I have another gin cocktail for you all.  This is a Grass Skirt Cocktail.  Grass skirt cocktails is considered a popular summer drinks due to their refreshing color and fruity flavor. This summer cocktail is named after dress pieces from the Polynesian islands, the grass skirt will surely cool those hot summer nights down to a nice warm glow.

When I think of the Polynesian islands, I immediately think of fresh pineapples and fun, fruity cocktails and that is exactly what this cocktail is all about.

To make this Grass Skirt Gin Cocktail you will need:
Gin
Cointreau or triple sec
Pineapple Juice
Grenadine
A fresh slice of pineapple for garnish
Ice

The result is a refreshing and tropical cocktail for you to enjoy all summer long. And beyond! Who says we can only enjoy the tropics in the summer?!

Ingredients

  • ice cubes
  • oz gin
  • 1 oz triple sec Cointreau
  • 1 oz fresh pineapple juice
  • ½ tsp grenadine
  • 1 slice pineapple for garnish

Instructions

  • Fill a shaker halfway with ice cubes.
  • Pour in the gin, triple sec, grenadine and pineapple juice.
  • Shake well pour into an old fashioned glass without straining.
  • Garnish with the pineapple slice.
  • Enjoy!
  • Cheers!

Notes

If you don’t have a shaker, you can put everything into a glass with ice and stir well.

This Easy Pesto Alfredo Pasta is ready in under 20 minutes making it an easy dinner meal. Use homemade pesto or store-bought and make the Alfredo sauce from scratch, it’s easy, I promise!

What isn’t to love about pesto and Alfredo sauce?  I mean, both are pretty darn incredible on their own, so blending them together has to be magical, right?  Right.

Pesto is the perfect blend of fresh basil, lots of garlic, olive oil, pine nuts (I prefer using toasted pine nuts), and Parmesan or Romano Cheese.

The Alfredo sauce I used in this recipe is actually a skinnier version that most Alfredo sauce recipes you will find, I try to avoid using heavy cream when I can…I’ll take the extra calories in a glass of wine instead 😉 For my skinny(ish) Alfredo sauce I used milk, flour, salt, butter, garlic, reduced fat cheese, and Parmesan cheese.

Both the pesto and Alfredo sauce are made with garlic and Parmesan cheese, which just confirms that blending these two sauces together is a match made in heaven.

You can top your Pesto Alfredo Pasta with chicken, shrimp, sun-dried tomatoes, toasted pine nuts or cherry tomatoes and a little extra Parmesan cheese like I did.  You can also eat it as is, because no matter which way you decide to serve it, your whole family is going to love it.

Homemade Pesto Alfredo Pasta

Homemade skinny alfredo sauce blended together with either homemade pesto or store-bought pesto make this dish flavorful and surprisingly easy to make. Ready in about 15 minutes!

Equipment

  • Stove

Ingredients

  • 1 cup homemade pesto store bought would work fine as well
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • 4 tsp all-purpose flour
  • 2 cups milk I used 2%
  • 1 tsp salt
  • cups Freshly grated Parmesan Cheese
  • 4 tbsp reduced fat cream cheese 2 oz

Instructions

  • Melt the butter in a skillet or large sauce pan over medium heat
  • Add the garlic and saute until the garlic is slightly soft, about 1 minute
  • Add in the flour and stir with a wooden spoon for approximately 1 minute
  • Stir/whisk in the milk and salt
  • Stir constantly until slightly thickened - approximately 2-3 minutes
  • Add the cream cheese and Parmesan cheese; stir until well blended and cheese is melted - approximately 2-3 minutes
  • Stir in one cup of pesto
  • Turn heat down to low or a simmer and allow sauce to warm thoroughly
  • Cook pasta according to package instructions, drain
  • Add pasta to the pesto alfredo sauce, or simply serve the sauce on top of the cooked pasta
  • Stir gently so that all the noodles are coated
  • Top with toasted pine nuts, additional Parmanesen cheese, tomatoes or even chicken if desired
  • Serve immediately
  • Enjoy!

Space

Having the perfect location is the first step in any summer party, and it doesn’t have to be complicated: a patio, backyard or outdoor terrace all require the same basics you’ll need for summer gatherings.

Seating

Make sure you have a variety of places available for guests to sit. Look around and see what you can use at the house! Hammocks, portable chairs, and blankets are fairly easy solutions for when extra seating is needed.

It’s hot in the summer and to have a successful party or gathering you are going to need plenty of drinks and somewhere to put them all. I grabbed Zephyrhills Spring Water and San Pellegrino Sparkling Water. I love sparkling water but I know that some prefer still, so I love having both on hand. If you put your drinks in an ice bucket, they will keep cool and look cool 😉

Sunscreen

If you aren’t in a completely shaded area, be sure to have sunscreen on hand.  And don’t forget to reapply!

