Mornings can be a crazy time of day for everyone…but it doesn’t have to be! With a few extra steps the night before, and by giving yourself some breathing room in the morning you will find that the morning can be the favorite part of your day!

Here are my 6 Ways To Simplify Your Morning Routine:

1. Lay your clothes- and the kids’ – the night before

  • Work clothes, workout clothes, school clothes etc.

2. Get lunches ready the night before

  • One less thing to do in the morning! And don’t forget to have the kids help, they can get out the juice boxes, snacks etc.

3. Wake up a few minutes early

  • And definitely don’t hit the snooze button, if you do, you will automatically feel like you are starting the day off behind schedule

4. Avoid checking your phone until you are showered, dressed, and ready for the day

  • You don’t want to feel like you are working from the moment your feet hit the floor

5. Drink water BEFORE you have your cup of coffee

  • Not only does your body need it (your body is made up of 60% water!) but drinking water first thing in the morning on an empty stomach purifies the body’s internal system, which makes the body more able to absorb nutrients from food.

6. Have a good, distraction-free, breakfast

It’s Monday, homework has to be done – which the kids are not happy about, it’s almost time for baseball practice and you have no idea what to make for dinner. It has to be quick and something you feel good about feeding your family. I know you have been there before. I know I can’t be the only one! Manwich Monday to the rescue! Now, of course, our favorite way to enjoy Manwich is a Sloppy Joe, but I decided to get a bit creative with our Manwich Monday this week. I snuck in some veggies 😉 I made my family Manwich Tater Tot Casserole!

The best part is that you probably have all the ingredients for this delicious casserole right in your pantry and freezer.

For Manwich Tater Tot Casserole you just need a can of corn (I used the Fiesta variety), a can of your favorite Manwich Sauce (Original, Bold, or Thick and Chunky), lean ground beef, Crispy Crowns or Tater Tots, some onion, and some cheese.

From start to finish, you will have a fun twist on a family favorite dinner on the table in about 30 minutes! To get started making this easy comfort food dish you saute the onions in a large skillet, I recommend one that is 12 inches so that you can plenty of room for mixing everything together.  Once your onions are translucent, you will brown the lean ground beef (I know it costs a little more, but I try to save on the fat in our meals when I can), add in the canned corn and your favorite can of Manwich.  Be sure to mix everything together well before you pour the meat mixture into your 8×8 baking dish.  I used my Pyrex Baking Dish, I’ve had it for as long as I can remember and since it still works great and cleans easy, I see no point in replacing it.

Once the meat mixture is in your baking dish, you just layer on the tater tots.  I actually used the crispy crown variety, you can use whatever you have on hand!  I have made it with both varieties and it’s equally as delicious.

Fun Fact: My Manwich Tater Tot Casserole is Similar to a Minnesota Staple

This dish is similar to a Minnesota staple known as Tater Tot Hotdish. But where did this dish come from? Some say it was created by a mom trying to use up leftover potatoes and ground beef. Others claim it was created by a clever marketing team at the Ore-Ida company in the 1950s.

Whatever the true origins of Tater Tot Hotdish, one thing is for sure: it’s delicious, and so is my take on it! The original recipe of Tater Tot Hotdish features onion, ground beef, green beans, corn, mushroom soup, and tater tots. My take on this recipe features original Manwich and fiesta corn. And, I topped it with cheese because, well, it just tastes better with cheese!

This dish has everything you need – carbs, protein, and lots of cheese. So whether you’re looking for a hearty meal or just something really tasty to bring to a potluck, Tater Tot Hotdish or my Manwich Tater Tot Casserole is always a good choice.

What’s in a can of Manwich?

When it comes to food, there are some things that just defy explanation. Take a can of Manwich, for example. This sandwich filling produced by ConAgra Foods and Hunt’s has been around for decades – since 1969 to be exact – and yet its very existence is a mystery. Just what is this classic saucy concoction, and why does it have such a hold on the American public?

Manwich is basically a sauce with a tomato base intended to be added to cooked ground beef that is mixed and then used as a filling for sandwiches. The sauce is made from a variety of different ingredients, including tomato puree, vinegar, and corn syrup. Then, the mixture is then seasoned with various spices and dried vegetables to give it its signature flavor.

Today though, there are four different flavors of Manwich:

  1. Original
  2. Bourbon BBQ
  3. Bold
  4. Thick & Chunky

So why do people love the Manwich so much? That’s hard to say. Some say it’s because of the nostalgia factor from growing up with their Manwich sandwiches for dinner. Others just feel it’s darn tasty. To me, it’s a little of both. It’s a lot of fun taking convenience sauces like this and dreaming up new dishes.

