I have to say, making smoothies is one of the highlights of my day.  This blueberry carrot smoothie is definitely one of my new favorites. The possibilities are endless when making smoothies and they almost always turn out delicious.  Wait, I will admit that one time I added green pepper and let’s just say that is one recipe I won’t be posting 😉

Best Blueberry Carrot Smoothie

This smoothie is filled with carrots, strawberries, a bunch of blueberries, and greens.  I use coconut water in most of my smoothies, but you can use regular tab water or none at all!  I heard somewhere that ideally you will have as many, if not more, vegetables than fruit in your smoothie.  It gives you more vitamins and not as many sugars.  That made sense to me, so I have been sticking to that rule 🙂

Here are some of the health benefits to the ingredients in this Blueberry Carrot smoothie recipe:

Blueberries – These beautiful berries will also give your body an antioxidant boost.  Blueberries are actually considered the king of antioxidants.

Carrots – The orange powerfood will give you vitamin A and is also linked to preventing cancer, giving you healthier looking skin and aids in digestion.

Strawberries – These red beauties are loaded with vitamins, fiber, and potassium.  As an added benefit – they are fat-free 🙂

Protein Powder – Helps keep you full longer and makes your smoothie extra creamy.

Equipment

Ingredients

  • 4-5 baby carrots
  • 4-5 strawberries with greens cut off
  • 15-20 blueberries - a big handful fresh or frozen
  • ½ cup greens big handful
  • 3-4 ice cubes
  • 6 oz coconut water - or your choice of liquid
  • cup Juice Plus+ Vanilla Complete Shake Mix or a scopp of your favorite protein mix

Instructions

  • Place the ingredients into your blending device as listed above
  • Blend until smooth
  • Enjoy!

Easy Blueberry Carrot Smoothie

I do get asked from time to time what greens I use in my smoothies, and to be honest it’s really whatever I have in my refrigerator at the time.  It may be a spinach blend, or a baby lettuce blend, or a Spring mix!  I have not added kale to my blender yet, but it is on my agenda to try one of these days 😉 In addition, you can stop by Publix for a good sandwich. Check the Publix weekly ad beforehand to browse their products.

  1. Well, I must say I’ve never thought of this combination before – but it sounds irresistible! I have always LOVED carrot juice and blueberries are my most favorite fruit ~ so how can you miss? I am also well aware of the highest nutritional value and health benefits of both carrots and blueberries so this is surely one VERY HEALTHY, good-for-you “meal” ~ and my idea of a real treat too!

  7. Is it always good to add in greens into a smoothie now? I am always concerned because I can always taste the difference maybe I can alter some in a little at a time so that way I can get used to the texture? I think that sounds like a good idea because this looks so delicious and I love making my own smoothies.
