flies given moderately large doses of the compound. Peer-reviewed examinations of rats and mice have shown that resveratrol consistently prevents cancer, reduces inflammation, and slows the aging process. These claims, though made based on animal studies alone, are used by many supplement manufacturers and wine companies to support the daily addition of resveratrol to the American diet.

Animal studies of resveratrol’s effects are quite promising, but they have limitations. No laboratory setting can enable a rat’s biology to closely mimic a human being, and many previous, unrelated rodent tests have revealed misleading information. Without placebo-controlled, double-blind, peer-reviewed studies of human beings, no one can be completely certain of the efficacy of resveratrol in treating or preventing any disease: researchers can only speculate and make educated assumptions.

Does Resveratrol Explain the French Paradox?

As early as 1819, physicians began noticing an unusual phenomenon: despite the fact that the French consume a diet high in saturated fat and cholesterol, they appear to suffer from a surprisingly low incidence of heart disease. This puzzle has now fascinated health care providers for nearly two centuries, but some believe that we are closer than ever to understanding the reason for the relatively good health of the French. Since its discovery, many people have believed that resveratrol in red wine plays a key role.

While this theory for explaining the French paradox is somewhat credible, it does not alone appear to account for the phenomenon. In laboratory settings, only mice who were given very large doses of resveratrol showed the significant health benefits associated with the antioxidant– and only massive amounts of wine intake could match this level. It is most likely that resveratrol plays some role, but that other aspects of the French diet also account for the paradox.

So, is drinking red wine actually good for you? I would like to think so 😉

Side Effects, Warnings, and Interactions of Resveratrol

Like many other plant-based foods and extracts, including soy and fenugreek, resveratrol contains plant-like compounds that mimic the role that estrogen plays in the human body. While no demographic or animal studies have confirmed any negative effects, some skeptics fear that these compounds may interact with birth control pills. Some studies have shown that resveratrol may help prevent cancer.

While there is little reason to assume that resveratrol has these or any other negative side effects, it is important to note that long-term, human studies of its cumulative effects are still limited. Though resveratrol shows promise in treating and preventing many common ailments, its safety and efficacy still remain somewhat unconfirmed for human consumption.

So, like most things in life, enjoy that red wine, in moderation.

Who else loves biscuits? My kids actually get excited when they hear the pop of that container opening up. But there are only so many times we can have biscuits as a side to dinner or make biscuits and gravy before we are craving something a bit different. Something delicious, yet easy to make. Something that we all like. And something that can make that weeknight dinner easier. Something like this BBQ Chicken Bubble Up Bake.

This is actually the first time I have made a bubble up bake and I was excited and nervous all at the same time. There is a delicate balance between the sauce, the meat and making sure the biscuits brown up and don’t get soggy.

What is a Bubble Up Bake?

When you make a casserole with refrigerated biscuits, they bubble up when baked. Hence the name, Bubble Up Bake.

Most Bubble up casseroles I have seen are breakfast casseroles. So you have the addition of eggs for extra moisture. But I wanted a dinner bubble up bake. So I used a mixture of BBQ sauce and milk for that creamy sauce that would keep the chicken and biscuits from drying out.

The milk and BBQ sauce make the perfect sauce for this dinner casserole, BBQ sauce alone would be a bit too thick and you would run the risk of it caramelizing and leaving your whole dish dry. The milk makes it a little creamy and it even adds in some extra nutrients 🙂

I also added caramelized onions, well, because they are amazing. Now caramelizing onions does take a bit of time, but I have found that if I use my cast iron pan it actually speeds up the process. That may not happen for you, it may be that my pan is just magical when it comes to caramelizing onions, so in your case, make sure you allow yourself enough time to make sure those onions get nice and soft. Caramelized onions are a thing of beauty…and they will add amazing flavor to your casserole.

  • Apple
  • Shredded cheddar cheese
  • A little flour and olive oil

I had bought a family-size package of chicken breasts from the grocery store (it was over 4 lbs!) so I baked it all up and used it in various dishes throughout the week. Including this BBQ Chicken Casserole. I simply diced up 1.5 pounds of the chicken and used that. You could also use shredded chicken or rotisserie chicken if you prefer.

How did the apple get in there?

I love apples. And when fall comes around, I like to use them in just about everything. Apples don’t have to be used for just sweet dishes, they are an excellent addition to savory dishes as well! That little bit of sweetness and crunch added the perfect later of flavor and crunch to this BBQ Chicken Bubble Up Bake. Plus, think of this flavor combination….sweet, tangy, a little spicy…topped with cheese and biscuits. What more could you possibly ask for in one meal?!

