Turkey Melt Recipe – Perfect For Thanksgiving Leftovers

Is your refrigerator and freezer filled with delicious Thanksgiving leftovers?  Well, Stubb’s has some fabulous recipes to help us repurpose those leftovers and I wanted to share one of my favorites with you today!

Be sure to keep a look out for Stubb’s Cookin’ Sauces while you are at your favorite retailer too, they are perfect for great for whipping up turkey sliders on the fly. Stubb’s offerings add just the right amount of flavor to any dish without any artificial ingredients or additives of any kind – and they’re all certified gluten-free!

Stubb’s Turkey Melt
Author: Developed for Stubb’s by Katie, of Culinary Pirate.
Ingredients
  • 1 1/2 cups shredded, cooked turkey
  • 1/4 cup Stubb’s barbecue sauce or marinade of your choice
  • 2 large slices (about 4 ounces) Provolone, Gouda, mild Cheddar, or Brie cheese
  • Softened butter, as needed
  • 4 slices Italian, sourdough or rye bread
Instructions
  1. In a medium bowl, evenly mix together the shredded turkey and sauce.
  2. Butter each bread slice on one side.
  3. Lay 2 slices of bread on your cutting board or counter, butter side down, and divide turkey mixture between them.
  4. Divide cheese between the two sandwiches and place on top of the turkey.
  5. Top them with the other pieces of bread, the butter side facing up.
  6. Heat a saute, cast iron or grill pan over medium heat.
  7. When the pan is hot, add enough sandwiches that can fit into the pan.
  8. Press the sandwiches down with a spatula or place a heavy pan on top of them.
  9. Cook for a minute or two, until the bread is browned, then flip and repeat the process on the other side.
  10. Remove sandwiches from pan when the cheese has melted.
  11. Let cool for a minute before slicing in half; serve warm.

The K’NEX Mighty Makers line is amazing.  My daughter loves to build and create but she never had a line of building toys that was more geared towards her interests…one that was a bit more “girly.”  That didn’t stop her from building and creating at all, but when she discovered K’NEX Mighty Makers she definitely claimed these as her own!

When she received the Inventor’s Clubhouse Building Set for review from K’NEX she was really excited to get started on it.  I will admit, I was a bit nervous that she wouldn’t be able to do this one on her own since the set was a bit bigger than the greenhouse she made in the past. But she did awesome!  She had a few friends over at the time and they were all excited to get started.

All the kids were ages 11 – 8 and they followed the step-by-step instructions and were inventing in no time!  My daughter has had trouble following K’NEX instructions in the past, but this time she had no issues at all.  Every once in awhile she would call over her older brother to double check something, but all in all, she did great!

Thanksgiving is a great time for families to get together and be thankful for their lives. Thanksgiving games can make this holiday fun for everybody.

According to the History Channel, Thanksgiving started in 1621. It was celebrated by the pilgrims as they struggled to make headway in settling America for their own needs. They celebrated by holding a large feast, including turkey, corn, potatoes, beets, and many other foods grown that time of the year. Thanksgiving has become a modern family tradition and is celebrated every year in America on the fourth Thursday in November. Many families get together this day, have huge feasts, and visit with each other for hours. There are many fun games available that can make a Thanksgiving celebration fun for kids and adults.

Popcorn relay races get everybody up and moving

A common myth about Thanksgiving states that Native Americans introduced the pilgrims to popcorn at the first Thanksgiving. While popcorn appears to have not been a menu item for the pilgrims, it can still be used as a great treat on Thanksgiving. It can also be used as a fun but messy Thanksgiving game that is appropriate, especially for children. However, it can also be fun for adults as well.

There should be at least two teams of four or five. The players on each team should be placed in a staggered formation between their bowls as equally as possible. Each team gets a large bowl filled with popcorn. These bowls are set on one side of the room, while an empty bowl of the same size is placed on the other. The teams must transport all of the popcorn to the empty bowl on the other side of the room. They can only use a small measuring cup. The first player passes the cup to the next player and so on until the last player dumps it into the empty bowl. The cup is passed back and forth until a team gets all their popcorn into the empty bowl. They win all the popcorn in the game.

