Spring is here and Summer is just around the corner.  Actually, here in Florida, the daily temperature averages over 80 already, so fun in the sun is a daily occurrence in my house 🙂  Which means it is time for ME to get ready.  I had to evaluate that I had everything I need to make summer not only fun, but SAFE. So, I came up with these Summer Must-Haves.  There are must-haves for the kids, for families, and they are all to ensure that you have as much fun as possible this Summer!

Sunscreen

It’s an absolute must.  Even on cloudy days!  In fact, my grandpa always said that you get the worst sunburn on cloudy days because you don’t think about wearing sunscreen and the UV rays are still coming through the clouds.  And I can tell you from experience that I have gotten more than one bad sunscreen on a chillier, cloudy day.

Towels

I don’t normally carry around towels for drying off, if it’s warm out, I let the sun do that 😉 But I do bring them to sit on at the beach and on the chairs at the pool.  You may want to consider a Beach Blanket too.  Keep a sand where it belongs…on the beach…not in your food!

Summer essentials

Beach Bag

A good beach bag is a must.  As parents we are responsible for just about EVERYTHING.  That means you need a bag that can carry EVERYTHING.

Must Haves for Summer

I have a love/hate relationship with sand.  I love going to the beach, the feel of the sand in my toes, but I HATE that it gets into everything.  My bag is always full of sand and cleaning it out after I get home is a pain.  You will notice that in the beach bag featured above there is Sand-Away Mesh on the corners of the bag.  I will admit, I think it’s absolutely genius.  That means the sand that is on your toys, towels, and everything in-between can EASILY be shaken out and not come home with me.  Seriously, this bag has a great features, but this has got to be one of my favorites.  My next favorite is that it is water-resistant.  That means when the kids get it wet on accident I don’t have to worry about it staining.  Less worry for mom = happier mom = more fun time 🙂

Essentials for Summer

Swimsuits

Yes, that seems obvious, I know.  But you need ones that everyone actually feels comfortable in!  A swimsuit that is going to stay in place while the kids swim and play.  I also suggest one that has UPF.

Top Essentials for SummerShe loves that the bottoms, covers her…bottom 😉  Plus, it’s absolutely adorable.  The pink Seahorse is so cute!  And I love the blue and white design.  For me, I like to shop at HAPARI, they have great swimsuits for women of all shapes and sizes.  My son and hubby are sporting DEL SOL swim trunks this summer.

Clothing with SPF protection

This is one that you may not think about.  But if you are spending a lot of time outside, make sure to have clothes that the kids can put on to protect themselves from the sun.

Must haves for summer for families

As you can see, she loves it!  She was amazed that she was wearing long sleeves and long pants, but that she wasn’t super hot (we live in Florida and the temps are well into the 80s now), the fabric is breathable and very soft.  I like that it has UPF 50+.  She wore hers as she danced, swam, and even practiced her cartwheels.  It is very quick-drying, so she would go from the pool to cartwheels and then back again 🙂

Don’t forget to protect your eyes!  Have sunglasses/hats for not only the kids, but yourself.

Looking for a healthy and easy dinner option? I got you! Chicken Stroganoff is a delicious and popular dish that combines tender chicken, flavorful sauce, and often mushrooms and onions. Chicken Stroganoff is relatively simple to prepare, making it a convenient option for dinner. The cooking process usually involves sautéing the chicken, mushrooms, and onions, then simmering them in the sauce until everything is well cooked and flavors have melded together. I made this version in the slow cooker to make it even easier 😉

Why I love using my slow cooker

In no time, my house was smelling delicious 🙂  I don’t know about you, but whenever I think of a yummy gravy, I think mashed potatoes are in order.  I know most serve Beef Stroganoff with noodles or rice, but we enjoyed ours over homemade mashed potatoes.

Crock Pot Chicken Stroganoff

This is a healthy version of a popular comfort food. Enjoy this easy Slow Cooker Chicken Stroganoff with your family tonight.

Equipment

Ingredients

  • 1 lb boneless skinless chicken breasts cut into cubes
  • ½ red onion diced
  • 1 can low fat or healthy request cream of mushroom soup 10 ¾ oz
  • 1 can cream of onion soup 10 ¾ oz
  • 1 cup fresh mushrooms
  • ½ cup low sodium chicken broth
  • 8 oz reduced fat cream cheese cut into cubes
  • 8 oz reduced fat sour cream
  • black pepper to taste
  • mashed potatoes or noodles for serving

Instructions

  • Add chicken onion, soups, mushrooms and pepper to the crock pot
  • Cook on low for 5-6 hours or until chicken is cooked
  • Stir cream cheese into chicken mixture until melted
  • Stir sour cream into chicken mixture
  • Serve over carb of choice – mashed potatoes for us!
  • Enjoy!

Notes

After I added the cream cheese and sour cream I left the crock pot on warm for about an hour – my husband was late getting home – it didn’t hurt it at all.