Ingredients

  • 1 can Fiesta Corn drained
  • 1 can Manwich I used Original
  • ¼ medium sweet onion chopped
  • 1 lb lean ground beef
  • ½ bag frozen Crispy Crowns you can also use tater tots
  • 1 cup shredded cheddar cheese

Instructions

  • Preheat oven to 425 degrees.
  • In a large skillet, brown ground beef and onion until the meat is brown and cooked through out
  • Add in the corn and Manwich into the skillet
  • Mix well, pour the Manwich mixture into an 8×8 baking dish.
  • Top with a single layer crispy crowns
  • Sprinkle the top with shredded cheese
  • Bake for 20 minutes
  • Enjoy!

Feel free to substitute ground turkey or ground chicken if desired

Yes, we have yet another interesting smoothie combination today.  I will be honest, I would have never thought to put a sweet potato in my smoothie, but when my mom suggested it, I guess I really couldn’t think of a reason why not too.  I mean, sweet potatoes are loaded with vitamins and are sweet, so they should be good in smoothies, right?  And pineapple is always juicy and sweet!

What actually started this smoothie combination was my mom, she hurt her foot while we are on vacation and we wanted to do everything possible to help make it feel better.  So, she found some ingredients that will help her heal naturally…from the inside out 🙂

The ingredients she found were sweet potato, pineapple, turmeric, and cucumber.  So that is exactly what we put in our Ninja Auto iQ for our smoothie!  And much to my surprise…it was really good!

Ingredients
  • 2 tomatoes – chopped
  • 1/2 red onion – diced
  • 1 green onion – chopped
  • 2 jalapenos – seeded and chopped
  • 3 sprigs fresh cilantro – chopped
  • 2 tablespoons Stubb’s Sweet Black Pepper Anytime Sauce
  • 1 teaspoon garlic powder
Instructions
  1. In a medium size bowl combine all the fresh veggies
  2. Evenly sprinkle on the garlic powder
  3. Mix in the Stubb’s Sweet Black Pepper Anytime Sauce
  4. Serve on Fish Tacos or with chips…or anything that needs a fresh veggie kick
  5. Enjoy!

I know I mentioned above that I put my Pico De Gallo on our Fish Tacos for dinner, so I thought I would share the quick and easy way we made our fish!  Fish tacos is one of our favorite go-to-meals.  They are super easy to make, full of flavor, and oh-so-good!

How to make Pico De Gallo

What You Need For Fabulous Fish Tacos:

  • Fresh Fish – I recommend Mahi or Tilapia
  • Stubb’s Pork Spice Rub
  • 1 tablespoon olive oil
  • Fresh Pico De Gello

What You Do:

  • Head up the olive oil in a saute pan
  • Add in your filet of fish
  • Heavy coat the one side of the fish with the Stubb’s Pork Spice Rub
  • Flip after 2-3 mins, you will see the edges of the fish turn a nice flaky white
  • Heavy coat the other side of the fish with the Stubb’s Pork Spice Rub
  • The fish will easily flake with a fork when done
  • Add the prepared fish and place it in corn or flour tortillas, top with Pico De Gallo (lettuce and cheese too if desired)
  • Enjoy!

Wow, right? I don’t know how you feel about lentils, but about 1 month ago I would have never considered eating them. In fact, my mom and I were out to lunch and she ordered a bowl of lentil soup for us to split and I looked at her like she was crazy. Lentils are not the most attractive looking bean I have ever seen. But my mom said that they are packed full of goodness and I really needed to try it. I tasted it, reluctantly…but I was pleasantly surprised. I actually liked it!

Then my mom came to visit for a week, and we were prepping meals to help me get organized for the start of the school year and she decided that we should make a lentil soup. Pushing the envelope just a tad there mom…Just because I tried it once doesn’t mean I want to make it myself! But, being the good daughter I am, I agreed 🙂

Easy Slow Cooker Lentil Butternut Squash Curry Soup

We got some butternut squash and a few other ingredients and we were on our way to making a yummy soup. As you can see, I added lean ground beef to my recipe. You don’t have to, you can leave yours completely vegetarian. But, I figured if I added beef to it, I had a better chance of my husband actually eating it. This recipe makes a LOT and I will probably end up freezing some.

