Easiest Homemade Peach Pie Filling

Easy Homemade Peach Pie Filling

Have you made pie filling at home before?  It’s actually surprisingly easy and it tastes a lot better than anything you will get from a can.  I made homemade apple pie filling last Fall and when I saw that Florida peaches were in season, I knew that I needed to make homemade peach pie filling.

You can make pie filling in under 10 minutes, once you have your peaches peeled and pitted.  I will admit that my favorite part of a peach is that velvety skin, but using the peach skin in your pie filling will make the texture a bit off and add a little sourness to it, so I do recommend taking the skin off.

How to make Peach Pie Filling

Fresh peaches will work perfectly in making your pie filling, but you can also use frozen peaches.

To make homemade peach filling, you only need 7 ingredients and you may have them all at home right now.  Unless you need to head out to your local grocer or farmer’s market to get peaches.

You will need:
Peaches
Water
Fresh Lemon juice
Sugar
Cornstarch
Vanilla extract
Cinnamon

To make this easy peach pie filling you only need about 5 – 8 minutes of cooking time. Pretty easy, right? I told ya!

Tasty Peach Pie Filling

Once you pie filling is made you can use it for all sorts of delicious desserts, don’t limit yourself to just peach pie. If you do decide to make a pie, this easy recipe makes enough filling for one peach pie.

I used my peach pie filling to make these Peach Pie Cookie Bars.

Peach Pie Bars

You can also simply scoop your peach pie filling over your favorite ice cream, vanilla ice cream would be my suggestion, but feel free to get creative. Something with caramel in it would also be delicious.

Now, here is my easy peach pie filling recipe. Be sure to Print It and Pin It so that you can make it again and again.

Fresh blueberry juice and a squeeze of fresh lemon juice make this Blueberry Lemon Martini naturally sweet and oh so delicious. Enjoy this easy martini today! Cheers!
Best Blueberry Lemon Drop Martini

Blueberry Lemon Drop Martini

Blueberries are in season here in Florida and we actually just went to a local U Pick farm and got a bunch of these beautiful berries. Of course we will be making lots of blueberries smoothies, my Blueberry Delight Breakfast Casserole, Blueberry BBQ Sauce, Lemon Blueberry Bread and homemade blueberry vinaigrette but I decided a blueberry cocktail was also in order.  I mean, when isn’t a fresh and beautiful cocktail not in order?!

Blueberries are not only beautiful, but considered a super food, so why not add them to a cocktail?! Blueberries are naturally sweet so there is no need for added sweeteners to this Blueberry Lemon Martini.

I used fresh blueberry juice in this martini recipe. That means I actually “made” the juice myself. Which is actually really easy, don’t get nervous. To make fresh blueberry juice you simply “muddle” the berries then pour the mixture over a mesh strainer so that you capture the juice.

Easy Lemon Blueberry Martini

What is muddling? Muddle is just a fancy word for smash. I put about a cup of blueberries into a large coffee cup and smashed them. I used my Pestle from my mortar and pestle set (typically used for grinding herbs) and it worked just fine, if you have a cocktail muddler that would work perfectly as well, and honestly I don’t see why any spoon, fork or masher wouldn’t work either.

I used approximately one cup of fresh blueberries to get 2 ounces of fresh blueberry juice for my Lemon Blueberry Vodka Martini.

I also used fresh lemon juice. Look at all the good fruits you are getting in this easy cocktail recipe!

Now here is how to make this Blueberry Lemon Drop Martini. Be sure to Print It and Pin It so that you can make it again and again.

This blueberry lemon martini is made with fresh blueberry and lemon juice and is naturally sweet and delicious. Cheers!

Ingredients

  • 1 cup blueberries - muddled. This will make approximately 2 oz fresh blueberry juice.
  • 1 tbsp fresh lemon juice
  • oz vodka
  • ice

Instructions

  • If you would like your martini chilled, pour all the liquids into a glass with ice or in a martini shaker
  • Strain the incredible fresh blueberry martini into your glass of choice
  • Sip and enjoy!

Notes

Please drink responsibly.
To muddle your blueberries, put them in a bowl or large large coffee cup and use a cocktail muddler, pestle, or even a fork or spoon to mash the berries.  Then strain the berries and save that delicious fresh blueberry juice.

