I made a quick and easy salad the other day and I shared the recipe on my other site this morning. But, since I know you all like quick, easy, and HEALTHY recipes too, I thought I would mention to you as well. There is NO cook time and very little prep time…like we are talking 5 minutes 🙂

I Love My JEEP

I am a truck girl.  I have owned two cars in my life and both were for a very short period of time.  The week after I graduated college I took my first “real” paycheck and headed straight to the Ford Dealership and bought a 2-door Ford Explorer Sport.  I drove that well after the odometer said 100,000 miles and then I sold it to my brother for $2,000.

I then bought my Ford Expedition…which I still have to this day.  It is almost 10 years old and has over 149,000 miles on it and it still runs great.  I like my trucks 🙂  Almost a year ago my husband decided he wanted a Jeep.  I had NO IDEA how hard it was to find one!  We looked for months and finally found a nice old one that needed some repairs that we could afford.

My husband basically rebuilt it, it took about 9 months and I have to say…I love it.  I love the big tires, I love that it’s loud, I love that I have to wear a hat otherwise my hair will be a mess (I never have the top on!), I love that I can’t talk on the phone when I drive it (it’s too loud!), I love that Jeep Drivers have a little wave that they do when they see each other, I love that when I’m in it I sing at the top of my lungs, I love that it somehow makes me feel free, I love that it’s loud (yes, I know I said that already – but that is one of my favorite parts!), I love that I am far off the ground, I love that it’s FUN!

It is pretty for being old and having over 120,000 miles isn’t it?

I’m a truck girl.  And I love it.   Do you have a vehicle that you just love?  Maybe one that you had a long time ago?  Maybe one that you have always wanted? I know it’s not all that common for girls to say that they love any type of vehicle, but I love my trucks and right now – I am having a lot of FUN in my Jeep.

Now, if you are reading this post and saying…What?  I don’t get it?!  Well, then my response would be “It’s a JEEP thing, you just wouldn’t understand” 😉

p.s. Don’t tell my husband that I said it’s mine…he still thinks it’s his…silly guy 🙂

I know I told you guys about the Sunday Sunday Movement a few weeks ago and this week’s theme is one that is sure to please just about everyone…everything you need for a fabulous family dinner in 5 ingredients or LESS.  My recipe is for Smothered Pork Chop Cups and it is only THREE ingredients.  And it was soooo easy 🙂  I am all about a dinner that is easy, delicious, and helps bring the family back to the dinner table.

Smothered Pork Chop Cups #SundaySupper
Recipe Type: Dinner

Serves: 4
Ingredients
  • 4 Pork Chops
  • 1 can of cream of mushroom soup
  • 1 can of flaky biscuits
  • Pepper to taste
Instructions
  1. Cut the pork chops into bite-sized pieces and cook on skillet until cooked thoroughly
  2. Add in a can of cream of mushroom soup warm until mixed well
  3. Flatten 1 biscuit at a time and press into a muffin tin allowing the dough to overlap the sides.
  4. Repeat for each biscuit
  5. Fill each biscuit with the pork mixture – about 3/4 of the way up the biscuit
  6. Bake at 375 for 25 minutes – until dough is golden brown
  7. Sprinkle some pepper on top if desired
  8. Enjoy!

Do You Always Like What You See?

Do you like what you see every time you look in the mirror?  I know I don’t.  And it’s not just a physical thing…some days I just don’t like me.

That sounds harsh doesn’t it?  I don’t mean it that way though I guess.  But maybe I do.   I notice sometimes I just don’t smile as much as I used to.  I just don’t have that carefree attitude that really used to be ME.  I don’t go dancing anymore, I don’t scrapbook anymore, I haven’t worked out in weeks, I haven’t had a girls night out in….I’m not sure when.

