So I came up with this Zero Point WW Vegetable Ranch Dip. It does use non-fat plain Greek yogurt, which can sometimes have an distinctive taste, so adding in the spices and vegetables lets the flavor focus on the other ingredients.

For my Zero Point WW Vegetable Ranch Dip you will need:

Plain Non-Fat Greek Yogurt
RealSweet Vidalia Onion
Jalapeno
Ranch Seasoning
Red Pepper Flakes
Salt
Southwest Corn
Mini Sweet Peppers
Olives if desired – I am personally not a fan of olives, but my friend likes adding olives to hers when she makes this, so I wanted to plant the idea in your head in case you are an olive lover.

Tasty Zero Point Weight Watchers Vegetable Ranch Dip

I like using the southwest corn because it has some peppers in there, which is great for added flavor. If you can’t find it, you can definitely substitute regular canned (or cooked fresh) corn.

Ingredients

  • ½ cup sweet onion, diced
  • 8 oz plain nonfat greek yogurt
  • 1 jalapeno, diced seeds removed if desired
  • ¾ Ranch seasoning packet more if desired
  • 1 tsp red pepper flakes
  • ¾ can southwest corn
  • 2 mini sweet peppers, diced or a ½ of bell pepper, diced

How To Make Caramelized Onions

I love caramelized onions. Caramelized onions are one of those ingredients that can transform ordinary into extraordinary. And caramelized onions are easy to make. So easy, in fact, that they seem hard. But I promise you, caramelized onions are easy to make. All you need is onions, a little olive oil and some time. Salt and water are optional. Seriously you all, that’s it.

How long does it take to make caramelized onions?

About 40-45 minutes. Not any sooner. You don’t want to rush the process and burn the onions. We want delicious caramelized onions, not burnt onion crisps.

What kind of onions can you caramelize?

As far as I know, there isn’t an onion out there that you can’t caramelize. I used RealSweet Vidalia onions. Not only do I love RealSweet Vidalia onions, but the idea of caramelizing something that is already sweet sounds like perfection to me.

How do you store caramelized onions?

If you have some leftover, which I recommend just because they do take some time to make, you can store caramelized onions in the refrigerator for about a week. You can freeze your caramelized onions. I recommend freezing them in individual size portions so they are ready to go when you are. You can freeze them in an ice cube tray or small freezer bag.

How many onions can you caramelize at once?

I used 2 RealSweet Vidalia onions. When sliced that filled up my pan pretty well, however next time I will do 3 or 4 onions so that I end up with some leftover. My family of 4 happily used all of our caramelized onions in one meal. Your full pan of onions will indeed shrink down.

What temperature should you cook the onions at to get them to caramelize?

Medium heat. And if your onions start to burn, turn the heat down. Don’t rush the process.

How do you make caramelized onions?

Slice the onions, add olive oil or butter to a pan and let it warm up, add the onions and be patient. You will a touch of water and some salt later in the process, but really, it’s that easy!

Can you use wine or red wine vinegar instead of water to deglaze the pan?

Sure can! Using a darker color liquid will give your onions an even more caramelized look. You can use whiskey or bourbon too!

  • 2 - 4 onions I used RealSweet Vidalia Onions
  • 2 tbsp olive oil can substitute butter
  • 1-2 tbsp water can also use white or red wine or balsamic vinegar
  • 1/2 tsp salt

Instructions

  • Slice the onions. Be sure to remove the skin.
  • Heat the olive oil in a large pan.
  • Add the onion slices. Stir them gently to make sure they are all coated with the olive oil.

  • Allow the onions to cook, checking on them every 5-10 minutes. Stir the onions and scrape up any of that goodness that forms on the bottom of the pan with a wooden spoon.

  • Once the onions are caramelized - taste one to make sure they are to your liking - add 1-2 tablespoons of water to the pan to deglaze it. Get up all that brown stuff on the bottom of the pan. Stir well.

Low-fat cooking recipes are everywhere – here on my blog, other blogs, Pinterest, magazines, newspapers, not to mention cooking show. However, they often require ingredients; many people do not typically stock in their pantry. Also, sometimes low fat is replaced with high sugar. Then there are those who are looking for healthy recipes but secretly long for the flavors and comfort foods we grew up with. The good news is that, with simple substitutions, we can still create those recipes and save on some of the fat and calories. Like I did in my Bacon Wrapped Meatloaf.

