My husband and I love salmon.  Salmon is definitely one of our favorite meals and every now and then I try to experiment and find us a new way to enjoy it.  We definitely love the sweet and savory, the Maple Glazed Salmon has been a go-to salmon recipe for us for a few years now.  So, I went with the sweet…brown sugar…and savory…the Dijon mustard.  And the end result is an easy and outstanding salmon recipe.

Salmon with Mustard and Brown Sugar Glaze

This Salmon with Mustard and Brown Sugar Glaze is a sweet and savory dish that is sure to please. This is an easy and delectable salmon recipe.

Ingredients

  • 2 tablespoons light brown sugar
  • 1 tablespoon honey
  • 1 tablespoons butter
  • 1/4 cup Dijon mustard
  • 2 tablespoons soy sauce
  • 2 tablespoons olive oil
  • 1 teaspoon ground ginger
  • Salt and freshly ground black pepper
  • 2 salmon fillets

Instructions

  • Sprinkle salt and pepper on the salmon and set aside.
  • In a medium pan melt the brown sugar, honey and butter.
  • Reduce heat and whisk in the mustard, soy sauce, olive oil and ginger.
  • Add the salmon to the pan, skin side down.
  • Spoon some of the sauce on top of the salmon.
  • Flip once after 5 - 6 minutes.
  • Spoon some of the sauce on top of the salmon.
  • Saute to medium doneness.
  • Enjoy!

I am loving all the beautiful produce at the market.  Creating a new smoothie recipe everyday has been so much fun!  Why do I love smoothies?  They are one of the easiest ways I know of to get in multiple servings of fruits and vegetables in just one sitting.  Smoothies only take a few minutes to make too, so not only is it an easy way to get in a bunch of nutrients, they are also to make!

I know that sometimes we get into a rut with our smoothies, that’s why I like to try all sorts of combinations and share the successful flavors with you all!  You can see 100+ smoothie recipes HERE in fact.  Those should keep you going for some time 😉

In my smoothies, I like to have at least 2 veggies to go along with the yummy fruits.  Too many fruits = too many sugars.  You will also see cinnamon, turmeric, and chia seeds in most of my smoothies, all three are great for you and do very little to change the flavor of your smoothie.  So why not add them in?!

I do like adding some for of protein to my smoothies too, whether it be a powder or lowfat Greek yogurt, I feel like it keeps me fuller longer.  Which means I stay away from the snacks longer.

The blackberries in this smoothie give it a beautiful deep color, not to mention a great flavor.  The avocado makes it extra creamy, and the mango adds a yummy twist.

Health Benefits of Blackberry Avocado Mango Protein Smoothie Ingredients:

Ingredients

  • 4-5 slices cucumber
  • 1/3 mango
  • 10 blackberries
  • 1/2 avocado
  • Big handful greens
  • 1/4 teaspoon chia seeds
  • 1/4 teaspoon cinnamon

We love Manwich night in our house. Sloppy Joes or my Manwich Tater Tot casserole are on our meal plans pretty frequently, but tonight I wanted to mix it up just a tad.

I made our typical sloppy joe mix, using ground turkey and Bold Manwich, then I placed flattened biscuits into a muffin tin and made Sloppy Joe Biscuit Cups!

I used a can of refrigerated biscuits, and simply flattened them out with my hands and then filled each “biscuit cup” with the Manwich and turkey mixture.

My son loves cheese, but my daughter does not, so I sprinkled cheese on a few of them and tossed the muffin pan into the oven for about 15 minutes at 350 degrees.

Turn traditional sloppy joes into something a bit more fun! These sloppy joe biscuit cups are an easy dinner idea the whole family will love.

Ingredients

  • 1 lb of ground turkey or beef
  • 1 can biscuits - found in the refrigerated section
  • 1 can Bold Manwich Sauce
  • Shredded cheese if desired

Instructions

  • Preheat the oven to 350 degrees
  • Cook ground turkey/beef thoroughly in medium pan
  • Pour in the Manwich Sauce and stir well
  • Open the can of biscuits and one by one flatten each biscuit and firmly press each one into the muffin/cupcake pan
  • Fill each biscuit with the Sloppy Joe mixture
  • Top with cheese if desired
  • Bake at 350 for 12-15 minutes or until biscuits are golden brown
  • Enjoy!

When is pumpkin season?  Does it really have to end?  Pumpkin is very low in fat (as in almost none), high in fiber and loaded with vitamin A and potassium.  Did you know that beta-carotene (which is a precursor to vitamin A) is a vital nutrient is essential for maintaining healthy vision, supporting immune function, and promoting skin health. Ingredients

  • 2 cups uncooked old fashioned oats
  • 1 cup pumpkin puree
  • ½ cup peanut butter or equivalent alternative
  • 2 tablespoons honey
  • ¼ cup chia seeds
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 scoop protein powder – non-flavored or vanilla
  • ½ cup mini chocolate chips – dark or milk I had milk, so that’s what I used

Instructions

  • Place all the ingredients into a large bowl and mix well
  • Using your hands make 1 – 1 1/2 inch balls to form your pumpkin bites
  • Place on a cookie sheet or directly into a storage container
  • Enjoy!

Notes

Freeze what you think you won’t eat in a week or two. In fact, it’s a great idea to make a double batch and freeze the extras!

Florida strawberries are in season right now and I have bought some at the market and I have had two neighbors bring me some that were fresh-picked! Does it get any better than that?

