Raspberries are in season and priced decently right now, so I am loving adding them to my smoothies!  You all know that I use carrots and cucumbers a lot for my vegetable part of my smoothie recipes – they are delicious and I have yet to find a smoothie they haven’t tasted great it!

So, for this smoothie I have carrots, cucumbers, some banana, coconut water, and those amazing looking raspberries to my blender.  SO GOOD!

Here are some of the health benefits to the ingredients I selected for this raspberry protein smoothie:

Raspberries – These beautiful berries are rich in vitamins, antioxidants and fiber.  They also have a high concentration of ellagic acid which has been said to help prevent cancer.

Cucumbers – These are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

Carrots – The orange powerfood will give you vitamin A and is also linked to preventing cancer, giving you healthier looking skin and aids in digestion.

Bananas – Besides tasting great, they are loaded with potassium which helps muscles recover and relax, and they have also been known to help you sleep better.

Ingredients

  • 4-5 baby carrots
  • 4-5 cucumber slices
  • ½ banana
  • 10-15 fresh raspberries
  • 3-4 ice cubes
  • 6 oz coconut water - or your choice of liquid

Instructions

  • Place all ingredients into your blending device as listed
  • Blend until smooth
  • Garnish with cinnamon and extra raspberries if desired

Slow Cooker Southwest Chicken

I love an easy dinner. A dinner that is light, delicious, and one that I can just toss in the crockpot. This Southwest Chicken Recipe is just that. You can easily toss it in the slow cooker before you head out the door in the morning, or make it a freezer to crockpot meal. Freezer to crockpot meals are nice because they allow you to plan ahead and make for a really easy morning 🙂

When chicken is on sale, it’s the perfect time to stock up and make a few freezer to crockpot meals, I checked out my Flipp app and noticed that Chicken Breasts were on sale for just $3 a pound at Winn Dixie, so that’s exactly what I did!

I grabbed extra chicken, grabbed my neighbor, and we worked together to prep a couple of these Southwest Chicken Freezer to Crockpot meals so we both had a few dinners ready to go for our families when we needed them 🙂

Here is my Slow Cooker Southwest Chicken Recipe. Be sure to Print It and Pin It so that you can make it again and again.

Slow Cooker Southwest Chicken

This easy slow cooker recipe is prepped in about 5 minutes and can be made into a freezer meal for meal planning. Healthy and delicious!

Equipment

Ingredients

  • 1½-2 lbs boneless skinless chicken breasts
  • 1 can southwest or fiesta corn, drained
  • 1 can black beans, rinsed and drained
  • 16 oz your favorite salsa I recommend medium to hot heat to added flavor
  • 8 oz reduced fat cream cheese

Instructions

  • Write name of recipe and cooking time on a freezer bag
  • Cut the cream cheese into cubes
  • Add all the ingredients into a large freezer bag
  • Place in freezer until ready for use
  • When ready for use thaw the night before and place in slow cooker for 6-8 hours on low
  • About 30 minutes before the meal is going to be served remove and shred the chicken and place back in the slow cooker so that the chicken is nice and juicy
  • Serve over rice or in tortillas or taco shells
  • Enjoy!

Notes

If you are making this as a freezer meal, skip steps 1-4 in the instructions and just place everything into the slow cooker.
Forget to take out the meal from the freezer the night before? No worries, I do it ALL THE TIME! Just place the frozen ingredients into the crockpot and allow it to cook on low for approx. 8 hours, be sure to stir it every now and then.

Summer is fast approaching and that means finding fun ways to keep the kids entertained. Cheap activities for kids can sometimes be hard to come up with, especially when you feel like you have already come up with a bunch!  So, I complied a list of 50 things for kids to do this summer, and beyond.  Here you will find a list of some free or very inexpensive ideas that the whole family can enjoy together for some extra summer fun!