I know it’s hard to be party ready at all times, but there are some essentials I recommend having in the house in case the opportunity arises. Chips, salsa, crackers, and cheese are always great to have on hand because it’s easy to plate them and have them ready for serving. If you are looking for a little more than snacks, I love Tony Roma’s Fully Cooked Pork Baby Back Ribs. You get great tasting ribs without smoking them or grilling them for hours on end! In fact, they are ready in under 15 minutes, making them the perfect summer grilling meal.

Party Treats

No party, or summer day for that matter, is complete without dessert. A cool treat is the perfect way to put the final touches on a perfect day. I keep M&M’s Ice Cream Cookies and a variety of Blue Bunny Load’d Sundaes in the freezer all summer long.

Utensils, Plates, and Napkins

Paper plates are always nice to have on hand so that you aren’t always doing dishes.  And you will need napkins after those incredible ribs!

Music

Everyone likes a bit of music that they can tap their toes and hum along to. Just make sure to not make it too loud so you can’t hear each other.

Games

Whether it be for the kids or for the adults, it’s always nice to have a game or two on hand to play.  If you have littles in the group, a scavenger hunt is always a fun idea and it doesn’t cost a thing!  A simple beach ball is always a good idea too, you can play volleyball, kickball or play with it in the pool.

Citronella Candles

As the sun begins to set, the bugs and mosquitoes will start to come out. Nothing will clear out friends and family faster than a bunch of biting bugs! Citronella candles add a nice ambience, and it doesn’t hurt to have some bug spray on hand.

If you are a novice wine-drinker and have enjoyed a glass of wine with friends or in a restaurant setting, it can be quite challenging to go out and buy wine when there are literally thousands of choices, and even dozens of choices in local supermarkets. Here are a few suggestions that will serve you well as a basic guide to buying wine.

Finding Out What Wines You Like

The key to buying wines that you will enjoy is to know what kind of wine you like.

For this purpose, your best bet is to go to a wine specialty shop. The advantage of this is that most good specialty stores have tastings on the weekends where you might be able to try 6 to 10 wines at their tasting table and be assured that you will go home with the wine that tastes good to you.

The second reason is that the staff in wine specialty shops are generally far more knowledgeable than in your local supermarkets and shopping clubs.

A good salesperson can steer you towards good bargains and even assist you in wine pairing for dinners or parties.

If there isn’t a good wine shop conveniently located near your home, then organize a wine tasting party and invite good friends to bring one or two bottles of wine each and taste them side by side in a casual, friendly environment.

The best way to do this is to taste the same grape varietal in a similar price range to see which brands and wine-growing regions stand out.

You can make it a game by covering the bottles with brown paper bags and marking them with letters or numbers and have people vote for their favorites.

A simple buffet of bread, cheese, and deli meats are all you need to have with your wine to see which ones go best with food.

You can choose the wines from a similar price point; let’s say $10 to $20, all from the same growing region (California, Australia, etc.) or across regions to begin to understand the difference between Cabernet Sauvignon from Chile or California.

Keep a list of favorite wines you discover and have them handy as your own personal “house wines.”

If you would prefer to have the wines shipped to your house than going into a store, there are various wine clubs that have wine at excellent prices. Most have guarantees so if you don’t like the wine, you actually get your money back.

Where Do You Start?

According to Andrea Immer, award-winning sommelier and author of the book, “Great Wines Made Simple,” 80% of all wines are made from the “Big Four” wine grape varietals. They are two red wine grapes, Cabernet Sauvignon and Merlot and two white grape varietals, Chardonnay and Sauvignon Blanc.

As you taste, you will find that the Cabernet Sauvignon will be more robust and have more “mouth feel” because of the tannins from that grape, and the Merlot will taste slightly fruitier and silkier.

Chardonnay will generally taste richer and have a fuller “mouth feel,” and Sauvignon Blanc will taste lighter and slightly more acidic. However, the effect of the contact between the wine and oak, either from barrel aging or the addition of wood chips to the wine (in cheaper wines), will give a softer, even buttery quality to the wine. It is an interesting experiment to try oaked and un-oaked wines made from the same grape varietal side by side to illustrate this.

Because of the heartier, more tannic quality of red wine, they are all usually barrel-aged to bring out the maximum flavor in the wine.

Once you find individual wines from the grape varietals you like, start trying them side by side with other varietals to see which you like best.

Learning about the “Big Four” will give you a strong wine background, considering how many wines are made worldwide from these four grapes.

Once you get a good feel for these wines, there are many other wines made from other grapes that are worth trying and are quite delicious. Try red wines made from Pinot Noir, Pinotage, San Geovese, and Gamay, then whites made from Viognier, Pinot Grigio, and Riesling.

