Baked Salmon with Maple Glaze

This Maple Glazed Salmon has been a favorite recipe of ours for years now.  I cook with salmon about 2 – 3 times a month, and this recipe always makes the rotation.  Salmon is not only great for you, but it’s easy to cook with little effort. Start with fresh salmon and a glass of good red wine, and make this lovely dish for friends and family, or even for that special someone.

OK, that special date, or Valentine’s Day. Candles. Check. White tablecloth. Check. Bottle of wine. Check.

Uh-oh. What about a date night in and romantic dinner? This Maple Glazed Salmon is fairly easy to make!

Like with all seafood, make sure you are getting good quality salmon, get it fresh if you can and remember that it should never smell like fish. If you can’t go out and catch it yourself check out Anderson Seafoods. 😉 They carry restaurant quality seafood and it’s delivered directly to your door.

Maple Glazed Salmon

This baked salmon recipe is very simple to make, you only need a few ingredients and you may have them right now!

Maple Glazed Salmon Recipe

You need REAL Maple Syrup, some soy sauce, garlic, and some pepper.  Easy enough, huh? I do indeed recommend using the pure maple syrup.

Once you have the glaze made, it’s as easy as pouring it over your salmon, letting it marinade for about 30 minutes and baking it.  This dish looks fancy, but the prep time is only about 5 minutes.

Ingredients

  • 2 fillets Salmon - or more depending on how many people you are serving - I used Anderson Seafood Salmon
  • ¼ cup real Maple Syrup
  • 2 tbsp soy sauce - I like the lower sodium option
  • 1 clove garlic - minced
  • ¼ tsp ground pepper

Instructions

  • Mix all ingredients except the salmon in a small bowl
  • Place salmon in a baking dish and pour the maple syrup mixture over it
  • Cover and refrigerate for at least 30 minutes
  • Preheat oven to 400°
  • Bake for 10 minutes covered and an additional 10 minutes uncovered or until cooked throughout
  • Drizzle the glaze over the salmon before serving
  • Enjoy!

You may all know that I am on the WW (Weight Watchers) Blue Plan, so I thought I would share the points just in case you wanted to see what they were.

Maple Glazed Salmon WW Blue Plan Points:

  • Salmon – ZERO Points
  • Maple Syrup – 1/4 cup is 12 Points.  If you use the sugar free it will be ONE Point.  Personally, I use most of my points at dinner and would rather use the points here so that the glaze cooks up right.  But you can save on the points if you would like!
  • Soy Sauce – ZERO Points
  • Seasonings – ZERO Points
  • Total for 2 servings = 12 Points on WW Blue Plan if you use the regular maple syrup (6 WW Points per serving).  Only 1 point if you use sugar free (1/2 WW Point per serving).

Are you guys ready for Thanksgiving?  It will be here before you know it!  Good food, good friends, time with family, Thanksgiving is all about celebrating the things we are thankful for.  That’s why I wanted to share this simple, yet meaningful Thanksgiving craft.  You will work together with the entire family to make a Giving Thanks Turkey!

What You Need:

  • Construction Paper – Brown for the body of the turkey and various colors for the feathers – You can even use paint chips
  • Googly Eyes – Optional
  • Glue

What You Do:

  • Cut a brown construction paper circle or oval for the turkey’s body
  • For the head and neck, cut a much smaller circle and a rectangle from a the brown or you can use different shade of brown paper
  • Cut two feet and legs from orange paper
  • Glue the head and neck onto the body
  • Glue a tiny orange triangle for the beak and a little red for the wattle
  • Draw eyes in black or glue on googly eyes if you have them
  • Glue the legs to the body
  • Cut out feathers in all sorts of colors
  • Have everyone write something they are thankful for on one of the turkey feathers
  • Glue the “feathers” onto the turkey

When you are done you will have your Thankful Turkey. This is a fun one to save and take out every year to remind each other of the things and people we are thankful for 🙂