Free Summer Activities For Kids

50 Fun Activities for Kids:

  1. Take a Hike
    Grab some sunscreen and water bottles and take off on a hiking adventure. Most hiking trails are free to use and are a great way to get some exercise for the whole family. Talk about what you see a long the way, and if you happen across an interesting flower or leaves bring them back home for an art project later.
  2. Paint with Nature
    Remember those interesting sticks, rocks, and leaves you collected from your hike? You can use all of those things to make paintings with nature instead of a paintbrush. Don’t have any paint in the house? Then use this homemade finger paint recipe, it’s even edible so it’s safe for toddlers too!
  3. Head to the Beach or Pool
    There is no better way to cool off on a hot summer’s day than to spend it in or near the water. So pack a cooler with some snacks and drinks and head to the beach if you live near one, or to the community pool if you don’t. Don’t forget the sunscreen!
  4. Go Bowling
    Take the kids bowling! It is a great way to spend time with the family and bond together, and it is also a really fun way to get in some physical activity. Many bowling centers offer discounts through the summer and some even offer free games for kids. Check out this link to see if there is a participating center, near you.
  5. Plan a Scavenger Hunt
    A scavenger hunt is a fun and easy way to keep the kids entertained this summer and beyond. You can come up with ideas and make a list on your own, or grab these free printables to make it a little easier on yourself.
  6. Join a Summer Reading Program
    Many libraries across the country offer summer reading programs where your kids can earn prizes for reading a certain number of books over the summer. If your local library is not offering a summer book club, check with local restaurants, book stores, and amusement parks like Six Flags to see if they are participating this year.
  7. Go Berry Picking
    Head on out to the farm and go pick some fruit together as a family. There are tons of U Pick farms across the country. You get to spend the day together as a family, and you get an incredible deal on some delicious fruit! Check out this link for pick your own farms in Florida.
  8. Go Skating
    Head on out to the skating rink for some family fun together. You might even be able to let the kids skate for free. Here is a link to help you find a skating center near you where kids can skate for free.
  9. Plant a Garden or Flowers
    Plant a garden or some flowers together as a family. This would be an excellent time to talk about the importance of bees and where food comes from. You will also have beautiful flowers to enjoy or veggies from your garden to put on your table all summer long.
  10. Volunteer
    Contact a few local charities and see which ones will allow you to volunteer with your kids. Teaching your kids the value of giving back to others and a sense of community is so important. You can find some ideas for your family to volunteer together in this post.
  11. Plan a Movie Day
    It’s hot outside so take a day and plan to spend it indoors watching everyone’s favorite movies. Plan ahead and get everyone’s favorite movie snacks, pop up some popcorn, and relax.
  12. Teach your Kids the Classics
    Think back to when you were a kid and remember what games you used to play during the long days of summer with your friends. Now teach your kids how to play! Red rover, dodge ball, freeze tag, and jump rope chants. You can even bring out the slip and slide if you want to.
  13. Teach the Kids How to Cook

  14. Start a Book Club
    Help your kids start a book club with their friends or other kids in the neighborhood. Simply have them choose a book to read and then they can all get together and discuss it, and maybe even complete an art project related to the book. Don’t forget the snacks!

