If you don’t have, or don’t like Canadian bacon you can use diced ham, or cooked bacon that has been chopped up in this casserole.

How do you store Overnight Eggs Benedict Leftovers?

You can keep any leftovers in an airtight container in the fridge for up to three days. You can also freeze them for up to 3 months. My guess is that you won’t have any leftovers though 😉

Here are some other fun brunch ideas for Christmas morning or any day:

Savory Waffle Toppings

Homemade Waffles

Homemade waffles are so easy to make and they are great for feeding a crowd. You can still make them ahead of time so there is no work for you on Christmas morning and just set out a variety of toppings. Toppings might include smoked salmon with cream cheese and capers, chicken and syrup, sliced cheese, avocado, and tomato.

Waffles are great because they can be sweet or savory and if you are feeding a crowd it gives them the option to choose. Fresh fruit, whipped cream, eggs, sausage, bacon, and cheese are some other popular waffle topping options.

Zero Food Waste Frittata

Frittata

If you have eggs and Florida milk you can make a tasty frittata for breakfast! Frittatas are amazing because you can put absolutely anything in them and still wind up with a tasty meal. Leftover veggies from the fridge? Toss them right in. Leftover sausage, bacon, or ham you need to use? Throw them right in there!

Making a frittata is easy, just gather your ingredients, and saute your veggies and any meat in a skillet. Add the veggies and meats to your milk and egg mixture, pour it in a pan and bake until your eggs are set.

Candy Cane Fruit and Cream Cheese Danish

If you want to include something sweet on your Christmas breakfast table then this adorable candy cane fruit and cream cheese danish might be perfect. All you need for this cute candy cane danish is a can of crescent rolls, some cherry pie filling, cream cheese, powdered sugar, and Florida milk. You might have all of these ingredients in your holiday pantry already!

Shape your crescent roll to look like a candy cane and mix your cream cheese, powdered sugar and vanilla together and spread it over your crescent rolls. Top the cream cheese mixture with your pie filling and use the remaining crescent rolls for “stripes” on your candy cane. Bake until done and drizzle icing over the top while it’s still hot. This is a tasty and festive treat for breakfast or dessert around the holidays!

Ingredients

Casserole Ingredients

  • 2 cups Florida whole milk
  • 8 eggs
  • 1 teaspoon your favorite all purpose seasonings – I used VooDoo Chef DUST
  • ½ teaspoon ground paprika
  • ¾ pound 12 oz Canadian bacon, cut into cubes – if you can’t find Canadian Bacon you can substitute ham
  • 6 English muffins cut into quarters
  • 1 stalk green onions chopped – for garnish if desired
  • salt and pepper

Hollandaise Sauce Ingredients

  • 1 cup Florida whole milk
  • 1 oz Hollandaise sauce mix 1 package
  • 2 tablespoons butter
  • dash of red pepper flakes if desired
  • dash of ground paprika if desired

Instructions

  • Spray casserole dish or 9×13 baking dish with cooking spray
  • Whisk together milk, eggs, and seasonings in a large bowl until well combined. Set aside.
  • Add half of the Canadian bacon to the bottom of the prepared baking dish.
  • Layer the English muffins over the top of the Canadian bacon.
  • Top with remaining Canadian bacon, then pour in the milk-egg mixture.
  • Cover the baking dish with aluminum foil and refrigerate for 8 hours to overnight.
  • When you are ready to bake your Eggs Benedict Casserole, preheat the oven to 375 degrees F.
  • Bake for 45 minutes covered, then remove the foil and continue baking until eggs are set, approximately 15 minutes more.
  • To make the sauce, simply whisk together the packet contents, milk, butter and extra seasonings if desired. Stir frequently, sauce will begin to thicken. Reduce heat to medium-low and simmer.
  • Drizzle sauce over casserole when ready to serve.
  • Enjoy!

Notes

Feel free to make your hollandaise sauce from scratch, but we love just being able to add milk to the packet and whisk to perfection!
