Roasted Veggie and Hummus Tortilla Pizza
Sometimes you just need an easy recipe that satisfies a craving. Pizza is one of those cravings that is rarely satisfied by anything other than…pizza. So, I decided to create us an easy pizza recipe that is not only delicious, but vegan. And not only is it vegan, it’s also Weight Watchers approved. All you need is your favorite vegetables, hummus, a flour tortilla and about 7 minutes. That’s faster than you can get a pizza delivered! Or even warmed up if you grab a frozen one from the freezer.
I used a Mission Flour Fajita size tortilla which is 3 Weight Watchers Smart Points.
The 2 tablespoons of Sabra Roasted Red Pepper Hummus is 2 Weight Watchers Points.
Vegetables are ZERO Weight Watchers Points, so feel free to toss on as many as you would like on your roasted veggie and hummus tortilla pizza.
I used roasted red pepper hummus because that is what I had in my refrigerator, but you can feel free to utilize your favorite variety. I bet garlic hummus or a spicy hummus would be great on this veggie pizza too. For the toppings on this easy vegetable pizza I used zucchini, squash and red and orange bell pepper. All three ingredients are very versatile so the leftovers are easy used in another dish, like my Zucchini and Squash Salad with Homemade Honey Mustard Vinaigrette.
I used a tortilla as the “crust” for this pizza because they are inexpensive, lower in fat content, and they crisp up beautifully in the oven in just a few minutes. If you prefer to make your own crust, you can make the one I used in my Healthy Greek Pizza recipe and it’s 6 Weight Watchers points, but it a bit more like traditional pizza crust.

Easy Roasted Veggie and Hummus Tortilla Pizza
- 1 flour tortilla I used the fajiata size
- Thin Slices of Zucchini
- Thin Slices of Squash
- Diced bell pepper I used red and orange because that's what I had, feel free to substitute green or yellow.
- 2 tbsp your favorite hummus I used roasted red pepper
- 1 tsp extra virgin olive oil
- Preheat oven to 400°
- Lightly brush extra virgin olive oil on tortilla(s).
- Place tortilla(s) on a baking sheet and bake for 3 - 5 minutes until crispy.
- Remove from oven and let cool for a minute, just so they aren't too hot to touch when you spread on your hummus.
- Spread hummus on tortilla.
- Top your tortilla crisp with your fresh veggies.
- Bake for 3-4 additional mins until vegetables are slightly tender.
