5 Healthy On-The-Go Breakfast Recipes
Busy? Yes! Us too! And the mornings seem to be the worst. My kids school schedule actually changed and now they start school 20 minutes earlier. Instead of getting up at 5:55 a.m. we now get up at 5:40 a.m.
5:40 A.M.
Now, I know that they are teenagers and that they are perfectly capable of getting up by themselves and grabbing breakfast and getting out the door for school. But my son is a junior. My daughter is a freshman. That means I have just a year and a half before my son will be at college and I won’t be able to sip my coffee at ungodly hours while he eats breakfast and I listen to the two of them rush out the door.
So, it’s 5:40 A.M. while I can.
And that means I need easy breakfast recipes. Preferably ones that they (and me) can bring with us as we get started on our day. Whether you are getting the kids out the door for school, getting yourself out the door for work…or just headed to your home office, life is getting busier. What seems to suffer first is breakfast! We were all told that breakfast is the most important meal of the day…and it wasn’t a lie! Having a nutritious breakfast is the perfect way to start your day off on the right foot.
But, how do you find time to make breakfast and handle everything else that comes your way in the morning? Let’s be honest, most days I am just hoping that I can finish my cup of coffee! Well, I have a solution…actually, 5 for you. I have 5 easy on-the-go breakfast ideas that you can take with you on the go. Each one only has a few ingredients and 3 of them are ready in under 5 minutes. Score!
Okay, let’s make some breakfast shall we?!
You all love my healthy cherry muffins, and I love switching out those cherries for in-season produce. Like Juicy Crunch Tangerines. Juicy Crunch Tangerines are the sweetest most incredible tangerines you can find and they are only in stores for a limited time…so, look for them now through February. Juicy Crunch tangerines are grown right here in Florida and I have actually had the pleasure of visiting the groves!
Healthy Tangerine Muffins Ingredients
2 medium ripe bananas
1 ½ cups Protein Complete Pancake Mix – I used the Kodiak brand
1/2 cup water
Juice from 1/2 Juicy Crunch Tangerine
1 egg
1 tsp vanilla extract
1 tsp cinnamon
1 cup diced Juicy Crunch Tangerines – peeled
Grab the instructions to bake Tangerine Muffins
I actually follow the WW program, and if you happen to as well, you will be happy to know that this muffin recipe very low in points. The only ingredient that has points is the pancake mix!
You all know that I love making smoothies, so of course I would recommend making one with these incredible tangerines!
Vanilla Tangerine Smoothie
Ingredients
- 1/2 Juicy Crunch Tangerine peeled
- 6 Baby Carrots
- 3 ice cubes
- 1/3 cup non-fat Greek vanilla yogurt
Instructions
- Place all the ingredients into your favorite blending device and blend until smooth
- Enjoy!

Easy Tangerine Crunch Breakfast Wrap
Ingredients
- 1 Flour Tortilla - I used the low carb fajita size
- 1 tbsp Granola - I used one with chocolate chips in it too
- ½ Juicy Crunch - peeled
- 1 tbsp Non Fat Greek Yogurt - I used plain but vanilla would also be delicious!
Instructions
- Spread a thin layer of the Greek yogurt over the tortilla
- Top with granola and Juicy Crunch!
- Enjoy!

Cold, creamy and full of protein, overnight oats are a healthy and easy way to grab breakfast on-the-go.
Tangerine Overnight Oats
Ingredients
- 1/3 cup old-fashioned oats
- 1 Tablespoon vanilla whey protein powder
- 1/4 cup milk
- 1/3 cup plain nonfat Greek vanilla yogurt
- 1 teaspoon Juicy Crunch tangerine zest
- 1 Juicy Crunch peeled and sectioned
Instructions
- Add the ingredients as listed above to a mason jar with a lid, leaving the Juicy Crunch pieces aside for now.
- Stir well.
- Add Juicy Crunch slices.
- Cover and refrigerate for several hours or overnight.
- Enjoy!