The holidays are coming and I know we are all looking for delicious meals to make for our families, but I wanted to bring up that there are other things to serve than turkey and ham!  Salmon is one of our favorite fish – it is light, yet filling, and when cooked right and you have a high quality product it is full of fabulous flavors.  Speaking of high quality seafood…the freshest fish I have ever found is from Anderson Seafoods (Well, besides from catching it ourselves 😉  ).  I know you guys have heard me talk about Anderson Seafoods before and I am very proud to be able to cook with their products on a regular basis.  My husband just said last week that we would never be able to buy seafood from anywhere else again, the taste is really unbeatable.  In fact, it is fresher than some seafood we have bought at restaurants!

Today I have a Honey Lime Salmon Recipe for you guys.  This turned out absolutely amazing!

I was so happy with it!  Once you make the glaze, you just make sure the salmon is covered with the sauce and you are just about done!  Make sure to brush the glaze on the sides of the salmon as well.  You want to make sure to give the fish as much of the flavor as possible.

I cooked it the easy way…wrapped in aluminum foil.  Easy and delicious…that’s my favorite kind of recipe 😉

Ingredients

  • 2 salmon fillets I used Anderson Seafoods Fresh Atlantic Salmon
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons honey
  • 1 tablespoon honey dijon mustard
  • 1/2 lime – use the juice

Instructions

  • Preheat oven to 350 degrees
  • Whisk 2 the olive oil, honey, mustard and lime juice in a small bowl
  • Line a baking sheet with foil and spray lightly with cooking oil (Pam or Grapeseed Oil) – make sure your sheet is big enough to fold over the salmon on all edges
  • Place salmon (skin side down if yours has the skin on it) onto the foil on baking sheet
  • Brush the tops and sides of the salmon with the honey lime glaze
  • Drizzle the remaining mixture over the salmon
  • Fold the sides of the foil over the salmon, covering completely and sealing it closed
  • Place into oven and bake until cooked throughout, about 20-25 minutes.
  • Enjoy!

I have another great Pumpkin recipe for you guys today!  My mom called me a few days ago and said that I should try making a Pumpkin Grilled Cheese Sandwich.  The idea did indeed sound weird at first, but it is low-cal and I thought it would be worth a try to get creative with 🙂

Easy Pumpkin and Grilled Cheese

I added sweet peppers for a bit of crunch and cayenne pepper for a bit of heat.  Now, I have told several friends about this recipe and they had all said that it sounds a bit “weird,” but I definitely recommend it! I was surprised how well all the flavors blended.

Tasty Grilled Cheese and Pumpkin Sandwich

Once the peppers and onions are sauteed, you simply mix them in with the pumpkin and a wedge of Laughing Cow cheese and you will have your sandwich ready in just a few minutes.

Then you simply spread the pumpkin mixture evenly on your low-fat bread (I used Arnold Thins) and add a slice of low-fat cheese.

Once you add on the slice of cheese, warm the bread on the stove like you normally would a grilled cheese.  I did NOT butter the bread at all, the little bit of oil that was still in the pan worked fine. Make sure you are using a pan that is big enough to fit the 2 slices of bread.  I used the Farberware Dishwasher-safe 10-inch skillet with Teflon® nonstick coating.

Once the bread is “toasted” and the cheese is melted, it’s time to enjoy your sandwich!

  • 1 tsp Olive Oil extra virgin
  • 2 tbsp diced onions
  • 2 tbsp sweet bell peppers
  • 1/4 cup pumpkin puree
  • 1 wedge of Queso Laughing Cow Cheese
  • Dash of cayenne pepper
  • 1 slice reduced fat or fat free cheese I used colby jack
  • 2 slices low-fat bread

Instructions

  • Warm EVOO in a medium pan
  • Saute peppers and onion
  • While veggies are cooking, mix pumpkin and Laughing Cow Cheese in a small bowl
  • Add the peppers and onions to the pumpkin mixture
  • Evenly spread the pumpkin mixture on both sides of the bread
  • Add the bread to the warm pan
  • Add one slice of cheese to one side of the bread
  • Make the sandwich and toast each side of the bread
  • Serve once the bread is warm and the cheese is melted
  • Enjoy!

