How To Plan Your Stay In Calistoga

My husband and I got back a visit from Wine Country a few weeks ago. We planned to stay in Yountville for a few nights and to visit some of our favorite Napa Valley wineries, then we wanted to experience somewhere new.

We stayed in Calistoga for the first time. Actually, it was our first-ever visit to this quaint town in California’s wine country. Calistoga just celebrated it’s 100 year birthday not too long ago, and I will have to admit, it looks great for it’s age. Calistoga is an adorable, well-preserved town in California’s wine country. Its setting is the north end of the Napa Valley, where forested Mt. St. Helena rises above some of the most beautiful vineyards.

The town itself is consciously old-fashioned, the main streets of the town recall the past. Calistoga is a Designated Historical Landmark, where fast-food establishments are not allowed.

The best way to get there is drive up the long fertile Napa Valley, through the busy city of Napa, past fields lined with stiff hedges of splayed grapevines. Follow the Silverado Trail, take Route 29, or ride the celebrated Wine Train past the valley vineyards and the hills like green corduroy, tufted with gently curving rows of grapes. You’ll pass wineries with famous names like Stag’s Leap, Domaine Chandon, and Charles Krug, though the train only goes halfway to Calistoga before it turns around.

Highway 29 passes through quaint Yountville, where the first vines were planted. Then other small towns, and cozy St. Helena, in the valley’s green heart. Past that is Bothe State Park, a relaxing place to camp, or to stop for a while and enjoy the views.

Then comes Calistoga, set far from the everyday world, beautifully preserved, between the double-peaked mountain and the vines, seemingly set back in time.

Napa County is located north of the San Francisco Bay Area, and the weather can change rapidly, so it is advisable to plan for four seasons in one day. A good alcohol-free start to the day is to head north for Calistoga and the Old Faithful Geyser. This is a nice drive through the whole valley and past many vineyards. The Old Faithful Geyser costs $10 per adult, and visitors get to see the geyser erupt and watch a National Geographic documentary about the owner of the geyser, who believes that she can predict earthquakes using the erupting times. The place is very retro and great for photos, but a bit basic on facilities. After visiting the geyser, it is well worth visiting Calistoga, which is small but has some great places for brunch. Another must is to stop at the “Welcome to Napa Valley sign” just outside of Calistoga, which is a great photo opportunity.

Activities for visitors to Calistoga include wine tasting, casual yet delicious restaurants that pride themselves in local roots, mud baths and bathing in mineral spring water, spa treatments, hiking and biking, and exploring the small pedestrian-friendly town.

Wine Tasting

There are plenty that you can simply walk to right on Lincoln Ave. If you are up for a short drive, we visited CADE, Neal Family Vineyards and Rombauer Vineyards while staying in Calistoga.

CADE Winery

CADE is located on the coveted Howell Mountain. Howell Mountain is known to produce some of the best Cabernet Sauvignons available. So, it’s no surprise that CADE is known for it’s impeccable Cabernet Sauvignons. Since they sit on Howell Mountain, you are promised a view that is just as good as the wines. We started our tasting here with their very well-known Sauvignon Blancs, then moved into the Cabs. If you have never had a CADE Cabernet, you are missing out. You will taste dark berry notes, with a touch of spice, all delivered with a velvety texture and lush tannins and bright acidity.

Once we left CADE, we drove a bit on Howell Mountain to Neal Family Vineyards.

Wine Tasting in Calistoga

I was pleasantly surprised when we pulled in to this family-owned winery. The beautiful building was surronded by gorgeous grounds. Flowers. Koi pond. Handmade copper benches. The friendliest staff. This was the first time we have evee had their wines, and we came home with a case. They make outstanding Cabernet Sauvignon, so that is what they mainly pour. We also tried their Zinfindeal. We met the daughter of the owner while we there as well, this family loves what they do…and they do it well.

Best Wineries In Calistoga California

Rombauer Vineyards

You may be familiar with Rombauer due to their world-famous Chardonnay, a tad buttery and 100% delicious. We sat in their gorgeous gardens while we sampled Sauvignon Blanc, Chardonnay and a few red wines that were reserved for Club Members. The view. If you have never been to Rombauer before, be sure to allow for at least a 1 1/2 hour visit, you will need at least that long to start to appreciate the view. Seriously, one of the best views in Napa I have ever seen. Breathtaking.

Rombauer Vineyards is located at 3522 Silverado Trail N, St Helena, CA 94574.

A few famous wineries in Calistoga are Schramsberg and Clos Pegase.

Schramsberg Vineyards is known for their sparkling wines. It is located on Schramsberg Road, which is accessed off Highway 29, the main street of Calistoga.

Clos Pegase is a unique winery that was designed by Michael Graves. Tours, free, no reservations necessary, include a look at some of the amazing art collection of Mitsouko and Jan Shrem, the owners. An oak shaded picnic area is a fine place to eat a bag lunch or something put together from the Clos Pegase deli. The wines seem divinely inspired as well. To reach the winery, go south on Highway 29, then left on Dunweal.

This is just a sampling of the wineries in and around Calistoga. The valley is full of vineyards, almost all offering tours and tastings. Some do require reservations, so be sure to check that out before planning your wine tasting day.

Best Places For Mud Baths in Calistoga

Hot Springs, Mud Baths, Spa Services Oh My!

Calistoga won its first fame as a resort town, where visitors relaxed in the mineral water spas. Calistoga water is still sold throughout California.

Mount View Spa is an example of the spa offerings in Calistoga. My husband and I visited the The Mount View Spa and relaxed in the small boutique environment. We actually took our very first mud bath! I officially look 10 years younger…well, I wish, but it was a very rejuvenating, therapeutic experience. We relaxed in the geo-thermal jacuzzi and allowed our bodies and mind to sink deeply into serenity.