Recipes passed down through the generations may have been crafted with love, but many include ingredients that undermine our best efforts to maintain a healthy diet and contribute to obesity and other health issues. How to Convert Traditional Recipes to Easy, Healthy Low-Fat Recipes

Replace:

  • 1/3 or more of butter or oil in baking with unsweetened applesauce
  • 1 cup butter or oil with ½ cup pureed fruit
  • Amount of oil needed to sauté vegetables with chicken/ vegetable broth or cooking spray
  • 1 whole egg with 2 egg whites OR 3 T prepared liquid egg whites OR 2 tsp canned dry egg whites + 2T water
  • Crumbled bacon with turkey bacon or turkey sausage
  • 1 oz baking chocolate with 3 tsp unsweetened cocoa powder (can add 1 tsp oil)
  • Heavy cream, in baking, with equal proportions of evaporated skim or low-fat milk (can add some dry milk powder)
  • Heavy cream, in the amount needed to thicken the soup, with prepared instant mashed potatoes
  • Whole milk with equal proportions of skim, 1%, or 2% milk OR combination of fat-free milk plus fat-free yogurt
  • Sour cream or mayonnaise with equal proportions of plain low-fat or nonfat yogurt
  • Ground chuck for extra lean ground beef or ground turkey

This is a simple to follow recipe for making a bourbon-based Old Fashioned cocktail, one of the original mixed drinks and a classic. An Old Fashioned requires no more equipment than a glass and a spoon and can be whipped up in just a minute.

History of the Old Fashioned Cocktail

The Old Fashioned dates back to the mid- 19th Century. The first use of the name and recipe was in a private members club in Louisville, Kentucky. A member of this club, Colonel James Pepper, brought the drink to the bar of the Waldorf-Astoria hotel in New York from where its fame was secured.

My husband has recently taking a liking to bourbon, I think it was hype around the holidays about getting our hands on Blanton’s.  Which we finally did, but man was that complicated!

What is Bourbon?

Bourbon is a type of American whiskey, distilled from a mash made primarily of corn. Bourbon, by law, can have no flavorings or color additives added to it.

What does Bourbon taste like?

Bourbon’s general flavor can be characterized as having vanilla, oak, and caramel notes.

Where is Bourbon made?

Kentucky is world’s bourbon capital, 95% off all bourbon is made in Kentucky. In 1964, Congress declared bourbon “America’s Native Spirit,” meaning to be called bourbon, it must be made in the U.S.

Ingredients for an Old Fashioned Cocktail

Bourbon
Simple Syrup
A dash of Angostura bitters
Ice

Many people like to add a maraschino cherry or slice of orange when serving. Others like theirs straight up.

As you can see, I actually added some maraschino cherries to my whiskey ice cubes.  This way the ice cubes are infused with a bit of flavor, so when they melt, you get a hint of flavor as well.

You can grab my simple…simple syrup recipe, I also give some great ideas on how to infuse the simple syrup with flavors, such as oranges.  So, if you would like to garnish your Old Fashioned with orange, the orange infused simple syrup may be good to try once.  Sugar syrup will keep for months if stored properly in a screw-top bottle or mason jar. It can be used in any number of other cocktails, particularly other whiskeys/bourbon cocktails such as a whiskey sour or mint julep.

Too much sugar syrup can mask the bourbon, and too little bitters can make it taste a little one dimensional. The perfect Old Fashioned should taste greater than the sum of its parts. It may be worth experimenting slightly with amounts, particularly if using a different type of whiskey or bourbon.

An alternative way of making an Old Fashioned if you don’t have any simple syrup is to dissolve a sugar cube in a small amount of water before adding ice, bourbon, and bitters.

While this isn’t free, I will say that it was one of the highlights from our recent trip! We rented e-bikes and we went over 25 miles in 2 hours…We had a BLAST! I highly recommend checking em out when you are in town. There are soooooo many parks and trails to check out, it’s definitely worth it.

Because sometimes you just want Buffalo Chicken Dip without all the extra calories and fat. Well, I’m gonna be honest…sometimes buffalo chicken dip is 100% worth the extra calories. But then there are times that I want a good snack that I can also feel good about. A snack that is loaded with flavor, protein and is simply delicious. A snack that you can munch on, feel satisfied, and enjoy.

Even if you don’t follow Weight Watchers or aren’t interested in losing any weight at this time, I’m sure you would still enjoy a good-for-you snack. Eating healthy isn’t a diet, it’s a lifestyle.