I hope you enjoy this Blueberry Lemon Martini as much as I do!  Cheers!

Best Blueberry Lemon Martini

Here are some of the health benefits of blueberries:

  • Blueberries are high in fiber, Vitamin C and Vitamin K.
  • Blueberries are considered the King of Antioxidants.
  • Blueberries may lower blood pressure and prevent heart disease.
  • And personally, I think a health benefit is that blueberries taste amazing.

Now, I am not saying that drinking martinis has health benefits, but I am saying that the blueberries in this martini recipe add a bit of good-for-you-stuff.  And, I will admit that after one of these Blueberry Lemon Drop Martinis I am feeling a bit better. Not sure if that’s the blueberries or the vodka though 😉

Get a taste of Disney Magic Moments at home with this Disney Park Churro Bites recipe. These magical churros are easy to make and absolutely delicious!
Best Homemade Disney Churros

Copy Cat Disney Park Churros

Living in Florida has many advantages. We are sunny and warm almost all year round. We have some of the world’s most incredible theme parks within driving distance. We can see Mickey Mouse just about whenever we want to…I mean, does it get any better than that?! Well, expect when we can’t visit our favorite theme parks. Since Disney Parks are at lessened capacity at the moment, I know we are all missing our favorite Disney magical moments and of course, our favorite Disney eats and treats.

So, when the fabulous folks at Disney emailed me their famous churro recipe, I knew we had to recreate it at home as soon as possible. My daughter and son were so excited they even helped make these Copy Cat Disney Churros. This recipe is inspired by the delicious snack that can be found at all of Disney parks across the globe.

This Disney churro recipe serves four people, but we doubled it and gave a batch to our friends. It is a perfect snack to enjoy while spending some quality family time together, maybe while watching your favorite Disney movie 🙂

We had all the ingredients at home to make these yummy Disney churros, we even made my easy homemade caramel sauce for dipping. SO GOOD.

What we didn’t have was a big enough star tip for our piping bag. All of our tips were more for frosting, so after a couple attempts of trying to the churro dough out of the frosting tips to create the world’s smallest churros, we gave up and got a little more hands on 😉

Homemade Disney Churro Bites

My daughter and I were in charge or making the churros into whatever shape we wanted. We tried making hearts, circles, sticks and then we decided that the typical donut shape was the easiest. It also cooked really evenly that way. If you end up making your own shapes as well, just be sure to keep the dough thin (think of the thickness of a churro) because if you make it too thick, it will take longer to cook.

Copy Cat Disney Park Churro Bites

When we made our Copy Cat Disney Churros, my daughter was in charge of making the shapes, I was in charge of the frying, and my son was in charge of coating our churros in cinnamon sugar. We actually had a lot of fun making these together and we did decide that they were almost as good as Disney’s. I think if we were eating them at Epcot standing outside of Mexico, we would have decided that they were exactly the same. Something about that Disney Magic that just makes everything just a bit better.

Speaking of Disney magic…this is how their Churro Bites turned out:

You can watch the Disney crew make Disney Churro Bites here:

And this is how ours turned out:

We weren’t quite as fancy, but I promise you, no matter what shape yours are in, they will still taste like a Disney Magical Moment.

Equipment

  • Stove

Ingredients

  • 1 cup water
  • 8 tbsp butter 1 stick
  • ¼ tsp salt
  • ¾ tsp ground cinnamon, divided
  • cups all-purpose flour
  • 3 eggs
  • cups vegetable or canola oil I used Corn Oil
  • ½ cup sugar

Instructions

  • Combine water, butter, salt, and ¼ teaspoon cinnamon in 1 ½-quart saucepan over medium heat. Bring pot to rolling boil.
  • Reduce heat to low.
  • Add flour and stir vigorously until mix forms a ball. Remove from heat and let rest for 5-7 min.
  • Add eggs, one at a time, and stir until combined. Set aside.
  • Heat oil in a medium skillet or 1-quart saucepan over medium-high heat or until temperature reaches 350˚.
  • Spoon dough into a piping bag fitted with large star tip.
  • Pipe 1-inch strip of dough over saucepan, cut with knife, and drop into hot oil.
  • Repeat until churros fill saucepan with room to fry.
  • Fry churro bites until golden brown. Approx 1-2 minutes
  • Remove with slotted spoon or mesh spider strainer.
  • Place churro bites on paper towel. I placed paper towel over a cooking rack and placed on that churros there to cool.
  • Mix sugar and ½ teaspoon cinnamon in medium bowl.
  • Toss in churro bites until coated.
  • Place on serving plate and serve with favorite dipping sauce. We made caramel sauce.
  • Enjoy!