You got married, had kids, and had to grow-up Tracy!  I know that’s what many of you are saying.  And yes, I agree – but isn’t that person from 20 years ago still inside me somewhere?  Didn’t that person really help make who I am today?  Isn’t that person the person that my husband feel in love with?  The person that I was…I AM.  So, where did I go?  I think I am in there somewhere, and I am working on digging her back out.

I want to smile more, I want to work out more, and I want to be a better ME.  When I am a better ME, I am a better wife, mom, daughter, friend…PERSON.  So I am going to work on that.  I am going to work on finding a healthier me.  And healthier doesn’t just mean food – it means a healthier LIFE.

That being said, I actually just started a new blog (I will still be here on Food Wine Sunshine too!) with my mom and my friend.  It’s called Our Healthy Life Journey and we all have different takes on what that means.

My mom is a beautiful woman over the age of 60 working on her weight-loss goals and is succeeding fabulously….and that is part of her journey.  And my journey will have a bunch of pieces that will work on making me whole….I will be switching up my diet, I will be working out again, and I will be smiling more!

Wholly Guacamole Huevos Rancheros

I have a delicious recipe for you guys this morning, and it is ready in less than 15 minutes!  I am so excited to be a part of this amazing group of bloggers where we share recipes that you can make for your family in just 15 minutes!  AND, this week we are showcasing recipes that are made with one of my favorite ingredients…Wholly Guacamole.

All you need for this breakfast recipe is your favorite guacamole (you can make your own as well!), refried beans, eggs, shredded cheese, salsa, and sour cream…and tortillas.  If you don’t want to lightly fry up the tortillas, you can leave them as they are, or try baking them like I did in this veggie tortilla crisp.

This Huevos Rancheros recipe is not only easy to make, but is absolutely delicious! Enjoy this easy breakfast recipe.
Ingredients
  • 1 package of Wholly Guacamole – I like the Spicy one on this dish
  • 1 can of refried beans
  • Eggs – one for each shell (I can easily eat 2…)
  • Corn Tortillas
  • Salsa
  • Sour Cream
Instructions
  1. Warm the refried beans on the stove
  2. Warm Vegetable Oil in a pan and lightly fry the Corn Tortillas – about 30 – 40 seconds per tortilla
  3. In a separate pan Cook the eggs over-easy/medium
  4. Place the Tortilla on a plate
  5. Top the Tortilla with the warmed refried beans
  6. Place the egg on top of the beans
  7. Top with Wholly Guacamole, sour cream, and salsa

Dear Tennis Shoes,

It has been 4 weeks since I last wore you.  Please forgive me.

I don’t know how it happened.  I used to wear you 4-5 times a week.  I paid attention to you.  I was proud to wear you.  I made time for you.  I cared for you…I swear I still do!  I used to pick out outfits to match you.  I had charms that I happily wore on your laces to show my pride for our last run.

I have wronged you.  Please forgive me.  It’s not you…it’s me.  I have no excuses.

Well, I could probably come up with a long list of excuses:

  • I got busy
  • The house is a mess
  • The kids had more activities
  • The kids homework got harder
  • My living room still has a cement floor
  • I have been doing too much
  • The laundry never seems to be done
  • My sink is still full of dishes
  • Dinner has to be made
  • Lunches have to be packed

It’s not you, it’s me.

Honestly, my life really hasn’t changed dramatically in the last 4 weeks, in fact I would say it’s about the same.  I don’t all of a sudden have more dishes, more laundry, more meals to make, and more activities.

Do you want to know the truth?  Well, here it is.  I am discouraged.  Discouraged to the point of acting childish. Sadie (my youngest) is 6 years old and I have weighed the same for 6 YEARS.  I run, I bike, I swim, I Jazzercise, I watch what I eat.  And I have not lost a pound.  Not one folks.  For SIX YEARS.  Don’t give me the line that muscle weighs more than fat…I know that.  Lord knows I have told that to myself a hundred times.  But for six years I have worked my butt off…have run 13.1 MILES twice and not lost one pound.  I have switched up my routines, I have done soooooo so much.  And I am hurt.  I am sad.  I am sad that those tennis shoes haven’t given me one POUND off.  So, I boycotted you, tennis shoes.  I’m not saying it was right, but that’s what I did.

