Are you looking for a fun way to entertain your kids inside? Maybe it’s too hot, too cold, or just too rainy to get outside today, but you still need something to keep your kids engaged and entertained. Painting is a fun and creative way to let kids express themselves. But the cost can add up if you are talking about providing different kinds of paint for several children.

Not to worry though because you can make your very own finger paints right at home from inexpensive ingredients that you already have in your pantry. Not only are these paints homemade and inexpensive, but they are also edible as well. Not that your kids want to sit around eating finger paint, but particularly if you have younger children they can be tempted to taste just about everything.

If you are afraid that painting may be a bit messy, you can always get your kids some art aprons on Amazon. If you don’t want to wait for an apron to come in the mail an old button down shirt, or a little bit too large t-shirt works great at protecting clothing from messy art projects and cooking experiments.

Ingredients

  • 2 cups flour
  • ½ cup sugar
  • 2 cups warm/hot water
  • 2 tsp salt
  • Food Coloring
  • Paper
  • something to cover the table
  • one container for each finger paint color you are creating

Instructions

  • Mix flour, sugar, salt with cold water
  • Once mixed well, add warm water
  • Divide mixture into small bowls (or use an empty egg carton or plastic cups!)
  • Add food coloring (just a drop or two will do!)
  • Stir
  • Have fun!

After you get your homemade, edible finger paints mixed up give your kids some paper or poster board, some paint brushes if you prefer, and let their little imaginations go wild with what they can create.

What a great, and inexpensive way to spend an afternoon indoors with your kids. Make sure to snap some pictures of the fun so that you can always remember these times spent together as a family.

Breakfast Strata is one of my favorite breakfast options – it is easy to make, it’s pretty, and you can make it ahead of time 🙂

My kids can be picky when it comes to vegetables, so I only put in some tri-colors peppers.  I like the flavor they add, and the color is always pretty 🙂

Make ahead Breakfast Strata

 

To make it, it is really just a few steps.  You will brown and drain the sausage, then mix all the ingredients together in a large mixing bowl.

Once everything is mixed, just pour it all into your baking dish and cover it overnight.

Equipment

  • Oven

Ingredients

  • 1 package/roll breakfast sausage
  • 6 eggs
  • 3/4 loaf of french bread cubed - or about 10 slices of loaf bread cubed
  • 2 skim cups of milk
  • cups of shredded cheddar cheese
  • 2 tbsp Flour
  • 1 tsp Emeril's Original Seasonings - or your favorite all-purpose seasoning
  • 1 tbsp dry mustard
  • 1 tsp salt
  • Handful of diced tri-color bell peppers - I like them for color 🙂

Instructions

  • In large skillet - brown sausage and drain
  • In large bowl - beat eggs and add remaining ingredients - mix well
  • Spoon into greased 8 x 8 inch baking pan
  • Cover and refrigerate for 8 hrs/overnight
  • Bake at 350 degrees for 60 minutes covered and then for 10-15 uncovered to just brown the top
  • Knife inserted in the center will come out clean when done
  • Enjoy!

Notes

You can easily add any vegetables that you think your family would enjoy - for example: broccoli, asparagus, mushrooms...the possibilities are endless!

Taco Bake – Easy Family Meal

Taco Bake is a meal a go-to meal in my house when I need something good and fast.  Plus, it’s so easy to make!  You just need 4 ingredients – you favorite salsa, cheese, crescent rolls, and ground turkey or beef.  I actually think it is one of the 1st meals I ever made my husband 🙂

Once the ground beef is cooked, add in the jar of salsa and let it simmer for a few minutes.

While it’s simmering, you will “mold” the crescent rolls to your baking dish.  It doesn’t have to look pretty 😉

Then you just pour the meat mixture into the baking dish lined with crescent rolls, top with cheese and bake it!

