You all know that I love making a protein smoothie just about every day. They are so easy to make, and I can have one prepped and ready in about 5 minutes. But what about those mornings I don’t have 5 minutes to cut up some fruit and vegetables? What about the mornings I don’t even have time to get out my blender quick because I am barely getting my daughter to the bus stop on time?

Ah, those are the mornings I grab for my Premier Protein Shakes. Premier Protein Shakes are loaded with protein, come in single serve containers, are loaded with protein, and taste great. Plus, they now have the 12-pack of Premier Protein Shakes at Target, so it’s super easy for me to stock-up when I am running low. The 4-packs are nice to have on hand, but we tend to go through those pretty quick in my family (the kids like Premier Protein Shakes too!). I am really loving the idea of making my own fruit roll ups lately.  The prep time is less than 5 minutes and this is my 3rd or 4th variety and I love them all!  Really, how can you go wrong with fruit and honey baked goodness?  If you follow me, you know that I am a smoothie addict, you can find over 100 smoothies recipes here on the blog, and in just about every smoothie I make I add in vegetables, turmeric, cinnamon, and chia seeds.  All of those have outstanding nutritional value, so I have decided why not add them to my fruit leather creations??

The carrots and greens do not alter the flavor at all, but the greens do make the color a bit darker.  Since I crave something sweet pretty much daily, the fruit leather has also become one of my favorite snacks!  The kids love it too, but I will be honest, some days I have a hard time sharing 😉

This fruit leather recipe has strawberries, pineapple, carrots and a healthy handful of greens.  You simply place all the ingredients into your favorite blending device and then pour it on a baking sheet.  Toss it in the oven and forget about it for the next several hours.  Once it’s done, let it cool, cut it and enjoy!  Seriously, it is so easy!  And the possibilities are endless of what you can add into your own fruit leather creation.

Ingredients

  • 2 cups strawberries
  • 1 cup fresh pineapple
  • ½ cup carrots - I had matchstick ones in my refrigerator so that's what I used
  • handful greens
  • 1/4 teaspoon chia seeds
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • ¼ cup honey
  • 1 tablespoons fresh lemon juice

Instructions

  • Preheat the oven to 200 degrees
  • Place all ingredients into your food processor
  • You should be able to pour the mixture, but it shouldn't be so watery that it will run off the baking sheet
  • Line rimmed baking/cookie sheet with parchment paper or silicon baking mats
  • Pour/spread the mixture evenly onto baking/cookie sheet
  • Place in oven and cook until firm - approx. 3-5 hours
  • Remove from oven and let cool
  • Cut into desired width and length strips and
  • Roll up with parchment paper if desired, or keep separated with wax paper in an air-tight container
  • Can be stored in the refrigerator for up to a week or two months in freezer
  • Enjoy!

Notes

If you choose not to add in the greens, carrots and spices - that's okay too! It will still be delicious and a healthier snack option that buying the ones in the store.

Doesn’t that sound like an interesting combination?  Pineapple and sweet potato are both good for inflammation and since I am still nursing my knee, I have been trying to use them both more in my smoothies.  Blackberries are high in antioxidants and Vitamin C, not to mention they taste great and make your smoothie a rich beautiful color.

I love adding cinnamon, turmeric and chia seeds to my smoothies as they are an easy way to get an extra “boost” to your smoothie without spending a ton of money or altering the flavor.  Cinnamon is commonly tied to increasing your metabolism, turmeric also helps with inflammation, and chia seeds are nutritional powerhouses.

Greens, cucumbers, and carrots are also found in most of my smoothies, as they also add nutrients and don’t mess with the overall flavor profile of the smoothie.  It is always a good rule-of-thumb to have as many veggies in your smoothie as you do fruit.  And if you are making it your breakfast or a workout recovery smoothie, I strongly recommend adding protein – either as your favorite powder or with greek yogurt.