You can enjoy mud baths, salt scrubs, sauna, and massage, as well as other spa services. Located right in the historic Mount View Hotel, it is right downtown.

There are many spas and springs are located in the area, as the area is indeed known for it’s hot springs and mud baths. If you are in Calistoga, I highly recommend trying one!

Hiking and Biking

Robert Louis Stevenson Park, just north of town, is named for the famous writer, who honeymooned there. Visitors can hike through pine and fir to the double tops of Mt. St. Helena, or follow a milder trail through oak, madrone, and bay to the Stevenson Memorial. The trailhead is at a parking lot about six miles north of Calistoga on Highway 29.

An excursion to the Petrified Forest is also fun, especially if you came to Calistoga with the kids. This is a privately owned attraction a few miles west of Calistoga. Tours are available of redwood trees blown down in a volcanic explosion and petrified in layers of ash.

For mountain bikers, a tough but gorgeous ride is the Oat Hill Mine Road (really a trail) that starts from the intersection of the Silverado Trail (really a road) and Highway 29. There is parking near the trailhead.

This difficult trail was once a stagecoach route. Then it was a 4-wheel-drive route, which was closed to vehicles as too dangerous. Yet it makes a lovely, challenging out-and-back hike or bike. It is about 9 miles one way, with additional trails available at the top.

Another option is a wine tasting tour by bicycle. The Calistoga Bikeshop, among others, will rent equipment, arrange tastings, and pick up any wine you might buy. Other vendors offer group tours, as well.

Enjoy a Dinner & A Movie

On the outdoor patio of the Mount View Hotel & Spa you can actually enjoy an incredible dining experience and then watch a classic movie in antique movie theater chairs. We did this while we were in Calistoga and really enjoyed it! We were able to order from a menu that featured Amaro and Johnny’s (more on both of these restaurants is listed below), we were served outside and then the outdoor movie started when we were done. It was like a drive-in-movie experience meets fine dining…without the car. This experience is available Friday – Sunday night.

Visit the Old Faithful of California

Calistoga has a “geyser,” the Old faithful of California. It goes off at regular periods the way a geyser does, shooting a plume of water high in the air. However, the feature is not what it seems; it was created by someone drilling a well. It’s a fine spectacle, all the same.

There are many options to eat in Calistoga, most of which you can walk to right on Lincoln Avenue. Here are just a few of my recommendations of places to eat in Calistoga.

Amaro Italian Kitchen

Here you will find classic Italian dishes such as gnocchi, pastas, braised meats and pizza. There is also an Italian-focused wine list, as well as some of your favorites through Napa Valley. My husband and I ordered from Amaro for our Dinner & A Movie experience, I ordered the gnocchi and my husband had the braised meat and pasta. Both were incredible! We paired our pasta dishes with Generations from Charles Krug.

Johnny’s Sports Bar

Rooted in history and that small-town hospitality. Here you will find a wide array of appetizers that are perfect for sharing, soups, salads, sandwiches and plenty of hand-crafted cocktails, beer and wine. Named after Johnny Ghisolfo who actually build the Mount View Hotel in 1919 and opened “Johnny’s” restaurant & bar open after the lifting of Prohibition by Congress in 1933. The bar did close in 1984 but reopened in 2016 in honor of John B. Ghisolfo.

Johnny’s Sports Bar is located onsite at the Mount View Hotel & Spa at 1457 Lincoln Ave, Calistoga, CA 94515. They are open for brunch on the weekends, Lunch Thursday – Monday and dinner nightly.

TRUSS Restaurant and Bar

Prior to visiting Elusa we enjoyed a best ever lunch at nearby TRUSS which boasts beautiful northeast valley views in a very comfortable open air (tall ceilings plus options to dine outside) setting. The housemade chips and onion dip are quite famous here. Being onion dip fans there was sincere agreement this one was the best ever. Casually mentioning this to a friend at Bevan Cellars the next day she smiled brightly admitting that she and others often visit just for this wonderful appetizer. The Calistoga Bowl is scrumptiously delicious being meticulously constructed and don’t forget the truffle fries! Wine list is exceptional and by the glass choices include the local Robert Sinskey (organic sourced), a winery that is currently closed until their new visitor center opens near Carneros. The dessert list looks phenomenal and wait staff is very friendly. We finished lunch an hour prior to the Elusa tasting and one of our waiters gladly contacted to winery successfully moving the appointment forward.

Calistoga Inn Restaurant & Brewery

The Calistoga Inn Restaurant & Brewery is located right on Lincoln Avenue as well. We sat outside on their outdoor patio, listened to live music and enjoyed delicious food and wine. We split the Paella and the crab cakes…both were absolutely amazing! And the paella is definitely big enough to split.

Sam’s Social Club

While we didn’t get the chance to eat here, we had several locals that we should make time to try it on our next visit. Sam’s is named after resort founder Samuel Brannan, is the place to meet for food that is seasonal, creative and thoughtfully prepared. Sam’s is open for breakfast, lunch and dinner in a fun, vibrant atmosphere.

Café Sarafornia

We walked here for breakfast each morning. Sarafornia is all about comfort food, and that is exactly what we had. I had the Brennan Benedict, which is their spin on Eggs Benedict, my had tomato slices, portobello mushrooms, bacon, and their famous red-eye sauce. It was so good, my husband ordered it the second morning…and I ordered it again 🙂 They also make a good cup of coffee!

Café Sarafornia is located at 1413 Lincoln Ave, Calistoga, CA 94515. They are only open for breakfast and lunch, they close at 2 PM.