    Break out the paints, canvas, scissors, construction paper, markers and more and see what your kids can create. They can happily spend and afternoon making their own art.
  16. Turn on the Hose
    It is hot outside so why not turn on the hose? Grab some water balloons, water guns, and whatever other fun water toys you have and splash away! Pull out the slip and slide and turn on the sprinklers for hours of cool fun in the sun.
  17. Visit Storytime
    Head on over to your local library or book club for story time. Stories are read out loud to the kiddos who are then usually asked to participate in some way. This is also an awesome way to make some new friends.
  18. Go to the Park
    Head to a local park and let your kids run wild on the playground. Pack a lunch and have a picnic in the park. You will probably find some new friends to play with there as well.
  19. Have a Glow Party
    Now, we love to do this when we are camping at the beach, but it is just as easily done in the house or backyard.   20. Head Out to the Movies
    Take your kids out to the movies for a movie date. Many theaters offer special screenings and reduced price tickets during the summer.
  21. Go fishing
    Pack up your kids and head out to a nearby lake or stream to fish. You might even catch enough for dinner!  My son loves to go fishing, we have several ponds in our neighborhood and he will head out and fish for hours.  While, he rarely catches anything, and if he did, these aren’t fish we would eat, he really enjoys it.  I actually just bought him a new rod and reel!
  22. Play a board game
    Pull out your favorite board game and play a few matches together. Need some new board games? Here are 20 of the most popular board games for families. Want to make it even more creative? Have your kids create a board game of their own. Posterboard, markers, some dice, or characters to move around the board…the possibilities are endless! There are a bunch of examples on Pinterest.
  23. Make slime
    Is there anything more fun than making your own slime? Probably not if you are a kid! Slime can provide hours of entertainment. Check out this post for our slime recipe.
  24. Make a lemonade stand
    This often works best in conjunction with a garage sale. Plus it’s a great way to teach kids the value of money.
  25. Draw with sidewalk chalk
    Rainbows, animals, tic-tac-toe, let the kids get creative
  26. Play soccer or baseball or kickball
    Any sport that gets the kids outside, moving and having fun!
  27. Start a summer journal
    Give your kids a new spiral-bound notebook and then let them decorate it with glitter, stickers, and markers however they would like.
  28. Make sock puppets and put on a show
    If you have a large cardboard box, you can use that to even make a “theater.”
  29. Build a fort
    Pull out some pillows, blankets, and sheets and make an awesome fort. When you are done have a snack or read a book together in your fort.
  30. Blow Bubbles or Make your own bubbles
    Bubbles are so much fun and kids of all ages love them. Here is a recipe to make your own bubbles right at home.
  31. Play in the sand
    Head to the park or beach and let the kids get dirty.
  32. Play hide and seek
    If you want a fun twist turn off the lights and play in the dark, just be careful 🙂
  33. Lay in the grass and look for shapes in the clouds
    I used to do this all the time when I was a kid, amazingly enough it would keep me entertained and happy for hours.
  34. Play hopscotch
    You can use your sidewalk chalk to draw out the course.
  35. Make water balloons
    The kids will have a blast no matter how you make water balloons, but if you pick up some of the Bunch O Balloons you won’t have to tie them and you will have a bunch of water balloons ready to go in seconds.
  36. Have a tea party or picnic in the backyard
    My daughter is 12 and we still love a good tea party. It’s always fun making some “tea” (usually lemonade for us) and sipping and chatting away.
  37. Play with Legos or Building Blocks
    Is there anything that you can’t build with Legos these days? Your kids will have hours of fun building anything their heart’s desire.
  38. Wash the car
    The car may not be the cleanest it has ever been, but the kids will have a blast getting wet and spraying each other, um I mean the car 😉 with the hose.
  39. Do some baking
    Bake up some treats together, and maybe even an extra batch that you can share with the neighbors, or a local police or fire department. Try these Peach Pie Sugar Cookie Bars.
  40. Write a story
    Have your kids sit down to write and illustrate their own stories. If your kids are too young to write have them draw pictures and write out their descriptions of them.
  41. Play pool noodle hockey
    Make sure you have enough space for this one. Get a bunch of pool noodles and a lightweight ball. Use the pool noodles like hockey sticks and play a game!
  42. Have a water sponge relay
    For this game, you will need one bucket of water, one sponge, and one empty bucket for every two kids. Break the kids into teams and have a relay to see who can fill up the empty bucket with water using only the sponge.
  43. Make popsicles
    Make some popsicles together to cool off with. You can find lots of ideas for popsicles online. Here is one for chocolate strawberry pudding pops and another for vanilla raspberry pudding pops.
  44. Create an obstacle course
    This can be done inside or outside. Once you have it all set up see who can finish the course first!
  45. Break out the sprinklers and the water slide
    Cool off in the water, and then enjoy one of the refreshing popsicles you made together.
  46. Do a puzzle together
    Sit down as a family and put together a puzzle. This is a great bonding experience and encourages critical thinking skills as well.
  47. Have movie night under the stars
    Hang up a white sheet in the backyard, and use a projector to watch a family favorite movie outdoors. Don’t forget the movie snacks!
  48. Have a dance party
    Everyone loves to dance, so put on a family favorite playlist and turn the volume up! This is a great way to get your heart rate up and share some laughs as well.
  49. Make a DIY Summer Activities Jar
    The kids can decorate it themselves and you can either print this free printable with ideas to go in the jar, or have the kids come up with their own ideas.  Either way, this simple jar will provide hours of fun this summer.
  50. Rearrange Their Room
    While this may not sound like a lot of fun for us parents, it may get the kids to clean their room without arguing about it.  My daughter likes to rearrange her room every few months and it always starts with her doing a deep cleaning, so I can’t complain!