For me to eat a sandwich, it’s gotta be one heck of a good sandwich.  I need lots of flavors – savory, sweet, spicy, it can not be boring.  I also need good bread, because if I am honest – I could live on good bread and cheese.  So, if I am going to make a sandwich, it has to be on good bread.  I want to take a bite and have it be so good that after I take a bite, I close my eyes and say “Mmmmmmmm.”

And that’s exactly what this Pressed Panini does.  I loaded my panini with thick, and I am saying thick, slice of turkey (1/4 inch!), then added on brie, whole cranberry sauce, arugula, and my homemade Avocado Sriracha Aioli.

I love avocados on sandwiches, but since I was making a pressed panini and I already loaded on the toppings, I wanted to make an aioli.  I already told you that I like spicy and sweet, so adding sriracha to the mix just seemed like a flavor match made in heaven.

Have you ever made a pressed panini before?  I have bought them from my favorite local sandwich shop, but have never made my own.  My favorite sandwich shop may have lost a customer now 😉

Tasty Avocado Sriracha Aioli

I used the Lodge Cast Iron 10 Inch Blue Square Grill Pan and the Blue Panini Press lid to make my pressed paninis.

Not only is it easy to use, it’s beautiful! I warmed the grill, placed the pan and the lid on the grill to warm it (you warm both sides, don’t place the lid on the pan, but directly on the heat source), once both sides are warmed place your sandwich on the pan, top it with the press and get ready for your mouthwatering panini to be ready in just a few minutes.

Homemade Sriracha Avocado Aioli

Now, here’s my Avocado Sriracha Aioli Recipe. Be sure to Print It and Pin It so that you can make it again and again. As I mentioned, I slathered my Avocado Sriracha Aioli on a Loaded Turkey Panini. For the panini I used 2 slices of THICK smoked turkey breast (if you have leftover turkey from the holidays, that would be fantastic as well!), a generous helping of whole cranberry sauce (found in the same aisle as cranberry jelly), a delicious amount of brie (slice it kinda thin so it melts easily), and arugula. All those ingredients along with the Avocado Sriracha Aioli, pressed between cuban bread makes for one of the most delicious sandwiches you will ever have. I promise. I mean…YUM.

Avocado Sriracha Aioli on a Loaded Turkey Pressed Panini

Ingredients

Ingredients for aioli

  • 1 medium very ripe Avocado
  • 1/3 cup plain fat-free Greek-style yogurt
  • 2 teaspoons Sriracha
  • splash of lime juice
  • 1 teaspoon minced garlic
  • 1 teaspoon salt
  • 1/4 teaspoon ground black pepper

Ingredients for sandwich

  • 2 slices of good bread - I used cuban
  • 2 thick slices of smoked turkey - I had mine sliced 1/4 inch thick leftover Thanksgiving or Christmas turkey work great too!
  • Brie
  • Whole cranberry sauce
  • Arugula

Instructions

Instructions for aioli

  • Place all ingredients in a food processor or a similar blending device.
  • Blend until smooth.

Instructions for pressed panini

  • Place the pan and lid onto the hot grill (or stove) to warm both pieces.
  • While it's warming, assemble your sandwich.
  • Put a generous helping of the aioli onto one slice of the bread, put on one slice of turkey, then layer on the thinly sliced brie, next another slice of turkey, next a big handful of arugula, and finally, the cranberry sauce.
  • Place your prepped sandwich on the pan, then using a hot mit or gloves that can withstand heat, pick up the lid and press your sandwich.
  • When it your sandwich looks nice and pressed and the bread looks to have some grill marks and is toasted, it is ready. Depending on how hot your grill is (mine was at about 400 degrees) will determine how long it takes, check it after a few minutes. Mine were ready in under 5 minutes.
  • Enjoy!

The pan and the lid will be HOT, be sure to use caution. Do NOT lift with your bare hands.

