If there’s one thing I’m looking forward to on our upcoming trip to France, it’s the food…well, and the wine. From buttery croissants in Paris to sipping bold red wines in Bordeaux and savoring fresh, sun-soaked dishes in Aix-en-Provence, every region has its own incredible flavors.
That love for French cuisine inspired me to create this One Pot Creamy Chicken and Mushroom Fricassée, a classic French comfort dish made simple for busy home cooks. Traditionally, fricassée is made with a whole chicken, but I opted for boneless chicken breasts for a lighter, faster version that still delivers all that rich, creamy flavor.
It’s cozy, elegant, and wonderfully creamy thanks to a luscious blend of Florida Milk, Greek yogurt, and sour cream, which give the sauce a silky texture without feeling heavy. And the best part? It all comes together in just one pot. Less cleaning you say? I say, YES PLEASE!

Chicken Fricassee (or fricassée de poulet) is a beloved French comfort dish that’s part stew, part creamy sauté. Traditionally, the chicken is browned first, then simmered gently in a luscious sauce made with white wine, mushrooms, onions, garlic, and fresh herbs. The result is cozy, flavorful, and elegant, the kind of meal you might enjoy at a little countryside café in France. While the name sounds fancy, this classic French recipe is surprisingly simple to make and perfect for a comforting weeknight dinner.

One Pot Creamy Chicken and Mushroom Fricassee
Ingredients
- 2-2 1/2 lbs boneless chicken breast cut into large chunks you can use thighs if preferred
- 2 tablespoons butter divided
- 1 large sweet onion finely chopped
- 12 oz baby bella and gourmet mushrooms
- 3 garlic cloves finely chopped
- 2 bay leaves
- 5 sprigs of thyme
- 1 cup dry white wine
- 2 cups chicken stock or low-sodium broth
- 1/3 cup sour cream
- 1/3 cup plain Greek yogurt
- 1/2 cup whole milk
- 1/2 cup celery leaves more for garnish
- Salt and freshly ground pepper
Instructions
- Add one tablespoon butter to a large pot or dutch, once melted add in chicken pieces. Cook thoroughly.
- Once cooked, transfer to a plate. Drain any liquid from the pot.
- Add the other tablespoon of butter. Add the onion and cook over moderate heat, stirring, until softened, about 3 minutes.
- Add the mushrooms, stirring occasionally, until softened and lightly browned, about 7 minutes.
- Add the garlic, bay leaves and thyme and cook until fragrant, about 1 minute.
- Pour in the wine and cook until at least half-evaporated, about 10 minutes.
- Add the chicken broth and simmer until reduced by half, about 15 minutes.
- Remove the pot from the heat and stir in the sour cream, Greek yogurt and milk. Stir well.
- Add the chicken to the sauce and simmer until heated through.
- Season with salt and pepper.
- Stir in the celery leaves.
- Remove the bay leaves and thyme sprigs.
- Serve and enjoy!

How to Store & Reheat Chicken Fricassee
If you have leftovers, store them in an airtight container in the refrigerator for up to 3 days. To reheat, warm gently on the stovetop over low heat, adding a splash of milk or chicken broth to loosen the sauce and keep it creamy. I actually left my leftovers right in the dutch oven I cooked it in and warmed it up the next day for leftovers in the oven (covered) at 325 degrees.
For longer storage, you can freeze Chicken Fricassée for up to 2 months. Thaw it overnight in the refrigerator before reheating. The sauce may separate slightly after freezing, but it comes back together beautifully with a gentle stir as it warms.