We spent our days walking around Calistoga, wine tasting , eating delicious food, and sitting by the pool at the hotel. We were there for the Vino & Vinyl hour where were we served incredible Califorina wines while sitting poolside enjoying old-school tunes and cooling off by their poolside misters. Can you really imagine a better way to spend the afternoon?

Is It Ever Too Late To Start Saving For College?

Remember when your kids were small and everyone told you that time flies. “Don’t blink, they will be in college before you know it.” But as you were changing a diaper for the millionth time, college seemed so far away.

Then came the kids’ activities. Sports aren’t cheap! And neither is all the equipment that goes along with them.

The budget just didn’t allow for an extra monthly expense…and college still seemed so far away. I mean, the kids were just in grade school! We still had plenty of time!

Then came the driving days, which brings on the cost of a car, the extra gas, the car insurance…oh man, kids don’t get cheaper as they get older.

Maybe now, finally, you feel like you have that little bit of wiggle room in your budget. The credit card bills aren’t as high, the family car is paid off, you have used the last few years to pay down debt. You have some room in the monthly budget.

But, is it too late to start saving for college for the kids? Now that they are in their teens…is it too late?

It’s no secret that I love a good glass of wine, but I also enjoy creating wine cocktails. Especially in the summer. And I just love the color of my newest wine cocktail creation…the blue color reminds me of the ocean, hence the name Ocean Waves 😉 That beautiful blue color is due to Blue Curacao. And since this vodka wine cocktail is blue, it would be a fun cocktail to add to your 4th of July, Labor Day, and Memorial Day drink menus.

What is Blue Curacao?

Blue Curacao is a citrus flavored liquor. It gets it’s flavor from the dried peel of the bitter orange laraha. It is used in many popular drinks thanks to it beautiful color and simple citrus flavor that make sit easy for mixing.

The citrus notes of the Blue Curacao made my selection of wine easy…I used Sauvignon Blanc in this wine cocktail. Sauvignon Blanc is known for it’s crisp, citrus notes.

To make my Ocean Waves Vodka Wine Cocktail you will need these ingredients:

Blue Curacao
Vodka
Sauvignon Blanc
Sparkling Water – I recommend using lime or orange sparkling water to pair with the other citrus flavors going on in this cocktail

While my Ocean Waves Vodka Wine Cocktail is absolutely delicious, make note of the ingredients. Three different alcohols. Yes, this cocktail will pack a punch. Don’t let that pretty color fool you into thinking this a simple wine spritzer or cooler.

Ingredients

  • 1 oz Blue curacao
  • 1 oz vodka
  • 2 oz Sauvignon Blanc
  • Ice
  • Sparkling water I recommend using orange or lime to enhance the citrus notes of the sauv blanc and blue curacao
  • Pineapple for garnish if desired

Instructions

  • Fill your favorite glass with ice
  • Pour in vodka
  • Pour in blue curacao
  • Add in the Sauvignon Blanc
  • Stir gently
  • Top with sparkling water

For my parents 45th Wedding Anniversary, my brother and I sent them back to The Broadmoor. I called the resort and spoke with the Special Services Concierge (Hannah) and she did absolutely everything possible to make sure their anniversary was one they would never forget. When I spoke with her on the phone and when she answered every single one of my emails, she couldn’t have been more helpful. She told me that The Broadmoor loves special occasions and that my parents would be given the Red Carpet treatment their entire stay.

When my parents walked into their room, my mom cried. Tears of joy. They were given a complimentary room upgrade with a view that would simply take your breathe away, on the table as they walked in was their wedding picture and by that was chocolate treats and a bottle of champagne. They were simply in awe. I will never forget when my mom called me from the room…it still makes me tear up.

Every time they dined out, the waitstaff told them Happy Anniversary.

3 years later, my parents will still tell you that that trip, that The Broadmoor, made their anniversary one that they will never forget. My dad loves to talk about the buffet at Lakeside Terrace and how the waiter covered his coffee for him when he walked away so it would stay warm. And how the bartender at The Hotel Bar talked to him for 30 minutes about the history of the bar, how wonderful that the staff would take their time to chat with him like that! It’s the little things. Those personal touches that make a hotel so much more than just a hotel. The Broadmoor is so much more than just a hotel in Colorado Springs. It’s a destination in Colorado. It’s a luxury resort that you and your family can relax and have fun at. It’s the place you want to stay when traveling to Colorado Springs.

My family and I took our first trip to Colorado Springs this summer. The kids had just got out of school and we wanted to go somewhere special and new to kick-off the start of summer. We wanted to have a Colorado family vacation in Colorado Springs. And we wanted to experience The Broadmoor. I wanted to walk through the same doors my parents did, I wanted to personally thank Hannah for all she did for my mom and dad, I wanted to see what my parents saw, I wanted to eat where they ate, I wanted to fall in love with Colorado Springs and The Broadmoor just like they did. And fall in love I did.

To name a few there are just about 20 retail shops, a movie theater, a spa, two championship golf courses, five tennis courts, three outdoor pickleball courts, three swimming pools, three outdoor hot tubs, waterslides, children’s wading pool, collection of Western art, fitness center, resort and activity shuttle service to Cheyenne Mountain Zoo, Starsmore Visitor and Nature Center, The Broadmoor World Arena, and The Broadmoor Seven Falls, a museum, and a bowling alley. Again, that’s just to name a FEW of the amenities at The Broadmoor.

Ristorante del Lago offers authentic al fresco Italian dining. We had dinner here and loved it so much we got take-out the next night! We had the grilled octopus for an appetizer and for dinner, I had the sweet corn ravioli, my husband and daughter had the house-made pappardelle bolognese and my son had one of their authentic wood fired pizzas. Every single bite was absolutely delicious. And the wine list was incredible, they actually had their sommelier come to the table to make recommendations based on what we ordered and our preferred tastes.