  • 2 – 3 thick slices of sweet potato
  • 4 – 5 baby carrots
  • 3- 4 strawberries
  • 10 blackberries

This Scalloped Root Vegetable Casserole is beautiful and delicious. Loaded with a variety of Idaho potatoes, turnips, and cheese, this is a crowd pleaser.

Scalloped Potato Casserole With Root Vegetables

The fabulous folks at Idaho Potato asked me to make a beautiful side dish that included a variety of root vegetables, and I created this Scalloped Potato Casserole. The sweet potato slices add a rich color and the mixture of potatoes and the turnip make this dish a perfect addition to your next gathering, holiday or family meal.

Now, I will openly admit that this recipe does take a few to prep, as you have to slice all those potatoes and root vegetables, but trust me, it’s totally worth it.

Tips for Slicing Root Vegetables

  • Use a Mandoline: If you have one, a mandoline slicer is your best friend for this recipe. It ensures that all your slices are the same thickness, which helps them cook evenly and creates that professional-looking layered effect.
  • Sharp Knife: If you don’t have a mandoline, a sharp knife will work just fine. Take your time and make sure to cut each vegetable to about ⅛-inch thick. This thickness helps the vegetables absorb the creamy sauce and become tender during baking.

Once your potatoes and vegetables are sliced, you will make the sauce. With only a few ingredients, this garlic-y, creamy deliciousness will be ready in just a few moments.

Now that your potatoes and root vegetables are sliced (cut them nice and thin or use a mandolin if you have one) and your sauce is prepped, it’s time to get messy.

Since you want each slice of potato and root vegetable to be covered in that garlic-y, creamy deliciousness, I recommend adding coating each one, using your hands. I put half of the potatoes and turnips into a large bowl then slowly added about 1/3 of the cream mixture into the bowl with the potatoes and turnips until coated well.

Using your hands place the coated potato and turnip slices into the baking pan, vertically. Make sure the slices are close together. Add another ⅓ of the cream mixture to the remaining potatoes and turnips, coat well. Layer them into the baking dish.

I like placing the slices up right, commonly known as “hasselback”, I just think it looks prettier. You can, of course, layer yours anyway you like 🙂

Once all your slices are in your prepped 9×13 baking dish, you pour on the remainder of the cream mixture and toss them into the oven at 400 degrees. The total baking time is about 1.5 hours.

Prep in Advance

If you’re preparing this dish for a holiday gathering or dinner party, consider slicing your vegetables ahead of time and storing them in cold water to prevent browning. Just make sure to pat them dry before coating them with the cream mixture.

  • Roast Chicken or Turkey: The creamy and rich flavors of the casserole are the perfect complement to roasted poultry, making this a wonderful addition to your holiday table or Sunday roast.

Refrigerating Leftovers

Allow the casserole to cool completely before transferring it to an airtight container. Leftovers can be stored in the refrigerator for up to 3-4 days. If you plan to reheat the casserole, place individual portions into microwave-safe containers for easy reheating.

Freezing Leftovers

f you want to freeze your casserole for longer storage, ensure it’s fully cooled before wrapping it tightly in plastic wrap or aluminum foil, followed by placing it in a freezer-safe container or heavy-duty freezer bag. Properly stored, it can last up to 2-3 months in the freezer.

What’s the best way to reheat leftovers?

  • Microwave: Yes, you can reheat it in the microwave! For individual portions, microwave on high for 2-3 minutes. If it’s not hot enough, stir and heat in 30-second intervals until warmed through.
  • Oven: For a crispier texture, reheat in the oven at 350°F for 20-25 minutes.
  • From Frozen: If you’re reheating directly from the freezer, thaw in the fridge overnight, then microwave as mentioned above or bake in the oven at 350°F for 30-40 minutes.

