Crockpot Baked Potatoes

You know the nights where you can have dinner all planned out but the side dish you just can’t figure out?  Or when you want to come home and have dinner and your sides all ready to serve?  Well, it doesn’t get easier than crockpot baked potatoes.

You can make 12 or 2, as long as they fit in your slow cooker, you are good to go!  I recently made 10 for a Crockpot Meal Planning Library Presentation here in Tampa, and just the other night I made 3 for us for dinner.  When I made 10 baked potatoes in the crockpot, I used my big crockpot and when I made just 3, I used my small crockpot that I usually use for dips or appetizers.

No matter how many baked potatoes you are making, the prep and cooking instructions are the same.  And they are easy peasy!  You simply wash your potatoes, set them aside while you tear pieces of aluminum foil.

Drizzle some olive oil on the center foil, place the potato on the foil, drizzle a little more olive oil and add a dash or two of salt.  I find the salt gives the skin a bit of crunch and a lot of flavor.  Wrap up the potatoes and place them in your crockpot for about 8 hours on low.

Unwrap and serve when you are ready to enjoy.

Ingredients

  • Desired number of potatoes - I recommend Idaho Potatoes
  • Olive Oil
  • Salt
  • Aluminum Foil

Instructions

  • Wash the potatoes, set them aside.
  • Tear pieces of aluminum foil big enough the wrap the potatoes in.
  • Drizzle some olive oil on the center foil, place the potato in the center of foil, drizzle a little more olive oil and add a dash or two of salt.
  • Wrap up the potatoes and place them in your crockpot for about 8 hours on low.
  • Unwrap and serve when you are ready.
  • Enjoy!