  • 1 can of crescent rolls
  • 1 cup of cheddar cheese
  • 1.5 lbs of lean ground beef
  • 1 jar of salsa
Instructions
  1. Cook the ground beef thoroughly
  2. Add in the salsa and bring to a simmer
  3. While the mixture is simmering, “mold” the crescent rolls to your baking dish
  4. Pour the mixture into the baking dish lined with the crescent rolls
  5. Top with shredded cheese
  6. Bake at 350 degrees for 15-20 mins or until the crescent roll is golden brown
  7. Enjoy!

How Jazzercise Made Me A Better Runner

I am one of those people that needs to have a variety of ways to do things.  So, while I love to run, I need to train for my runs by doing more than just running.  One of the ways that I train to be a better runner is by doing different forms of cardio and following a few nutritional tips for women. While runners pay attention to what they eat since their nutritional intake provides the needed fuel that allows them to run, there are also other things we need to pay attention to. While this is true of runners across the board, female runners, in particular, must be mindful of certain nutritional needs due to their specific body chemistry. Being aware of the following points of concern can help women make sure that strength, endurance and overall health will always be a part of their exercise routine.

Eat Protein

Though carbs provide a well-known boost to runners, protein is equally important in maintaining a healthy running and exercise routine. Protein repairs muscles after your workout, protecting the body against injury and strengthening it for future workouts. While some people may erroneously associate protein with body-building, it is absolutely essential to a woman’s running routine as well. Protein-rich foods include beans, fish, soy and dairy products, and nuts.

Make Sure To Have Dietary Fats

Though many women view fat as an enemy, it is essential to maintain a healthy diet for an active lifestyle. Depriving oneself of healthy fats can adversely affect skin and hair, and can also leave runners constantly hungry.

Furthermore, a recent study in the Journal of the International Society of Sports Nutrition demonstrated that female runners with a lower intake of dietary fat were more prone to injury. To maintain a healthy fat intake, women should include monounsaturated fats and omega-3 fatty acids in their diet. These healthy fats can be found in foods like fish, nuts, olive oil, and avocados.

Don’t Skimp On Iron

All athletes face iron depletion through sweating, and women, in particular, are at risk due to additional loss through menstruation. As a result, women are more prone to anemia and exhaustion. To maintain a healthy running routine, aim for 15 milligrams of iron each day.

Though lean cuts of red meat are an excellent source of iron, women can also attain their daily dose through mineral supplements and multivitamins. Iron-rich plant sources like beans, dried fruit, and kale are best eaten with citrus fruits, as vitamin C aids its absorption.

Get Calcium from Dairy and Non-Dairy Sources

Women, in particular, need healthy doses of calcium in their diet, as insufficient amounts weaken bones and lead to osteoporosis. Runners who do not consume enough calcium are also more prone to muscle cramping.

Most women require a total of 1,000 milligrams of calcium a day, or 1,500 milligrams if over 50 years old. Since the body can only absorb about 500 milligrams at a time, servings should be consumed throughout the day.

Dairy products contain the most concentrated amounts of calcium, but women adverse to dairy can find it elsewhere. Calcium-rich plant sources include kale, broccoli, legumes, calcium-fortified soy products, greens, and almonds.

Healthy Eating

Though runners sometimes vary between eating too much on the assumption that they’ll burn off a bunch calories, or eating too little in an attempt to lose weight, a healthy medium is best for maintaining health and avoiding injury. For women, this is particularly important. Being mindful of their bodies’ unique needs can help female runners sustain a healthy running routine for life.

How different cardio makes you a better runner

Now, you may think that’s a weird combination, or you may think that you can only do one type of exercise.  And I am here to tell you that it’s a fabulous combination and you don’t have to do just one type of exercise.  There are lots of different forms of cardio, and I also believe that it’s important to add weights to your workouts.

It’s been almost 10 years now when my sister-in-law came down for a visit and she told me that we were going to do a half marathon in St. Pete.  I had never done one before, but I thought…how hard could it be?  I was in good shape and I regularly went to Jazzercise, so I didn’t think much about it.  A few weeks before the run I went on a few 6 mile walks and one 8 mile walk/jog.