The holidays are quickly approaching and that means we will all be making delicious meals non-stop!  Not to mention, time always seems to go by faster this time of the year, so I thought you guys would appreciate this Easy Chicken Pot Pie recipe.  No one will know that you didn’t spend hours in the kitchen preparing it 😉

You just need a few simple, store-bought ingredients and fresh chicken and you will be on your way to a fabulous Chicken Pot Pie that everyone is sure to love.  I know my family does!

Easy Chicken Pot Pie

You will want to cook the chicken in a pan that is big enough for the chicken, soup, chicken stock, and vegetables.  I used the Farberware Dishwasher-safe 2-3/4-quart covered saute pan with Teflon® nonstick coating.

Once your chicken is cooked and you have brought the remaining ingredients to a simmer, you are ready to assemble your pie.

Ingredients

  • 2 large chicken breasts - approx 1/2 - 3/4 lb
  • 1 can Chicken Pot Pie soup
  • 1/2 bag frozen mixed vegetables
  • 1/2 cup chicken stock
  • 1 package refrigeratered pie crusts it will have a top and bottom crust

Instructions

  • Pan saute the chicken until it is cooked throughout
  • Dice the chicken into bite size pieces
  • Add the chicken, soup, chicken stock, and vegetables into the pan
  • Bring to a simmer
  • While mixture is warming, place one pie crust on the bottom of a pie baking dish
  • Fill the pie crust with the chicken/soup mixture
  • Unroll the 2nd pie crust and place it on top
  • Use your fingers to firmly press down the edges of the crust
  • Cut 4 "holes" in the top of the pie crust (picture above)
  • Bake at 350 for 45 minutes or until crust is golden brown
  • Enjoy!

Notes

If you have more time, you can put the chicken in a small crockpot and let it cook for a few hours.  Once it's cooked thoroughly you can shred the chicken and use that.

My family loves “home-cooked” breakfasts on the weekend.  The kids totally refuse cereal or anything else that may seem easy, they want something warm and fun!  So, this past weekend I combined some of our favorite breakfast foods and put them all into an easy to eat biscuit cup!  Since the whole family loved my Sloppy Joe Biscuits, I knew breakfast in a biscuit would also be a success.

And it was SO easy to make this super cute breakfast 🙂  You just flatten the biscuits with your hand, push them into the muffin/cupcake pan and fill them up!

Ingredients

  • 1 can refrigerated biscuits I used the small can that had 5 in it - that was perfect for my family of 4
  • 4 eggs
  • ¼ cup shredded Cheddar cheese
  • 3 links turkey sausage

Instructions

  • Flatten each biscuit and firmly press each one into the muffin/cupcake pan as pictured

  • Lightly scramble the eggs - no need to make them really firm since you will be baking them as well
  • Cook turkey sausage as directed on package
  • Cut turkey sausage into bite size pieces and add it to the pan with the eggs
  • Mix well
  • Fill each biscuit with the egg mixture
  • Top with cheese
  • Bake at 350 for 10-12 minutes or until biscuits are golden brown
  • Enjoy!

My husband topped his with maple syrup and the kids and I eat ours plain.  My husband did say that he thought sausage gravy would be really good on these…maybe I’ll try that next time??  🙂

I have a delicious soup recipe for you guys today. If you follow my blog, you probably know by now that I like a bit of a “kick” to most of my dishes…Spicy is fun 🙂 Hence why I thought we would all enjoy this Spicy Butternut Squash Recipe!

I will confess that I have never made any kind of soup before that required me to puree the vegetables,and I was a bit nervous. But it was much easier than I thought! *If you have an immersion blender, use that!!