Ingredients

  • ½ red onion diced
  • cups red or brown lentils
  • 2 cups butternut squash diced
  • 14 oz coconut milk - 1 can I used lite
  • 15 oz diced tomatoes - 1 can I used Garlic and Olive Oil variety
  • 1 lb lean ground beef
  • 1 tbsp curry powder
  • 2 tsp salt
  • 4 cups low sodium chicken broth
  • 2 cups water

Instructions

  • Add all the ingredients into the crockpot and cook on low for 6-8 hours

Notes

*You can also serve this over rice*
I did prep mine ahead of time and froze it, if you decide to do that as well - do NOT add the chicken broth and water to your freezer bag. Add in the chicken broth and water into the slow cooker when you are ready to cook the meal.

Easy Lentil Butternut Squash Curry Soup

As I mentioned above, I prepped mine ahead of time and froze it.  You can do that too, it’s super easy!  Just add all the ingredients expect the chicken broth and water to the ziploc bag and toss it in your freezer.  When you are ready to cook it, put everything into the slow cooker, add in the chicken broth and water, and let it simmer together all day.

10 Must Haves for Parents with Multiple Kids

10 Must Haves for Parents with Multiple Kids

I have just two children, but my good friend and fellow writer, Heidi, has five beautiful children and she is sharing her Must Haves for Parents with Multiple Kids today.  Be prepared when you get to #10, I laughed so hard I was crying 🙂

As a mom with many kiddos (5 little blessings in our family), there are just some things that come with the territory: stares and comments when we roll out anywhere (and honestly, most of them are polite and truly kind), a verbal confirmation that yes, indeed, the kids are ALL ours, multiple trips to the bathroom, and lots and lots of laundry (did I mention lots?)  Some of these things become second nature after a time, and you don’t give it much thought. That is, of course, until one of your closest friends (ahem, Tracy) asks you, “what are the top items you can’t live without?”

While we’ve have had almost every baby gear/gadget run through our house at one point in time, we have purged many items, but these are our tried and true helpers:

Must-Haves for Parents with Multiple Kids

1. Buggy Bench

This is for you Mom’s with multiple kids!  What do you do when you have more than one young child and you need to go shopping?  Grab the Buggy Bench!  The Buggy Bench was actually designed by a mother of twins, and safely creates a second seat in your cart!  It comes with a safety belt that buckles your child in the cart, keeping them upright and in place.  The Buggy Bench can adjust to fit any shopping cart and the generous-sized leg opening will accommodate kids up to 40 lbs.  It comes in stylish patterns, has a machine washable cover and folds up for easy storage.  I love that I now have a place for both my 8 month old and 2 year old to sit! Brilliant! Now I only have to balance the cart with the other 3 hanging off each side.

2.  Moby Wrap

I have written about this before, and I had officially owned ALL the versions of baby carriers out there, EXCEPT the Moby Wrap. This baby has a lot of fabric and I was a bit overwhelmed when I opened it, but after looking at the instructions, and a few practice rounds, I LOVE it!! I only wish this had been my first purchase when my oldest was little!  I love that you can wear it multiple ways to accommodate your growing child and it’s good for 8-35lbs.  Plus, I have always loved the way it looked on the Moms I saw wearing them, and I can see exactly why this is many-a-momma’s go-to wrap! Now I can count myself as one of those fashion-forward mommas. Never mind the toilet paper that is trailing behind me, stuck to my shoe.

Who hasn’t wrestled with an overtired/overheated baby on an outing during the summer  (and a few more overheated/overtired kiddos hanging onto your ankles)? It’s portable and adjustable and even allows baby to safely swing on an adults lap.  No more tears over swings at the playground!

5) Daily Planner

How do you manage 5 kids, homeschooling and still have dinner on the table?  I’m not sure, I’m still trying to figure it out, and I have a very cute planner to help me with it!  I love the planners over at http://plumpaper.com/.  There are many configurations and designs to choose from.  Even if I don’t have it all together on a daily basis, or maybe at all, I can sure look like I do!

6) Reusable lunch bags and containers

I try to be a responsible steward of our resources.  I don’t always succeed, but we try.  We do our best to fill our recycling can, drink out of reusable water bottles, etc. I never really thought about the amount of plastic we threw out by means of sandwich and snack baggies, until I started using reusable ones.  Now, packing lunches and snacks is really easy, I can keep track of which sandwich belongs to which kid, because they NEVER want the same thing, AND I’m not throwing away plastic baggies anymore!

