Easy weeknight dinner. Mexican Inspired. Yes please. My family loves meals that are full of flavor and I love meals that I can get on the table in about 30 minutes 😉 Mexican food is one of our favorite food groups, from breakfast to dinner, we love the flavor and the heat that you can typically find in Mexican food. We have a great little authentic Mexican restaurant right up the road that we like to go to at least once a month, but since our budget doesn’t allow for weekly, I have learned to make a few staple dishes here at home. Like these Chicken Enchiladas.

The beauty of these Chicken Enchiladas is that you use a rotisserie chicken that you pick up from your local grocery store, that alone saves you a ton of time in the kitchen! You can fill your enchiladas with whatever you and your family would like, but typically it’s just the meat. Me, I like to sneak in some vegetables now and again (hey, a mom’s gotta do what a mom’s gotta do) like corn or even beans. If you don’t want to add them inside of the enchiladas, I recommend serving with yellow rice and black beans. And don’t forget the chips and salsa. YUM.

What You Need To Make The Easiest Chicken Enchiladas:

1 Store Bought Rotisserie Chicken
1 can of Enchilada Sauce, we also love Simply Organic Red Enchilada Simmer Sauce.
1 package of small flour tortillas – not the street taco size, but the ones up from there. Not the LARGE either 😉
Cheddar or Mexican Shredded Cheese
Lettuce, chopped tomato, sliced jalapenos and sour cream for garnish

How To Make Make The Easiest Chicken Enchiladas:

Shred the chicken using 2 forks or your hands, whichever you prefer.
Place chicken in tortillas
Roll up tortilla like a cigar
Repeat until you have enough done for your family
Top with enchilada sauce
Sprinkle with cheese
Bake in oven at 350 degrees for 10 – 15 minutes until heated throughout and cheese is melted
Top with lettuce, tomato, jalapenos and sour cream if desired

Ingredients

  • 1 Store Bought Rotisserie Chicken
  • 1 10 oz can Enchilada Sauce or we also love Simply Organic Red Enchilada Simmer Sauce

Instructions

  • Preheat oven to 350 degrees
  • Shred chicken with 2 forks or hands, whichever you prefer
  • Saute onions and mini sweet peppers. Add jalapenos if desired
  • Add chicken to simply warm it up and get some added flavor from the veggies
    making Enchiladas
  • Lay tortillas flat and fill each one with the chicken mixture and a little shredded cheese
    making Enchiladas
  • Roll up tortilla like a cigar, placing the "open" side down in a sprayed baking dish
  • Repeat until you have enough done for your family
  • Top with enchilada sauce
  • Sprinkle with shredded cheese
  • Bake in oven at 350 degrees for 10 - 15 minutes until heated throughout and cheese is melted
  • Top with lettuce, tomato, jalapenos and sour cream if desired
  • Enjoy!

Notes

Suggested sides: Mexican or Yellow Rice and Black Beans.  And chips and salsa...of course!
You can broil these for a 1 or 2 minutes if you prefer your tortillas crispy, just watch them so they don't burn!

Slow Cooker Tips to Remember:

  • Don’t use the freezer bags in the slow cooker. Simply dump the frozen ingredients in your slow cooker and toss the bag in the trash.
  • If you want a super, simple clean-up for your slow cooker, consider using slow cooker liners. After you have served your meal simply pull them out and throw them away and your slow cooker will be sparkling clean for the next use.
  • Don’t overfill your slow cooker. For your slow cooker to work effectively it needs to be half to three quarters full.
  • No peeking! Once you get your slow cooker going the lid needs to stay on. Every time you lift the lid for a peek can add approximately 20 more minutes to the final cooking time.
  • Make sure that you label your freezer bags so that you know what you are pulling out of the freezer. Write your cooking directions clearly on your freezer bags as well. You never know when one of your kids or your husband might decide to surprise you with dinner, and they will need that information.

Prep 5 Freezer Meals in Less Than 1 Hour

Slow Cooker freezer meals are one of the easiest ways to prepare for dinner.  A slow cooker “dump meal” is when you can simply “dump” your ingredients into the crockpot and have dinner ready for your family when you are ready.  Freezer meals answer the age old question “What’s for dinner?” Because you already have meal options ready to go! I just love meal-prepping. I have 5 freezer dump meals listed for you below that you can assemble in an hour or less.  That’s right, you will have 5 dinners made in less than an hour!

Make sure that you have quality freezer bags and a good Sharpie or other permanent marker when you are preparing your freezer meals. You don’t want your food to get freezer burnt due to freezer bags that are too thin. If you have a Foodsaver you might also consider using that to properly seal your meals in an airtight bag. Be sure to write your cooking instructions on the bag before putting anything in the bag, trust me, it’s much easier this way 😉

For each recipe below, you will place all the ingredients into your prepared freezer bag and simply toss it into the freezer until you are ready to make them.  Each recipe can be placed into the slow cooker frozen and cooked on low for 6 – 8 hours, if you are cooking it on high, I recommend approximately 4 hours, but always make sure your meats are cooking thoroughly before serving.  I did link to the full instructions on each recipe so you can visit them as well though.