Notes

We didn't have a large enough star tip so we were unable to use the piping bag to make our churros, so we simply used our hands and formed the dough into bite-sized shapes.  The shapes we made varied from sticks, to circles, to donut-shapes.
We didn't have a thermometer to tell us when the oil reached 350 degrees, so I waited until I saw one or two bubbles starting to form in the oil and slowly dropped our churros into the oil.  If you are using your hands, BE VERY CAREFUL, THE OIL IS VERY, VERY HOT.

I hope making these Disney Churros at home brings you a bit of Disney Magic. It definitely did for us.

We had our Disney Park Churros for dessert and breakfast…we decided that they were magical at any time of the day!

Top 10 Free Things To Do In Orlando

There are lots of fun free things to do in Orlando the whole family will enjoy. Save on your trip to Orlando by adding these free things to do to your plans.

Top Free Things To Do In Orlando for families

Top 10 Free Things to Do in Orlando

With Walt Disney World sitting so close to Orlando, Florida, it’s no surprise that this city is a great vacation spot. In addition to the world-famous amusement parks and resorts, a whopping 75 million people visited the city in 2018 for its nightlife, golf courses, and sunny weather. Many kids dream of visiting Orlando, but it’s also a popular spot for adult travelers – you don’t need a set of Mickey Mouse ears to have a great time here!  We live in Tampa and have definitely visited Orlando numerous times, with and without the kids 😉

Best Times Of The Year To Visit Orlando

The weather in Florida is known for being hard to predict. In the summertime, temperatures routinely get over 100 degrees in the middle of the day. In addition, the summertime brings on an almost daily afternoon thunderstorm, which can last anywhere from ten minutes to several hours.

For most tourists visiting during the summer, this means standing outside in either sweltering temperatures, or a torrential downpour. Keep in mind that hurricane season usually runs from about the end of July to the beginning of November, with most activity happening during August and early September.

While there is very little danger of a direct hit from a hurricane in Orlando, a hurricane hitting anywhere near Orlando Florida will mean several days of bad thunderstorms. If you’re hoping to visit a theme park, these storms will shut down most of the popular attractions.

Orlando Weather

A lot of people are unable to adapt to the heat of Orlando, Florida. During the winter and early spring, it tends to be the coolest in Florida. If you want to avoid the heat, you may consider going during this time. Although the summer offers the heat that many people do enjoy, there are also thunderstorms during this time of year. At the same time, it is important to keep in mind that rain and thunderstorms do not usually last very long and may be a refreshing touch to the humidity and heat that you will endure all day long in Orlando.

A lot of people enjoy visiting Orlando during the Fall. You may want to consider visiting between Thanksgiving and Christmas. However, it will be crowded during this time of the year, the weather will be a lot easier to adapt to and you will probably be able to take advantage of some holiday events or activities.

As you may expect, a trip to Orlando is expensive. Most travelers spend $240/day on each person, which is twice as much as they’d spend in some European cities. Between the themed hotels, theme park tickets, and nightclub cocktails, it’s hard to see this city without shelling out some extra dough. If you skip the parks, though, you can save hundreds (or even thousands) on your trip. Add some free attractions to your trip itinerary to make up for the tourist traps you’re missing to bring your trip costs down to just $88/person/day!

Homemade Peach Pie Bars

Sweet Peach Pie on a cookie! Yes! Homemade peach pie filling tops a homemade sugar cookie base to create the ultimate peach pie sugar cookie bars. This easy dessert recipe is ready in less than 45 minutes. While this sponsored is sponsored by Florida Peaches, all opinions and this recipe are my own.