There isn’t a ton of ingredients in this one, and prep time is about 20 minutes. What took me the longest was peeling the squash 😉  You will notice that I used skim milk and cream cheese instead of the heavy cream that you sometimes see in this soup…I like to keep my recipes as healthy as possible!

If you don’t want to add the dairy, you can add in a can of refried beans or pumpkin. It will help thicken up the soup and keep the calorie count down as well as make it dairy-free. I do this on a regular basis actually…it makes the soup a Weight Watchers friendly recipe – ZERO points!

Make sure you have a nice big pot that will accommodate all that Butternut Squash!  I use a dutch oven most of the time. I do love making soups, there’s this combination of physical warmth, flavors, aromas, and the emotional aspects of food that contribute to the overall comfort associated with soup.

Once you have the onions and garlic cooking, you add in the squash and that hot pepper and you are well on your way to a delicious, LOW-FAT, soup!

This soup freezes perfectly! Once cooled, divide it into freezer-safe containers or bags, leaving a little room for expansion. It’ll keep for up to 3 months. When you’re ready to enjoy, just thaw it in the fridge overnight and reheat on the stove.

Add some texture by sprinkling roasted pumpkin seeds, croutons, or crispy bacon bits on top.

Ingredients

  • 2 lbs Butternut squash
  • 1 finely diced habanaro pepper jalapeno would be fine as well- REMOVE THE SEEDS
  • ½ medium sweet onion chopped
  • 1 tbsp extra virgin olive oil
  • 2 cloves garlic chopped
  • ½ tsp cayenne pepper
  • ½ tsp ground cumin
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups chicken stock
  • ¼ cup skim milk
  • 2 oz low fat cream cheese

Instructions

  • Cut the squash in half and scoop out the seeds
  • Peel the squash
  • Cut into 1 inch cubes
  • Heat oil over medium heat in a large pot
  • Add onion and garlic and saute, stirring often, until they begin to brown
  • Add the cayenne pepper, cumin, salt, and pepper – stir so they are mixed in well
  • Add squash, habanero pepper, and chicken stock
  • Bring to a boil
  • Reduce heat and cover. Let it simmer for 15- 20 minutes, or until the vegetables are tender
  • Remove from the heat and puree the vegetable mixture using a blender or food processor Puree until smooth.
  • While you are pureeing the vegetables, add the cream cheese to the warm pot to soften it
  • Add the pureed mixture back into your pot
  • Add in the milk
  • Stir well
  • Serve warm
  • Enjoy!

Notes

Once mine was mixed and back in the pot, I covered it and kept it on low until we were ready for lunch!

It’s officially November.  I know many of you take this month to reflect on things that you are thankful for.  I am bet that on all the top of all of your lists is FAMILY.  I know I am thankful for mine.

Every night before I go to bed I thank God for the happiness and health of my family….of my kids.

I’m sure you do too.

I wanted to take just a moment to remind you that there are families and children out there that are in need of your support.  The families and children at St. Jude Children’s Research Hospital.

Did you know that it costs $2 million a day for St. Jude to provide the lifesaving care needed for children battling cancer and other life-threatening diseases?

But, thanks to donations from people like us, families never receive a bill from St. Jude for anything — not for treatment, travel, housing or food — because they believe all a family should worry about is helping their child live.

Treatments invented at St. Jude have helped push the overall childhood cancer survival rate from 20% to 80% since it opened more than 50 years ago. And thry’re working to drive the overall survival rate for childhood cancer to 90% by the next decade. They won’t stop until no child dies from cancer.

Chicken Enchilada Casserole

This week for Sunday Supper we are focusing on meals that are full or flavor, but not full of calories.  I made a Chicken Enchilada Casserole, it’s really easy to make and it just has three ingredients!

