I think in everyone’s busy lives this is something that gets forgotten…family members are eating at different times and in different places. Roasted Asparagus Eggs Benedict With Cajun Hollandaise
My recipe is a Roasted Asparagus Eggs Benedict With Cajun Hollandaise. It is actually surprisingly easy and very delicious.
- Eggs
- Muffins
- Asparagus
- 1/4 teaspoon cayenne pepper
- 1/4 teaspoon paprika
- 1/2 butter (can substitute olive oil)
- 1/4 garlic salt
- 1/4 pepper
- 1 package of Hollandaise Sauce
- Preheat oven to 400 degrees
- Clean asparagus and break off the tough ends
- Make a single layer of asparagus on a cookie sheet or pan
- Lightly coat with melted butter or olive oil
- Sprinkle on pepper and garlic salt
- Bake at 400 degrees for 8-10 minutes
- Cook Hollandaise Sauce according to package instructions – add the cayenne pepper and paprika
- Mix well and leave on low until sauce thickens
- Toast muffins
- Poach eggs
- Top muffin with asparagus, eggs, and hollandaise
- Enjoy!

One of the best things in the whole wide world to pair with eggs benedict is asparagus. You won my heart, lol.