Who doesn’t love going to the beach?  If you have one close by that isn’t super crowded, the beach is the ultimate way to get a day of sunshine and relaxing in while the kids play in the sand and swim.  If you’re lucky, you may even get in some time to read 🙂

If the beach is on your TO-DO list this summer, I thought I would make it a bit easier on your by typing up a list of beach day essentials that should come along for your day of fun!

Beach Bag

Seems obvious, but make sure it’s a good one.  I recommend one with various pockets so you can find your keys and phone when you need them without having to dump out the whole bag.  I am using the Family Beach Bag one pictured above this year…and for many years to come!  It has all the features I want and use.

What to bring to the beach

Swimsuits

My daughter loves her Seahorse Swimsuit set, my men are wearing DEL SOL Board shorts, and I am loving UjENA Swimwear this season. UjENA Swimwear carries swimsuits that are designed to make you feel sexy and comfortable. I am wearing the Electric Coral above, it’s a fun bright color that I am totally comfortable wearing poolside, beach side, and when playing with the kids. The open back gives me a bit of sexy and a chance to tan my back! Now, I have to work on getting rid of the tan lines from my running shorts 😉 Make sure everyone loves their swimsuits, is comfortable in them, and I do recommend investing in a quality swimsuit, finding one you love that you can wear for more than a season is a great investment.

Just in case you want to dry off when you are done cooling off in the water.

You will need something to sit on!

Sunscreen

Protecting yourself from harmful UV rays is an absolute must.  And be sure to reapply sunscreen often.

Protective Clothing/Hat

Clothing that actually protects you from the sun as well is a great idea.  My daughter is very fair skinned, so a shirt that she can swim in and is comfortable for her is a beach must have for us!  A hat to shade your face also helps protects that sensitive skin from the sun.

Sunglasses

Gotta protect those eyes too 🙂  Don’t forget a pair for you and the kids.

Snacks

You and the kids are bound to get hungry at some point.  I suggest healthy snacks like Crunch Pak apples, sandwiches, easily portable salads, trail mix, etc.

Water

Gotta stay hydrated.

Cooler

You need something to put those snacks and water in!

Flip-flops

What fun is a day at the beach without a cute pedi and flip flops to show off those toes!

Radio

A small portable radio, iPod, or make sure you have Pandora or iHeartRadio on your phone so you can enjoy some tunes if you would like to.

Easy to carry chairs are always nice, but not a must have in my book because they can be bulky and hard to carry.  BUT, if you have one or two and the kids are willing to help carry them – bring some chairs!  Speaking of books, be sure to bring one of those too if you think you will have a few minutes to yourself 😉

This is the first year that I have sent the kids to Busch Gardens Summer Camps.  I have had several friends tell me that they send their kids every year and they love it.  I looked over the program and decided that this was the year.

I have been to Busch Gardens for quite a few Media Events and I love everything about it, so why wouldn’t the kids?  It’s not like they haven’t been to the park before, but would they enjoy it as much if they were there all day and the idea was that they would learn something too?