The restaurant’s design makes you think of the luxurious villas of Lake Como, with exposed wood beams, terra cotta tile, custom walnut millwork, leather banquettes and an indoor/outdoor fireplace.

Ristorante del Lago is also open for breakfast seasonally, offering a variety of items from Brioche French Toast, to Buttermilk Pancakes and other Rocky Mountain Classics.

Summit

The Hotel Bar

We ate here on our first night at The Broadmoor. It offered a casual and relaxing atmosphere that was perfect after our long day of traveling. We loved looking at the murals, photographs and original letters illustrate Spencer Penrose and the Hundred Million Dollar Hotel Clubs’ 1920 visit to Colorado Springs. We sat in the overstuffed chairs and snacked on various appetizers, sipped on wine and enjoyed the view of the lake and the glow of the fireplace.

Lake Terrace Dining Room

The Lake Terrace Dining Room is the place for breakfast. Here you can order from a classic breakfast menu or take advantage of the buffet. We opted for the buffet the morning we went as we simply couldn’t decide what one thing to order. We wanted to sample it all! From the brioche french toast, made-to-order omelettes, fresh fruit, freshly squeezed juices, crisp bacon, a variety of breakfast sausages and so much more!

Cafe Julie’s

We actually got breakfast here 3 out of the 4 morning we were at The Broadmoor’s. Don’t walk in too hungry, as everything looks absolutely mouthwatering! This is The Broadmoor’s Parisian Patisserie featuring a Luxury Valrhona Chocolate Collection, house made gelato, and Lavazza specialty coffees. Enjoy soups, salads and sandwiches to go, artisan breads, cakes and other culinary delights. The kids got the chocolate croissant and my husband and I enjoyed the raisin danish and the croissant breakfast sandwich.

How do you know if the tangerine you are seeing in stores is a Juicy Crunch tangerine?

Juicy Crunch tangerines are a larger size tangerine. In fact, Juicy Crunch is almost the size of a medium navel orange.

Since Juicy Crunch are larger, they will have a larger sticker/label on them letting you know they are indeed Juicy Crunch tangerines and it will let you know why we love them! You will see on the Juicy Crunch label that they are easy to peel, sweet, and seedless.

Why haven’t I heard of Juicy Crunch before?

Well, this year (December 2021 – January 2022) will only be the 2nd year they will be in stores.

Are Juicy Crunch a new variety of tangerine?

Well…that all depends on how you view it. Juicy Crunch has been a labor of love for 40 years. You read that right…40 YEARS. 40 years ago the Roe family (the owners of Noble Citrus in Winter Haven, Florida since 1926) decided that they could create (by breeding) the best tangerine on the market. They started with 1600 plantlets, and they planted every single one. The Roe family had to make sure the tangerine would grow well here in Florida, handle our Florida weather. From those 1600 plantlets, they narrowed it down to 50 varieties. From here, the Roe family focused on flavor, seedless (or low seed), and that the tangerines would be juicy.

Several incredible varieties of tangerines were born during this process…and the juiciest and the sweetest of them all is Juicy Crunch.

Tangerine season ends with Juicy Crunch. I guess the world of Florida citrus knew that they had to save the best for last.

What are Juicy Crunch Tangerines

Here are a few things to know about Juicy Crunch tangerines:

  • All Noble tangerines are hand-picked with care.
  • Look for them in store (at Publix, HEB and other stores nationwide) starting around Christmas-time.
  • Juicy Crunch are larger tangerines, look for them in the produce department. They will have stickers on them detailing everything you will love about them. Keep your eyes open for a 2 lb. bag as well.
  • Juicy Crunch are Fresh From Florida tangerines.
  • Juicy Crunch are easy to peel, seedless (or low seed), and non-messy. #momwin
  • Juicy Crunch are only available until late December to February, so get them while you can.

These red, white and blue popsicles are a festive summer treat. Made with only a few ingredients, including fresh fruit, they are surprisingly easy to make. While this post is sponsored by Florida Dairy Farmers, all opinions and my love of dairy are my own.

Homemade popsicles are a fun way to cool down in the summer. Especially in our Florida heat! These homemade red, white and blue popsicles are made with fruit, no food coloring needed. Strawberries are used to the make the red portion of the popsicle, blueberries for the blue and the white…well, no fruit needed there 🙂

To make these homemade popsicles you will need a few simple ingredients:

Vanilla Yogurt – you can use store bought or make your own homemade vanilla yogurt
Heavy Whipping Cream
Strawberries – I recommend Florida strawberries, of course, but if they aren’t in season, strawberries from the USA (fresh or frozen) are good too
Blueberries – I recommend Florida blueberries, of course, but if they aren’t in season, blueberries from the USA (fresh or frozen) are good too
Sugar

I told you that you only needed a few ingredients!

The hardest part about making red, white and blue popsicles is that you have to wait for the layers to freeze. And while that’s not hard at all, it’s the waiting! Waiting for the deliciousness is always hard…

So, keep that in mind, if you are making these homemade layered popsicles for a gathering or summer party, you will need to make them for the day before or earlier in the morning. The total time needed for these popsicles to freeze is about 4 hours.

You will allow each layer to slightly harden for about 30 mins before adding the next layer. This will ensure that your red, white and blue layers stay red, white and blue.

Since each popsicle was only being filled 1/3 of the way, I found it easier to just use a tablespoon to add the mixture into the funnel. It was easier for me to control how much was being poured in.