Ingredients

  • 4 large russet Idaho® potatoes sliced thin, approximately ⅛ inch
  • 3 red Idaho® potatoes sliced thin, approximately ⅛ inch
  • 2 sweet potatoes sliced thin, approximately ⅛ inch
  • 3 turnips sliced thin, approximately ⅛ inch
  • ½ tablespoon butter
  • 1 small onion diced
  • 2 garlic cloves diced
  • 2 packages of whipped chive cream cheese
  • 16 oz. heavy cream
  • 1 teaspoon black pepper
  • 2 teaspoon of salt more to taste
  • Grated Parmesan cheese and diced chives for garnish

Instructions

  • Preheat oven to 400° F.
  • Slice the potatoes and turnips and set aside in a large bowl.
  • In a medium, non-stick skillet, heat 1/2 tablespoon butter over medium heat. Add the diced onions and garlic, saute until translucent.
  • Add the cream cheese, heavy cream, salt and pepper to the skillet. Bring to a simmer and stir until smooth.
  • Turn off heat.
  • Spray a 9×13 baking pan with non-stick cooking spray.
  • Put half of the sliced potatoes and sliced turnips into a separate large bowl.
  • Slowly add ⅓ the cream mixture into the bowl with the potatoes and turnips until coated well.
  • Using your hands place the coated potato and turnip slices into the baking pan, vertically, making sure the slices are close together.
  • Add another ⅓ of the cream mixture to the remaining potatoes and turnips, coat well. Layer them into the baking dish.
  • Once all the slices are in the baking pan, pour the remainder of cream mixture into the baking pan.
  • Cover the pan with aluminum foil and place in the oven for 30 minutes.
  • After 30 minutes remove the foil and bake for an additional 40 minutes.
  • Remove from oven, sprinkle on Parmesan cheese and bake for an additional 15 – 20 minutes. Sprinkle on chives right before serving if desired.
  • Enjoy!

We just had a Sprouts Farmers Market open up by my house and there were so many deals on produce that I just couldn’t resist grabbing just about everything.  As I walked past all the fresh fruits and vegetables I just kept thinking about all of the delicious smoothie creations I could come up with. I don’t make many smoothies with pineapple because it’s pretty costly compared to other fruits, so I happily grabbed 3 fresh pineapple at a buck a piece while I was at Sprouts.  Smoothies with pineapple here I come!

Healthy Avocado Pineapple Banana Smoothie

I told you guys a few weeks ago that I hurt my knee, so I have been taking extra care of it and I like to enjoy the foods that naturally help with inflammation. Sweet pineapple is one of those foods that helps with inflammation! So adding pineapple to a protein smoothie recipe was a no-brainer for me. My dash of turmeric also helps with inflammation, I am hoping to be able to run again one day…sooner than later!  The avocado and banana in this smoothie recipe make it extra creamy and extra yum!

Here’s why I toss the other add-ins into my smoothies:

Chia seeds – These little guys are nutritional powerhouses, I add them into every smoothie.

Cinnamon – It has soooo many benefits, one of my favorites is that it helps increase your metabolism.

Protein Powder – Helps keep you full longer and makes your smoothie extra creamy.

You know the nights where you can have dinner all planned out but the side dish you just can’t figure out?  Or when you want to come home and have dinner and your sides all ready to serve?  Well, it doesn’t get easier than crockpot baked potatoes.

You can make 12 or 2, as long as they fit in your slow cooker, you are good to go!  I recently made 10 for a Crockpot Meal Planning Library Presentation here in Tampa, and just the other night I made 3 for us for dinner.  When I made 10 baked potatoes in the crockpot, I used my big crockpot and when I made just 3, I used my small crockpot that I usually use for dips or appetizers.

No matter how many baked potatoes you are making, the prep and cooking instructions are the same.  And they are easy peasy!  You simply wash your potatoes, set them aside while you tear pieces of aluminum foil.

Drizzle some olive oil on the center foil, place the potato on the foil, drizzle a little more olive oil and add a dash or two of salt.  I find the salt gives the skin a bit of crunch and a lot of flavor.  Wrap up the potatoes and place them in your crockpot for about 8 hours on low.

