Well everyone, it is here, Florida PEACH SEASON! Florida peaches are fresh, juicy, flavorful, and one of my favorite fruits. There is something about peaches, that when they are just right this little juicy fruit can add tremendous flavor to smoothies, dishes, and salads. Florida Peach season is the end of March through May. It is a short season, so be sure to stock up and be sure to make some of the best peach recipes.

I love experimenting with peaches in new recipes all the time. Not only do I enjoy peaches alone, I enjoy cooking with them. If you know me, you know that I love cooking with fruits and vegetables that provide extra nutrition to our diet. I especially love using in-season Florida fruit and vegetables.

I have compiled some of the best peach recipes and included some awesome healthy benefits of peaches to help you feel great about what you are eating.

Health Benefits of Peaches

One of my favorite health benefits of peaches are that they are loaded in Vitamins A & C which can help improve skin and vision health. Vitamin C is also great for our immunity and in helping fight off some of the common colds and flu. 

Another health benefit of eating peaches is that they are loaded with fiber which helps aid in digestion and fight off some types of cancers in the body such as colon cancer. Fiber rich foods can also help you feel fuller for longer, which can help in weight management. 

Peaches are also great at helping in lower cholesterol which can help prevent heart disease in the future. They are high in beta carotene which can help lower the cholesterol in the bloodstream.  

Another one of my favorite health benefits of peaches are that they are high in antioxidants. Antioxidants help to protect the healthy cells in our bodies. This is great because it may help protect us against a variety of diseases in the future!

And that’s exactly what this Prosciutto and Apple Grilled Cheese Sandwich With Balsamic Reduction is. It is literally filled with all my favorite flavors. Sweet, salty, cheesy, crunchy perfection.

Seriously guys, can you really think of anything better than havarti cheese, cheddar cheese, prosciutto, thinly sliced apples drizzled with a balsamic reduction on KING’S HAWAIIAN Original Sliced Bread? No, no you can’t. I mean, everything’s better between King’s Hawaiian Bread.

Oh, and this beautiful grilled cheese is easy to make! So whether you are serving it for lunch, dinner, or a snack, all you need is about 10 minutes and you are on your way to deliciousness.

To make the best Prosciutto and Apple Grilled Cheese Sandwich With Balsamic Reduction you will need:

KING’S HAWAIIAN Original Sliced Bread
Thinly sliced prosciutto
Thickly sliced Havarti Cheese (at the deli, ask for it on #2 on the slicer)
Thickly sliced Mild Cheddar Cheese (at the deli, ask for it on #2 on the slicer)
Apple – sliced thin
Balsamic Vinegar – I made my own reduction while the KING’S HAWAIIAN Original Sliced Bread was toasting, but you can buy the reduction if you prefer.

You ready to get cooking? Here’s my Prosciutto and Apple Grilled Cheese Sandwich With Balsamic Reduction recipe, be sure to print it and pin it so that you can make it again and again.

Prosciutto Apple Grilled Cheese Sandwich with Balsamic Reduction

This is the perfect sandwich melt. Two different cheeses, sliced apples, prosciutto and a beautiful balsamic reduction on the perfect bread, King's Hawaiin.

Equipment

  • Stove

Ingredients

  • 2 slices KING’S HAWAIIAN Original Sliced Bread
  • 1 tbsp butter
  • 2 slices Thinly sliced prosciutto
  • 2 slices Thickly sliced Havarti Cheese at the deli, ask for it on #2 on the slicer
  • 1 slice Thickly sliced Mild Cheddar Cheese at the deli, ask for it on #2 on the slicer
  • 2 slices Thinly sliced apple

Balsamic Reduction

  • cup Balsamic Vinegar you can buy the reduction if you prefer.

Instructions

Balsamic Reduction

  • Pour balsamic vinegar into a small pot/pan and cook on medium heat until it reduces in about half, approx 8 mins. Will be syrupy.
  • While you are reducing the balsamic vinegar, make your grilled cheese.

Prosciutto Apple Grilled Cheese Sandwich

  • Butter both sides of the King's Hawaiian Bread.
  • Toast one side of the bread in a pan on the stove or on the grill if preferred. Add butter to the pan if desired.
  • Flip the bread, layer one slice of cheese, then proscitutto, then another slice of cheese, then apple, then another slice of cheese. At this point drizzle on some of the balsamic reduction (or you can save it for dipping), top with the other slice of bread.
  • Continue to cook until cheese is melty, about 1-2 minutes. 
  • Cut in half if desired.
  • Serve with remaining balsamic reduction.
  • Enjoy!