My popsicle mold makes ten 3.5 oz popsicles, I had enough to make all 10, plus an extra 4. I like the smaller size popsicles, especially if we are enjoying them outside with friends, that way we can actually eat the whole popsicle before it melts. How many popsicles you can make with my recipe really depends on the capacity of your popsicle molds, so if you end up with a little leftover like me, either make a few extra or just freeze the leftovers in a freezer-safe container and enjoy a cool treat with a spoon later 🙂

Of course, you can easily make simple strawberry popsicles, beautiful blueberry popsicles, and simple vanilla popsicles, but I think they are more fun layered 🙂 Especially for 4th of July, Labor Day and Memorial Day. Everyone loves a little red, white and blue treat around these holidays celebrating America.

These red, white and blue popsicles are a fun and festive treat for Memorial Day, 4th of July, Labor Day and all summer long! These popsicles are made with real fruit and ready to enjoy in about 4 hours.

  • 1 ½ cups vanilla yogurt
  • 1 ½ cups heavy whipping cream
  • ¾ cup sugar
  • 2 cups whole strawberries greens removed
  • 2 cups blueberries I used the bigger package from the store (Net Wt 11oz)

Instructions

  • First make your fruit purees. Add the fresh, clean blueberries to a food processor and blend until smooth. You can use frozen berries if fresh ones aren't in season, just allow them to thaw first.
  • Put the blueberry puree into a medium size bowl and set aside.

  • Put the strawberry puree into a medium size bowl and set aside.
  • Now you will make the vanilla base, this will actually act as a base for all 3 flavors. In a medium size mixing bowl whisk together the vanilla yogurt, whipping cream, and sugar until sugar has dissolved.

  • Add approximately 1 cup of the vanilla yogurt/cream mixture to the strawberry puree and mix well.
  • Add approximately 1 cup of the vanilla yogurt/cream mixture to the blueberry puree and mix well.
  • Leave the remaining vanilla yogurt/cream mixture for the "white" section of your popsicles.

  • Now you will start to assemble your popsicles.
  • Fill up your popsicle molds about 1/3 of the way with the strawberry flavor and freeze for 30 mins (just to help it set a bit). *My mold came with a nice little funnel to make it easier to add the liquid in. I used a tabelspoon to pour the liquid into the funnel so that I could control how much was poured in since I was only filling in 1/3 of the way.

  • While you are waiting for each layer to freeze, put the other mixtures in the refrigerator until ready for use.
  • Repeat this process with the vanilla and blueberry flavors.

  • After the final layer (the blueberry) insert your popsicle sticks and freeze for 3-5 hours until solid or overnight.

  • To remove the popsicles from the molds, you may need to run it under warm water for a few seconds. Gently pull on the popsicle stick.
  • Enjoy!

Notes

This recipe made 14 3.5 oz popsicles. My mold is for 10 3.5 oz popsicles, but we had another mold here, so I used that too. How many popsicles you can make will depend on the size of the molds you have. I, personally, like making a bunch, that way everyone can enjoy one at our holiday gatherings.

Pikes Peak

There are several ways to reach the top of Pikes Peak; it all just depends on what kind of adventure you are looking for. If driving is your thing, you can take the Pikes Peak Highway, the site of the Pikes Peak International Hill Climb.

With over 156 switchbacks, the highway is also a favorite of motorcyclists. If you prefer to take the slow, scenic route, the Cog Railway will take you to the summit while you relax and take in the majestic views. The Broadmoor Manitou and Pike’s Peak Cog railway is open year-round, although service is largely dependent on the weather during the winter months. We took the Cog Railway and we absolutely loved it! It was a bit chilly still when we visited in May, so we encountered rain, hail, and then SNOW. The kids were THRILLED when the train opened the windows and a blizzard filled the train car!

Or, if you prefer, you can hike to the top on Barr Trail, a popular hiking trail that begins just beyond the railway depot.

This picturesque mountain sits just west of the downtown area of Colorado Springs, offering a variety of things to do and see. During the visit to this mountain, it is not uncommon to view glimpses of animals in their natural habitat that reside there. Species include bears, yellow-bellied marmots, bighorn sheep, and a variety of birds.

Pike’s Peak Summit House

The most famous attraction in Colorado Springs is Pikes Peak. Pikes Peak is one of the tallest summits in the U.S., and it is commonly used in science textbooks when describing vapor lock. Each year over half a million tourists visit the summit of Pikes Peak. Here you will find the Summit House, which is free to tour. It is a place to rest and take in the views. While it is free to enjoy the Summit House, the road up Pikes Peak is a toll road and the Cog Railway does have a fee.

Garden of the Gods

Garden of the Gods Park is a registered National Natural Landmark. Garden of the Gods is a geological area with hiking trails available. A dramatic geological wonder of 300-foot sandstone rock formations including Balanced Rock and Kissing Camels. The trails are surrounded by ancient beds of sediment with various colored sandstones, limestone, and conglomerates. Pikes Peak greatly impacted the formation of these rocks thousands of years ago by their mere size, mass, and location within such close proximity of the park.

The rocks are formed in breathtaking sculptures with spectacular views and picture-worthy areas.

Admission is free for you to take a self-guided tour on the roads which wind around and through the formation with many parking areas to stop and marvel at the photo opportunities. For the more active, there are fifteen miles of hiking trails and designated rock climbing areas.

For lunch and souvenir shopping, check out the Visitor & Nature Center at the north end of the park and the Trading Post at the south, Manitou Springs, entrance. These shops have been voted “The Best of Colorado Springs.” There is also a museum within the park, as well as guided tours offered to the public.

