Fruit and Carrot Smoothie

Are you wondering about what fun things you can put in your smoothie and have it taste good?  Well, here is another recipe that I came up with and really enjoyed, so I thought you guys would like it too.  In fact, my kids and hubby even liked it!  Which is saying a LOT since my son would tell you that he is scared of carrots 😉  He didn’t even know they were in there!

I added mango, strawberries, banana, and carrots into my Nutri Ninja Auto iQ and I was on my way to delicious-ness.

I added in 5 ice cubes and a few ounces of Coconut Water.  I liked the added benefits that Coconut water gives you, but you can obviously use regular water as well.

Here are some of the health benefits of the ingredients in this smoothie:

Carrots – The orange powerfood will give you vitamin A and is also linked to preventing cancer, giving you healthier looking skin and aids in digestion.

Mango – The antioxidant in mango has been found to help prevent cancer, mangoes are also thought to help lower cholesterol, improve eye health, and improve digestion.

Strawberries – These red beauties are loaded with vitamins, fiber, and potassium.  As an added benefit – they are fat-free 🙂

Bananas – Besides tasting great, they are loaded with potassium which helps muscles recover and relax, and they have also been known to help you sleep better.

Ingredients
  • 5 baby carrots – diced
  • 1/2 mango – diced
  • 1/2 banana – sliced
  • 4 – 5 strawberries – I cut off the green part and slice in half
  • 4 – 5 ice cubes

  1. Place the ingredients into your blender as listed
  2. Turn on
  3. Wait til it’s finished
  4. Enjoy!

Juicing.  Taking fruits and vegetables and making them into something you want to drink.  WANT to drink.  That was the part that scared me at first, I will be honest.  I will eat carrots, apples, cucumbers, spinach, etc….but blending them all together and making them taste good?  All at the same time?  It just sounded so foreign to me.  So, when Ninja Kitchen reached out to me to try the new Nutri Ninja, I took it as a sign…a sign that this Spring I was going to Spring Clean my health and diet!  I was going to start making fun juices and smoothies.

For my 1st juice I started with veggies that are sweeter and added in some tart Granny Smith apples.

I layered in the vegetables first, then my apples, then ice and coconut water.

The Auto iQ Ultra Blend took all the guess work out of the blending for me, which was great since this is my 1st experience making any juice.  I just hit a button and waited for it to stop 🙂  When it was done, I enjoyed it. Yes, I actually enjoyed the Cucumber Juice!

Cucumber Mango Smoothie

It has happened.  I have just entered the world of smoothies and juices.  I have done a shake in the morning for a long time now.  It included the powder mix, peanut butter, coconut oil, water and ice.  My little mixer didn’t always handle fruits very well, and to be honest…the thought of adding any veggies to it always sounded a bit weird to me.  But, on my journey to a healthier me, I decided adding more fruits and veggies into my diet was the next step.

I have been taking my Juice Plus+ capsules and have been feeling great, so I knew my body was craving more.  I received the Nutri Ninja Auto iQ for review not long ago, so the timing was perfect for me to get a little crazy in the smoothie and juice department 🙂  I will be honest, I am glad I got the Auto iQ version, the easier the better is always the best route for me…especially being a 1st timer!

My friend keeps telling me that the best part about smoothies and juices is that it’s a great way to sneak in vegetables and lots of fruits all at once.  She also told me that cucumber is a great 1st vegetables to start with, so since I love cucumbers, they ended up in my grocery cart 🙂

My smoothie was mango, banana, cucumber, and my Vanilla Juice Plus+ COMPLETE Shake Mix.  It turned about absolutely AMAZING!  I was a bit nervous when I took my 1st sip, but I was pleasantly surprised.  It was actually the best tasting lunch I had in awhile 🙂  Filling too!

Here are some of the health benefits to the ingredients in this smoothie recipe:

Cucumbers – These are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

  • 6 slices cucumber
  • ½ mango - diced pit and skin removed

Since I would actually sit down and just eat cucumber, mango, and banana on a plate, this Cucumber Mango Smoothie is a fabulous option for me!  Talk about a healthy and nutritious meal…not to mention…DELICIOUS.

I have an absolutely amazing Salmon Recipe for you guys today.  We love Teriyaki Sauce and I can’t believe I haven’t added it to salmon sooner!