There’s that word again. Beet. As you may remember, my Beet Blueberry Smoothie was actually the 1st time I have ever had a beet. Yes, the first time. But, I have heard over and over how good beets are for us. So, I bought another one. This time I actually bought one bigger than a large strawberry and I was determined to use it my my next smoothie.

Don’t get me wrong, I actually really enjoyed my Beet Blueberry Smoothie. I guess you could say that it was just fear of the unknown. I did it once…good job me. Do I try it again? Sure..why not! I have to admit that one of my favorite things about smoothies with beets in it is the cool color. The vibrant purple is really pretty! But, don’t be alarmed if you see that color again that day or the next morning when…uh….you’re in the bathroom. That caught me a little by surprise the 1st time 🙂

Healthy Beet Apple Smoothie

In this smoothie I used about a quarter of a large beet, cucumber, apple, banana, my Juice Plus+ Vanilla Complete Shake Mix and that was about it!  And once again, I actually enjoyed my Beet Smoothie!  I will definitely be using the rest of the beet in a new combination soon, so keep a look out!

Here are some of the health benefits of the ingredients I chose for this smoothie:

Beets – They are very high in vitamin C, fiber, potassium, and they also contain vitamin B.  Making them that superfood 🙂

Bananas – Besides tasting great, they are loaded with potassium which helps muscles recover and relax, and they have also been known to help you sleep better.

Apples – An apple a day….come on, we all know that apples are good for us!

Cucumbers – These are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

Protein Powder – Helps keep you full longer and makes your smoothie extra creamy.

Are you looking for something fun, inexpensive, and a bit silly to do as a family activity? Then why not plan a glow party! What is a glow party you ask? A glow party is where you gather up as many glow sticks, wands, crowns, and necklaces that you can find and turn off the lights for a fun and hilarious time!

Every year when we go camping in St. Augustine and we walk down to the beach just after sunset and have the ultimate family glow party!  We are always laughing non-stop!  It’s hard to take pictures in the dark, and I didn’t want to use my night option for pictures much because I wanted to see all the GLOW, but I think you will get the idea 🙂

How to have a glow party

Having a GLOW PARTY it’s definitely an inexpensive way for kids and adults to have some serious FUN!

You can pick up glow sticks at Walmart, the dollar bin at Target, and most dollar and party stores for very little money. Pick some up regularly and the next thing you know you will have quite the collection of glow in the dark accessories. Be sure to keep an eye out after major holidays like Easter, New Year’s and the 4th of July because you can frequently find glow sticks, and other glow in the dark accessories like crowns marked down in the clearance section making it even an even more inexpensive family activity.

Once you have gathered all of the glow sticks you want for your party it is time to get them glowing and turn off the lights or head out into the dark outside. Put on some fun music and laugh until your sides hurt from the hilarious images in front of you.

We had over 100 pieces in our Glow Party.  As you can see, my son had on about 10 bracelets! In fact, I think we all did!

Our favorites were the glow glasses and that weirdo head one.  They both looked HILARIOUS in the dark!  I honestly can’t remember the last time I laughed that hard.

Family Glow Party

You don’t have to be camping, be at the beach or even outside to have fun a glow in the dark party – just grab your glow sticks, dim the lights at home and let the fun begin.  Some alternative activities for your glow party are to have a glow in the dark pool party. If you don’t have a pool but you just just want a quick fun activity one night, particularly for younger kids, turn off the lights and put some glow sticks in the bath tub. Your kids will be squeaky clean and have a blast in the process. Of course if you are just doing a fun in the bathtub night, you won’t need quite as many glow sticks!

My son was also wearing some Laser Finger Beams, we bought a big set of these years ago and they are PERFECT for glow nights!  You can get a package of 48 on Amazon right now for about $5.  If you ask me, it’s totally worth it!  We have also got these glow in the dark “balls” they are fun to play catch with in the dark!

3. Is doesn’t matter how far you are driving – you still need to be safe!

Not traveling very far this spring?  Did you know that 85% of crashes involving children occur 20 minutes or less from home? All children 12 and under should be buckled in the back seat and big kids under 4’ 9” tall should be in a booster seat.  4. Take the adult vehicle seat belt test

Think your child is ready to use the adult vehicle seat belt? Take this simple test. Have them sit with their back and bottom all the way against the vehicle seat. Make sure their knees are bent at the edge of the seat with their feet on the floorboard. The vehicle lap belt should fit low on the thighs and hips and the shoulder belt should fit across the child’s shoulder. The child must be able to sit like this for the whole ride.  Most kids are 10 – 12 years old before they can pass all of these steps!  I am so having my son do this as soon as he gets home from school!  He thinks he is totally ready to wear just the lap belt.

I love chicken, but I will admit, the family and I can get bored with it from time to time.  So, I love finding new ways and fun ways to cook chicken, especially in the slow cooker.  And it’s an added bonus if the kids like it 😉  This easy slow cooker recipe has bacon, apples, and BBQ sauce, how could you possibly go wrong with all that deliciousness in one meal?!