7) Great Mom/Diaper Bag

Because if you are carrying the world in your shoulder bag, it’s always fun to love the one you are carrying!

8) Something to wipe up messes and faces

I have spent a ton of money on wipes over the past 8 years: wet wipes, cleaning wipes, face wipes, you name it.  I never felt 100% comfortable using them because  I had a difficult time pronouncing some of the ingredients.   Well, for the past 2 years, all I carry with me to wipe faces, counters, tables and highchairs, are travel-sized EnviroCloths from Norwex aka “The Travel Pack”.  These small amazing microfiber cloths come in a pack of 4 and I use them for everything on the go. Everything. There isn’t a face that is safe or a stain or spill that can’t be beat with these wonderful cloths.  The best part? 9) Labels

Let’s face it, the more kids you have, the better the chances are that you are going to leave something somewhere.  I label EVERYTHING with  microwave, dishwasher and laundry safe labels, even my crockpot. Yes, I’ve forgotten it before.

10) Sense of Humor

What do you do when someone new stops over and is welcomed by your half-naked, screaming 2 year old, rushing past with your crazy Labrador in hot pursuit?  Well, after wrangling the dog into the kennel, stepping over the freshly killed mole she left you at the doorstep, opening the door to the house and being greeted by a cloud of flour from the “surprise” cake your daughters are baking you, and rushing to shut the smoke alarm off from the dinner you are burning in the oven, you laugh!   Did I mention that you are still seeing double from exhaustion, because right after you fed your baby LATE last night, the cows got out and you, your loving husband (and some children that didn’t make it to bed on time) and your neighbors spent an hour and a half chasing them in your pajamas?! Not that this has EVER happened to me.  The Good Lord gave us a sense of humor—thank Him for it and use it!

I needed a dinner for the kids quick the other day and they wanted soup…I decided the perfect accompaniment would be grilled cheese.  And as I was making their grilled cheese, it looked good!  I rarely make grilled cheese for myself, so I decided to make a dressed-up version for my husband and I that night too.  I have some beautiful veggies in the refrigerator, so I grabbed some of my favorites and decided to get creative 🙂

Easy Grilled Cheese Sandwich with Vegetables

I used zucchini, squash, diced tomatoes, and mini sweet peppers.  I figured the veggies could use a bit of extra flavor, so I seasoned them with Dust by VooDoo Chef Seasoning.  You can use which ever seasoning you may have at home, or none at all!

Tasty Grilled Cheese Sandwich with Vegetables

I had the bread “grilling” in a separate pan and once the bread looked good, I added on the cheese.  I had a chunk of Colby Jack at home, which so happens to be my favorite cheese, so I sliced it nice and thin and added it on.  Once it started to melt, I topped it with my delicious smelling vegetables.

Spruce up that plain ole grilled cheese sandwich with fresh vegetables! This grilled cheese and vegetable sandwich is served up with dipped sauce and is oh so delicious.

Ingredients

  • 2 slices of bread - I used Honey Wheat
  • 1 slice of your favorite cheese - I used Colby Jack
  • Sliced zucchini and squash
  • Sliced mini sweet peppers
  • Diced tomatoes
  • VooDoo Chef Dust Seasoning
  • 2-3 tbsp Marinara Sauce
  • Butter

Instructions

  • In one pan put a dab a butter and let it melt
  • Add two slices of bread to the pan, watch to make sure it doesn't burn, flip as needed
  • In another pan, put a dab of butter and let it melt
  • Add in your veggies and seasonings
  • Cook veggies until soft
  • Add cheese to one slice of bread
  • Top the cheese with your veggies
  • Close up your sandwich
  • Serve with the marinara sauce for dipping
  • Enjoy!

Notes

Feel free to get creative and use any vegetables in your refrigerator - then be sure to come back and let me know the combination you used and how it was!
You will notice that in the recipe I mention to serve with marinara sauce for dipping, I learned about doing that from a local Food Truck!  They serve all their grilled cheese sandwiches with a dipping sauce and it is GREAT.  I definitely recommend adding the sauce for dipping.  I used what I had in my pantry, it was the Garlic and Herb Hunt's Sauce that came in a can, it doesn't have to be fancy!  But it is oh so good.  Trust me.

Innisbrook Resort is a family luxury resort located right here in Tampa Bay just minutes from Tarpon Springs. If you are a golfer, your answer to the question “What is there to do at Innisbrook Resort?” would be very simple and very obvious. Golf. But what about those of us that don’t golf (EEEKK…yes, I just said that there are some people that don’t golf…me included!) and those of us that are traveling with golfers, but won’t be golfing. My husband golfs, but like I mentioned, I don’t, so when we go away together, we do non-golf things.