The holidays are quickly approaching and we all will be eating lots of delicious meals and desserts, so we wanted to point out some amazing recipes that are on the lighter side 🙂

I used shredded chicken in my recipe, I love making shredded chicken in the crockpot – it’s so easy!  I used take two frozen breasts of chicken and toss them in the crockpot in the morning and by the time I am ready to start prepping for dinner they are ready for me to shred!

Chicken Enchilada Casserole

Once the shredded chicken is mixed well with the soup, it’s time to line your baking dish with the crescent rolls.  Since crescent rolls are pre-cut, this isn’t an exact science 😉  Just do your best to line the entire pan!

Ingredients
  • 1 Can of Chicken Enchilada Light Soup
  • 1 can Del Monte Fiesta Corn (you can also use 1/2 bag of Birds Eye Southwest Corn)
  • 2 breasts of chicken shredded – I put my chicken in the crockpot for 6 hours on low
  • 1 package of low-fat crescent rolls
Instructions
  1. Spray a square baking pan with cooking spray
  2. Take the shredded chicken and can of soup and warm it in a pot
  3. Line the baking pan with the crescent rolls
  4. Gently pour the chicken and soup mixture into the pan
  5. Bake for 10-15 mins at 350 or until the crescent rolls start to brown
  6. Top with fat free sour cream and salsa if desired
  7. Enjoy!

Easy to make and Weight Watcher Approved? Yep! This Weight Watcher Potato Soup is an easy and delicious crockpot meal.

Crock Pot Weight Watcher Potato Soup

Tis the season for warm comfort foods and soup 🙂  I know it can be hard to find recipes that are delicious and also low in fat and calories, so I am excited to share my Easy Crockpot Potato Soup with you guys. 

I used mainly canned ingredients in my recipe because my schedule is crazy, but you can definitely use fresh too!

The prep time on this slow cooker potato soup recipe is just 5 minutes…you just add the canned goods into the crockpot and you have dinner started.  Doesn’t get too much easier than that!  As you can see, I also added in some celery and turkey bacon…I like a hearty soup and I had both of those ingredients in my refrigerator.  They were an excellent addition!

As for the WW points, since WW changes their plan guidelines every now and again, I recommend checking your app with your WW potato soup recipe ingredients since points may vary depending on brands used.

Equipment

Ingredients

  • 30 oz diced potatoes canned or fresh- fresh would be approx 4 cups
  • 28 oz non fat chicken broth 2 14 oz cans
  • 10 ¾ oz 98% fat free cream of chicken soup 1 can
  • 15 oz diced carrots canned or fresh – fresh would be approx 2 cups
  • ½ cup diced celery
  • 8 oz lowfat cream cheese
  • 1 cup skim milk
  • 30 oz corn 2 cans or feel free to use fresh! fresh would be approx 4 cups
  • 3 slices turkey bacon 3 oz ham would be fine, you use also use real bacon – it's simply garnish!
  • green onions for garnish

Instructions

  • Add all the ingredients except the milk and cream cheese to the crock pot
  • Cook on low for at least 2 hours
  • Add cream cheese, and cook until cream cheese is mixed into soup well (approx 30 min – 1 hour)
  • Add in milk and cook until heated throughout – at least 15 minutes
  • Garnish with bacon crumbles and green onions if desired
  • Enjoy!

Serving Suggestions

This healthy potato soup recipe is hearty enough for dinner on its own, but sometimes we’ll add a simple green salad or a slice of crusty bread on the side. If you’re watching points, roasted veggies or steamed broccoli make a perfect zero-point addition. My family also loves sprinkling a little extra turkey bacon or green onions on top for that restaurant-style finish.

Make-Ahead & Storage Tips

One of my favorite things about this Weight Watchers crockpot soup is that it reheats beautifully. Leftovers keep in the fridge for about 3 days, making it great for easy lunches. If you want to freeze it, just let the soup cool completely and store it in freezer-safe containers for up to 2 months. When you’re ready to enjoy it again, thaw it overnight in the fridge and reheat slowly on the stove or in your crockpot – it tastes just as delicious as the day you made it!