My training for my 1st half marathon was regularly attending Jazzercise and a few long walks/jogs.  Here are some additional Half Marathon Training Tips.

How did my 1st Half Marathon go?

It was a life changing experience.  I loved it.  I finished.  And not only did I finish, but I finished with a decent time and it sparked my desire to run more.  I was insanely sore the next 2 days, but it was a sore I didn’t mind.  It was the sore than you get from accomplishing something amazing.

Jazzercise Makes Me A Better Runner

Was it my last Half Marathon?

Nope, I was a St. Jude Hero in November 2014 and I have done several since then.

Do I still go to Jazzercise?

YES.  Running is excellent cardio.  But, I don’t do weights at home, I don’t lay down and do abs.  Jazzercise is a full body workout.  Plus, my heart rate gets higher at Jazzercise than when I run!

Why do I think Jazzercise makes me a better runner?

Running takes endurance, dedication, and a desire to be a better, healthier you.  I get those things from going to Jazzercise.

I am not telling you that you have to run or go to Jazzercise.  I am just suggesting that maybe you try a few new things when it comes to your workout routine.  You just may enjoy it.  You just may hit that goal you never thought possible.

Baked Crab Rangoon Recipe

Baked Crab Rangoon Recipe

We got Crab Rangoon from Chinese take-out a few weeks ago and I was amazed by how little actual crab there was in them!  I mean, I felt like I was basically eating deep-fried cream cheese.  So, I decided I would try my hand at making some that actually had crab in them…and I was going to BAKE them 🙂  You all know that I love sharing recipes that have a healthy twist to them.  I had some Crab Meat in my refrigerator from Anderson Seafoods so it was the perfect time to get cooking.

I actually didn’t use a ton of ingredients, just the crab, garlic, onions, peppers, and sauces.  And wonton wrappers of course 😉

Once you have all your ingredients ready you just mix them together.  I wanted mine to have more actual crab than cream cheese, so you will see that mine are full of that delicious seafood.

Once you have everything mixed together, line a cookie sheet with wonton wrappers and begin filling each one.  Put the mixture in the center of the wrapper.

I kind of “swaddled” mine, once two sides are folded in, wrap up the other two sides and pinch the ends together.  You may need a splash of water next to you to wet your fingers to insure that ends stay pinched together.  This sounds more difficult that it really is, once you get the hang of it, you will be done in no time 🙂

Ingredients
  • 1 clove garlic, minced
  • 4 oz reduced fat cream cheese
  • 4 oz crabmeat, drained and flaked
  • 1/4 cup diced peppers – I used tricolor
  • 1/4 cup diced green onions
  • 1 teaspoons Worcestershire sauce
  • 1/2 teaspoon light soy sauce
  • Old Bay Seasoning to taste
  • Wonton wrappers – found in the produce section at my store
Instructions
  1. Mix all the ingredients together, besides the wonton wrappers
  2. Line cookie sheet with wonton wrappers
  3. Scoop 1-2 tablespoons into the center each wrapper – I used my cookie scooper 🙂
  4. If you like Old Bay, gently sprinkle it over the mixture at this point. – I did one batch with it, and one without it, and we leaned towards the batch that had it
  5. Take two sides of the wrapper and gently fold it over the crab mixture and gently press it in so that it “sticks” to the crab without coming open – I refer to the folding as swaddling
  6. Then take the two other sides and bring them to the center
  7. Pinch the ends together – uses a small amount of water on your fingers to firmly close the ends together if needed *refer to pictures in post as needed
  8. Bake at 350 degrees for 10-15 mins or until wrappers brown
  9. Serve with soy sauce or Orange Marmalade – we used the Orange Marmalade
  10. Enjoy!