What do your mornings look like?  For most moms it includes getting kids ready for school, figuring out breakfast, and making sure everyone is dressed.  When Little Debbie told me that they were celebrating the moms and dads of 7:00 a.m., I decided I would share my mornings with you too 🙂

I get up at 6:50 to the insanely loud alarm on my husband’s phone.  I roll out of bed, head downstairs to get my cup of water (I read somewhere that it was good for us to drink water first thing in the morning before anything else, so I do it…can’t hurt 😉 ) then I start my coffee.

I head back upstairs to wake up my son.

Come back downstairs and get my day started.  Filtering emails, checking my schedule, and doing some social media.

After about 15 minutes, it’s time to make my son breakfast and get his lunch ready.  Then he heads upstairs to shower and get ready for his day.

At 7:55 a.m. he gives me my good morning kiss and hug and he is out the door.

That’s when I head back upstairs to make sure my daughter is up and she hasn’t been playing on her tablet for 45 minutes.

She comes downstairs and I do the breakfast and lunch routine all over again.

If I have a moment, I will jump back on the computer to see if there is anything I can do quick.

At 9:01 a.m. I usually freak out that I am n the PJs and haven’t brushed my teeth yet, so I run upstairs and brush my teeth.  At 9:03 my daughter and I run out the door in hopes to make it on the bus.

Yes, you didn’t miss that I didn’t get dressed.  In the world of bus-stop chatting, I figure that the fellow parents would appreciate the lack of coffee breath over me changing out of my PJ pants and a t-shirt.  At least 3 days a week, I walk up to the bus stop barefoot an in my PJs.  The other 2 days, I am more organized and am in my workout clothes ready to hit the gym.

After both the kids are off to school, I sit down and finish my cold cup of coffee, my Little Debbie Mini Muffins and get back to work.  UninterruptedAhhhhh…..

Knowing that my kids can go to any college that they would like is a huge relief. A financial burden has been lifted.

My kids are doing great in school, in fact, they are both honor roll right now. My husband and I talk about the importance of schooling, sports, scholarships, and college all the time. I originally wrote  this blog post in 2017, and I wanted to leave this first paragraph in here so that you all can see it and think back to the days when avocado toast was just becoming a trend.

  I had heard about avocado toast being on hip restaurant menus, but I hadn’t tried it yet.  I mean, let’s be honest, the idea of avocado with toast sounds a bit strange at first. Then one of my friend’s told me that avocado toast was one of her favorite things to have right now.  Then I went to go visit my parents for the weekend and my mom told me that I had to try Avocado toast with toppings.  Creamy Avocado seasoned and mashed, spread over crisp toast then sprinkled with crunchy cherry tomatoes and fresh cilantro. It sounded a bit different, but I was all for trying it. And I am glad that I did. It’s delicious! Plus, avocado is good for you too.

Seriously, how funny is that?! Now there are tons of versions of avocado toast and it’s on just about everything breakfast and brunch menu all over the world!

Avocado Tomato Toast

Avocado Tomato Toast. Creamy Avocado seasoned and mashed, spread over crisp toast then sprinkled with crunchy cherry tomatoes and fresh cilantro.

Ingredients

  • 1 piece of your favorite toast – I prefer multi-grain or pumpernickel/rye swirl
  • 1/2 avocado
  • 4 – 5 cherry or cherub tomatoes cut in half
  • Juice from one slice of lime
  • 1 teaspoon or more to taste of fresh cilantro
  • Salt and pepper to taste

Instructions

  • Mash the avocado with a fork in a small bowl
  • Add the lime juice and sprinkle in the salt and pepper to the avocado, mix well
  • Add in the fresh cilantro
  • Spread the avocado mixture on the toast
  • Add on the halved tomatoes
  • Enjoy!

Notes

You can add some lime zest for an extra punch of flavor if you would like

Mango Carrot Green Protein Smoothie

You all know that I love my smoothies, and they almost always have protein powder in them because I view my smoothies as a protein, nutrient-filled way to start my day.  But, I also know not everyone likes and/or buys protein powder on a regular basis so I wanted to share a protein-packed smoothie recipe without protein powder.  And the easiest way to get that creamy consistency with the delicious vanilla flavor is by adding a vanilla Greek yogurt.

Healthy Mango Carrot Green Protein Smoothie

I choose Cabot Creamery Lowfat Vanilla Bean Greek Yogurt in my smoothie for a few reasons:

  1. I love the company and what they do and what they stand for
  2. I love their cheeses, so of course I would love their yogurt
  3. Cabot’s Greek Yogurt makes a healthy, protein-rich treat (17 grams in 1 cup!) when blended with fresh fruits for quick and yummy smoothies. Made from 2% lowfat milk, this sweet treat is guiltless.
  4. I had a coupon 😉

One thing I love about smoothies, is that the fruit and vegetable combinations are endless!  I love creating new flavors, it keeps my breakfast from getting boring and my produce from going bad.

Ingredients

  • 5 baby carrots
  • 4 green apple slices - I used Crunch Pak
  • 1/4 cup diced mango
  • 1/2 cup Cabot Creamery Lowfat Vanilla Bean Greek Yogurt
  • Big handful of greens - I used organic girl used spring mix
  • 1 teaspoon chia seeds
  • 1 teaspoon turmeric
  • 1 teaspoon cinnamon
  • 2- 3 ice cubes if desired
  • 2 - 4 oz of coconut water/milk if desired

Instructions

  • Place ingredients as listed above into your favorite blending device
  • Blend until smooth
  • Enjoy!