This healthy Buffalo Chicken Dip only has three ingredients:

Canned chicken (or shredded chicken or rotisserie chicken) – Zero Weight Watchers Points

My sister-in-law and I stumbled upon this deliciously easy creation a few months ago. We knew that chicken was zero points, as well as adding in hot sauce and ranch seasoning, but then we saw Franks RedHot Ranch Dip Seasoning Mix in the store and we were hooked.  I am on the WW Blue Plan and my sis-in-law is on the WW Purple Plan and for us both, it is ZERO WW Points.  I am not 100% positive that it will be the same on the Green Plan, if you are on the Weight Watchers Green Plan, please feel free to confirm or deny that this is 0 points for you too 🙂

Why Canned Chicken Is Perfect For Buffalo Chicken Dip

1. It’s affordable. Canned chicken is usually cheaper than fresh or frozen chicken, making it a great option if you’re on a budget.
2. It’s easy to use. There’s no need to thaw canned chicken before using it in recipes – simply open the can and add it to your dish.
3. It’s versatile. Canned chicken can be used in a variety of recipes, from soups and salads to casseroles and pasta dishes.

Using the seasoning mix makes making this easy low fat buffalo chicken dip even easier! Plus, I think it tastes better than trying to figure out the perfect hot sauce to ranch seasoning ratio.

I don’t use a lot of the non fat Greek yogurt, because yes, it has a distinct flavor that not everyone enjoys. So, what I do is prepare the chicken, add in a few tablespoons of the yogurt, then mix in the seasoning. I will taste it along the way to make sure I’m happy with the flavors, so if you find you need to adjust it to your liking, go right ahead!

Zero Point Weight Watchers Buffalo Chicken Dip – How to Serve it Up

As you can see, I served mine up in a platter surrounded by healthy options for dipping (celery, cucumbers, carrots, Good Thins, and mini pretzels are my favorites), baked chicken wings and some sauteed shrimp. All of which are healthy options for a game day spread or just a day where appetizers are what’s for dinner. You can also toss out a bowl of your favorite tortilla chips, because well, buffalo chicken dip is always good with tortilla chips.

If you end up with any leftovers, or maybe you looked in the pantry and/or refrigerator and you are of things to dip in your WW Buffalo Chicken Dip, it’s also delicious in wraps (look for the low-carb options in your favorite store to save on some points…and carbs), on a salad, as well as a quesadilla! I made a quesadilla last week with it and it was delicious, added in a little Laughing Cow Spicy Pepper Jack Cheese, and YUM.

Ingredients

  • 25 oz canned white meat chicken in water 2 12.5 oz cans. You can use shredded chicken breasts or rotisserie chicken if preferred.
  • 3/4 package Franks RedHot Ranch Seasoning Packet add a little at a time and adjust to your taste
  • 4 tbsp non fat plain Greek yogurt more or less to your liking

Instructions

  • Drain chicken and add to a serving bowl or small bowl.
  • Sprinkle on approximately 1/2 of the seasoning packet – it is spicy!
  • Add in 3 tablespoons of the nonfat Greek yogurt and mix well.
  • Add more Franks RedHot and/or Greek yogurt if desired.
  • Refrigerate until ready for use.
  • Serve with fresh vegetables and your other favorite products for dipping.
  • Enjoy!

Notes

Be sure to adjust the amount of yogurt and seasoning to your liking.  I like it spicy, while others may not!  I don’t like a lot of the Greek yogurt, while you may!  The good news is that all the ingredients are zero points, so adding more or less of anything will keep this buffalo chicken dip recipe as ZERO Weight Watchers Point on the Blue Plan.

Sustainability is very important to our environment. Sustainability affects the air we breathe. Sustainability affects the food we eat. But what exactly is sustainability? According to the dictionary sustainability is “avoidance of the depletion of natural resources in order to maintain an ecological balance.” Avoiding the depletion of natural resources. Now, you may do your part at home, and if you don’t I encourage you to do so.

Things you can do at home to help avoid the depletion of natural resources:

  • Reduce water waste.
  • Recycle. Anything and everything you can. Your recycling bin should always be fuller than your trash bin.
  • Use reusable water bottles and coffee cups.
  • Conserve energy. Shut those lights off!
  • Buy farm fresh ingredients.

Dairy is a very important part of our diets, so may be surprised to know that producing dairy has a small impact on the environment. In 2008, U.S. dairy was the first agricultural sector to commission a life cycle assessment on fluid milk, which showed that dairy accounts for just 2% of total GHG emissions in the U.S. Since then, dairy farmers and companies have continued to find ways to reduce emissions and overall environmental footprint.