Tips For Letting Wine Breathe

Wine, as a living thing, resembles a butterfly. Imprisoned in a glass chrysalis, set free for its brief life and consumed. Like the emerging butterfly, the air allows wine to spread its wings and reveal its beautiful and complex design.

But air can also the enemy of wine.

An improper seal on the bottle will oxidize the wine and eventually turn it to vinegar. It is, therefore, important to understand the proper way to let the wine breathe to enjoy its full potential.

Unless the white wine is a Chardonnay from an elite producer in Burgundy, white wines are made to be drunk young, from 1 to 2 years old, and will tend to deteriorate if held longer.

Tips For Letting Wine Your Breathe

White wines should be served chilled at around 55F and poured directly into the glass to be swirled and tasted. White wine glasses are designed to be narrower and smaller to hold less wine so that the bottle can remain chilled in ice and be recharged with cold wine at regular intervals and not allowed to sit and get warm. Plain and simple, this is the proper way to enjoy white wine.

Even though the vast majority of commercial red wines, especially those produced in the New World, are made to drink young, exposing them to the air will soften the tannins and allow the hidden flavors to be revealed.

Why let wine breathe

Merely opening the bottle and letting it sit is not enough to allow the atmosphere to do its work. However, pouring out a half glass will allow the bottle to function as a natural decanter and expose a greater surface area to the air. But decanting is still a better option.

Red wine glasses are specifically designed to expose the wine and contain the aromas of the wine. Typically they are large bowled and tapered at the top. Fill your wine glass to the widest part of the glass and liberally swirl the wine to thoroughly aerate it and enjoy sniffing the bouquet before taking a sip.

Aeration of the wine doesn’t end in the decanter or the glass. To do justice to the flavor, take a noisy slurp and bring some air into your mouth when tasting. Chew the wine by letting it travel all over your teeth, gums, and palate and breathe gently through your nose to allow the fragrance to penetrate the back of your throat. This way, you can enjoy all the complexity that red wine has to offer.

With very old red wine, there is a danger that prolonged decanting will completely break down the structure. You should decant it for no more than half an hour and enjoy it immediately. Only the finest vintages will last in the bottle, and old wine is not necessarily always a pleasant experience.

As soon as you open a bottle of wine, it begins to evolve and spread its glorious wings and should be experienced in all its stages to appreciate its complexity. Learning to savor it is a transcendent experience and one of the most delightful Earthly pleasures.

Release the beautiful butterfly from its temporary resting place and let it fly! Or, simply put….open that bottle of wine and enjoy it 😉

How Many Guests Should You Invite To Your Wine And Cheese Pairing Party?

The size of your home and your budget will determine the number of guests you invite. Consider seating and room to mingle. Party planners suggest having chairs for 80 percent of your guests. If the season permits and you have room for outdoor living, extend the party to your deck or yard where candles and strings of lights can create a space that‘s as inviting as any living room. Because people break into smaller groups for more intimate conversations, twelve guests is a good number if you can accommodate them. But, don’t feel like you have to have a houseful. The evening can be equally fun with a few couples.

The Invitations for a Wine and Cheese Party

You can initiate the event with homemade, handwritten invitations. Craft stores carry pre-scored, white card stock with matching envelopes. Purchase a rubber stamp in the shape of a wine bottle and a pad of burgundy ink. Stamp the front of each card and simply write, “You’re Invited.” Handwriting the details like the time and the number of potential guests. Sure, you could find pricey invites for such an occasion, but why not make your own? Receiving a handmade card is special and personal. But if your schedule doesn’t allow for handmade invitations, Evite will work too.

Selecting the Wine For Your Gathering

It’s fine to mix red wine and white wine, and you should, since some guests may prefer a lighter white to a robust red. Just start with whites first and progress to reds. Choose three to five wines to taste, any more than that, and you’ll overwhelm your guests’ palettes. For twelve guests, purchase two bottles of each wine you choose for your tasting. A 25-ounce bottle will yield 12 2-ounce pours for tasting, so purchase a second bottle of the same wine for drinking. Remember, chill the reds in the refrigerator for 30 to 45 minutes before guests arrive and chill whites one to two hours, removing them from the fridge just before pouring.

Choosing the Cheese For Your Wine Tasting Party

Before you and your guests start tasting the cheese, encourage everyone to taste the wine first. Wine makes food better and food makes wine better.

Follow these simple rules for cheese and wine pairings:

  • Pair mildly salty cheeses with mildly sweet wines.
  • Pair very salty cheeses with sweet wines.
  • Pair creamy cheeses with crisp white wines.
  • Pair stinky cheeses with full-bodied reds.