 

 

Recipe for Baked Crab Rangoon Wontons

The only thing I think I would change would be to add in a bit of “heat”, my husband and I tend to like things a bit spicy, so I think next time I will add in a dash of hot sauce to my mixture.  But, overall we were very happy with this Crab Rangoon Recipe, it had great texture and flavor…and they weren’t fried 😉

I think Buffalo Chicken Dip is one of the ultimate game day or weekend snacks. I made it over the holiday break a couple times for gatherings and it’s always one of the most popular appetizers out 🙂

Did you realize how easy it was to make? You only need a few ingredients and shredded chicken!

To make shredded chicken I always just toss a few breasts (usually frozen) in the crockpot and let them cook all day. In 3-4 hours they are moist and ready to be shredded! I love using shredded chicken in numerous recipes and I have found that getting the chicken ready in the crockpot is the easiest way.

I used to buy Buffalo Chicken Dip at the store pre-made all the time, until I realized it tastes a LOT better when you make it yourself and prep time is pretty minimal.

Ingredients
  • 1-1/2 lbs of shredded chicken – I love putting chicken in the crockpot in the am and then in a few hours it is ready to shred! You can place the chicken in the crockpot frozen.
  • 1 8oz package of Reduced Fat Cream Cheese – Softened
  • ½ cup Frank’s RedHot Hot Sauce
  • ½ cup Ranch Dressing
  • ½ cup shredded Colby Jack Cheese – you can also use cheddar
Instructions
  1. Combine all ingredients into a large mixing bowl
  2. Place into a 8×8 baking dish or casserole dish
  3. Bake at 350 for 15-20 minutes or until heated throughout
  4. Enjoy!
Notes
You can make this recipe as a *Freezer Meal*. Take all the ingredients (leave the chicken breast raw and whole) and place it into your Gallon Size Freezer Bag. When you are ready to cook it, place the frozen ingredients into your slow cooker for approx. 6 hours. When the chicken is cooked throughout, remove it from the slow cooker, shred it, and place it back in the slow cooker. You can serve it immediately or place it into a baking dish and bake for 15 minutes at 350 degrees until hot and bubbling around the edges.

Healthy Crab Bisque Recipe – Without Heavy Cream!

I had some Crab Meat in my refrigerator from Anderson Seafoods that I have been dying to cook with, and since it’s a bit cool, I wanted to make a soup.  My first thoughts went directly to a Crab Bisque.  My next thought was…anything “bisque” is loaded with calories and heavy cream.  You all know I try really hard to keep my meals on the lower-fat option.  So, I thought back to the Weight Watchers Potato Soup recipe I shared awhile back and decided that I would substitute low-fat cream cheese and fat-free milk for the heavy cream.

It wasn’t really that hard to make, but the cream cheese does take a bit longer to become completely liquified so you will see small white dots while the soup is simmering.

Now, this Crab Bisque recipe is not as creamy as the ones you will have in restaurants, but it is also not 500 calories PER SERVING.  I thought it came out great, and have had it for leftovers already too 🙂  The great part about the leftovers, so that you don’t see that gross butter/fat layer on the top of your soup – you know what I am talking about if you have ever had clam chowder or a bisque from a restaurant the next day….

Crab Bisque Recipe – Without Heavy Cream!

Ingredients
  • 1 Tbs. unsalted butter
  • 2 green onions, diced
  • 48 oz chicken stock
  • 3⁄4 to 1 lb. fresh or thawed frozen lump crabmeat – approx 3 to 4 cups
  • 1⁄2 cup dry sherry
  • 8 oz (one package) of Reduced Fat Cream Cheese
  • 1 cup Fat Free Milk
  • 1/2 cup Half and Half
  • Salt and pepper to taste
Instructions
  1. Melt the butter in a large soup pot
  2. Add the green onions and sauté 2 to 3 minutes.
  3. Add the cream cheese, let it soften in pan with onions – 1-2 mins
  4. Add in stock, milk, and half and half
  5. Season with salt and pepper if desired
  6. Bring to a simmer
  7. Reduce the heat to low
  8. Stir in the crabmeat
  9. Cook until heated through, about 3-5 minutes
  10. Stir in the sherry
  11. Heat for 2 to 3 minutes
  12. Salt and pepper to taste
  13. Top with croutons if desired
  14. Enjoy!