Best Peach Pie Bars

Homemade Peach Pie Cookie Bars

Anyone doing a bit more baking recently? I will openly admit that baking isn’t always my strongest skill in the kitchen, but when I saw that Florida Peaches were in season, I decided I had to make something sweet and delicious. A peach pie sounded incredible, but I wanted something that the kids could take a small bite of when they walked past the kitchen counter if they wanted to. That got me thinking about cookies. So, why not combine the two? Peach Pie Sugar Cookie Bars.

Easy Peach Pie Bars

And yes, they do taste as good as they sound.

I made the peach pie filling. I have made apple pie filling before and it’s actually surprising easy, and since homemade always tastes better than canned, making the peach pie filling was the only way to go. Peaches are juicy and naturally sweet making these Peach Pie Cookie Bars absolutely addicting. Especially when they are sitting on the kitchen counter 😉

Best Peach Pie Cookie Bars

Peaches are sweet, juicy and one of my favorite fruits but did you know that they are good for you as well? I love using peaches in my smoothies because they have many health benefits.

Here are some of the health benefits of peaches:

  • Peaches are rich in beta-carotene making them a good part of your healthy lifestyle for lowering the cholesterol level in the blood stream.
  • Peaches are loaded with antioxidants that benefit your heart by destroying free radicals that start chain reactions within your body and can damage your cells.
  • Peaches are rich in Vitamin A and Vitamin C, and can help improve skin health and vision health.
  • Peaches are a great source of dietary fiber which assists in lowered risk of colorectal cancer.
  • Not to mention, peaches taste amazing. I would say that’s a health benefit too, wouldn’t you?
Easy Peach Pie Cookie Bars

The homemade peach pie filling in my Peach Pie Cookie Bars is actually really easy to make. What will take you the longest is peeling the peaches. I absolutely love peach skins, but they will make your pie filling a bit sour and the texture will be a bit off, so I do recommend peeling them. Once you have peeled your peaches, it will only take about 8 minutes before you have yourself homemade peach pie filling.

Tasty Sugar Cookie Peach Pie Bars

The “base” of these peach cookie bars is sugar cookie, it is made with only 6 basic ingredients, all of which you probably have in the house right now. You will need butter, sugar, vanilla extract, eggs, salt and flour to make the sugar cookie base of your peach pie cookie bars.

I made a very simple streusel topping for my Peach Cookie Bars, in fact it is the same one I used on my homemade strawberry muffins. For the streusel topping you will need sugar, brown sugar, flour, butter and cinnamon. Again, all ingredients that you probably have at home right now.

Roasted Veggie and Hummus Tortilla Pizza

Roasted Veggie and Hummus Tortilla Pizza

Sometimes you just need an easy recipe that satisfies a craving. Pizza is one of those cravings that is rarely satisfied by anything other than…pizza. So, I decided to create us an easy pizza recipe that is not only delicious, but vegan. And not only is it vegan, it’s also Weight Watchers approved.  All you need is your favorite vegetables, hummus, a flour tortilla and about 7 minutes. That’s faster than you can get a pizza delivered! Or even warmed up if you grab a frozen one from the freezer.

I used a Mission Flour Fajita size tortilla which is 3 Weight Watchers Smart Points. But if you use a Low Carb tortilla (I love the La Banderita Tortillas Low Carb Snack Size Tortillas) they are only 1 WW Point!

The 2 tablespoons of Sabra Roasted Red Pepper Hummus is 2 Weight Watchers Points.

Vegetables are ZERO Weight Watchers Points, so feel free to toss on as many as you would like on your roasted veggie and hummus tortilla pizza.

Easy Roasted Vegetable and Hummus Tortilla Pizza

I used roasted red pepper hummus because that is what I had in my refrigerator, but you can feel free to utilize your favorite variety. I bet garlic hummus or a spicy hummus would be great on this veggie pizza too. For the toppings on this easy vegetable pizza I used zucchini, squash and red and orange bell pepper. All three ingredients are very versatile so the leftovers are easy used in another dish, like my  Zucchini and Squash Salad with Homemade Honey Mustard Vinaigrette.

Weight Watchers Roasted Veggie and Hummus Tortilla Pizza

I used a tortilla as the “crust” for this pizza because they are inexpensive, lower in fat content, and they crisp up beautifully in the oven in just a few minutes.  If you prefer to make your own crust, you can make the one I used in my Healthy Greek Pizza recipe and it’s 6 Weight Watchers points, but it a bit more like traditional pizza crust.