Don’t be shy about asking guests to bring a particular cheese if you don’t have the budget or desire to purchase all the cheeses. Guests normally like bringing something to an event and telling them helps takes the guess work out of it for them. Anyone who has dallied at the cheese case will appreciate the suggestion since the selection at any destination grocery store seems endless. Don’t forget to identify each cheese. You can even use white cardstock and your wine bottle stamp to make folded labels if you are feeling fancy.

You could obsess about choosing the perfect wine glass for your wine, but don’t. Choose large, bulbous glasses for your tasting because a larger glass shows off the aroma, flavor and color of a wine better than a smaller one. If you have slimmer white wine glasses as well, feel free to use them for white wine, but don’t go buy more wine glasses, your guests won’t mind the shape of the glasses. They are there for the wine, cheese and company.

The terms used to describe wine are many. A simple online search will help you compile a glossary of nomenclature that wine aficionados use to identify the taste and character of different wines. Give a list of terms to each guest at your tasting. Tasters will love having a universal vocabulary to describe their libations, and they’ll likely get a laugh out of descriptors like “barn-yardy,” and “seductive.” Of course, be sure to include some of the basic ones in there too, such as; earthy, crisp, bold, acidic, citrus.

You’ll want to help guests identify their glasses if they set them down for a moment and wander away for a nibble of cheese. Wine glass charms are cute, but a set can cost you $20 or more. A simple alternative is to purchase beading hoops and multi-colored beads. Place a different colored bead on each hoop and crimp the end of the hoop with needle-nose pliers, so the wire fits in a pre-drilled hole on the flattened end of the hoop. You could even create a set of charms for each guest if your budget allows and give them away in glass-topped favor containers.

Florida Blueberry season is just around the corner so I figured I would get you all excited about stocking up on blueberries with my easy homemade blueberry muffins. In fact, they are so easy the kids actually made them! I was so proud I took pictures and promised to post them. You can find some Florida blueberries in stores now, but the Florida blueberry season will be in full swing here starting April.

This blueberry muffin recipe is actually a tad healthier than the others you will find out there, you all know that I like trying to make recipes lower in fat and calories when I can. These lower-fat blueberry muffins are also loaded with vitamins and nutrients thanks to the blueberries.

Blueberries actually have quite a few health benefits, besides being the king of antioxidants.

Tasty Homemade Blueberry Muffins

Here are some of the health benefits of blueberries:

  • Blueberries are high in Vitamin C, just one serving of blueberries provide 25% of our daily Vitamin C requirements.
  • These beautiful blue berries are low in fat, a whole cup of blueberries is only 80 calories.
  • Blueberries are high in fiber, which will help keep you fuller longer.
  • Blueberries are a great source of manganese.
  • They can help fight urinary tract infections.
  • Improves heart health and reduces cancer risk.
  • It is estimated that the blueberries have been in North America for more than 13,000 years, where the history of blueberries starts in Florida in the late 1800s. Then over 60 years ago, Professor Ralph Sharpe began a low-chill blueberry breeding program at the University of Florida. Then by the 1980s, blueberries really started to gain popularity with hundreds of blueberry farms opening across the state.

Michigan (my home state!) is actually the industry leader in producing blueberries, Florida only produces a fraction of the blueberries that Michigan does. The biggest competition to Florida blueberries is actually berries that come from overseas, so I encourage you to check your labels and buy local and support local.

How to pick the best blueberries:

Blueberries are best when they are firm, dry, plump, smooth-skinned, and a deep purple-blue to blue-black color. Blueberries should not look wrinkly, soft or have mold. Blueberries will have a silvery surface which actually protects them. Blueberries do not continue to ripen after harvesting like other berries, so be sure you are getting the best blueberries for your homemade blueberry muffins and you other favorite blueberry recipes.  Like homemade blueberry pancakes, blueberry BBQ sauce, blueberry balsamic dressing, your favorite cocktails…oh my!

How to store blueberries

It is best to refrigerate fresh blueberries after purchase, but don’t wash them until you are ready to eat them. Blueberries should be enjoyed within 10 days of purchase.

Can you freeze blueberries?

Absolutely! I do it all the time! Frozen berries are excellent for baking, snacking, and in smoothies. Learn more on how to freeze blueberries.

When is blueberry season?

The North American blueberry season runs from April to late September. Florida blueberry season is April and May.

