How To Make Pumpkin Banana Pancakes
They Are Deliciously Low-Fat
Looking for an easy breakfast option that is healthy and delicious? Well, I have it for you! These pumpkin banana pancakes are crazy easy to make, and if you follow Weight Watchers, they are ZERO points. YES, ZERO POINTS! And it doesn’t have to be Fall to enjoy these Pumpkin Banana Pancakes, they are delicious all year long. The pumpkin adds a bit of texture and fiber. As you can see, I topped mine with a yummy berry mixture…no syrup even! Of course, you can definitely top these banana pumpkin pancakes with syrup if you would like, but they really don’t need it, and the berry mixture adds that bit of sweetness that you may be looking for. You guys will love how easy this pancake recipe is and that we only need THREE ingredients to make them!
And they only take about 3 minutes to prepare! It doesn’t get much easier than that, does it? I mean you need THREE ingredients and THREE minutes…you got this 😉
For the berry mixture on top of my pumpkin banana pancakes I put some blueberries, quartered strawberries and a splash of water in a coffee cup. Then you cover the cup with a piece of paper towel…if you don’t you will have blueberries all over your microwave, so be sure to not skip that part! Microwave your berries for about 30 seconds, you will see that the blueberries burst and their natural juices make a “syrup”, add more time as necessary, but it won’t need much more time. Then drizzle your berry-deliciousness on top of your pancakes. YUM! You can also check the Kroger weekly ad to find fresh produce.

Pumpkin Banana Pancakes
Equipment
- Stove
Ingredients
- 1 banana
- 2 eggs
- ½ cup pumpkin puree
- 1 tsp cinnamon
- 1 tsp vanilla extract
Berry Topping
- a few berries of your choice - I used blueberries and strawberries - quartered
Instructions
- Mash ripe banana well
- Add in the pumpkin puree and mix well
- Add in the eggs and mix well
- Add in the cinnamon and vanilla and stir
- Spray pan with non-stick cooking spray, warm pan
- Cook silver dollar size pancakes about 1 min per side - you will see them start to bubble when they are ready to be flipped
- Remove for pan
- Enjoy!
Berry Topping
- Put the berries in a coffee cup or microwave safe bowl and add a SPLASH of water, cover and microwave for approx 30 seconds. You will see a berry juicy "syrup" ready for you to pour on your pancakes

I think I will be making these Pumpkin Banana Pancakes again tomorrow for breakfast, I really can’t get over how easy they were to make! I didn’t even top mine with any syrup, but I’m sure it would delicious with some warmed up maple syrup! However, I do highly recommend those berries. The berry mixture is also crazy easy to make, and healthy…no sugar added!

These are so good! My only complaint is that mine did not stick together well, but they may come with practice. I just started WW and these were a perfect pick me up for the morning. (They would be good too with a few chocolate chips.) The banana did not overpower the pumpkin which was nice. Thank you for the recipe! Will be a new morning favorite!