I used the Copper River Sockeye Salmon in this recipe – the skin is on it.  You don’t have to buy Salmon with skin on it if you prefer to have it without.  If you need a place to get your Salmon and Seafood, you all know I love Anderson Seafood, I won’t get mine from anywhere else 🙂

Tasty Teriyaki Salmon with Sriracha Cream Sauce

The Teriyaki sauce only has a few ingredients, and once you have it made, you marinate the Salmon.  I recommend for at least an hour, but you can do it for as long as overnight.  Just place the Salmon into a ziploc bag and pour in the marinade and toss it in the refrigerator.   Be sure to flip it over every now and then to make sure the marinade soaks in good 🙂

While your Salmon is marinading, you can make the Sriracha Cream Sauce.  That is only a few ingredients as well 🙂

You will just mix the Fat Free Condensed Milk, Mayo and Sriracha Sauce!  Cover it when you are done and toss it in the refrigerator until you are ready to use it.

Ingredients

  • 1/4 cup soy sauce
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground ginger
  • 1/4 teaspoon garlic salt or powder
  • 2 tablespoons honey
  • 2 salmon fillets

Ingredients for the Sriracha cream sauce

  • 1/4 cup Light mayo
  • 2-3 tablespoons Sriracha the more you use the spicier it will be
  • 1 1/2 tablespoons fat free sweetened condensed milk

Instructions

  • In a medium bowl mix the ingredients for the marinade
  • Add salmon and marinade into a large ziploc bag
  • Place in refrigerator or 1 hr to overnight fillets, turn the bag occasionally

Sriracha Cream Sauce Instructions

  • Mix together the mayo, Sriracha and condensed milk in a small bowl
  • Cover and refrigerate until ready for use

Baking Instructions

  • Preheat oven to 400 degrees.
  • Lightly coat an 8×8 baking dish with nonstick spray.
  • Place salmon and marinade into baking dish
  • Bake for approx 20 minutes - salmon will easily flake with fork
  • Top with Sriracha Sauce, or serve on the side
  • Enjoy!

This Teriyaki Salmon Recipe was absolutely delicious!  I really liked the Sriracha Cream Sauce, but my husband actually preferred it without.  Which surprised me, as we both like a bit of heat.  I think the flavors worked perfectly together, but he said that the sauce took away from the taste of the Salmon.  If you are worried if you will like it, just serve it on the side.

We served ours with a white rice and quinoa blend on the side.  The leftover Teriyaki sauce from the Salmon pan was excellent on the rice 🙂

I love pasta, but it’s not something I eat all that often because I am always trying to watch my carbs.  And Alfredo Sauce…well, that is something I used to never indulge in.  Until I made this wonderfully fabulous…SKINNY Alfredo Sauce recipe!  Oh, and guess what…it’s ready in about 10 minutes!  So, make this alfredo sauce to top your favorite noodles, zoodles or whatever you would like, because it’s delicious on just about anything.

Easy Alfredo Sauce

You only need a few simple ingredients…in fact, you may have them in your pantry and refrigerator right now.

To make homemade alfredo sauce you will need:

Milk
Butter
Flour
Salt
Cream Cheese
Parmesan Cheese
Garlic

As you can see, the sauce blends so nicely and it smells absolutely incredible.  You will feel like you walked into Olive Garden!  But this is a bit more cost effective and you don’t have to drive anywhere 😉

Ingredients

  • 1 tbsp butter
  • 2 tbsp minced garlic
  • 4 tsp all-purpose flour
  • 2 cups skim milk
  • 1 tsp salt
  • 4 tbsp low fat cream cheese 2 oz
  • cups grated Parmesan cheese

Instructions

  • Melt the butter in a skillet over medium heat
  • Add the garlic and saute until the garlic is slightly soft, about 1 minute
  • Add in the flour and stir with a wooden spoon for 1 minute
  • Stir/whisk in the milk and salt
  • Stir constantly until just thickened - approx 3 minutes
  • Add the cream cheese and Parmesan cheese; stir until well blended and cheese is melted - approx 2-3 minutes
  • Serve over your favorite noodles or zoodles
  • Enjoy!

Notes

This recipe is easily doubled.

My husband loves wings, and I had never made them at home before so I figured it was about time 🙂  When we were watching football a few weekends ago, I made these delicious Honey Sriracha Wings.  The sauce does have a bit of “heat’ to it, so if your kids don’t like spice…or you…go light on it.

The rub only has a few ingredients and so does the sauce.  And neither one is hard to make.

I bought wings and drumettes, put feel free to grab whichever one your family will enjoy more.  Once you have the rub ready, you will run it into the chicken and bake it! The sauce doesn’t go on until the last 30-40 minutes.

As you can see, I actually baked mine on my cookie cooling rack, this way the were up and off the pan and away from any drippings.  It also helped them cook evenly and they came out really crispy.