Exploring Wine Regions

There are many famous wine-growing regions around the world that specialize in local grape varietals, such as Malbec from Argentina, Zinfandel from California, and Shiraz from Australia. These are unique and tasty wines that should not be missed. Though some can be pricey, like good Zinfandel from California, there are some great values like the Argentine Malbec from Mendosa and the Australian Shiraz from the Barossa Valley.

Inspired by the great wines of Bordeaux in France, the “Super Tuscans” in Italy, and the wines of the Rhone river valley, many wines are made from blending grape varietals to create unique regional wines. Once you have been acquainted with the single varietal wines, try some of these regional wines for their unique attributes. Here is where a good wine salesperson can help to guide you to a wonderful wine tasting adventure.

Specialty Wines

All the wines mentioned above are dry wines, meaning the sugars that occur naturally in the grapes have been fully fermented to create the alcohol in the wine. They are generally drunk with food or at social gatherings with savory snacks.

In the making of champagne or other sparkling wine, a second fermentation is induced to create effervescence in the wine.

Such “sparkling” wines make any occasion feel special and can be paired with savory or sweet foods. Be sure to choose a sparkling wine that is clearly marked “Methode Champagne” on the bottle, or any true Champagne made in the Champagne region of France. The best examples from France can be quite expensive, but the Moet Chandon White Star can be found for around $20. This is an excellent entry-level French champagne. The Korbel Natural is a California sparkling wine made in the true “method Champagne” for around $12. This is a good introductory wine for the California style of this sparkling classic.

There many varieties of fortified wines for after dinner or evenings by the fire. These fall under the heading of Port and Sherry. These are generally made by adding neutral grape spirits (alcohol) to the fermenting wine while there is still some residual sweetness to stop the fermentation process, yielding a sweeter, after-dinner wine with higher alcohol content, usually around 20%. They are delicious sipping wines for sharp cheeses, nuts, and fruit. They are a truly elegant way to end a fine meal or just relax by the fire with good friends.

Are you looking for some fun outdoor activities to do with the family? I know we have been! With everything going on, it was very important to me as a parent to make sure the kids are still enjoying their summer. And safely. So we have been doing a lot outdoors. But, eventually (well, pretty quickly) we run out of ideas to do at home. We have gotten a little creative in our adventures and I have to say that our favorite excursion so far has been seeing the manatees at Crystal River.

We decided that a staycation was in order, so we drove about an hour north of Tampa and stayed at Plantation on Crystal River.

“Staycation” is the trendy play on words meaning a stay at home vacation, or a taking a vacation close to home. Many families are opting out of traveling too far this summer.  Sometimes you fail to stop and appreciate local sights and attractions. This is the summer to remedy that omission. You can become a tourist in your own hometown.

Using imagination and creative planning, the “staycation” can be as fulfilling as the traditional annual vacations of summers past. Even more!

From the moment we walked into Plantation on Crystal River, I felt like I was in “Old Florida.” There are huge trees bordering the river that heads out to Kings Bay. There are boats going in and out searching for the best fishing spot or just taking a relaxing cruise on the water. Sitting at the pool you had a beautiful view of the river. No white sandy beaches, but there is lush grass and gorgeous landscape that makes you really appreciate mother nature. We saw manatees within minutes of getting to out hotel room! We walked right out of our room, across our patio and to the water and we saw two manatees right there! The kids and I were so excited!

While seeing the manatees there by the resort was really neat, swimming beside them on the Plantation on Crystal River Manatee Tour was incredible.

And as an added bonus I laughed hysterically watching my children put their wet suits on. We woke up at 6:45 a.m. and headed to the Adventure Center at Plantation on Crystal River where we prepared for our 3 hour manatee tour. We watched a video on the safety of these beautiful creatures, put our wet suits on, got our snorkels and then headed out on a pontoon boat where our two guides took us to swim with the manatees.

Our guide was wonderful about making sure we not only saw manatees, but ensured that each of us had the opportunity to get up close! No touching manatees though…whether you are on a tour or out in the wild. It was amazing watching the manatees swim, eat and go about their mornings while we very quietly watched.

After watching the manatees we cruised over to the Three Sisters Springs where we jumped out of the boat again and our guide gave us the history of the springs and allowed us to snorkel around the explore. When we were done swimming they had hot cocoa and coffee on the boat ready for us. You wouldn’t think in Florida in the summer you would want either of those, but swimming in 72 degree water is definitely chilly!

One of the best places to swim with manatee is indeed Crystal River. In fact it is the only place you can swim with manatees in the winter because the water temperature is always 72 degrees. In the winter hundreds of manatees will come to Crystal River to take advantage of that “warm” water temperature.

While you are at Plantation on Crystal River be sure to check out all the fun outdoor activities. The kids and I also went kayaking and fishing. You can also go golfing on their 18-hole golf course and/or 9-hole executive course, take a sunset cruise, go paddleboarding, rent a boat, charter a boat, and if you happen to visit between July 1st and September 24th you can also go scalloping.