I had some delicious green tart apples from Crunch Pak and since they were sliced, juicy, and ready to go, they were the easy to use for the apples part of this recipe.  For the bacon, I did toss it on the skillet for a few minutes before I wrapped the chicken in it because I like my bacon crispy.  I don’t know about you, but whenever I wrap anything with bacon it never comes out as crispy as I would like it, so, my thought was that if I cooked it up a little first that would help…and it did.

The tart apples were the perfect balance of flavor to the BBQ sauce, and bacon…well, bacon makes everything better.

Equipment

Ingredients

  • lb boneless skinless chicken breasts 4 chicken breasts
  • 2 cups sliced tart green apples I used Crunch Pak apples
  • 1 cup your favorite BBQ sauce I used Sweet Baby Rays
  • 8 slices BACON
  • salt and pepper to taste

Instructions

  • Sprinkle a small amount of salt and pepper on each side of the chicken
  • Partially cook the bacon slices in a large skillet on the stove
  • Wrap each piece of chicken in 2 pieces of bacon and place in the bottom of a slow cooker
  • Mix the apple slices and BBQ sauce in a bowl
  • Pour over the BBQ sauce mixture over the chicken
  • Cook on low for 6-8 hours in the crock pot or until chicken is completely cooked
  • Enjoy!

Notes

You can also cook on high for 2-3 hours.
If you think you may have it in the slow cooker longer or using less than 4 chicken breasts, I suggest adding 1/2 cup (just enough to cover the bottom of the slow cooker) of low-sodium chicken broth to ensure it doesn't dry the chicken out.

You guys know that I love starting my day with a Smoothie. Making a smoothie is the perfect way to fuel my body with the vitamins and nutrients it needs in one quick meal. I have been trying lots of different smoothie recipes lately and I love sharing my favorites! Since apples are one of my favorite fruits, I decided that I should add some apples to in with my carrot cucumber smoothie.

I love that Crunch Pak Apples come ready to go! Literally all I have to do is open the bag, grab a handful and within seconds I am that much closer to drinking my smoothie.  No need to wash or slice!  Plus, they stay so fresh in the bag…I don’t know how they do it, but Crunch Pak apples are always so crisp and juicy whenever I bag a few from the bag.  They never disappoint 🙂

Easy Apple Carrot Cucumber Smoothie

In this smoothie I layered the carrots, cucumbers, strawberries, then my wonderful apples.  The apples are sweet, ORGANIC, and delicious.

Here are some of the health benefits of the ingredients I selected for this carrot cucumber smoothie with apples recipe:

Apples – They are extremely high in antioxidants, fiber and flavanoids. An apple a day keeps the doctor away, so why not start adding them to your smoothies?

Carrots – Your mother knew what she was talking about when she told you carrots are good for your eyesight because she was right. The beta-carotene in carrots is transformed into vitamin A in your liver, and then travels to your retina and is converted to rhodopsin, which improves night vision. They are also a great source of vitamins A, C, and K.

Cucumbers – These are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

What Is Pancake Sunday?  #DisneySide

Every Sunday we have anywhere from 5 – 15 people over for breakfast.  It’s mostly the neighborhood kids and we love it.  My husband and I were trying to remember how it started…this “Pancake Sunday” and it was actually my daughter who came up with the phrase.

I cook most days, especially during the week.  So, when my husband actually has a day off, I gladly let him take over the kitchen.  Every Sunday he would ask the kids what the want for breakfast and without fail, they answer “Pancakes.”

It didn’t take long for their friends to learn that every Sunday we have pancakes, and the kids were more than happy to invite them over for breakfast.  So, before we knew it…Our kitchen table is a Sunday tradition!  It makes my husband and I grin from ear to ear to hear the other neighborhood kids talk about “Pancake Sunday.”  We ALL look forward to it.  Pancakes aren’t hard to make, and these memories will last FOREVER.

As the weeks go on, my husband has gotten more and more creative with his creations.

I recently received a fabulous package from Disney with all sorts of goodies for the kids to share with their friends…games and meal ideas and fun things for the kids galore! Then I sat there and tried to think of a fun “party” to have, what would we celebrate?  I asked the kids for their ideas and they said, “Mom, we celebrate every weekend…on Pancake Sunday.”

And they were right.  Every Sunday we celebrate family, friends, and all our blessings.  With pancakes 😉  What better way to show our Disney Side that on Pancake Sunday?!  Just like these Pancake Sunday Memories, Disney Memories last FOREVER, so I love showing our Disney Side at Pancake Sunday!  So do the kids!

This is the 1st smoothie recipe I have posted that has greens in it!  I will admit, I was a bit nervous about adding “salad” to my smoothie, but I can tell you honestly that you don’t taste it at all!  But your body will thank you for it 🙂  All that added nutrition and vitamins is a wonderful thing for your body.  And the best part is, the more you eat, the more your body will crave it.  The more your body craves it, the better YOU will feel!  Sounds like a win-win to me!