So, is dairy farming sustainable?

YES.

How are Florida Dairy Farms sustainable?

Thanks to innovative practices in cow comfort, improved feed and genetics, and modern barn design, the environmental impact of producing a gallon of milk in 2017 shrunk significantly, requiring 30% less water, 21% less land and a 19% smaller carbon footprint than it did in 2007.

Dairy farmers upcycle resources like byproducts from other agricultural industries to produce milk in a more sustainable way. Data from a nationwide study indicates U.S. dairy is responsible for only 5.1% water use and less than 2% of the U.S. total carbon footprint. It also uses just 3.7% of U.S. farmland.

I have actually had the opportunity to tour the Milking R Dairy farm and it was an absolutely incredible experience. Dairy farming is truly a lifestyle, it’s not a job. The Rucks family (along with all dairy farmers) work for the cows, the cows don’t work for them.

I figured I would show you rather than try to explain 🙂 This way you can see how dairy farmers conserve water.

Cow feed plays an important role in a sustainable food system

Dairy cows can eat leftovers that people don’t, like almond hulls and orange peels, which would otherwise end up in landfills. Before the “leftovers” are feed to the dairy cows, they are endorsed by animal nutritionists who work hand-in-hand with dairy farmers and veterinarians to create the best diets for cows.

Florida dairy farms often use citrus pulp from all the wonderful citrus grown here in Florida, cottonseed hulls, and stale baked goods in their cow feed. Florida citrus pulp and peel is what is left after we make Florida grapefruit or orange juice. The peels and pulp are dried and converted into pellet-like feed which gives the cows energy and calcium. I know citrus always give me a little boost of energy too, I love that it does the same for our dairy cows.

Other common products in cow feed include: brewers grains, distillers grains,and  hominy (mixture of corn bran, corn germ and part of the starchy portion of corn kernels), which we have a lot of in Florida as well.  All the products in the feed bring different nutritional benefits like fibers, proteins, and more. Plus, cows enjoy the taste 🙂

Are dairy farmers committed to be sustainable into the future?

YES.

The Net Zero Initiative (NZI) is an industry-wide effort that will help U.S. dairy farms of all sizes and geographies continue to implement new technologies and adopt economically-viable practices in feed production, cow care, energy efficiency and manure management – making progress towards GHG emissions reductions and significant improvements in water quality and quantity and farmer livelihood, from field to farmgate.

In 2020, U.S. Dairy set aggressive new environmental sustainability goals to achieve carbon neutrality or better, optimize water usage and improve water quality by 2050. To reach these goals, the U.S. dairy supply is working together to ignite new technology, increase science-based research and collection and expand practices, resources and tools for more farmers, cooperatives and processors.

As of July 2020, 27 dairy companies representing 68% of the nation’s milk production voluntarily adopted the U.S. Dairy Stewardship Commitment and contribute to U.S. dairy’s ability to track, aggregate and report on progress. The U.S. Dairy Stewardship Commitment is a social responsibility pledge through which the U.S. dairy community demonstrates its progress in important areas like animal care, environmental stewardship, food safety/traceability, and community contributions.

Ok wow. If you are looking for the ultimate brunch recipe or the eggs benedict recipes of all eggs benedict recipes, this is it. We love making eggs benedict in our family. Usually we make it with Canadian Bacon and Hollandaise Sauce from the envelope on top of english muffins.

But when my husband and I were in Tulum Mexico I ordered Eggs Benedict and they served it with regular bacon and it was delicious. Now, I love bacon….on anything…but I have never thought to switch out our traditional Canadian Bacon for regular bacon. Of course, I had to make it that way at home.

And why not take it up one more level? I mean, why not? So, I decided to add in some crab and make homemade hollandaise sauce.

I mean, it’s Eggs Benedict with Crab and Bacon with Homemade Hollandaise Sauce…what else could you possibly need for breakfast or brunch?! You all know that I follow Weight Watchers, now eggs are actually great for you…but the rest of this recipe isn’t exactly WW, but we gotta spurge every now and again, right?  I think so. Otherwise we feel like we are missing out on something…and if you don’t try this Eggs Benedict with Crab and Bacon you will be 😉 This eggs benedict recipe is actually perfect for Easter, Mother’s Day, Father’s Day, or actually any day you want to celebrate with an incredible breakfast.