Have you ever been scalloping? My neighbors took my kids one year and they said it was such an unique experience. A popular activity for families, scalloping is like snorkeling, but with the simple addition of a mesh bag for storing the harvest. Most scallops can be found in the shallow grass flats of the Gulf of Mexico that range anywhere from three to six feet deep. Only two to three inches in length and located inside a fan-shaped shell, the scallops can be easy to spot with their 30-40 bright blue eyes, but provide a good chase, since all those eyes help them detect predators. Once daily scallop limit has been reached, they can be prepared by the hotel for a delicious cook-your-catch meal. Guests are asked to help protect the precious waters by not putting empty scallop shells back in the water.

Gather a consensus

Discuss the idea of spending vacation time locally with all family members. Receive input about what activities and leisure time is preferred. Will you be treating yourselves to some luxuries, like fine dining and a brief stay at a hotel with amenities? By communicating and planning in advance, excessive expectations and minor disappointments will be aired and resolved. If you decide to stay at Plantation on Crystal River, I promise you there will be no disappointments.

Make advance preparations

I have been camping with my family for over 35 years.  I still remember the first time my parents pulled me out of school early for Spring Break and we jumped in the truck and drove to Florida to go camping at Disney’s Fort Wilderness Campground.  Back then my parents had a popup camper.  When my brother and I got a little older (and a little bigger) my parents wanted more room in the camper, so they got a Class C Motorhome.  A motorhome is a RV (Recreational Vehicle) that you drive.  There are also travel trailers, these are campers that you pull behind your own vehicle.  There are several different kinds of travel trailers; popups, lite travel trailers and fifth wheels.  There are also  motor vehicles with a miniature self-contained house built into it, you will sometimes see these in everyday vehicles like vans, pickups, light trucks, and buses that have been modified to have accommodation integrated onto the chassis of the vehicle.

After I got married, moved to Florida and we had our second child, my husband and I decided that it was time to get our own camper.  Our first camper was a travel trailer.  We owned it for one year.  It only took one really long drive to Michigan (1200 miles) with two kids in our  SUV to realize that a motorhome was going to be the best option for our family.  Every summer we drive back to Michigan for a few weeks to visit family and camp at the same campground by Traverse City. Traveling in a motorhome gives you the ability to walk around if needed, go to the restroom without stopping at a rest area (because you have one in the RV) and you also have a refrigerator that is full of snacks and drinks so you don’t have to buy anything along the way.  A motorhome will indeed cost you more money up front, but that is because you don’t need a truck to pull it.  If you have a truck that can pull the weight of a travel trailer, that may be cost effective option for you.  I, personally, never felt comfortable pulling a travel trailer, but I have driven our RV well over 40,000 miles.  In fact, I am the primary driver.  Due to my husband’s work schedule, he usually flies to our final destination and the kids and I drive.

Personalities differ when camping; you either love sleeping in a tent or loathe it. Me, I loathe it.  We had to do it once for my son’s Boy Scouts trip and I would be okay if I never did it again.  Those who love camping but balk at sleeping in a tent would surely benefit from camping in their very own RV.  RVs are now the most popular alternatives to camping. Read on to learn the main benefits of RV camping.

Benefits of Camping in a RV

Motorhomes (that’s ours above) drive like a normal car, pickup, truck, or bus. However, the accommodation area contains a bedroom, lounge, kitchen, and in most cases, a bathroom area. RVs can have a variety of styles and levels of fit-outs with stylish queen size beds, bunk beds, single beds, refrigerators, microwave ovens, stoves, recliner lounges, television, DVD players, bars and reverse cycle air conditioners. They can also be made for the disabled as well. Full vanity bathrooms can have separate showers and toilets and washing machines. Motorhomes are fairly easy to pack for your camping adventure because they have drawers and closets for your clothes and lots of space for your food.  This certainly highlights the benefits of RV camping.

BBQs and external entertainment centers are other options available to RV owners. Within the RV you can have all the comforts of home. Imagine arriving home from work Friday evening, jumping straight into your RV, and hitting the road with not a care in the world. You could be at your selected camping site a couple of hours later, all setup and enjoying all the benefits of RV camping.

Most RVs are self-contained with water tanks to supply fresh water. RVs have separate tanks that collect the greywater from sinks, washbasins, etc. Most have a tank for black water from toilets. There can also be outlets for these wastewaters so they can be piped directly into park lines. Most RVs have some form of self-contained power. Often they have a generator with large batteries or solar panels. The vehicle does not have to be connected to the mains power to have some of the electrical appliances working. These aid in alleviating the high costs of caravan site fees and allow you more freedom of choice in regards to choosing your camping location.