Seven Falls

Seven Falls is a park that is open to the public, located in a natural box canyon. It offers breathtaking views of its seven cascading waterfalls within the park, which fall cumulatively 181 feet in total from its top to the bottom. The park features two trails for hiking which give good access for viewing the falls. Picnic areas are located throughout the park as well. We, apparently, took the trail that claimed it was a tad harder than the other…and it was. For us Florida people, the hike up was a bit more than what we are used to, but it was worth every single step up and every break we needed to take. ATV Guided Tours

We did this and absolutely LOVED it. It was cold, and it was rainy, but it didn’t matter! If you have the opportunity, this was definitely an incredibly unique way to see the Pike’s Peak National Forest. Now, it may not be cold and rainy when you go, so you may have better views than we did, but the EXPERIENCE, well, that was worth every single penny. We booked our ATV Tour with Rockhound ATV. They took us an adventure in the Pikes Peak region to experience views of Pikes Peak and the Rampart Range. Plus, you get to operate a rugged ATV and ride into the Pike National Forest as the guided tours give you an exclusive look into the Pikes Peak Region’s history along our backcountry trails.

Cheyenne Mountain Zoo

The Cheyenne Mountain Zoo is a zoo that is located on the side of a mountain, housing a variety of species in a faux natural habitat. An antique carousel sits atop the mountain, offering rides for kids of all ages. Species that can be seen in this unique zoo include giraffes, grizzly bears, a variety of birds, primates, and mammals such as tigers, prairie dogs, orangutans, and much more.

Royal Gorge

Located on the Arkansas River just outside of Canon City lies Royal Gorge, a 10-mile canyon that is home to the highest suspension bridge over water in the world. We went to the Royal Gorge Park and Bridge. While we didn’t walk across the bridge (there is a fee for that and the gondola ride) we did enjoy the view from the lookout.

Things To Do In Colorado Springs

If you are an adrenaline junkie, there is some of the best whitewater rafting in the world. Well, I would say that you don’t necessarily have to be an adrenaline junkie, you just have to be willing to give it a try! We did! We did the Bighorn Canon, which is considered the “family-friendly” route and that was plenty for my daughter and I. My husband and son are already looking forward to the more adventurous route on our next visit. We booked our trip through Royal Gorge Rafting and had an excellent experience.

United States Air Force Academy

The Academy is easily accessed via either the North or South gate, both of which are just off Interstate 25 north of downtown Colorado Springs. Be aware, this is a military installation, proper ID is required, and all vehicles are subject to search. Access may be restricted at times based on current Alert Levels. Access is always free.

The Visitors Center provides information on the Academy’s history and cadet life as well as souvenirs and gifts.

The Chapel is an amazing, inspiring structure serving all faiths. Catholic and Protestant services are open to the public. Take a self-guided tour, or guided tours are provided periodically, Monday through Friday.

There are several historic aircraft mounted on pedestals about the Academy grounds.

The United States Air Force Academy is open to the public 8 AM – 6 PM daily. The Barry Goldwater Visitors Center and Cadet Chapel are open 9 AM – 5 PM.

Fallen Fire Fighter Memorial

Towering twenty feet above the park, the centerpiece of the memorial is a bronze likeness of a firefighter descending a ladder cradling an infant. Behind this are granite walls bearing the names of every IAFF firefighter who has given his life in the line of duty protecting our homes and families. The names date back to 1976, the first year the Federal Government began tracking these line-of-duty deaths. The IAFF has plans to add the names of all members who have given their life since 1918, the year the organization was founded.

Each year in September, a nationally recognized ceremony is held to pay tribute to the new names added to the wall, as well as the sacrifice of past firefighters.

The IAFF Fallen Fire Fighter Memorial is located in Memorial Park on Pikes Peak Ave.

Manitou Springs

Located at the base of Pikes Peak, Manitou Springs is a beautiful historic mountain community that has changed little over the decades. Quaint little artisan shops, nationally famous restaurants, art galleries, and Victorian-style homes and businesses provide plenty to see and do as you stroll through the parks and shops. The local inhabitants also provide eclectic and eccentric views on how to go about your daily life.

Manitou gets its name (which means spirit) from the ten natural mineral springs scattered about town. These springs come from deep within the mountain, and each has its own signature qualities. Some are naturally carbonated; all are loaded with healthy minerals and flavors ranging from sweet to salty.

While some of the springs are privately owned, all are free to the public. Many locals and tourists come to fill up a healthy cup or bring their recycled gallon jugs to fill up and take home. Some are touted to be the perfect water for lemonade or make a carbonated Kool-Aid or just a completely natural alternative to bottled mineral water.

Also, don’t miss the historic Penny-Arcade. This open-air arcade provides a mix of classic, vintage arcade games, and new games. Seriously, this is so cool to walk through! We were just in awe that anything like this even existed!

Art on the Streets

Take a downtown walking tour of Colorado Springs and be amazed by the many traditional and eclectic sculptures scattered about the street corners. Constructed from materials ranging from bronze to iron to steel, limestone to concrete, recycled wood and glass; you name it, it has probably been used.

You may come face-to-face with Humpty Dumpty or characters from Alice in Wonderland. Marvel at free-flowing forms open to interpretation or simply giant paper clips.

New artwork is displayed every summer during the Art on the Streets festival, typically June through July. All new work is for sale to the serious collector. Some of the pieces are owned by the city. Since Art on the Streets was started in 1999, more than 150 pieces have adorned the downtown streets.

Uncle Wilber Fountain

Located in Acacia Park, corner of Bijou and Tejon Streets in downtown Colorado Springs. At first sight, you only see a giant blue bubble.

But then, the water starts to pulse, and the bubble begins to open. Outcomes Uncle Wilbur, perched on a stool, playing the silly Sousaphone. The water dances to the music for a 6-8 minute performance every half hour daily, May through August.

U.S. Olympic Training Center and Olympic Plaza

One of the most popular tourist attractions in Colorado Springs, Colorado, is the U.S. Olympic Training Center and Olympic Plaza. Here you will find where the U.S. Olympic Team trains and where the heart of American athletics is found.