And do you want to know the kicker?!  Someone asked me last week if I lost weight – they said I looked thinner!  Normally that would be a compliment that would make me happy, but after knowing that I haven’t worked out in 4 weeks it just makes me MAD.  Yes, MAD.  So, my dear tennis shoes – I will tell you – I am MAD at you too!

I don’t understand why you don’t help me lose weight.  I don’t understand what you may have against me.

But, I do understand that I am mad at me too.  I understand that these 4 weeks I have not given me the attention I deserve.  So, not only have I wronged you, dear tennis shoes, by ignoring you all this time, but I have wronged me.  I know that when I wear you, I feel better about myself.  When I wear you, I know I am giving me 30-60 minutes of me time.  When I am wearing you, I am keeping myself healthy.  When I wear you, I am a happier version of me.  So, even though that damn number on the scale NEVER moves, I know when I wear you…I am doing what is right by me.

So I ask of you dear tennis shoes, please forgive me and know that I am aware of my ways and I am planning RIGHT NOW to right my wrongs.

Dear Tennis Shoes, I am sorry.  Dear Tennis Shoes, it’s not you, it is me.  Dear Tennis Shoes, please forgive me.  Dear Tennis Shoes, I promise to be a better friend….a better me.

Do You Have Any Experience With Childhood Anxiety?

Do you see that beautiful smile my son has? I miss that smile. I miss it so much. I haven’t seen it in almost a week and it is breaking my heart.

I told you guys last week that Steven was afraid about being sick about the tangerine (miss that post – catch it here). Well, we went to the doctor and all checked out fine. But this experience has stemmed all these other concerns for him.

He is anxious, scared, and not him. I did not intend on typing this post today, but I thought if I did I would reach someone else that may have experience with childhood anxiety and you may be able to share some words of wisdom. I have books, and I will read them. I have prayers, and I will say them. I am hugging him, and I will continue to do so. But, it is KILLING me seeing him this way.

He is scared to eat because he thinks it not cooked right and it will get him sick, he thinks that he may have cancer and the doctor missed it, and those are just a few examples. He is scared of everything. His smile is gone. He is gone. And he is so young and amazing. He is my SON. My heart. My EVERYTHING. I just want to make it all better, I would take every bad thought from his mind and put it in my mind. I would give my life for him. This is KILLING me.

My friend (one of my dearest friends…I love you Jen) sent me a Pin with a saying that said “Everyone is a little broken…and that’s ok.” And I haven’t stopped crying since. I am a little broken, yes I am. I think we are all in some way.

My son is a little broken right now and I don’t want him to be. I will do everything I can to lift this horrible heaviness from his heart and mind, and I ask you…do you have any experience with childhood anxiety?

I would love any thoughts you may have…I just want my boy back. My beautiful 9 year old boy that shouldn’t have to think about when the world may come to an end, my beautiful 9 year old boy that shouldn’t have to think about anything but having fun, learning at school, and BEING A 9 YEAR OLD BOY.

Mommy Meltdown Moment

Mommy Meltdown Moment

Ok, I am having a mommy meltdown moment…maybe it is just a meltdown moment in general I am not sure, but I am definitely having a moment of sorts.

I woke up tired, which is normal for me and my son told me his belly hurts and my husband told me that I should take him to the doctor’s. Not that I don’t love my son – but my first thought was – “ok, how am I going to handle that and get all my work done today. ” BAD mommy thought, I know.  And to tell the truth, I really don’t think my son is sick…again BAD mommy thought I know.  For a little background information, 2 days ago my son was sitting with his buddy at lunch, his buddy gave him a piece of the fruit from his lunch…my son ate it….then his buddy told him it would make him sick. He quickly followed it up with that he was kidding though.