RV’s are ready to go at any time convenient. You can basically have a vacation every weekend! RV’s can be so easy to setup. If you are staying in a campground, just pull up on some level ground, plug in the power and water, attach the outlet pipes, go inside and open up your drink of choice, sit down and relax. This can all be done in fifteen minutes or less. Tents, on the other hand, can take an hour or more just to set up the tent and so forth. Packing up an RV is as simple as flushing your tanks, disconnecting the water pipe, waste pipes, and power leads. Close the windows, put down the TV antenna (if yours has one), close cupboard drawers and doors, and you’re off!

The really great thing about using an RV is that they can go anywhere at any time. You can enjoy a new picturesque scene every day. Many areas, cities, parks, and towns are now RV friendly. Tourism experts realize that RVs means that people will spend more money on specific towns etc. If your RV is fully self-contained, you have the flexibility to go camping for a number of days in style and comfort.

The financial benefit of owning an motorhome is that it is just one vehicle. You are only going to be paying one registration and insurance. Those who own travel trailers and trailer campers pay two registrations, one for the travel trailer and one for the vehicle which tows it. Vacationing in an RV is much more cost-effective than stays at a hotel/motel or resort, site fees for your R.V. can range from free to an average of $50 dollars per night. Some campgrounds, like Disney’s Fort Wilderness Campground, can be over $100 a night. The price difference is dependent on the location and amenities that you want. By cooking your own meals in your RV, it can save you the expense of having to eat restaurant every day.

As you are living in your own mobile resort, you can enjoy a variety of vacations. You can go see snow for one week and the beach the next. RVs are one of the best forms of accommodation for those who live and work the seasonal lifestyle. RVs allow you to move quickly and easily from one seasonal zone to the next. Go fruit picking, work on a cattle ranch. You can take your home with you. RVs are great for families with small kids. It is much easier to manage children within the RV in comparison to tented accommodation.

There are hundreds of RV clubs throughout the United States. Some are general clubs; some are brand name clubs and some state clubs. The website RV Share has a huge list of RV clubs that you may want to check out. If you become a member of a club, you will meet many like-minded people. You may even make many new friends and will enjoy many organized club events. Imagine taking off for a couple of weeks with a bunch of friends, traveling in convey on a mobile vacation. So now you don’t need to wonder what to do this weekend. Invest in an RV, and you can arrive home from work Friday evening, jump straight into the RV, and head out on a road trip. You can be at your camping site, set up in a matter of minutes, and enjoying all the benefits of RV camping.

Speaking of campsites, many campground offer similar amenities to that you would find at a hotel.  You will often find pools, free activities such as mini golf, bingo, shuffleboard, tennis and much more at campgrounds.  Some campgrounds are on lakes, and some offer fishing, kayaking and even boat rentals. Most campgrounds also have stores so if you forgot something, you should be able to get it without having to pack everything up and drive to the closet grocery store.

Isn’t this Gin Daisy Cocktail beautiful?! Refreshing and a bit fruity, this cocktail will soon be one of your favorite drinks. ‘Daisy’ cocktails are drinks that were popularized in America, any base spirit can be used to make them, but this particular recipe for a pretty and summery drink calls for the use of gin. For many, gin is either a “love it” or “hate it” spirit, but even if you are on the “hate it” end of the spectrum, you gotta give it one more try and make yourself this Gin Daisy Cocktail.

Easy way to make a Gin Daisy Cocktail

Gin is an alcoholic beverage of no less than 80 proof that possesses the flavor of juniper berries. Gin is produced in subtly different ways, from a wide range of herbal ingredients, which is why you can find a lot of distinct styles and brands when at the liquor store. After juniper, gin tends to be flavored with botanical/herbal, spice, floral, fruit or often a combination. The most popular gin drink is simply a Gin and Tonic.

Best way to make a Gin Daisy Cocktail

Gin Daisy Cocktail Ingredients:
Ice cubes
Gin
Lemon juice
Simple syrup
Grenadine
Sparkling Water or Soda Water
Orange slice and sprig of mint for garnish

How To make a Gin Daisy:
You can serve your cocktail with ice or prepare it in a shaker. I prefer mine with ice in a glass. If you want to prepare your cocktail in a shaker you will fill half the shaker with ice cubes, add the gin, lemon juice, simple syrup, and grenadine syrup.
Shake well then strain into an old fashioned glass or your favorite glass for sipping.
Top up with sparkling water or soda water. I used lemon sparkling water.
Garnish with fresh mint and orange slice(s).

Ingredients

  • 2 oz gin

Instructions

Walt Disney World is home to more than just theme parks – there are also two dining and entertainment districts at this Florida trip destination. One of these is the BoardWalk, where adult guests thrive without leaving their kids out of the fun. You’ll also find the BoardWalk Resort here, a deluxe resort for those who want to stay close to the action. Every trip to Disney World should include a night (or several) on the promenade!