You can find the U.S.O.C. at 1 Olympic Plaza, which is nearly in the center of Colorado Springs.

Old Colorado City

If you are interested in the Wild West, then you need to visit the area of town known as Old Colorado City. This region of town is found on the west end of Colorado Avenue. Here you will find a collection of stores and businesses that have restored their building storefronts to their original 1859 aesthetics.

Palmer Park

Palmer Park is found by taking Academy Blvd to Maizeland and turning West. At this park, you will find great picnic areas, nature trails, a ballpark, and plenty of room to stretch out and relax, stretch your legs or play a game of soccer, baseball or softball. This is a great place for a photo opportunity, as it has one of the best views of the cityscape.

U.S. Space Foundation – N.A.S.A. Regional Teachers’ Resource Center and Space Museum

If you enjoy astronomy or space exploration, then the U.S. Space Foundation is a great stop. Located at 1525 Vapor Trail, this museum offers an amazing collection of Apollo 15 Mission artifacts, photographs, and information. This is a fabulous stop if you have kids, if you have a love of space or if you are a teacher.

Bear Creek Nature Center

Inside the Bear Creek nature center are great exhibits about the local ecology, and outside, you will find a fun collection of nature trails and wildlife viewing areas.

The Bear Creek Nature Center is found at 245 Bear Creek Road. The nature center is open Monday through Friday from 9:00 until 2:00 and on the weekends from 9:00 until 4:00.

Fort Wilderness Resort and Campground is a relaxing escape from the theme parks. Guests can ride horses and wagons, enjoy campfires with Disney characters, and rent boats all while still a part of the Disney magic.

Walt Disney World provides its resort guests with accommodations and recreational activities to appeal to every taste. Disney guests who enjoy playing in the great outdoors, unfettered by a strict theme park touring itinerary, might consider spending time at Fort Wilderness Resort and Campground. Fort Wilderness, which opened in 1971, is Walt Disney World’s relaxing, “rustic” playground.

Not only does Disney’s Fort Wilderness offer camping sites for tents, trailers, and RVs (including pet-friendly sites) and freestanding cabins for families who desire “rustic luxury,” the resort offers 750 acres for outdoor recreational and entertainment activities. These activities, open to all Disney resort guests, offer alternatives to spending the entire day in one of the theme parks, making them ideal for rest days or half-days.

Spending the Day at Fort Wilderness ­– Recreational Activities

Petting Zoo: This small petting farm, located between Pioneer Hall and the Tri-Circle D Ranch, specializes in small farm animals that can be petted and enjoyed by small children.

Tri-Circle-D Ranch: Located near Pioneer Hall, the ranch is the center for equine-related activities and home to Walt Disney World’s horses. The Horse Barn is a working blacksmith shop that outfits the horses that work on Magic Kingdom’s Main Street.

Horseback Riding & Pony Rides: Disney’s Fort Wilderness Resort and Campground offers horseback trail rides through the beautiful woods surrounding the property. This is a great way to see some of the wildlife that call Disney’s Fort Wilderness home, including deer, rabbits, and birds. Guests can take a 45-minutes guided trail ride through the woods on horseback. The trails are gentle as are the horses; riders need not have much experience, although they do need to be 9 years and older, at least 48″ tall, and weigh less than 250 pounds. For children 2 years and older and 80 pounds and under, the ranch also offers pony rides with an adult at the lead.

Water Activities: Guests can enjoy the sandy beach of Bay Lake. Canoes, kayaks, pedal boats, and other watercraft are available for rental. Disney’s Fort Wilderness Resort and Campground is located on the banks of the Sassagoula River, which makes it the perfect place to take a leisurely canoe trip. You can rent canoes from the Disney Outfitters store, located in the Pioneer Hall building. The marina also rents pontoon and canopy boats, and specialty cruises, and 2-hour guided fishing excursions for up to 4 people (catch and release only). Dockside fishing is also available, with no reservations required.  Disney’s Fort Wilderness Resort and Campground has two swimming pools – the Meadow Swimmin’ Pool and the Wilderness Swimmin’ Pool. Both pools are heated, so you can enjoy a swim even during the cooler months. There are also hot tubs located near both pools.

Sports & Games: Bike rentals, or guests with their own rides, can travel the .75 mile path between Fort Wilderness and Disney’s Wilderness Lodge or explore the many roads of the resort. Fort Wilderness also has 2 lighted cement tennis courts for guests who bring their own equipment. There are also pool games, volleyball, croquet, a shuffleboard court, and horseshoes.

Fort Wilderness Entertainment – Campfires & Movies, Carriage & Wagon Rides

Electrical Water Pageant: The water parade, which depicts mythical sea creatures illuminated by thousands of lights synchronized to music, floats by Fort Wilderness beach and marina at approximately 9:45 p.m. (subject to scheduling changes).

Chip ‘n Dale’s Campfire Sing-a-long: The Chip ‘n’ Dale Sing-a-Long and marshmallow roast, held next to the Meadow Swimming Pool, starts after dark. It begins with a campfire sing-a-long led by Chip and Dale before showing a Disney movie or two (depending on the season). Guests can purchase s’ mores kits (or bring their own) as well as hot dogs, popcorn, and candy. You can bring your own snacks and drinks, or purchase them from the concessions stand. Be sure to bring blankets or lawn chairs to be comfortable. In the event of inclement weather, the event is held indoors.

Disney’s Carriage Rides: These private rides tour the resort. They last approximately 30 minutes, departing every half hour from Crockett’s Tavern near Pioneer Hall between 6:00 p.m and 9:30 p.m., weather permitting. Carriages hold up to 4 adults or 2 adults and 3 children, payable by cash or Disney room charge. Guests may bring their own beverages. Advance reservations are recommended.

