Skip on the extra time in the kitchen but not on the flavor of this delicious Shortcut Chicken Pot Pie recipe. This traditional comfort food recipe is prepped in 15 minutes!
Shortcut Chicken Pot Pie
The holidays are quickly approaching and that means we will all be making delicious meals non-stop! Not to mention, time always seems to go by faster this time of the year, so I thought you guys would appreciate this Easy Chicken Pot Pie recipe. No one will know that you didn’t spend hours in the kitchen preparing it 😉
You just need a few simple, store-bought ingredients and fresh chicken and you will be on your way to a fabulous Chicken Pot Pie that everyone is sure to love. I know my family does!
You will want to cook the chicken in a pan that is big enough for the chicken, soup, chicken stock, and vegetables. I used the Farberware Dishwasher-safe 2-3/4-quart covered saute pan with Teflon® nonstick coating.
Once your chicken is cooked and you have brought the remaining ingredients to a simmer, you are ready to assemble your pie.
Make sure to cut the “vent holes” on the top!

Shortcut Chicken Pot Pie
Equipment
- Stove
- Oven
Ingredients
- 2 large chicken breasts - approx 1/2 - 3/4 lb
- 1 can Chicken Pot Pie soup
- 1/2 bag frozen mixed vegetables
- 1/2 cup chicken stock
- 1 package refrigeratered pie crusts it will have a top and bottom crust
Instructions
- Pan saute the chicken until it is cooked throughout
- Dice the chicken into bite size pieces
- Add the chicken, soup, chicken stock, and vegetables into the pan
- Bring to a simmer
- While mixture is warming, place one pie crust on the bottom of a pie baking dish
- Fill the pie crust with the chicken/soup mixture
- Unroll the 2nd pie crust and place it on top
- Use your fingers to firmly press down the edges of the crust
- Cut 4 "holes" in the top of the pie crust (picture above)
- Bake at 350 for 45 minutes or until crust is golden brown
- Enjoy!