So this year we did it.  Sadie was signed up as a Super Sleuth and Steven was set to be an Adventure Apprentice.  The day starts early.  You can drop off as early as 7:30 and the fun begins promptly at 8 a.m.  Pick up is 3:00 pm.  Extended care is available for a small fee.

Did the kids love it?

YES.

The Staff

This was a big one for me, I wanted to make sure the kids liked the counselors they would be with all day.  Everyone met us with smiles, had all the answers to our questions, were VERY organized, and were wonderful with the kids.  Sadie said that hers were “super nice and made her smile.”

Get Up Close and Personal with the Animals

Even though the kids were in different programs, they got to see animals everyday and some days they got to have personal interaction with one of the Busch Gardens Animal Ambassadors.

There are Opportunities For the Kids To Ride the Rides

Would a day be complete at Busch Gardens without a fun ride?  Well, for some yes.  Like my daughter, she absolutely refuses to ride rides and I loved that she was not pressured in anyway to ride ones, in fact, the kids that didn’t want to ride stayed back and played a short game or answered fun questions while the others rode.

Like the thrill of the coasters?  Good, because kids DO get the chance to ride them.  My son got to ride Falcon’s Fury and still hasn’t stopped talking about it.  I honestly don’t think he would have rode it if he went to the park with me, but since he was with friends and felt comfortable, he tried something new and exciting.  And for that, I am grateful to Busch Gardens.

They Do Learn Stuff

In the midst of all the fun, smiles, rides and animals the kids do learn things. Lots of things actually.  Every day the kids talked the WHOLE WAY HOME about what the learned about the behind the scenes of Busch Gardens, how the rides worked, how the shows worked, and all about the various animals.  In fact, they are still taking about it 2 weeks later 😉

Food and Drinks Are Included

Definitely appreciate this part.  The fact that I didn’t have to pack two lunches, snacks, and a bunch of water was a huge time saver to me in the morning.  I would probably say that gave me an extra 15 minutes of snooze time 🙂 Not to mention the time it saved me from having to make any special trips to the grocery store.  And the kids loved the menu!  They had burgers, pasta, fruits, veggies, snacks, and water was ALWAYS available.  There was always a main entree, a nutritious snack, and a dessert.  As a added benefit, the kids also get a Summer Camps Shirt to wear all week and a water bottle with a cool holder so they can carry it with them everywhere.  We have used ours quite a bit even after camp!

Easy Drop Off and Pick Up

Come on parents, don’t tell me that this isn’t important to you.  No one likes complete chaos when picking up your kids.  At Busch Gardens, you actually go to a special area, so you aren’t dealing with all the folks that are at the park.  Once you enter the special area, there are two lines, which you wait in while in your vehicle (no waiting outside in 100 degree heat!), Busch Gardens Staff will then walk to every car check your pick up tags and let you sign your child out.  As you get to the front of the line, another employee checks the tags again and calls back to the staff where the kids are so that your child(ren) are ready for you when you pull up.  They only allow a certain amount of vehicles in the “pick up area” at a time to ensure the safety of the kids and the quickest pick possible for you.

They Will LOVE It

Every single day my kids told me that this was the coolest camp ever.  Every single day they asked me if they could go again. Every single day they thanked me for sending them.  Every single day they were happy.  Every single day, that made this momma smile.

One Pot Chicken and Lemon Rice

I have a delicious recipe for you guys today!  If you love Lemon, this is for you!  I love recipes that are full of flavor and easy for us to make.  This recipe is actually a One Pot meal, and I will admit, it is the first time I have ever put one of my beloved Faberware pots with Teflon Brand coating into the oven!  It is made to do so, I just never have, so I spent the 1st 15 minutes of checking it out to make sure nothing weird happened 😉  And to my delight, the pot didn’t melt and dinner was delicious.