My son has anxiety, so telling him such things makes it happen.  He got home from school, threw up two times and took a nap. The only thing my son knew that was it looked it an orange, but that it wasn’t an orange.  I then proceeded to email his teacher, email the principal and googled every term I could think of that would be a fruit that you could drink the juice from (that’s what his friend told him) but you could not eat.  I found nothing. Surprised?  I called Poison Control even – they thought I was crazy.  Finally, my mom suggested that I google the friends name and see if I could locate the phone number – so I could ask what my son could have possibly eaten.

Surprisingly enough, that worked!  I called the mom and she told me it was a Tangerine.  It was bought at Walmart and her son ate the rest of it at lunch, she had one today, and so did her other son.  A tangerine folks.  I spent 4 hours freaking out over a tangerine.  Don’t get me wrong, I am insanely thankful that there is no such fruit out there that you can drink the juice out of and not eat…and that it is not at my son’s school.  But, really.  I know…BAD mommy thought.  I don’t have anxiety, so I won’t claim that I understand it, but I do understand that it can be a very hard thing to deal with.  So, I hugged him and told him all was well.  Today, I am taking him to the doctor because he still thinks there may be an issue.  I pray that there isn’t.  In fact, I am pretty darn sure that there isn’t, but I am going.  And my first thought was, I don’t wanna.

Know what else I don’t wanna do?  I don’t wanna look at the CEMENT floor in my living room anymore.  The one that is filled with cracks and looks horrible.  About 6 weeks ago I made the mistake of saying that I would like new carpeting…we pulled it up and there was a TON of cracks.  And because my dear husband has a background in construction and engineering we are having a million tests done, having 4 million inspectors out to look at them…and for WHAT?!  In hopes that someone will magically make it all better?  It’s NOT going to happen!  We have been here for 7 years – no one cares if I have cracks in my floor – and if they are bad…well, then folks expect us to PAY more to fix them.

And to top it off…my parents are here in a week.  Not that they care that I have a cement floor in my living room…but I DO!  I don’t want a CEMENT floor anymore!  Is that to much to ask?!

I have a ton of dishes in the sink and part of me doesn’t even want to load the dishwasher because that means in an hour I will have to empty it.  I have clothes that have been sitting on my couch for days waiting to be folded…and dare I mention that I have had a load sitting in the dryer for days too? They will be a wrinkled mess, but I am not caring today.

So, maybe I will get up and go for a ride and enjoy this beautiful Florida sunshine…but wait…I can’t…my truck is OUT OF GAS!

Maybe a walk?

Well, that’s my Mommy meltdown for the day…I am off to find some chocolate.  And I know that a workout to blow off steam would be much better for me.  But, let’s be honest…that’s not happening today.

Oh wait…to top it all off, the UPS guy just came and my dog peed.  I have a German Shepherd that pees every time he barks.  Yes, every time.  And he barks at just about everything.  So, I think I will enjoy my chocolate before cleaning up dog pee.  Yes, I think I will…..

My recipe is a Roasted Asparagus Eggs Benedict With Cajun Hollandaise. It is actually surprisingly easy and very delicious.

Roasted Asparagus Eggs Benedict With Cajun Hollandaise #SundaySupper
Recipe Type: Breakfast

Ingredients
  • Eggs
  • Muffins
  • Asparagus
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon paprika
  • 1/2 butter (can substitute olive oil)
  • 1/4 garlic salt
  • 1/4 pepper
  • 1 package of Hollandaise Sauce
Instructions
  1. Preheat oven to 400 degrees
  2. Clean asparagus and break off the tough ends
  3. Make a single layer of asparagus on a cookie sheet or pan
  4. Lightly coat with melted butter or olive oil
  5. Sprinkle on pepper and garlic salt
  6. Bake at 400 degrees for 8-10 minutes
  7. Cook Hollandaise Sauce according to package instructions – add the cayenne pepper and paprika
  8. Mix well and leave on low until sauce thickens
  9. Toast muffins
  10. Poach eggs
  11. Top muffin with asparagus, eggs, and hollandaise
  12. Enjoy!