Homemade Hollandaise Sauce Ingredients

½ cup heavy cream
4 large egg yolks (Separate the egg yolk and egg whites in two separate bowls. Discard the egg whites.)
2 tbsp lemon juice
1 pinch cayenne pepper (You can add more if you want to spice it up!)
½ cup salted butter (Melted butter mixes easier with the sauce)
Seasoning Salt (to taste)
Black Pepper (to taste)

1 tbsp white vinegar
4 rolls (Traditionally this recipe uses english muffins but I found the dinner rolls hold the sauce much better)
8 Slices of bacon (Can substitute for turkey bacon if desired)
Smoked paprika (This will be the garnish at the end of the dish. Sprinkling over top of the Hollandaise Sauce. I used a pretty heavy amount in the photos shown but you can add your desired flavor amount)
Chipotle hot sauce (This blends so well with the smoked paprika but you can use any type you want)
¾ cup crab meat (Can you use lump crab meat or imitation. Imitation crab meat is about half the price of regular crab meat from your local grocery store. Whichever you go for make sure to shred it into small pieces)

How to create Eggs Benedict homemade Hollandaise Sauce

  • Preheat the oven to 350 degrees. This is going to be for the bacon slices.
  • Take a deep saucepan and pour in about an inch or so of water. Set a glass bowl or stainless steel bowl over the saucepan so it fits nice and stug inside without touching the water. Bring that to a simmer.
  • Once your water is simmering in the double boiler add in your egg yolks, cream, lemon juice and cayenne pepper to the bowl over the heated saucepan and whisk well. Whisking constantly, continue to cook the sauce on a low simmer until just thick enough to coat the back of a wooden or metal spoon. You do not want to overcook because the eggs will get hard and flaky.
  • Reduce your heat down to very low and then slowly drizzle in the warm melted butter while whisking. Once all butter is whisked in, remove from heat and season with Seasoning Salt and Pepper to your preferred taste. Transfer to a dish, cover and keep warm.

How to Poached Eggs for Your Eggs Benedict

  • In a large stock pot or skillet bring several inches of water along with the white vinegar to a rolling boil.
  • Once water is boiling nicely, crack eggs gently into water one at a time. You should be able to fit about four eggs at a time. Remember, do not overcrowd so they can easily be removed.
  • Watch carefully as the eggs only need to cook for about 3 to 4 minutes. The eggs whites should be set while the egg yolk is still very runny. Do not stir as this could break the yolk.
  • Transfer to a plate with a paper towel on top to drain. Continue with the remaining four eggs.

How to heat your Bacon, Crab and Rolls

  • Your oven should be preheated at this point. While your water is boiling for the poached eggs you can start cooking your bacon.
  • Lightly grease a baking dish and lay bacon slices on it ensuring none are overlapping. Place the dish in the oven for about 15 minutes. Check frequently for desired crispiness. Cooking in the oven allows for an even cook and crisp on every piece.
  • Once it is finished, remove from the oven and lay pieces of bacon on layers of paper towels. Gently dab each side to remove all the excess bacon grease. Set aside.
  • Place rolls in the oven on a baking sheet for about 5 minutes. You just want to heat up the roll but not crisp it into toast. This will give you a nice bite when enjoying the sandwich.
  • Crab only needs to be slightly heated so you can either add it to the microwave on 70% for 20 seconds or on the stove top for a few minutes.

  • Place roll on your plate and open.
  • Cut bacon in half so a piece is on each side of the roll.

  • Spoon on some of the shredded crab meat.
  • Next pour the Hollandaise Sauce over the crab, close the sandwich, and pour more over the top.

How to make Eggs Benedict with Crab and Bacon

Helpful tips for making Eggs Benedict with Bacon and Crab with homemade hollandaise sauce

If you need to reheat your hollandaise sauce place the bowl in the microwave on 50% heat only heating on 10 second intervals. You only want to heat through not cook.

Do not add salt into your boiling water for the poached eggs. This will make the eggs spread more.
Add a small microwave safe bowl of water into the microwave when cooking crab meat to lightly steam. This will help the crab not become dry.

To retrieve the egg yolk gently crack your egg over a bowl. While you hold each side of the shell in your hand, very carefully pass the egg yolk back and forth between halves while the egg white runs off into the bowl below. When egg white has been removed you can pour your egg yolk into a separate bowl. Do not mix prior to adding into the double boiler.

You can cook ham or turkey bacon in the oven on the same temp. Check periodically for desired browning.

Seasoning salt is my preferred choice because it adds a depth of flavor to the sauce and takes a lot of the bitterness which can be found from the lemon juice.