Getting hungry? I know I am!

Now, here is that Easy Weight Watchers Vegetable Tortilla Pizza Recipe. Don’t forget to Print It and Pin It so that you can make it again and again.

Foods That Can Boost The Immune System

Foods That Boost The Immune System

We are all interested in keeping our immune system as healthy as possible, especially during cold and flu season each year. Did you know that there are a lot of foods that you can add to your diet that naturally give your immune system a boost? You probably already have some of these immune-boosting foods in your fridge or freezer, and if you don’t be sure to add them to your next grocery order!

When you are out shopping or ordering your healthy foods and foods that can help boost your immune system, be sure you are looking at the labels! Buy local, and when I say buy local I mean buy from your local farmer, buy produce grown in your city, buy produce grown in your state, buy produce that is grown here in the United States. When you buy local, you are not only supporting farmers (the 2% of the population that feeds the other 98%) but you are ensuring domestic food security.

8 Foods That Can Help Boost Your Immune System

Blueberries

Blueberries taste great and they can be added to cereal, oatmeal, yogurt, or your favorite smoothie. You can also just grab a handful of them for a healthy snack. Blueberries contain a bunch of vitamins including vitamins A and C they also contain fiber, manganese, and flavonoids. Flavonoids are an antioxidant that boosts your immune system and helps your cells to repair any damage that they may have sustained. Did you know that blueberries are considered a superfood?

Oranges

Oranges are another great food to add to your diet if you want to help give your immune system a boost. Oranges contain high amounts of vitamin C as well as vitamins A and B-6. They also contain a healthy dose of calcium, magnesium, selenium, and niacin making them a healthy and delicious choice for a snack. Strawberries may not be thought of when it comes to foods that boost your immune system but they do. Strawberries are sweet and delicious yet contain very little sugar, they can be added to salads, smoothies, and yogurt. Strawberries also help to reduce bad cholesterol levels and reduce inflammation in the body so be sure they are a staple in your healthy diet.

Immune System Boosting Foods

Broccoli

Loved by some and hated by others (usually children), this dark green vegetable is part of the cabbage family, it is native to the Mediterranean and is high in calcium. Broccoli is packed full of powerful nutrients and it also happens to be delicious! Broccoli contains vitamins A, C, and E, as well as a healthy dose of fiber and some powerful antioxidants. The key to keeping broccoli as nutrient-dense as possible is to cook it lightly or not at all. Raw broccoli and your favorite dipping sauce anyone? If you can only stomach eating broccoli if you cook it soft, consider using the water that you cooked it in, in a dish as a substitute for the liquid, all of the good stuff is still in the water!

Yogurt

Yogurt can also be very beneficial when it comes to giving your immune system a boost, and it’s delicious and versatile. Plain or Greek yogurt can be used in dishes as a substitute for sour cream. Make sure that the yogurt you choose says that it contains live active cultures to ensure that you are getting the most from it. Look for yogurts without a lot of added sugar. You can always use fresh fruit or honey as a natural and healthy sweetener for it.

Garlic Boosts The Immune System

Garlic

Garlic is known to be antiviral, antifungal, and antibacterial and that makes it a great choice if you want to boost your immune system. You can add garlic to just about any dish and gain the benefits of it. Raw garlic or cooked will still give you the benefits that you need. If you absolutely can’t stomach the taste of garlic you can get odorless garlic capsules that give you the same health benefits of eating it.

Spinach

Spinach is deliciously healthy and can easily be added to many dishes your family already enjoys. Spinach contains vitamin C, vitamin A beta carotene, and numerous antioxidants. Beta Carotene is important when it comes to boosting your immune system because it increases the body’s natural ability to fight infection. Spinach should not be overcooked, but light cooking helps to release vitamin A and other nutrients.

Ginger

Ginger has been used for centuries to help combat viral illnesses such as the cold and flu. Ginger has a lot of vitamins including zinc, iron, magnesium, and calcium and in addition to giving your immune system a boost, it also helps to improve your gut health. You can read more about the importance of digestive health here. Add some ginger to your favorite Asian dishes, or make some simple ginger tea by slicing off a few pieces and adding them to hot water.