Ingredients

  • 1 package Grand Refrigerated Biscuits I used the honey butter flaky layers
  • 2 medium sweet onions thinly sliced
  • 1/2 tablespoon olive oil I used extra virgin
  • 1 jalapeno diced – seeds removed if desired
  • 3/4 cup barbecue sauce I used Sugar Free
  • 1 ½ lbs cooked chicken diced
  • 1 cup 2% Florida milk
  • 1 cup shredded cheddar cheese
  • 1 apple diced I used a gala
  • 1 tsp flour

Instructions

  • Preheat oven to 350°F. Spray 13×9-inch baking dish with cooking spray and set aside
  • In a large skillet, heat olive oil and add onion slices.
  • While onions are cooking, separate the biscuits and cut each one into 6 pieces.
  • Once onions are nice and caramelized, add in the diced jalapeno.
  • Sprinkle in the flour, stir well.
  • Slowly pour in milk, stir well.
  • Add in BBQ sauce, stir well.
  • Add in diced chicken and diced apple, stir to coat.
  • Carefully pour the BBQ chicken mixture into prepared baking dish. Stir again if needed.
  • Top with biscuit pieces.
  • Sprinkle on cheddar cheese.
  • Bake for 25 – 30 minutes until top of biscuits are golden brown.
  • Enjoy!

You all know that I am not a master baker, so for me to turn the oven on and bust out a rolling pin (with my daughter’s help, of course) you know these have to be good.

Is Gingerbread More Appropriate for Thanksgiving or Christmas?

Both! According to The Post Gazette, gingerbread is perfect for any time of year. In fact, it’s a year-round thing!

You’ve heard the old nursery diddy I’m sure.

Run, run, fast as you can,

You can’t catch me, I’m the gingerbread man!

If that doesn’t take you back, I don’t know what will!

Speaking of going back in time, let’s do a quick history lesson on ginger.

First cultivated in ancient China, ginger root was regularly used for medicinal purposes. I even mentioned ginger in my post “Foods That Boost The Immune System.” Soon, ginger spread to Europe and was favored as a spice in preserved meat during the Middle Ages because it could actually disguise the flavor of the meat itself. Has your meat gone bad? With a little ginger spice added, you may never know. Yikes!

Fast forward to our time, and some people use ginger these days for upset stomachs and nausea. However, many people also use it in cooking, and baking. For example, I use it in a lot of my Asian inspired recipes like my Korean Beef.

What about gingerbread cookies though?

Interestingly enough, the first recipe for gingerbread has been traced back to Greece in 2400 BC. It wasn’t until the 10th century that a recipe for gingerbread was developed in China. And, by the late Middle Ages, gingerbread recipes were being modified by Europeans to make into hard cookies. Only instead of icing, they would use gold leafing to decorate them.

In other countries, including Germany, France, and Holland, gingerbread cookies are sold all year long. The flavors of gingerbread are so bold, and yet so comforting too. Since other countries use gingerbread year round, and simply change the shapes to fit the season, why shouldn’t we be able to have it at Thanksgiving? I think we should!

How Much Ginger is in a Gingerbread Cookie?

Believe it or not, many recipes, including the one below call for a mere two teaspoons of ginger. Some call for even less! The main ingredient that gives them their warm brown color is molasses. Why do you need so little ginger? Because it’s so strong! The more you add the spicier your cookie will taste, and for some people that bold flavor can be too overpowering.

  • 2 cups all-purpose flour
  • 1/3 cup packed brown sugar
  • 1/3 cup mild molasses not blackstrap
  • ¼ cup apple cider
  • 1/3 cup coarse sugar
  • 1/3 cup unsalted butter
  • 1 Tbsp cinnamon
  • 2 tsp ginger
  • ½ tsp nutmeg
  • ½ tsp salt
  • ½ tsp ground cloves
  • ½ tsp allspice

Instructions

  • Heat oven to 350°
  • In a small bowl, whisk together melted butter, molasses, and apple cider and add to flour mixture

  • Place dough on lightly floured surface. Knead for 30 seconds to make it smooth. If too much flour is used, the dough will crumble. If this happens add a few drops of water and work in

  • Divide dough in half and roll each half between two pieces of parchment paper into an approximate 6”x12” rectangle

  • Remove top piece of parchment and sprinkle turbinado or other course sugar all over the dough (3-4 Tbsp)

  • Lay parchment on top of the rectangle and gently press sugar into dough with your hands

  • Using a pizza cutter or knife, and a ruler, cut each rectangle into 1/4” or 1/3” strips. Edges of the strips can be uneven, it adds more character to the final product. Do not separate

  • Slide parchment paper with strips onto a baking sheet, and bake for 12-15 minutes
  • Reduce heat to 200° and immediately slide parchment onto a cutting board and use a knife to cut through strips before they become brittle

  • Return parchment to the baking sheet and sprinkle with additional turbinado or other coarse sugar (Try sprinkling with colored sugar for the holidays!)