Disney’s Wagon Rides: These twice nightly trips around the resort last 45 minutes, weather permitting, and depart from Pioneer Hall at 7:00 and 9: 00 p.m. Reservations are not accepted for regular wagon rides, although they are required and necessary for special holiday events (e.g., Halloween, Christmas).

Attend the Hoop-Dee-Doo Musical Revue: Disney’s Fort Wilderness Resort and Campground is home to the Hoop-Dee-Doo Musical Revue, a dinner show that’s been entertaining guests for over 40 years. The show features singing, dancing, and comedy, and is sure to be a hit with the whole family. You can purchase tickets for the show at Disney Outfitters or online.

Ingredients

  • 1/2 cup whipping cream
  • 4 Tbsp confectioners sugar
  • 4 Tbsp cocoa powder
  • 3 cups Florida milk I used 2% milk

Instructions

  • In a small bowl, mix the confectioners sugar and cocoa powder
  • Add the whipping cream to a medium or large bowl
    making whipped chocolate milk
  • Using a hand mixer, start beating the whipping cream. *You can use a whisk, but it will take a lot longer
  • As the whipping cream starts to thicken, slowly add the cocoa and sugar mixture and continue to mix
  • Continue to mix until chocolate whipped cream is thick, almost like a frosting
    making whipped chocolate milk
  • Pour 1 and 1/2 cups milk to each glass
  • Top the milk with whipped chocolate. *It's okay if it falls in!

Notes

If you want the chocolate to set on top of the milk, you kind of have to stick to the top of the glass. Don’t worry about it though, you are going to stir it in a second anyway!

Summer is here and the kids are officially out of school (YIKES!) and that means they are here more…eating more…well, you know 😉 I like to have a lot of fresh fruit and vegetables on hand for snacking. While, my kiddos aren’t the best about grabbing a handful of berries when they need a snack, if I make a dessert with fresh berries they eat it up no problem. So, that’s what I did. I made a beautiful berry-filled trifle.

I put my trifles in mason jars so that they are easy to grab and enjoy.

I grabbed a prepared pound cake while I was at Publix picking up my Driscoll’s strawberries, raspberries, blackberries, and blueberries for my fruit salad trifles. I wanted my sauce to be light and easy to make, so I decided that a simple yogurt sauce would be perfect. I grabbed a few Coast Tropical limes and some Wonderful Pistachios at Publix too and then headed home to make some deliciousness.

Easy Berry Trifle with yogurt sauce

Basically all you have to do is wash the berries, toast up the pound cake, layer it in your mason jars and top with the yogurt sauce.

I do recommend serving right after you top your summer berry trifles with the yogurt sauce and pistachios, but they are also good if you cover them and eat them later. I made 5 the other day, and since it was just me and the kids home, we ate 3, I covered the other two and the kids ate them after dinner and they were just as good! It actually gave the sweet yogurt sauce a chance to soak into the pound cake. So good!

Alright, now are you all ready for a sweet berrylicious dessert?

Tasty berry mason jar trifles

You will need fresh berries and a few other simple ingredients to make these fresh fruit trifles with yogurt sauce:

Fresh strawberries
Fresh blueberries
Fresh raspberries
Fresh blackberries
Prepared butter pound cake
Vanilla yogurt
Lime
Honey
Pistachios

To make my Berry Mason Jar Trifles you only need about 15 minutes, you will toast the pound cake for about 12 minutes, and while it’s toasting to can wash and dry your berries and get your mason jars ready for serving. Oh and make the yogurt sauce! Super easy. And worth every minute 🙂

Why did I toast the pound cake?

It gave it “crouton” like texture which worked well with all the fresh berries and the fruit salad yogurt sauce.

Do you have to toast the pound cake?

No, probably not, but it only takes 12 minutes, so unless you are super crunched for time, I would give it a try.

Can you use plain yogurt instead of vanilla yogurt?

Sure, I liked the extra flavor that the vanilla gave the sauce, but you can definitely substitute plain yogurt.

These mason jar trifles would definitely be a great idea for Memorial Day, July 4th and Labor Day since they are an easy red, white and blue dessert. But, of course, you can enjoy them anytime of year when fresh berries are available and in season.

These berry trifles are filled with fresh berries, a little pound cake and topped with a homemade vanilla lime yogurt sauce. Ready in just 15 minutes, these berry trifles are the perfect summer dessert.

Ingredients

  • Fresh strawberries rinsed, dried and sliced
  • Fresh blueberries rinsed and dried
  • Fresh raspberries rinsed and dried
  • Fresh blackberries rinsed and dried
  • Prepared butter pound cake cubed – I used 1/2 the cake for 5 mason jars
  • 1 tbsp Roasted and Salted Pistachios ground

Yogurt Sauce

  • ¼ cup Vanilla yogurt
  • juice from one lime approx 2 tablespoons
  • ½ tsp lime zest
  • 2 tbsp Honey

Instructions

  • Preheat oven to 325 degrees.
  • Spray a baking sheet with cooking spray and set aside.
  • Cut the pound cake in half and cut into small cubes.

  • Toast the pound cake cubes for 12 minutes, they will be a tad "crunchy".
  • While the cake cubes are baking, make the yogurt sauce.

Yogurt sauce

  • In a small bowl mix the vanilla yogurt, lime juice, lime zest and honey. Place in the refrigerator until ready to use.

  • When the cake cubes are done, layer your berries and cake in the mason jar in any order you would like.
  • Top with prepared yogurt sauce.
  • Sprinkle on ground pistachios.
  • Enjoy!