Easy One Pot Chicken and Lemon Rice

I did receive the rice from Uncle Ben’s for review, but all opinions about it and this recipe are 100% my own!

The fact that I used Uncle Ben’s Flavored Grains Basmati Medley Savory Herb Rice made seasoning the rice easy!  In fact, between the savory herb mix and the lemon, this dish is AMAZING.

Tasty One Pot Chicken and Lemon Rice

As you can see, I used chicken tenders in this recipe, you don’t have to, it was just what I had available in my refrigerator at the time, regular chicken breasts would work fabulous as well.  My kids ate this one too, so I would definitely say it’s a great family meal 🙂

One Pot Chicken and Lemon Rice Recipe

This One Pot Chicken and Lemon Rice recipe is full of flavor and easy to make. Have dinner on the table with this recipe with just 15 minutes of prep time!
Servings: 4 people

Ingredients

  • 1 lb boneless skinless chicken breasts
  • Zest of one Lemon
  • Juice of one Lemon use the same lemon
  • 1 tbsp dried oregano
  • 1 1/2 tablespoons of minced garlic
  • Rice
  • 1 box of Uncle Ben's Flavored Grains Basmati Medley Savory Herb Rice
  • cups chicken broth / stock
  • ¾ cup water

Instructions

  • Combine the Chicken and Marinade ingredients in a ziploc bag and place in refrigerator for at least 20 mins
  • Preheat oven to 350 degrees
  • Remove chicken from marinade, but keep the Marinade
  • Heat ½ tbsp olive oil in a deep skillet over medium high heat
  • Place the chicken in the skillet, and cook on both sides for 1-2 mins. You are just sauteing the chicken briefly
  • Remove the chicken and set aside.
  • Add the rice, included seasonings, the remaining Rice ingredients and reserved Marinade into the same pot
  • Let the mixture come to a boil and let it boil for approx 1 min
  • Place lid on the pot and bake for bake in the oven for 15 mins
  • Remove from oven after 15 mins and then place the chicken on top of the rice mixture then place a lid on the skillet and bake for an additional 20 mins **Use caution - pot handle and lid will be HOT**
  • Remove the lid and bake for an additional 10 mins, or until all the liquid is absorbed and the rice is tender
  • Garnish with lemon slices if desired
  • Enjoy!

Notes

If you don't have a lid for the pot/pan you used, you can cover it with a lid that is slightly larger, aluminum foil, or even a baking tray [br][br]I topped this with slices of lemon which I pan briefly sauteed while the rice and chicken were in the oven[br][br]You can substitute Uncle Ben's Long Grain Wild Rice if you don't see the Basmati version at your store

I know I told you guys that I am loving these freezer to crockpot meals.  There is something about being able to walk out to the freezer and have a delicious meal already prepped and ready for you.  Just makes your day a lot better, ya know?  This Ranch Chicken recipe only takes moments to prep and then it will cook all day in the crockpot while you are at work, enjoying family time, or out and about!

You don’t HAVE to freeze this meal before making it, you can just as easily toss all the ingredients into the slow cooker in the morning and cook it for the specified time.  No pre-planning or thawing required 😉

Here is my Ranch Chicken Recipe, we like this one because it is kinda creamy, so it was perfect to serve on top of mashed potatoes!  Be sure to Print It and Pin It so that you can make it again and again.

Feel free to use a crock pot liner for easier clean-up!

Ingredients

  • 1 ½ - 2 lbs boneless skinless chicken breasts
  • 1 packet Ranch Dressing powder
  • 1 10.5 can healthy request/low-fat cream of mushroom soup
  • ½ cup milk I used skim

Instructions

  • Label gallon size freezer bag with name of recipe and cooking instructions with Sharpie
  • Place all ingredients into freezer bag
  • Freezer until ready to use
  • If thawed, cook on low for 4 - 6 hours. If cooking from frozen, cook on low for 6 - 8 hours
  • Serve over mashed potatoes if desired
  • Enjoy!