Ingredients
  • 3 lbs. chicken wings or drumettes, thawed
  • 2 Tablespoons Garlic Salt (Powder would work as well)
  • 2 Tablespoons Paprika
  • 1 Tablespoons baking powder
  • Sauce Ingredients
  • 1/2 cup Honey
  • 1/2 cup Sriracha Sauce
  • 1/2 teaspoon Sesame Oil
  • 1/2 teaspoon Rice Vinegar
Instructions
  1. Preheat oven to 425 degrees.
  2. Make the rub for the chicken by combining garlic salt, paprika, and baking powder.
  3. Coat the chicken evenly with rub
  4. Place on foil lined pan or on cooling rack as pictured above (if using cooling rack, still place on a foil lined baking sheet for easier clean up)
  5. Bake for 20 minutes
  6. Flip the wings
  7. Bake for an additional 20-30 minutes until desired crispiness.
  8. Make the sauce by combining the ingredients listed above and mixing well
  9. Remove wings and coat them with the Honey Sriracha Sauce
  10. Place wings back in oven for an additional 5-10 minutes to allow sauce to caramelize
  11. Enjoy!

There are few things better than making a fabulous meal that is light on your wallet, easy to make, tastes great, and get you compliments from your family for days.  I received Stubb’s BAR B-Q Cookin’ Sauces for review and the first one I wanted to try was the BAR B-Q Slider one.  The sauces can be used in the crock pot or on the stove in a skillet, but since I love using my crock pot and I knew I wanted to shred my chicken – I went the crock pot route.

Everything you need is in the Cookin’ Sauce, so I just needed to grab chicken…and a mango.  Since I topped my sliders with my Mango Coleslaw, I decided to add Mango Puree into the finishing sauce.

I actually bought 2 pounds of chicken since I knew the leftovers would be fabulous and the Spice Pack had plenty of seasonings for all my chicken.  Make sure to rub the seasoning on both sides of the chicken for optimal flavor.

Once you have the spices rubbed on the chicken, you simply put it in the crock pot with the Cooking Sauce.

Then you sit back and enjoy the delicious scents from the Crock Pot for 4-6 hours.  As I mentioned above, I wanted to add Mango Puree to the finishing sauce, so I got that ready while the chicken was cooking.  Simply peel and cut the mango and place half of it in a food processor and add it to the sauce.

If you make it ahead of time as well, be sure to refrigerate it until you are ready to use it.  This is also the perfect time to make the Mango Coleslaw.  Doesn’t it look great?  Grab the Mango Coleslaw Recipe.  It only tastes moments to make and you will love the flavor it adds to the BBQ Chicken Sliders.

Once you coleslaw is made, cover it and toss it in the refrigerator until you are ready to use it.  Once the chicken is done, you simply remove it from the crock pot and use two forks to shred it.  You will discard of the juices in the crock pot, then add the chicken back in with the Finishing Sauce.

Once you let the Finishing Sauce marinate in with the chicken for about 30 minutes you are ready to enjoy the best BBQ Chicken Sliders ever!

Ingredients
  • 1 package of Stubb’s BAR B-Q Sliders Cookin’ Sauce
  • 2 lbs chicken
  • 1 mango
  • 1 batch of Mango Coleslaw – recipe linked in post
  • Buns
Instructions
  1. Use the Stubb’s Spice Packet to full coat the chicken breasts – be sure to cover both sides of the chicken
  2. Place the chicken into the crock pot
  3. Pour the Stubb’s Cooking Sauce into the crock pot
  4. Cook on low for 4- 6 hours or until chicken is tender enough to easily shred with a fork
  5. While the chicken is cooking, peel and dice the mango, use half and puree it in a food processor
  6. Add the mango to the Stubb’s BAR B-Q Finishing Sauce and refrigerate until ready to use
  7. Remove the chicken from the crock pot when it is done and place on plate
  8. Shred the chicken with two forks
  9. Discard of the “juices” in the crock pot
  10. Place the chicken back into the crock pot and top with the Stubb’s Finishing Sauce with the Mango Puree
  11. Mix well and cook on low for approx 30 mins
  12. Serve on buns with Mango Coleslaw
  13. Enjoy!

This Pumpkin Angel Food Cake is light, airy, and absolutely delicious, a perfect fall dessert that won’t weigh you down. Even better? It’s Weight Watchers friendly! With only a few simple ingredients, like a can of pumpkin puree and a box of angel food cake mix, you can whip up this cozy seasonal treat in no time. I love desserts, but anything sweet is my weakness, so I’m always looking for healthier ways to enjoy the flavors I love, and this cake fits the bill perfectly. Twelve servings of fluffy, pumpkin-spiced bliss…need I say more?

I ran into the other day and grabbed my can of Pumpkin Puree and box of Angel Food Cake and I was ready to get home and bake.  As you can see, this angel food cake recipe only needs a few simple ingredients, in fact, you may have them in your pantry right now!

