Summer calls for cool drinks, sweet treats, and fun with friends.  All the fun stuff doesn’t have to be for the kids, us adults can enjoy cool drinks and fun with friends too!  That’s why I did some mixin’ in the kitchen and came up with some refreshing summer cocktails. Creating new and exciting drinks in the kitchen is one of my favorite summer activities!

It’s no secret that I love a good glass of wine, and it wasn’t until I created my Aloha Vodka Sunset Cocktail that I ever even thought of mixing wine with other liquors or even juices (unless I was making sangria).  I mean, wine is amazing all on it’s own.  And when I think of mixing wine with juice, I automatically think of grabbing for a bottle of Sauvignon Blanc or Pinot Grigio, both are lighter, crisper, have citrus notes, and can be a bit sweet at times and would blend nicely with a variety of concoctions I’m sure.

But, I had a bottle of Cabernet Sauvignon in my hand and it’s about 95 degrees here in Florida, and I wanted to sit outside and watch the kids swim for a few.  The Cab seemed a bit too dry (don’t get me wrong, I LOVE a good glass of Cabernet Sauvignon) for the summer heat and pool watching, so I opened the refrigerator and grabbed for the kids’ lemonade.  The dryness and boldness from the red wine and the sour from the lemonade actually blended together perfectly.  Add in some vodka and you got yourself an incredible wine cocktail.   Why vodka?  Why not?! I have discovered that drinks with wine and vodka can be pretty darn tasty!

Before you know it, I had a beautiful, refreshing wine cocktail in my glass, that I loved so much I made one for a friend and delivered to her house and decided that I had to share it with you all.

To make my Call Me A Cab Drink, you just need ice, your vodka of choice, a good bottle of Cabernet Sauvignon (I used CK Mondavi and Family) and lemonade.  Ahhhhhh…..

Now, put your feet up and enjoy your soon to be favorite sweet wine cocktail.  Actually, you don’t have to save this wine cocktail for just summer!  Enjoy it all year long…well, I don’t always want a cold drink in the winter, but you catch my drift. This cocktail recipe is the most popular recipe on my site, so I know you all like it too, don’t forget to share it with your friends!

I will admit that the “layering” look can be temperamental at times, try pouring the wine over the back of a spoon.  But, don’t fear, if your cocktail doesn’t layer, it will still taste delicious.  I promise!  But you don’t even have to take my word for it, check out the comments below 🙂

When I make this wine cocktail these are the ingredients I use:

  • Publix Old Fashioned Lemonade – I personally prefer the taste of “real” lemonade over the powdered, but I have had reviews on Pinterest that they have used just about every kind of lemonade you can think of, so grab what you have and give it a try!
  • CK Mondavi and Family Cabernet Sauvignon – The price point on this wine is about $7.99, making it a great wine for drinking and a great wine for mixing.
  • Grey Goose Vodka – It’s a great vodka, and to be honest, that was what I had on hand.
  • Ice – You will want this vodka and wine cocktail nice and cold.
  • A Fun Clear Glass – This drink is GORGEOUS, so you want a glass that you can see it in!  I used a Cognac/Bourbon glass, but on Pinterest folks have sent me pictures of this cocktail in everything from wine glasses to mason jars

How to Choose a Wine for Making Wine Cocktails

When it comes to making wine cocktails, the options are endless. But how do you choose the right wine for your cocktail?  The first thing you need to decide is what kind of cocktail you want to make. Are you looking for something refreshing and light, or something richer and more robust? Once you’ve decided on the general flavor profile you’re going for, you can start narrowing down your wine choices.

Next, think about what kind of base liquor you’ll be using in your cocktail. This will also help determine which wines will work best. For example, if you’re using vodka as your base, a lighter white wine would be a good choice. But if you’re using bourbon or whiskey, a bolder red wine would be better.

Finally, don’t be afraid to experiment!

When it comes to wine cocktails, bartenders often layer drinks to create interesting and visually appealing effects. But how does this technique work?

Layering is all about density. Different liquors have different densities, so when they are combined in a glass, they will naturally separate into layers. The trick is to pour the liquor slowly and carefully so that each layer floats on top of the one before it.

So next time you see a bartender layering a drink, don’t be afraid to ask them how it’s done.

