This recipe was originally created for Noble Citrus, but I wanted to make sure to share it with you all too!
It’s officially Florida Starbust PUMMELO SEASON! And I am celebrating this massive citrus fruit with Pummelo Simple Syrup that I used to make an incredible cocktail. Of course, you can use in a variety of other ways too 😉

What is Simple Syrup?
Simple syrup is a basic sweetening agent commonly used in culinary applications, especially in mocktail and cocktail preparation. It’s easy to make and incredibly versatile.
How to Make Simple Syrup:
- Heat the Water: Start by heating water in a saucepan. You can use equal parts water and sugar (e.g., 1 cup of water and 1 cup of sugar), or adjust the sweetness to your preference.
- Dissolve the Sugar: Over medium heat, stir continuously until the sugar completely dissolves into the water. This typically takes just a few minutes.
- Cool the Syrup: Remove the saucepan from the heat and let the simple syrup cool to room temperature.
- Store the Syrup: Once cooled, transfer the simple syrup to an airtight container, such as a glass bottle or jar, and store it in the refrigerator. It can be kept for several weeks.
How to Make Pummelo Simple Syrup:
- Add Pummelo Rind: Add the rind of the pummelo to the pan along with the sugar and water.
- Infuse the Flavor: Once you remove the syrup from the heat, remove the rind.
- Cool and Store: Allow the syrup to cool before adding it to your favorite dishes or drinks.

Florida Starbust Pummelo Simple Syrup
Ingredients
- Equal Amounts of Sugar and Water
- Pummelo Rind – more rind more flavor!
Instructions
- Add the sugar and water into a pot and heat the ingredients until dissolved.
- Stir the mixture over medium heat until the liquid is completely clear, not cloudy.
- Immediately remove from the heat source.
- Add the rind of the pummelo to the pan along with the sugar and water.
- Once the mixture is cool, remove the pummelo rind.
- Store your simple syrup in an airtight container, in the refrigerator, until ready to use.