Crock Pot BBQ Hawaiian Chicken Ingredients

  • 4-6 boneless chicken breasts
  • 1/3 cup of your favorite BBQ sauce
  • 1 20 oz can pineapple chunks – in 100% juice
  • 1/3 cup soy sauce
  • ¼ cup brown sugar
  • 1 tbs corn starch

  • 4 chicken breasts
  • 1 can 98% fat free cream of chicken soup

  • 1 packet Ranch Dressing powder
  • 1 can healthy request/low-fat cream of mushroom soup
  • ½ cup low-fat or skim milk

Slow Cooker BBQ Chicken Ingredients 

  • 1½ – 2 lbs boneless skinless chicken breast
  • 1 bottle your favorite BBQ sauce we used Sweet Baby Rays
  • ¼ cup Apple Cider Vinegar
  • ¼ cup brown sugar
  • 1 tsp garlic powder

Slow Cooker BBQ Chicken Instructions

Just pull a bag out to thaw the night before in the fridge and then throw it in the crock pot the next morning (you can also put your freezer dump meal in the crockpot frozen, it will just increase your cooking time). Add a salad or a simple side to your freezer dump meal and you have a delicious and flavorful meal with very little prep time.

Here are a few slow cooker tips to keep in mind:

  1. It’s important to always check your food for proper cooking times and temperatures.  Actually, it’s important to do this with any form of cooking.
  2. You can safely cook frozen meat in your slow cooker, but if you don’t like the idea of that place your bag in the refrigerator the night before to thaw.
  3. If you are having a hard time getting your slow cooker clean, soak it overnight with ½ of a dryer sheet and it will wipe right off in the morning.  You can also use a crockpot liner for easy clean-up.
  4. Never put the freezer bag in the slow cooker, dump the ingredients inside and toss the bag in the trash.
  5. When freezing your dump meal, try to make sure that the contents are shaped in a way that will fit easily inside of your slow cooker.

Recipes: Pizza and Chocolate Covered Cherry Mag Pies (aka Hobo Pies)

I love to camp…I know I have said that time and time again 🙂  Every summer since I was about 5 years old we drive to Up North Michigan with my whole family and we have a wonderful time.  Sand, beach, boats, great food, wineries, it is one of my favorite places in the whole world!  Now that I live in FL, I still make the drive to MI every summer for this trip.  I just can’t imagine ever missing it – it is a part of my soul and now I get to pass that wonderful feeling onto my kids!

Anyways….One of my favorite foods while camping is Mag Pies!  Some people call these Hobo Pies – they are the same – my family just calls them Mag Pies…There are sooooo many ways to make a Mag Pie and each year we get more and more creative with what we put in between those 2 pieces of sandwich bread.  So, for this week’s recipe idea – I thought I would share two of my favorites!

Pizza Mag Pie

What You Need:
2 Slices of Bread
Butter
Anything you want on your pizza!!
I like pizza sauce, mozzarella cheese, pepperoni, and some ham

What You Do:
Butter each side of your Mag Pie so the bread doesn’t stick
Place one slice of bread on one side – fill it up with your ingredients!
Place the other piece of bread on top
Close the Mag Pie Maker
Cook on the fire – be sure to flip regularly and make sure you don’t burn it – I like to cook mine nice and slow so that the insides are SUPER hot…While, some of my family members like to cook it fast so the outside is crispy and the inside is just warm.

Chocolate Covered Cherry Mag Pie –

What You Need:
2 slices of bread
Butter
Cherry Pie Filling
5 pieces of Hershey’s chocolate – the bars from the candy bar (I think 6 is too many – trust me – I have tried all combinations!)
1/2 marshmallow (again – I have tried lots of combos – I personally like this one)

What You Do:
Butter each side of your Mag Pie so the bread doesn’t stick
Place one slice of bread on one side
I put cherry filling in first – then break apart the marshmallow and scatter it around the filling
Take the chocolate pieces and scatter them around as well – so that they melt evenly
Place the other piece of bread on top
Close the Mag Pie Maker

Cook on the fire – be sure to flip regularly and make sure you don’t burn it – I like to cook mine nice and slow so that the insides are SUPER hot…While, some of my family members like to cook it fast so the outside is crispy and the inside is just warm.

*If you don’t have access to a fire pit – you can also make a home version by grabbing a Sandwich maker next time you are at your favorite Super store (I have seen them at Target)

There isn’t much better than meatballs, gravy and mashed potatoes on a chilly Sunday evening sitting and watching a good movie with the family. The beauty of making meatballs is that it’s relatively easy and you can make extra and freeze them for a super easy meal on another day.

Tastiest Homemade Swedish Meatballs

What You Need Homemade Swedish Meatballs:

1 lb of ground beef
1/2 lb of ground pork (or another meat)
1 egg
Breadcrumbs just to firm up the mixture
Your favorite seasonings – (We always use VooDoo Chef DUST, but you can use salt, pepper, Italian seasonings)
2 cans of Cream of Mushroom Soup
Egg Noodles or mashed potatoes

What You Do to make Homemade Swedish Meatballs:

Mix the meat, egg, seasonings and the Breadcrumbs just to firm up the mixture
Roll into meatballs
Cook at 350 degrees – covered – for 30 minutes or until brown
Add 2 cans of Cream of Mushroom soup (no water)
Cook uncovered for another 15 minutes
Serve over egg noodles or mashed potatoes (my family prefers them over mashed potatoes)
Enjoy!