What’s Your DisneySide?  Here’s Part Of Mine

If you know me…you know that I love Disney. I am from Michigan and when I was in 4th grade my parents took us to Walt Disney World for the first time. We drove down and I remember to this day how exciting it was. Every year since then my parents took us out of school for a few extra days and we went to Disney for Spring Break.

My sophomore year in college, I skipped the trip I thought I was “too cool” to head to Disney with my folks. Well, I can tell you I never missed another year 😉 My family and I have always camped in Disney. The Fort Wilderness Campground is the most amazing campground that I have ever seen…what else would you expect from Disney?! It is from that memory when I was in 4th grade that I will ALWAYS have a DisneySide. And, I am proud to say that I have passed it down to my kids.

I have millions of Disney stories I could tell you…like how my brother lost my parents car keys in the creek at the campground, or how my son was scared to death at our first Character Breakfast, or how at Christmas…the campground has more decorations than any subdivision I have ever been in, how each hotel has it’s own DisneySide (and I think I have swam in all of the pools!), or how you can the best sushi EVER at Polynesian, or how my boyfriend in high school got called up to with the Fire Dancers during the fire show at the Polynesian, or how my cousin and I waited in line for hours to get on Space Mountain when we were younger….just to walk back down because we got scared, or how my mom laughs uncontrollably on Space Mountain…it’s her nervous laugh and I love it, or how I took my husband to Disney for the first time when he was in his 20s!, or how I walked the Wilderness Lodge hallways for HOURS when my son was 6 weeks old (his 1st Disney trip!) because he refused to sleep, or my parents drove 20 straight hours last year from MI just to celebrate their DisneySide with us for a few days over the holidays at the campground….

But, I won’t bore you with all of those 😉

As I mentioned, I am from MI, but I now just live 1 hour from Disney. The most Magical Place on Earth. Do you know how amazingly lucky that makes me?! I am very thankful that I was chosen to host a DisneySide at Home Celebration, but to be honest – Disney is part of ME. It is part of who I am. If you are a Disney fan too – you know exactly what I mean. Disney works it’s way into your heart…your soul…and just becomes part of who you are. My mom has countless pieces of Mickey jackets and jewelry. It’s just FUN…it’s just who we are. Whether your favorite character is Mickey Mouse or Ariel – you have a connection.

Now, when I talk about Disney, I can see my kids eyes light up. What a beautiful feeling as a parent…I have managed to pass down something that is ME to them.

So, when I told them we got to do a celebration here at home, they were pretty excited!  We made it fun for us ad our guests…It was even more special with all the fabulous goodies that we got from Disney, HP, Hanes, Crayola, Ocean Spray, American Tourister and more!

We had a trail mix snack available for everyone that included: goldfish, chocolate chips, pretzels, Craisins dried cranberries, peanuts, and M&Ms. Which was nice and easy to leave on the table while the kids got started on making their Custom T-shirts.

We used the fun Hanes Tagless T Shirts and Crayola Fabric Markers for bright, vivid colors that were in my party kit.

We also had a ton of fun with just the balloons! What child (or adult?!) doesn’t love balloons?!

At the end of the party, we were able to give all the kids fun gifts! We were provided great party favors like Mickey Mouse stickers, HP Photo Card Packs for photo printing at home, Mickey & Minnie poster, RunDisney posters, and more.

I did do a few small prizes and framed the bigger Mickey Mouse posters:

I also got a bunch of 4×6 frames on clearance at Michaels, so while I was printing memories for everyone on the HP Photo Card paper, I was able to frame one of them or each family 🙂
