White Chocolate Peppermint Pie

Two of your favorite things into a simply delicious pie. This White Chocolate Peppermint Pie is great for the holidays and beyond!

Ingredients

  • ¼ oz unflavored gelatin one envelope
  • 2 tbsp hot/boiling water
  • 12 oz Fat Free Evaporated Milk one can
  • 6 oz White Chocolate Chips
  • ½ tsp peppermint extract
  • 8 oz lite whipped topping such as cool whip
  • ½ cup hard peppermint candies or candy canes
  • 1 chocolate graham pie crust

Instructions

  • Sprinkle 1/4 cup candies over bottom of pie crust and set aside
  • Pour gelatin packet in small pot on the stove
  • Stir in hot water and let soften for 1 minute
  • Heat evaporated milk and softened gelatin in the pot over medium heat, stirring constantly with whisk until mixture is dissolved and hot
  • Remove from heat
  • Stir in the white chocolate chips and peppermint extract until completely melted and smooth
  • Pour the mixture into a medium bowl
  • Refrigerate uncovered for 30 minutes, stirring occasionally
  • Once mixture is cool, whisk in 2 cups whipped topping
  • Pour filling into pie crust
  • Refrigerate for at least 2 hours or until set
  • Spread remaining whipped topping over the pie
  • Sprinkle with remaining peppermint candies
  • Serve immediately
  • Enjoy!