Easy Shepherd’s Pie Recipe – Ready In 30 Minutes!

I have an easy and hearty Shepherd’s Pie recipe for you guys today. I have never made Shepherd’s Pie before, but since my kids keep asking me for homemade mashed potatoes, I wanted to make something that included them. I have had Shepherd’s Pie in restaurants before, but if you know me, you know I wanted to make an easy version 😉

This recipe only has 5 ingredients – and you may have them in your pantry right now! When I decided to make it last week, I just needed to go out and buy the Brown Gravy.

The fastest way to get your meal into the oven is to start your mashed potatoes and lean ground beef at the same time. That way when you are ready to add the layer of mashed potatoes, you are ready.

Simple Shepherd's Pie
My kids aren’t huge vegetable eaters, so I thought a half a bag of the frozen vegetable mix would be good, and it was perfect!

This is definitely a hearty meal and it is a definite crowd pleaser. I got a lot of compliments on it (even from the neighbors that we had over for dinner!), of course I didn’t share that it only took me 30 minutes to make 🙂

  • Stove

Ingredients

  • 12 oz Brown Gravy I used a jar of Heinz
  • ½ bag frozen carrots and peas
  • 1/2 diced red onion
  • 1-1 1/2 lbs of lean ground beef
  • Mashed potatoes – I used 5 large russet potatoes to make mine

Instructions

  • Prepare your mashed potatoes
  • While the potatoes are boiling, brown the ground beef
  • Once the beef is cooked thoroughly add in the frozen vegetables, onion and jar of gravy
  • Simmer until heated throughout
  • Pour beef mixture into a baking/casserole dish
  • Top with mashed potatoes
  • Bake at 350 for approx. 10 min until top of potatoes is slightly brown and dish is heated throughout
  • Enjoy!

This White Chocolate Peppermint Pie is one of our absolute favorite recipes. We have made it twice already while the kids have been on Winter Break 🙂 It is easy to make and the whole family loves it! We served it on Christmas and we made it again last night when we have neighbors over for dinner. AND the kids are already requesting that we make it again!

White Chocolate Peppermint Pie Recipe

The recipe calls for Evaporated Milk and Cool Whip, I use the Fat Free Evaporated Milk and the Lite Cool Whip and the flavor is still fabulous.

Easy White Chocolate Peppermint Pie

You can use peppermint candies or candy canes as the sprinkles. We had a bunch of candy canes on our Christmas tree, so I just took two of them. Make sure you have the candies in a tightly sealed ziploc bag when you smash them. You definitely don’t want little sticky pieces of peppermint candy all over your counter 😉

Ingredients

  • ¼ oz unflavored gelatin one envelope
  • 2 tbsp hot/boiling water
  • 12 oz Fat Free Evaporated Milk one can
  • 6 oz White Chocolate Chips
  • ½ tsp peppermint extract
  • 8 oz lite whipped topping such as cool whip
  • ½ cup hard peppermint candies or candy canes
  • 1 chocolate graham pie crust

Instructions

  • Sprinkle 1/4 cup candies over bottom of pie crust and set aside
  • Pour gelatin packet in small pot on the stove
  • Stir in hot water and let soften for 1 minute
  • Heat evaporated milk and softened gelatin in the pot over medium heat, stirring constantly with whisk until mixture is dissolved and hot
  • Remove from heat
  • Stir in the white chocolate chips and peppermint extract until completely melted and smooth
  • Pour the mixture into a medium bowl
  • Refrigerate uncovered for 30 minutes, stirring occasionally
  • Once mixture is cool, whisk in 2 cups whipped topping
  • Pour filling into pie crust
  • Refrigerate for at least 2 hours or until set
  • Spread remaining whipped topping over the pie
  • Sprinkle with remaining peppermint candies
  • Serve immediately
  • Enjoy!