Unwrap and serve when you are ready to enjoy.

  • Desired number of potatoes - I recommend Idaho Potatoes
  • Olive Oil
  • Salt
  • Aluminum Foil

  • Wash the potatoes, set them aside.
  • Tear pieces of aluminum foil big enough the wrap the potatoes in.
  • Drizzle some olive oil on the center foil, place the potato in the center of foil, drizzle a little more olive oil and add a dash or two of salt.

I love pineapple because it is sweet, but it also helps with inflammation.  Which is great is you have any aches and pains.  Did you know that mangoes are really high in vitamin C, low in calories, and a great source of vitamin A and B?  Plus, they taste great, so they are a great addition to your smoothies.

Healthy Tropical Avocado Smoothie

I almost always add carrots, cucumbers and greens to all my smoothies.  It is important to have fruits and vegetables in your smoothies!  While blending all your favorite fruits together sounds delicious, it will also give you a large dose of sugar, you have to balance that out with vegetables!  Carrots, cucumbers and greens really don’t change the flavor profile of your smoothie at all, but give you a nice serving of veggies.

Carrots – The orange powerfood will give you vitamin A and is also linked to preventing cancer, giving you healthier looking skin and aids in digestion.

Cucumbers – These are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

Avocados – Besides being loaded with the “good fat”, they help heart health, lower cholesterol and lower triglycerides. Plus, they make your smoothie extra creamy 🙂

Cinnamon helps gives you a metabolism boost, turmeric is good for inflammation, and chia seeds are nutritional powerhouses.  So, all three are great additions to your daily smoothies.

  • Swap the Coconut Water: While almond milk is great for a light, dairy-free option, you can experiment with other types of milk. Coconut milk will give your smoothie a richer, tropical vibe, or you can use oat milk for a subtle sweetness.
  • Enhance the Flavor: Want even more tropical flavor? Try adding a splash of fresh lime juice for a zesty kick, or blend in a little shredded coconut for added texture and taste.

I recently made my own Strawberry Fruit Roll Ups and they were a huge hit with the kids and us adults.  Since fruit leather is so easy to make, I decided I was going to experiment with adding in some carrots and greens.  I mean, we do add in honey, and honey makes everything taste sweet and delicious, so why not add in a few extra nutrients?  So I do.  And I was pleasantly surprised!  You can’t taste the greens or carrots at all, and it was still enjoyed by kids and adults.  No one knew I added in greens unless I told them, but it did alter the pretty reddish color some.

You will also notice that I sprinkled in some turmeric, cinnamon, and chia seeds into this Homemade Apple & Strawberry Fruit Leather Recipe.  I add those three ingredients into just about every smoothie I make because they don’t alter the flavor profile and they are so good for you.  Cinnamon increases our metabolism, turmeric is good for inflammation, and chia seeds are tiny little nutritional powerhouses.

Ingredients

  • 2 cups strawberries
  • 8-10 green apple slices - I used Crunch Pak apples
  • ½ cup baby carrots
  • handful greens
  • 1/4 teaspoon chia seeds
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon cinnamon
  • ¼ cup honey
  • 1 tablespoon lemon juice

Instructions

  • Preheat the oven to 200 degrees
  • Place all ingredients into your food processor
  • You should be able to pour the mixture, but it shouldn't be so watery that it will run off the baking sheet
  • Line rimmed baking/cookie sheet with parchment paper or silicon baking mats
  • Pour/spread the mixture evenly onto baking/cookie sheet
  • Place in oven and cook until firm - approx. 3-5 hours
  • Remove from oven and let cool
  • Cut into desired width and length strips
  • Roll up with parchment paper if desired, or keep separated with wax paper in an air-tight container
  • Can be stored in the refrigerator for up to a week or two months in freezer
  • Enjoy!

Notes

If you choose not to add in the greens, carrots and spices - that's okay too! It will still be delicious and a healthier snack option that buying the ones in the store.