Innisbrook Resort is known for its championship golf courses and of course, the Valspar Championship. But did you know that they have an amazing spa? I didn’t!  So, when my husband and I were able to go and check everything out that Innisbrook has to offer for review, we jumped at the opportunity.  The beautiful Indaba Spa is nestled within the gorgeous grounds of Innsibrook Resort.

In fact, after my husband and I got settled into our spacious guest room for the night, we headed to Indaba Spa for a couple’s massage.  From the moment we walked in, we were greeted with warm smiles, we just felt a sense of relaxation and welcome, which is exactly what you want when you walk into a spa 🙂

We were both shown to our lounges.  The men’s and women’s lounges and locker rooms had a hot tub, steam room, iced flavored water, and comfortable chairs to enjoy while we were waiting to get called back for our service.

As I waited and enjoyed the view of the Innisbrook greens and flowers, there were two ladies sitting next to me.  They were deep in conversation, smiling, and were obviously enjoying each others company.  I wasn’t ease dropping!  But, I did hear them say that “They love their girl time together and that they couldn’t think of a better place to have it than here (at Indaba Spa).”  I smiled to myself, they were obviously already in love with the service at Indaba Spa!

Shortly thereafter, my masseuse came to get me, we met up with my husband in the hallway and we got a small tour of the spa.  When we entered the Couple’s Massage Room we were both in awe.  We have gotten massages before, even a couple’s massage once or twice, but NOTHING compared to this room.

First of all, it was HUGE, the music was relaxing, the beds were heated and just….ah-mazing, and there was a FIREPLACE.  Yes, there was a fireplace in the room.

My husband and I actually went to Innisbrook as an Anniversary Celebration, every year for 13 years we have gone away for one day for our anniversary, and Indaba Spa made our day even more special than we could have imagined!

After the massage, we drank exquisite champagne, ate chocolate covered strawberries, and snacked on one of the small plates they offer that was filled with cheeses, crackers, fresh berries, and honey.

After we enjoyed our champagne and delectable snacks we headed back to our guest room to get ready for dinner at Packard’s Steakhouse.

You can imagine that as a blogger, I do get the opportunity to visit a variety of restaurants here in Tampa Bay, and my husband is in business and has business meetings at restaurants pretty regularly.  And we can both honestly tell you that Packard’s Steakhouse is unlike any restaurant we have ever been to.

You don’t have just one server, but you have several that are there to answer questions and just say HI.  I have never been to a restaurant where the staff actually made it a point to get to know you, and genuinely seemed interested when you responded.  The wait staff had all been there for over 15 years, with one there for over 40 years!  The Executive Chef even came out and chatted with us and the other guests dining that evening.  If that doesn’t tell you what an amazing place this is, I don’t know what will…

We started with the Lobster Bisque and Kona Crusted Lollipop Lamb Chops.  My husband actually has an allergy to Truffle Oil (which is on the Lamb Chops) so the chef actually made his separate so that he could still enjoy them!  And enjoy them we did.  The Kona Crusted Lollipop Lamb Chops simply melt in your mouth.  And the Lobster Bisque was splendid!  I have Lobster Bisque elsewhere and it was very heavy, at Packard’s Steakhouse, it’s not, it was full of flavor and I didn’t feel like I have to eat a bowl of butter and heavy cream.  The chef will gladly put the bisque in two bowls if you and your partner want to split it, that’s what we did, we wanted to try a variety of items, but didn’t want to get tooooo much food.

Appetizers were followed up with fresh salads, then steak.  How could you possibly go to a Steakhouse and not have steak?!  And we were not disappointed.  We split the Delmonico and it was plenty for us to share.  It was mouth-wateringly delicious.  I mean, wow.  I truly believe that cooking a good steak is an art form, you need it tender, juicy, the right temperature, not tough, not too much pink, and a lot of flavor.  Packard’s Steakhouse did it perfectly.

I don’t know how it was possible, but we actually managed to save room for dessert.  The Hot Chocolate Truffle Cake and  Chocolate Velvet Cake were our favorites, have you guessed yet that I happen to love chocolate?

Packard’s Steakhouse not only has unforgettable food, but the staff will make your experience even more memorable.

So, if you are in the Tampa Bay area and are looking for some things to do, I can definitely suggest heading to Innisbrook Resort in Palm Harbor.