With so much to see and do at Disney’s BoardWalk Resort, it helps to know what to expect before you visit. This guide to Disney World’s Boardwalk will show you things to do in your budget, along with how to get to the promenade. We’ll also cover the pro’s and con’s of staying at the BoardWalk Inn. With the right planning, your visit to the Boardwalk could become the highlight of your trip!

Disney’s BoardWalk Inn is a charming resort located at Walt Disney World Resort in Orlando, Florida. The BoardWalk area, reminiscent of a turn-of-the-century Atlantic City boardwalk, is filled with entertainment, dining, and recreational options.

There are 11 places to eat at the Disney BoardWalk Resort, a Dance Hall, the ESPN Zone, Dueling Piano Bar and so much more. 

One of our kids favorite things to do is watch the magician that comes out nightly on the boardwalk to entertain pass-er-byes.

While you are at Walt Disney World, take a moment to experience some of the Disney Magic at the other resorts, we love Disney Resort Hopping.  It’s free, plus both kids and adults love it.

How do I get to Disney World’s Boardwalk?

Many Disney World resorts offer free transportation between the parks, hotels, and shopping districts. If you’re staying at one of those resorts, you can take a bus or boat to the BoardWalk Resort depending on where you are staying. Alternatively, you can drive up to the parking lot to get a free 3-hour parking pass. If you do this, be sure not to exceed the time limit – they’re pretty strict about it!

When is the Best Time to Go to Disney World’s Boardwalk?

While you can visit the Boardwalk at any time, the fun truly starts after dark. The adult-oriented venues don’t open until 7:00pm, so if you’re visiting without your kids, it doesn’t make sense to visit much earlier. If you have an early dinner reservation, check out the rest of the Boardwalk after you eat.

Things to Do on Disney World’s Boardwalk

Now, let’s talk about some of the best things to do on the Boardwalk: eat, drink, and dance the night away. Not nearly as large as Disney Springs (formerly known as Downtown Disney), but you will still find plenty of establishments to stop into.

One of the least expensive dining options on the Boardwalk is the To-Go Cart. You’ll likely still pay more for food here than you would at home, but you’ll still find burgers for under $10, along with mozzarella sticks and mac and cheese bites for $5.50. For a moderately priced sit-down meal, head to Big River Grille & Brewing Works. During dinnertime, main dishes start at $17.99, but you can get sandwiches, appetizers, and burgers for even less. Their kid’s menu features six dishes, and adults have dozens of alcoholic beverages to choose from.

If you’re seeking a fine dining experience, consider going to Flying Fish, but be warned – some menu items approach $60. If seafood is in your budget, try the swordfish meal with an artisan cheese tasting. If you don’t think the fancy menu will appeal to your kids, show them the customizable kid’s menu instead. Each kid’s entry comes with their choice of two sides, with options like macaroni and cheese, vegetables, and mashed potatoes. Flying Fish is a highly-rated establishment, so it’s certainly worth the high cost of a meal!

Many of the Boardwalk’s bars serve food and non-alcoholic drinks and snacks, so you won’t need to leave your kids behind. If you’re just looking to grab a drink without hanging out in a bar, head to BoardWalk Joe’s Marvelous Margaritas. Here, you can order a beer or margarita while your kids sip on a DOLE Whip Smoothie. You can also snack on some Mickey pretzels, which make for great Instagram photos. Alternatively, stop into the AbacadaBar lounge. While they don’t serve non-alcoholic drinks, they offer bar snacks from 5:30pm-9:30pm. The lounge allows kids, but it’s designed more for adults. For those looking for a more kid-friendly place to drink, Big River Grille & Brewing Works is likely the best option.

The entertainment venues on the Boardwalk are stricter about who they allow inside. Families should check out the ESPN Club, which hosts live radio sports shows. You can watch interviews with famous athletes inside the radio booth or at the sports desk while munching on some sports-themed food. Before booking your reservation, check the schedule to see if a live interview is taking place that day! If you’re seeking a more laid-back activity, stop into the Wyland Gallery, an art gallery that focuses on marine life. Don’t forget to take a picture with the 9-foot-tall dolphin statue!

Guests without kids have more options – they can get into the adults-only Jellyrolls and Atlantic Dance Hall. At Jellyrolls, you can watch a live piano performance while singing along with the crowd. There’s a cover charge to enter, so be prepared to pay $15 per person at the door. Since it’s such a popular venue, you’ll also want to arrive early to grab a table. If you’d rather not pay a cover charge, visit Atlantic Dance Hall. While you’re not dancing to 80’s, 90’s, and 00’s hits, you can relax on the balcony that overlooks Crescent Lake. The rest of Disney World may cater to kids, but the Boardwalk is the place for adults to have fun!