Since the kids loved the Raspberry Vanilla Pudding Pops so much, I decided to try another round of homemade popsicles.  Strawberries and chocolate is one of our all-time favorite flavor combinations and since I had 3 pints of strawberries in my refrigerator and chocolate fudge pudding in my pantry, it just seemed like it was destiny that I make Homemade Strawberry Chocolate Pudding Pops.

For this pudding pops recipe, I did puree the strawberries, but you can dice yours if you prefer.  I don’t recommend big pieces, since they tend to be hard to bite when frozen.  I simply cut off the tops of a cup of fresh strawberries and tossed them into my Ninja and within seconds I had my strawberry pureed goodness.

The box directions for the pudding call for 2 cups of milk, I only used 1 and a half since I added in the strawberries.

You can have your Strawberry Chocolate Pudding Pops prepped and in the freezer in less than 5 minutes, you seriously won’t believe how easy the process is.

I used popsicle molds to make mine, the mixture will easily fill 6 and depending on the size of your molds, you may have a little left. Just put it in a bowl and toss it in the refrigerator for a delicious snack later 😉 If you don’t have popsicle molds, you can use those little 5 oz paper cups and put in wooden popsicle sticks. The cups can be found at most stores, and the sticks are at most craft stores.

Make your own frozen treats for a fraction of the cost of buying popsicles. These Homemade Strawberry Chocolate Pudding pops are prepped in under 5 minutes and absolutely delicious!

Ingredients

  • 1 3.4 oz box of instant chocolate fudge or chocolate pudding mix - the small box
  • 1.5 cups of milk - I used fat free
  • 1 cup of fresh strawberries - green tops cut off

Instructions

  • Place the strawberries into your favorite blending device until they are pureed
  • Whisk the milk and pudding mix in a medium bowl for approximately 2 minutes - it will start to thicken
  • Pour in the strawberry puree into the bowl and stir well
  • Pour mixture into popsicle molds
  • Sprinkle on mini chocolate chips and a add a strawberry slice if desired
  • Freeze for a minimum of 6 hours
  • Enjoy!

Confession, I have never made my own popsicles. But with summer here and my kids constantly asking for cold, sweet treats for them and their friends, I decided to stop spending a fortune on sugar water and start adding in some fresh fruit. Making your own popsicles is actually very easy, I have no idea why I haven’t done this before! If you have about 5 minutes, you are on your way to a yummy sweet treat.

Now, there are plenty of ways to make your own popsicles, but I went with pudding pops for our first set because I wanted them a bit creamy. We had beautiful Driscoll raspberries in the refrigerator and Raspberry Vanilla Pudding Pops sounded like a summer dream treat.

And they are.

I used a box of instant pudding and fat free milk, all you have to do is whisk it together for about 2 minutes.

Place the beautiful berries in to your popsicle mold and fill at least half way (or little paper cups if you are using those) then pour in the pudding. You may have to tap it down a little to make sure the air pockets are all filled. Put the sticks in and freeze for at least 6 hours.

Enjoy the sweet taste of summer!

I did make mine two ways – I did a few with whole berries and I did a few with blended berries.  I just tossed a handful of raspberries and a teaspoon or so of light agave nectar in my Ninja and then poured the raspberry puree right into the pudding.

Ingredients

  • 1 container of fresh raspberries - 6 oz.

  • Whisk the milk and pudding mix in a medium bowl for 2 minutes - it will start to thicken some

Notes

In order to reap the rewards of fine wine, the art of opening a corked bottle must be learned and practiced.

Once a bottle of wine is purchased, the task of opening the bottle must be tackled. Wine bottles are most often corked and require specific tools for opening. If a bottle of corked wine is not opened correctly, the wine may become drizzled with tiny pieces of cork, leaving it nearly undrinkable, at the very least, unsightly in a glass.

Different Types of Wine Corks

While some wine lovers adhere to a strict standard of purchasing only those wines bottled with cork, there are many superior wines available for purchase that are no longer bottled with real cork. Synthetic corks and caps are frequently used by wine producers. Consumers who choose a wine with a synthetic cork or a cap need not worry about sacrificing quality. Both bottle a wine with the same precision and keep a wine preserved well.

How to Use Different Styles of Corkscrews

Corkscrews are made in all shapes and sizes. When used correctly, the end result is the same, no matter the style. Selecting the right corkscrew depends completely on personal preference. Before a cork can be removed, a foil cutter (you can get one at most stores, or on Amazon for about $5) may be required to slice the foil that caps the cork. Most foils are now decorative and are sliced with the cutter just below the lip of the bottle, and some wine bottles do not have a foil cap at all.

