With my daughter being a senior this year and my oldest at college, there are some days my daughter and I just want a super simple…and quick meal. And we have taken to flatbreads recently! We have been making my Greek pizzas, tossing sugar free BBQ sauce on a naan and topping with grilled chicken, we also make a healthy spin on a buffalo chicken flatbread! While we are both really into increasing our protein, I also like to increase our veggie intake. And that’s where this Veggie Naan Pizza comes in. In fact, it’s actually served up cold, so it’s ready in just minutes! No need to warm up the oven 😉

This Cold Veggie Naan Pizza is a quick and refreshing no-bake recipe that’s perfect for snacks, lunches, or appetizers. With a creamy chive & onion spread, fresh chopped veggies, and a sprinkle of cheese on soft naan bread, it’s a delicious way to enjoy wholesome ingredients in every bite!

Ingredients

  • 4 Mini Naan Bread I used Stonefire Original Mini Naan
  • Chive & Onion cream cheese spread about 4 oz.
  • ¼ cup broccoli chopped
  • ¼ cup cauliflower chopped
  • ¼ cup mini sweet red peppers chopped
  • ¼ cup shredded carrots
  • ¼ cup shredded cheddar cheese

Instructions

  • Lay the naan breads out on a clean surface.
  • Spread with some of the Chive & Onion Cream Cheese to your liking.
  • Add on the chopped veggies.
  • Sprinkle with a little cheddar cheese.
  • Enjoy right away or refrigerate until ready to serve.

Notes

Zip-lock or air tight container in the refrigerator.
For best taste & texture enjoy within 3 days.