    • Flying Fish is a fine dining seafood restaurant with an elegant atmosphere. The menu includes a variety of fresh seafood options, steaks, and an extensive wine list. It underwent a reimagining in recent years, updating its menu and interior.
  3. Big River Grille & Brewing Works:
    • Big River Grille & Brewing Works is a microbrewery and restaurant. Guests can enjoy a variety of handcrafted beers along with a menu featuring burgers, sandwiches, and pub-style fare.
  4. ESPN Club:
    • ESPN Club is a sports bar and grill that caters to sports enthusiasts. The restaurant features multiple screens showing live sports events, and the menu includes a variety of pub-style appetizers, burgers, and more.
  5. BoardWalk Bakery:
    • BoardWalk Bakery is a quick-service bakery offering a variety of pastries, sandwiches, salads, and desserts. It’s a great spot for a quick breakfast or snack.
  6. Pizza Window:
    • The Pizza Window offers quick-service pizza by the slice or whole pie. It’s a convenient option for those looking for a casual and satisfying meal.
  7. Ample Hills Creamery:

Should I Stay at Disney’s BoardWalk Inn?

While there are some benefits to booking a hotel room at Disney’s BoardWalk Inn, it’s not necessary to do so. Whether or not it makes sense depends on your budget and what you’re focusing on during your Disney World vacation.

If you’ll be spending most of your time on the BoardWalk, it’s helpful to stay close to the action. You’ll also get complimentary transportation to the parks, access to an on-site spa, and the chance to book rooms with premium service. However, a room at the BoardWalk Inn is out of many travelers’ budgets. With rooms starting at $491/night, some people prefer staying at a Value or Moderate Resort hotel. Even at the least expensive resorts (Disney’s All-Star Movies, Music, or Sports Resorts), you’ll have pools, an arcade, on-site dining, and complimentary transportation to the parks – all for just $119/night.  We have stayed at the BoardWalk Inn numerous times, there are just times that you want to be walking distance to Epcot and Hollywood Studios and in the center of it all.

Can you see the fireworks from the Boardwalk Inn?

Disney’s BoardWalk Inn itself does not typically offer direct views of the fireworks shows from Epcot or Disney’s Hollywood Studios. While the view might not be as direct or close as being inside the parks, you can take a stroll along Disney’s BoardWalk. Certain spots along the waterfront may provide distant views of the fireworks, especially if there are no obstructions.

We like to watch the Epcot fireworks on the walking path from Disney’s BoardWalk that leads to Epcot’s International Gateway. The bridge over the waterway between BoardWalk and Epcot offer a distant view of Epcot’s fireworks.

After a long day at Disney World’s theme parks, a night on the Boardwalk is the perfect way to unwind. Whether you’re heading there for dinner, drinks, or the clubs, you’re bound to have a good time here. Pizza is a traditional meal for millions of people, and the sky is the limit when it comes to choosing toppings, crust and sauces— in fact, Americans eat up to 100 acres of pizza per day. But just because the meal isn’t fancy doesn’t mean that delicious glass of wine can’t be included. Pizza and wine complement each other well; the key is to choose a red or white wine based on the toppings and sauce used.

Actually, it’s pizza night in our house tonight.  We have pizza once a week or once every other week, and the style and toppings are always changing.  A favorite is BBQ chicken with pineapple pizza, or we go with something simple like a Margherita pizza.  The kids almost always want just pepperoni, but there is something to be said for simply delicious pepperoni pizza. We almost always prefer a nice thin wood-fired pizza, but once in a blue moon I crave a nice deep dish pizza…and I’ll eat all the corners please.

Pairing Wine With Tomato-Based Pizza

Pizza that is loaded with a rich tomato-based sauce, thick juicy slices of tomato (such as Margherita pizza), or such fresh herbs as basil, oregano, parsley, and cilantro pair fantastic with bold, fruity, rich wines with mild tannins. This is because the acidity in the tomatoes works well with the wine’s fruit notes and balances out the tannins. Try Barbera, a medium-bodied red from Italy’s Piedmont region. You can also try a lighter white wine, like a Pinot Grigio since it’s crisp and will not overpower the flavor of the pizza.

Nowadays, experimental sauces for pizza are very popular. Alfredo sauce, pesto sauce, tzatziki sauce, Chinese peanut sauce…..all of it tastes delicious on pizza. White wines work well with this type of pizza. For the pesto, choose whites with floral and earthy notes, such as a Chardonnay or Riesling, while alfredo sauce needs a white with a little spice, such as a Sauvignon Blanc with peppery notes. Don’t forget to chill your wine slightly before serving.

For pizzas piled high with tangier, spicy meats like pepperoni, sausage (particularly Italian proteins) and salami, try red wines that are full-bodied and earthy. Wines from southern Italy, such as a Primitivo, usually pair well with this favored pizza, because of the less spicy notes and velvety texture. You can also try a nice Cabernet Sauvignon.