If a foil cutter is not handy, the tip of the wire spiral of a corkscrew can be used to slice the foil under the bottle lip. The wire spiral is often referred to as “the worm.”

Easiest way to open a bottle of wine

Basic Corkscrew

Consists of a worm and a handle. Hold the handle with the spiral pointed directly in the middle of the cork and twist into the cork. Once twisted deeply enough, but not through the bottom, remove the cork by pulling up on the handle. These require a bit more arm power than the other listed below, but are the most inexpensive. You can find basic corkscrews for $5 – $8.

Waiter’s Friend

The most conventional of corkscrews and the only one equipped with a knife for slicing the foil (if required). The spiral is positioned in the same manner as a basic corkscrew and is twisted into the cork. The Waiter, however, has an arm with a claw that is placed on the lip or rim of the bottle for leverage when the cork is pulled out. Remember to hold the neck of the bottle and pull upward on the side opposite of the claw. These are inexpensive and you can find them at most stores, wineries and online for around $10.

Winged Corkscrew

A double-action corkscrew with two wings on either side. Once the foil is removed, if any, place the spiral point in the middle of the cork with wings pointing down on either side. Turn the handle of the corkscrew to twist the spiral into the cork. Wings will rise up on both sides. Once the spiral is deep enough into the cork and the wings are pointing nearly straight up, push the wings down, and the cork will emerge from the bottle attached to the spiral. Remove the cork by twisting it off the spiral. These are inexpensive, you can usually pick one up for around $10.

Electric Corkscrew

The easiest of corkscrews to use when opening a wine bottle. To use the electric corkscrew, make sure the foil has been removed from the top of the wine bottle so that the cork is exposed. Center the electric corkscrew on top of the wine bottle and press the button. The electric corkscrew will do the rest. You can find these at most retail stores, wineries, as well as on Amazon. Prices range from $20-$40.

How to Dislodge a Damaged Cork

If a cork breaks in half while attempting to extract it, leaving some in the bottle, several options are possible to finish the job.

  1. Place the spiral of the corkscrew at an angle into the piece remaining in the bottle and pull gently.
  2. Place a wood screw about one-quarter inch into the cork and pull out.
  3. Place a knife about an inch into the cork and twist out.

If the cork falls into the bottle, the last resort is to decant the wine by pouring the wine through wine funnel with a strainer, but if you don’t have one of those a coffee filter will do to attempt to catch the tiny pieces of cork. The taste of the wine should not be affected.

  • 2 tbsp grainy Dijon mustard

Instructions

  • Heat the butter in a large skillet set over medium-high heat until melted.
  • Season the pork with salt and pepper.
  • Place the flour in a shallow bowl, then place the pork in the flour and turn over to lightly coat it, shaking off excess flour.
  • Add the pork to the pan and cook until golden brown and cooked throughout.
  • Remove the cooked pork from the pan, put on a plate and set aside.
  • Add the diced green onions to the pan (save a few for garnish if desired), and sauté for 1-2 minutes
  • Add the mushrooms to the pan and continue to sauté for 3-5 minutes, or until tender.
  • Pour in the wine and chicken stock, be sure to scrape the bottom of the pan to get all the brown bits that may have cooked on, and simmer for about 3 minutes or until the liquid is reduced by about half.
  • Add in the mustard and pour in the milk. Whisk for 2-3 minutes.
  • Return the pork and any juices to the pan, and let it simmer for another 2-3 minutes to warm the pork back up and the gravy will thicken.
  • Serve immediately
  • Enjoy!

Notes

I served mine with mashed potatoes and some roasted broccoli.

Some kids like to do gymnastics, some like to dance, some like video games, some love sports, some like  to do a combination of all those things.  My daughter loves to make slime.  In fact, I would say it’s her superpower, I know no other child that can come home from school and make three different slimes with different themes in less than an hour.  She will have friends come over and they need no entertaining from me or electronics – they just need a few simple ingredients and they can be kept busy for hours.

When she heard that Captain Underpants was coming out with a movie, an EPIC Movie, she wanted to make an EPIC slime.  Since I vetoed a slime in honor of Professor Poopypants 😉 , she decided to make a clear slime with green beads.  Once the slime was set she added in a few drops of green acrylic pant to make it an EPIC Booger Slime.