  • 2 cups fresh blueberries be sure to buy local!
  • ½ cup sugar
  • ¼ cup butter softened
  • 1 egg
  • 1 teaspoon vanilla extract
  • ½ cup non fat vanilla Greek yogurt
  • cups all-purpose flour
  • 2 teaspoons baking powder
  • Pinch of salt

Ingredients for Streusel Topping

  • 1/4 cup sugar
  • 1/4 cup brown sugar
  • 1/3 cup all-purpose flour
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold butter cubed

Instructions

Instructions for streusel topping

  • In a medium bowl, combine sugar, brown sugar, cinnamon, flour and chilled cubed butter
  • Stir with a fork or pastry blender until the mixture is crumbly
  • Set in the fridge until ready to use

Instructions for muffins

  • Preheat oven to 350 degrees
  • Line a 12 cup standard muffin tin with paper liners or coat with nonstick spray, set aside
  • In a large mixing bowl mix the butter and granulated sugar until light and fluffy
  • Add egg, vanilla extract and yogurt, beat until well combined
  • Sift in the flour, baking powder and pinch of salt, beat on low speed until just mixed
  • Gently fold in about half of the blueberries
  • Fill muffin liners ¾ full with batter, top with remaining blueberries and then sprinkle streusel crumble on the top
  • Bake for 20-25 minutes, until the muffins are lightly browned on top and a toothpick inserted in the center comes out clean.
  • Enjoy!

The best way to set your Disney vacation off on the right foot is to book a resort that makes the most sense for you and your family or whomever you happen to be traveling with. Picking your resort is not a difficult task, but there are a lot of fun and not so fun things to consider. Your choice in a hotel will impact your budget, and your time spent on Disney property in multiple ways. Before you book your hotel and start planning your Walt Disney World vacation today, consider these important factors in how to choose where to stay among the Disney World hotels in Orlando Florida.

Budget

Budget is a huge factor in choosing Disney World hotels because there are pricing tiers that the hotels are grouped into. If you have a small budget, you should consider a value resort or a Good Neighbor hotel. With a Good Neighbor hotel, you get less Disney in the environment, but they are still fairly Disney centric. With a non-Disney hotel on-property, you pay less but get more in terms of quality compared to the Value resorts. If you have more to spend on your experience, the Deluxe Disney World hotels are the best. However, you may not take advantage of all the amenities you pay for while you are there.

Staying at disney hotels

Location

Location is key. You can pay less and stay farther away from everything, or you can pay more and be right next to your favorite park. There are five different resort areas to consider before you book your Disney World hotels. The Magic Kingdom is comprised of hotels around the Seven Seas Lagoon and Bay Lake. Epcot and Hollywood Studios have a set of deluxe hotels within walking distance, Boardwalk and Yacht Club are two of my favorite Disney hotels.  I love being able to walk to Epcot from Boardwalk and Yacht Club, especially when Epcot has one of their amazing festivals going on! Animal Kingdom also has a resort area as do ESPN Wide World of Sports and Disney Springs.

Choosing between disney hotels

Theme

If a theme is important to you there is only one clear choice among the value resorts. That is Art of Animation. For moderate and deluxe resorts theme is a much bigger deal. Among moderate Disney World hotels, you have a choice of Port Orleans Riverside, Port Orleans French Quarter, Caribbean Beach, and Coronado Springs. Deluxe resort themes range from Polynesian to Pacific Northwest, to Old Key West, an early 20th-century east coast boardwalk and more. The higher the cost, the more detailed and elaborate the theming is. Some hotels have very expensive cabins/bungalows that take the theming to an entirely new level.

Which disney hotel to stay at

Transportation

Another very important factor in how you spend your time at Walt Disney World is how you get around. How you get around depends in part on the Disney World hotels you book. The best transportation is available to guests at the deluxe resorts. They tend to have boat access and some have monorail stations. The exception is Animal Kingdom Lodge which is solely reliant on buses. Value resorts rely exclusively on buses too, except Art of Animation and Pop Century. Those two have the Skyliner system along with Caribbean Beach and the new Riviera. Watch out for these Skyliner resorts if you don’t plan to ride the system. Disney is cutting back on the bus schedule for these Disney World hotels.

I love bananas as they are loaded with potassium, which I find my body craves after a good workout. That’s my this next smoothie has a banana in it! It also has carrots, spinach and non fat plain Greek yogurt.

  • 1 store bought pizza base or make your own
  • 3 tablespoons pizza sauce
  • ½ cup mozzarella cheese grated
  • 2 tablespoons chopped onion
  • 2 tablespoons chopped tomatoes
  • 2 tablespoons chopped bell peppers
  • 2 tablespoons sliced jalapeno
  • 2 tablespoons chopped pineapple
  • 2 tablespoons sliced mushrooms
  • Additional toppings of your choice

Instructions

  • Preheat the oven to 450°. Or according to pizza base package instructions.
  • Spread pizza sauce equally on pizza base.
  • Place toppings on pizza crust and then generously put cheese on top.
  • Bake pizza for about 10 minutes or until the cheese melts, slice, and enjoy!