Since pizzas layered with vegetables make for a fairly light slice, it is smart to aim for a lighter variety of wine. Olives, onions, peppers, lettuce, broccoli, zucchini, artichoke, garlic, and so forth are common vegetable options for pizza. Try a Rosati, an Italian term for a dry rose, to compliment the lighter variety of pizza.

Many pizzas, particularly in European regions, pile on the prosciutto, dried red pepper, and peppery greens like arugula. It can be difficult to find a wine to pair with this type of pizza because red is the best option—however, many reds can border on being too bold, and this will overwhelm your taste buds. A rich, savory Chianti is the way to go here, as the slight spice notes in the wine will pair well with the toppings.

Mushrooms are a favorite of many pizza lovers, with a wide variety of earthy components available for the taking. There’s no better pairing than a Pinot Noir with mushrooms (with a little shake of oregano)— it’s a match of earthiness and spice made in pizza heaven. Look for a bold Pinot that has notes of chocolate, spice or pepper, or oak.

Keeping the idea in mind that one must balance the flavors of food and wine is an easy method of pairing the two. So forget the glass of soda or cold beer, and try your hand at matching up wine with you pizza for a match made in heaven.

Today I am going to share with you where some of that milk comes from that you grab off the shelf at your local Publix here in Florida. Hopefully this will help you have a better understanding where your food comes from and how you are supporting local, family farmers.

Lussier Dairy, located in Hawthorne, Florida, is owned and operated by the Lussier family. I had the incredible opportunity to interview Kevin Lussier about what it is like to be a dairy farmer, and it was evident in the first few minutes of the interview that Kevin is very passionate about being a dairy farmer. In fact, so much so that was one of my first questions.

When I asked Kevin Lussier why he liked being a Dairy Farmer he said: I just love the way of life, I know that every day I am giving back to the community which helps the nation as a whole. Being a dairy farmer is not just a job, it is a way of life, a livelihood that I am proud to be a part of.

Every single day Kevin, his family, and their 10 full-time employees work hard to ensure that the cows are happy.

Yes, EVERY. SINGLE. DAY. Dairy farming isn’t a job that is Monday – Friday from 8:00 AM – 6:00 PM, it is 365 days a year, 24 hours a day, 7 days a week. But Kevin is okay with that, in fact, he loves it. He grew up on a farm and he is looking forward to raising his kids on the farm with his wife, Shelby.

On the Lussier Dairy Farm, the first milking shift starts at 3:30 AM. Kevin arrives at the farm around 6:00 AM to check on the cows to make sure that they are happy, healthy and that everyone is eating well. Calves and mommas are checked on a bit more frequently throughout that day, because all mommas and babies need a little extra love 🙂

By 7:00 AM Kevin is doing some of his daily chores, whether that be bailing hay or cleaning the barns. By noon, it’s time for lunch, but the cows come first. Cows are fed 2 – 3 times a day, and since they like structure and routine, those times are the same every day. Again, it’s most important to Kevin (and all Florida Dairy Farmers) that their cows are happy and well cared for.

Cows are milked again in the late afternoon, approximately 12 hours from the first milking. Trucks come every day about 10 months out of the year to deliver the 35,000-38,000 lbs of fresh milk to places such as Publix, Dean Foods and Borden. In the summer, the amount of milk production slows a little due to the heat so trucks come every 36 – 48 hours. Let’s be honest, no one (even cows) likes to work too much when it’s hot outside. Again, the most important thing to Kevin and his family is the happiness and well-being of their 600+ cows.

Hawthorne Creek Creamery

In his spare time, Kevin can be found at his new love, a local creamery. Actually, Kevin doesn’t have any spare time, he just figured out how to get more hours in a day 😉 Kevin and his wife came across the incredible opportunity to diversify their love of dairy by purchasing a creamery from a local couple that were looking to retire. Here, one of the past owners now helps with the cheese making process where they create 4 incredible types of cheese: Gouda, Havarti, Swiss and Tomme. I asked Kevin which was his favorite and he said if he had to choose, it would be the Gouda, he describes it as extra creamy and buttery. Can I have some please?!  I also had to ask what Tomme was. I consider myself pretty knowledgeable when it comes to cheese (because I could basically live off of cheese, bread, chocolate and wine 😉 ) but I hadn’t heard of Tomme. Kevin said that it is similar to brie as it melts beautifully and has a rich earthy taste. Can someone pass me some crackers please? Yum! There are also cows located at the creamery, these are the cows where the milk comes from to make the cheese.

Life of a dairy farmer

Kevin, along with his Dad, tend to the cows at both locations 100% of their time. Not because it’s a job, but because it’s a way of life that they love. They love the cows, they love their farm, they love how they help us get nutritious, fresh milk every single day.