Now, if you have ever watched your child make slime, it’s quite a process! So before you start, make sure to enjoy a nice refreshing glass of Tampico to power you up for the task. Creating EPIC slime can make a girl thirsty! (P.S. No Tampico Punch was used to create the slime)

To make EPIC slime you need:

  • Clear Glue
  • Water
  • Baking Soda
  • Saline Solution (be sure it has boric acid)
  • Greens Beads
  • Green Acrylic Paint

Once you have your ingredients get out a bowl and get ready to get slime-y!

In the bowl, add 1/4 cup (3 oz) of clear glue.

Add in 1 tablespoon of water, and stir well.

Once the water and glue are mixed, pour in a 1/2 teaspoon of baking soda.  Mix well, baking soda can leave clumps, just do your best.

Add in 2 teaspoons of saline solution.  Mix well.  It will be pretty liquid-y at first, but as you continue to mix it, it will get slime-y.  If it is too liquid-y, add in a touch more baking soda.

Now, take a break and have a sip of your Tampico!

Once the slime was formed, we added in the beads and just 2-3 drops of paint.  You don’t need much paint to make it change color.

Now, have FUN with it!

You can use white glue, the color of paint will just be lighter, not as true to the color of paint you added.

EPIC Slime Recipe

Ingredients

  • 3 oz. Clear Glue

Smoothies are a wonderful way to get in all those fruits and vegetables that our bodies need.  Smoothies are also an easy way to sneak in extra nutrients and vitamins.  In this Pineapple Apple Green Smoothie, I also added in cinnamon, turmeric, protein powder, and Derma Matrix, all of which do amazing things for ME.  And, at the end of the day, I always feel better when smoothies are in my daily diet.

Here’s what’s in my Pineapple Apple Green Smoothie…and why:

Pineapple – This tropical delight not only contains the enzyme bromelain (which aids in the digestion of protein and can help with inflammation), it’s also packed with vitamin C.

Apples – An apple a day….Well, you know you the story.

Carrots – The orange powerfood will give you vitamin A and is also linked to preventing cancer, giving you healthier looking skin and aids in digestion.

Cucumbers – Did you know that they are 95% water? That means they are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

Greens – Well, because it’s a green smoothie!  Plus, greens are great for us.

Chia seeds – These little guys are nutritional powerhouses, I add them into every smoothie I make.

NeoCell Derma Matrix – This is a collagen skin complex that promotes the reduction of fine lines and wrinkles, it also can increase hydration and support cell turnover and elasticity.  I’m not getting any younger, so I will take all the help I can get 😉

Turmeric – Soooo many benefits, but one of the main ones is it helps with inflammation, I add it into every smoothie I make.

Cinnamon – Also many benefits, one of my favorites is that it helps increase your metabolism. I add it into every smoothie I make.

Protein Powder – Helps keep me full longer and makes my smoothie extra creamy.

Coconut water – For extra hydration.

Ingredients

  • 1 slice pineapple
  • 4 tart apple slices
  • 4 slices cucumber
  • 5-6 baby carrots
  • Big handful greens
  • 3-4 ice cubes
  • 6 oz coconut water
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon turmeric
  • 1/4 teaspoon chia seeds

Nothing says summer like this Aloha Sunset Wine Cocktail.  It has a hints of the tropics and is a refreshing way to beat the summer heat.  You all know that I love a glass of good wine, and when the temperature starts creeping up, a cool glass of a crisp Sauvignon Blanc calls out to me. Sauvignon Blanc has tropical fruit and citrus notes which assisted in putting the Aloha in this Aloha Sunset Wine Cocktail.

To make this Aloha Sunset Vodka and Wine Cocktail I used fresh pineapple juice, orange juice, Sauvignon Blanc and vodka.  Pineapple and Orange juice are both pretty acidic, and Sauvignon Blanc can be as well, so adding the ice and the vodka make this cocktail the perfect mix of cool and refreshing. 

So, gather your friends together, grab a glass filled with ice and pour these Aloha Sunset Wine Vodka Cocktails and enjoy!  I used stemless wine glasses for these cocktails, when it’s hot out I don’t worry as much as much about my hand warming up it up…I drink it fast enough 😉

If you are reading this cocktail recipe and just noticed that you are missing the Sauvignon Blanc or the vodka, you can actually get it delivered if you don’t want to head out to the store.  I have order through Drizly a few times and I always get my ingredients within an hour.