I’ve always been a fan of Angel Food cake—there’s just something about its light, airy texture that makes it feel like a little cloud of sweetness! When fall rolls around, and pumpkin everything is in full swing, this recipe is my go-to for bringing those cozy seasonal flavors into a dessert that doesn’t weigh you down.

Not only does this fall angel food cake recipe call for just a few ingredients, it is super easy to make!  To get started, you just put everything in your favorite mixer.

Once it’s mixed, pour the pumpkin angel food cake batter into an angel food pan, bundt pan, or cake pan.  Then bake it!  It doesn’t get much easier than that.

I have actually used made mini bundt cakes, and they ended up looking like cute pumpkins! You can see the how-to make little pumpkin angel food cakes here.

Make sure to bake it for the full time, you want the top to be a golden brown.  If you under-cook it, it will fall when you take it out to cool.

I used Libby’s Pure Pumpkin in this recipe because it’s a brand that I know and trust, but if you have the store brand of pure pumpkin, I’m sure that will work too.  Just be sure that you watch the measurements, this recipe does not call for a whole can of pumpkin, just 1 CUP.

If you can find the Sugar Free Angel Food Cake mix, that will save you some on your WW Points if you are watching those.

And you simply can’t bake with pumpkin without Pumpkin Spice.  Seriously, what is fall without Pumpkin Spice?! BUT, in case you wanna do some experimenting….

Try different spices

Want to kick up the fall flavor even more? Experiment with adding a dash of nutmeg, cloves, or even ginger. These spices pair beautifully with pumpkin and will make your cake even more irresistible.

For my mixer, I have had a KitchenAid mixer for years.  And I love it.  It cleans easily, it always works great, in my opinion, it’s worth the money because it is the best.

Dollop of whipped topping, sprinkle of cinnamon, or a few toasted pecans

Storage tips

This cake stores well at room temperature in an airtight container for up to 2 days. If you want it to last longer, pop it in the fridge. Just make sure to wrap it well to keep it moist. I doubt you’ll have leftovers…but just in case 😉

Ingredients

  • 1 cup pumpkin puree
  • 1 box angel food cake mix
  • 1 tsp vanilla extract
  • 1 ½ tsp pumpkin pie spice

Instructions

  • Preheat oven to 350°
  • Mix all the ingredients until well blended
  • Pour into angel food cake pan (or similar)
  • Bake for 38–44 minutes, until the top is golden brown. Do NOT undercook, or the cake may fall when cooled.
  • Top with lite whipped topping if desired
  • Enjoy!

Ingredients
  • 1 teaspoon olive oil
  • 1 tablespoon minced garlic – approx 2 cloves
  • 1/2 cup quinoa/brown rice blend (you can use just quinoa as well)
  • 1/2 cup low sodium chicken broth
  • 1 can black beans, drained and rinsed
  • 1 can diced zesty tomatoes with green chilies
  • 1 southwest corn – I used frozen, but you can easily use canned
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • Juice of 1 lime
Instructions
  1. Heat olive oil in a large skillet over medium high heat.
  2. Add garlic, cook for approx 1 minute
  3. Stir in all ingredients expect the lime juice
  4. Bring to a boil
  5. Reduce heat, cover and simmer until quinoa is cooked, approx 20 minutes.
  6. Stir in lime juice when done
  7. Enjoy!

Mango Slaw is one of my absolute favorite toppings for fish tacos, fish sandwiches, BBQ pulled pork sandwiches and even on grilled chicken.  The crunch from the slaw and the sweetness from the mango make this slaw simply delicious.  Plus, this slaw recipe is super easy to make.

Coleslaw is one of the easiest things to make, and I think it tastes soooo much better than the store bought stuff.  Truth be told, I can’t even eat the store bought stuff anymore, it’s a bit too creamy for me.  I prefer my slaw light and flavorful.

Mango Coleslaw Recipe

You can easily substitute the slaw for Broccoli Slaw too, we do that a lot as well.  And, if you aren’t a mango fan, you can easily leave that out or substitute it with peaches, pineapple or if you like it spicy – try jalapenos.  Personally, I think the mango adds a delicious, juicy twist!

Ingredients

  • 1 bag bag pre-shredded coleslaw you also also cut cabbage
  • ½ mango - diced
  • ¼ cup sugar
  • ¼ cup olive oil
  • ¼ cup red wine vinegar
  • ¼ cup mayo I use low-fat or fat free

Instructions

  • Put the slaw in a medium mixing bowl
  • Add in the sugar, olive oil, vinegar, and mayo to the bowl with the slaw and mix well
  • Add in the diced mango

  • Cover and chill until ready for use
  • Enjoy!

Notes

Serve as a side, on top of fish tacos, fish sandwich and more!  This slaw recipe is also excellent on BBQ pulled pork sandwiches.
