Homemade Fresh Mint & Peach Vinaigrette Dressing
I love making my own salad dressing. It takes just a few minutes and it’s better than anything you can buy in the store. And, you probably have all the ingredients right there in the house! Fresh fruits are delicious in homemade dressings, like in this Fresh Mint & Peach Vinaigrette Dressing I used fresh mint and fresh Florida peaches.
I used this Fresh Mint & Peach Vinaigrette Dressing on my Sweet and Salty Grilled Peach and Bacon Salad and it was the perfect accompaniment to the grilled delicious.
I also used this Fresh Mint and Peach Vinaigrette Dressing on our favorite salmon salad. I substituted out the fresh strawberries that I usually use and diced up a fresh peach. YUM!
It would also make for a great marinade. In fact, that’s my plan for the next batch I make 🙂 I try to have a salad everyday, and this Peach and Fresh Mint Vinaigrette Dressing has been my go-to dressing for the last week, so it’s time for me to make it again.
To make this homemade salad dressing you only 7 simple ingredients and about 10 minutes.
You will need:
- Fresh Mint
- Peach
- Fresh lemon juice
- Extra virgin olive oil
- Red wine vinegar
- Honey
- Salt
Like I said, you probably have 90% of the ingredients at home right now!

Homemade Fresh Mint & Peach Vinaigrette Dressing
Ingredients
- ¼ cup chopped fresh mint
- 3 tablespoons fresh lemon juice
- ⅓ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon honey
- ½ teaspoon kosher salt
- 1/2 peach
Instructions
- Place chopped mint and lemon juice in a small saucepan.
- Bring to a boil and remove from heat.
- Let steep for about 10 minutes.
- Put all ingredients into a high powered blender or food processor and mix.
- Enjoy on top of your favorite salad or as a marinade!

I did use Florida peaches in my recipe, they are in season late March – May, so keep a look out for them! You can definitely use any delicious peach you choose, but since Florida peaches are in season right now, you can make this homemade salad dressing sooner than later 😉