The prep time to make these Homemade Swedish Meatballs is about 30 minutes, the time consuming part is definitely forming the meatballs, but it’s not hard. So, just turn on our favorite tunes and get to rolling. For the gravy, you can definitely use whatever you prefer, but using cream of mushroom is incredibly easy and it tastes good. We also love the sauce from IKEA, and it’s pretty darn cheap…it’s just a matter if you happen to have a location by your house and you can walk in and not a bunch of other stuff 😉 IKEA tends to be a blackhole for some (like me)…you walk in and 5 hours later you walk out and don’t understand where the time went. Actually, that happens to me at Costco too. And sometimes Target. Hmmmm…maybe I have an issue.

  • 1 lb ground beef
  • ½ lb ground pork you can use chicken or turkey if you prefer
  • 1 egg

  • Preheat oven to 350 degrees
  • Form meatballs and place them in a baking dish, not a cookie sheet as you will be adding in the gravy
  • Cook at 350 degrees - covered - for 30 minutes or until brown
  • Add 2 cans of Cream of Mushroom soup (no water) to the baking dish
  • Cook uncovered for another 15 minutes
  • Serve over egg noodles or mashed potatoes
  • Enjoy!

How To Make An Indoor Treasure Hunt

Right now we are all searching for fun and frugal activities to help keep the whole family entertained while we are home together. This is a super simple indoor treasure hunt activity that takes very little preparation time, and you already have everything you need right at home!

For this easy kids activity you will need some yarn or twine and a list of items for each child to look for on their indoor treasure hunt. If you have more than one child participating it would be best to have different colors of yarn so that they don’t get confused, or confused with each other!

Family Indoor Treasure Hunt

For each child you will need a list of items for them to find around the house. The items on your list for the indoor treasure hunt might be a pen, a shoe, a key, or a spoon, keep it simple! There are countless small items around the house that you can use for this treasure hunt. Now that you have your list ready it is time to start using that string for the kids to follow.

How To Make An Indoor Treasure Hunt

  1. Pick a starting point and begin running your string around the house like an obstacle course, go over things, under things, and around things. You can even have the trail of string cross back and forth over each other.
  2. At different points on your string tape (or lay them by it or even tie the item directly to the string) items from your list to the string for your child to “find” as they follow along the string path you have planned out for them.
  3. Now give the kids their list and tell them which string is theirs and let them begin their indoor treasure hunt by following the string you have placed around the house. You will likely hear squeals of delight and laughter as they find the items on their list that you have planted along the string.

This is a super simple way to have a little fun as a family without screen time and without having to spend any money.

Since Easter is coming up you could also adapt this to an egg hunt inside the house.

How To Make An Indoor Easter Treasure Hunt

  1. Simply take some of the plastic eggs and put small prizes in them like stickers, candy, or even some change or a one dollar bill.
  2. Have a string color for each child and tell them where to start. Watch them follow the string and discover their Easter eggs with prizes along the way.
  3. You can have their Easter basket at the end of the string as well.

The kids will have so much fun you will probably find them setting up their own indoor treasure hunts soon!

Donation Location Ideas – Tampa Bay Area

I have had several people ask me about donation location ideas here in the North Tampa area…You have NO IDEA HOW HAPPY THIS MAKES ME!!! >:D< big hug  Yes, coupons are a wonderful thing to help save our families money – but you know that each week there are items that we can get for cheap, free, or even with overage.  If you need those items – GREAT – if you don’t I always ask that you consider donating them.  There are people everywhere that could use an extra hand every now and then, so why not help when we can?
I think it’s a beautiful concept and I LOVE hearing that others are doing this too.  Honestly, it makes me tear up…If we all just took an extra 10 minutes a week (that couple minutes in the store – that couple minutes to drop off the items) can you imagine the lives we could affect?!

THE ULTIMATE EASTER MEAL

Here is a great dinner and dessert recipes for Easter!

CHOCOLATE STRAWBERRY TRIFLE

2 small boxes instant chocolate pudding mix, prepared (using 1 1/2 cups milk, instead of two)
chocolate cake, cut into 1-inch pieces
1 quart strawberries, washed and cut in fourths
1 container of strawberry glaze
16 oz. Cool Whip
Put a half of the chocolate cake in the bottom of a trifle bowl or a large see-through bowl. Next, spread a third of the pudding on top of cake, followed by half of the strawberries. (Remember to save a few strawberries out for garnish.) Now spread half of the strawberry glaze on top of strawberries in the bowl, followed by a third of Cool Whip. Next, repeat layers in the same order- cake, 1/3 of pudding, strawberries, strawberry glaze, 1/3 of Cool Whip. On top of that, add the remaining 1/3 of chocolate pudding, followed by the remaining 1/3 of Cool Whip. Garnish with strawberries and chocolate shavings, if desired. Refrigerate for at least 2 hours.
