What I love about this cocktail is that I used fresh pineapple. Not just pineapple juice! Now, if you really wanted to, you could use pineapple juice, but, personally, I think using fresh pineapple is what makes pineapple cocktail extra amazing.

Can you use canned pineapple?
Sure, just make get the variety that is in 100% juice. Crushed or chunks would work fine.
Do you need to use sparkling water?
Nope, but if you leave that out you are going to have a deliciously strong cocktail, so be careful 😉
Can you leave out and the vodka and just use coconut rum?

Pineapple Island Crush Cocktail
- 1/2 cup fresh pineapple chunks
- 1 oz coconut rum
- 1 oz vodka
- Sparkling water
- In a blender or food processor add the fresh pineapple chunks and blend until smooth.
- In a glass of choice add the pineapple puree.
- Then add the rum, vodka.
- Give it a gentle stir.
- Add ice and top with sparkling water to taste.
- Garnish with additional pineapple slices if desired.