Hand and foot turkeys make great decorations during Thanksgiving

Thanksgiving crafts can keep the children busy and entertained while the parents enjoy some conversation time. One of the easiest of all Thanksgiving crafts is the hand and foot Turkey. This craft requires construction paper, crayons, scissors, markers, and glue or tape. Children should only receive safety scissors, which have plastic guarding them from getting cut on the back edge of their scissors.

Children start by tracing both of their feet onto the construction paper. They cut it out and glue them together to make the turkey body. They should be glued together on top of each other with the heels facing opposite directions to give the body depth. They then trace multiple copies of their hands to glue behind the turkey. This serves as the turkey’s tail and should be full and multicolored. Two small orange feet should be glued to the bottom of the turkey to finish the body. Kids can finish the face by using white and black circles to make the eyes, orange triangles to make the mouth, and red paper to create the turkey beard. They can write their name or a Thanksgiving message on the turkey to hang on the wall.

Sharing thanks and fibs creates a fun and meaningful game

Another great game for Thanksgiving is Thanks and Fibs. This game is great for all ages but is especially fun for younger children. Everybody sits in a circle during this game. The starting player names one thing that they are thankful for that year. Players should tell a brief story about what it is and why it makes them thankful. They can tell a true story. They are thankful for state a “fib.”

Everybody in the circle votes on whether they think it is the truth or if it is a fib. If it is true, a point is awarded to the player who told the story as well as the voters who voted true. If it is a fib, only the players who voted fib get a vote. However, if it is a fib and every player voted it as true, the storytelling player earns five points.

Play continues one player at a time around the circle until every player has had a turn to tell a story. The game can continue indefinitely until players decide they want to stop. All the points are tallied up at the end, and the player with the most points wins a small prize, such as a pumpkin pie or something else appropriate for the season.

I had so much fun making my Fall Mason Jars, I knew I wanted to make Christmas Mason Jars! And Christmas decor would not be complete without Santa 🙂 I thought a Santa Mason Jar would be a little tougher to make, but he is actually really easy. You just need one color of paint, red, black ribbon, and silver pipe cleaners. You can have your Santa Mason Jar Craft ready to be displayed or for gift-giving in under 10 minutes (not including dry time).

I have the tutorials on how to make all those adorable Christmas Mason Jars listed below, so be sure to check them all out.

Santa Mason Jar Craft

Here’s what you need to make Santa Mason Jars:

  • Red Spray Paint – I used Rust Oleum Semi-Gloss, you can pick up a can at Walmart for under $4 or on Amazon
  • Mason Jars – I got a 12 pack at Walmart for under $9, or check on Amazon
  • Black Ribbon – I used one with a bit of silver in it, I got it on clearance at Jo Ann Fabrics.
  • Silver Pipe Cleaners – You can find these at any craft store, Walmart, etc. I happened to have a few at the house and you only need a partial one for each Santa you make
  • Glue – I used hot glue, but super glue would work too

Holiday Mason Jars

Here’s how to make your Santa Mason Jars:

  • Take the lid off the mason jar, and then spray the entire jar red – I place my hand inside the jar partially while spraying
  • Allow the jar to dry – mine was ready to go in about an hour or two. I let it dry outside, but I do live in Florida 🙂
  • Using a hot glue gun, glue the “belt” onto your jar – measure out your ribbon before gluing it on
  • Using scissors or wire cutters, cut a 2-3 inch piece of silver pipe cleaner – you may have to make your longer depending on how big your black ribbon is, mine is about 1/2 inch.
  • Shape the silver pipe cleaner into a square, with one small twist, attach the ends together
  • Using a hot glue gun (or super glue) glue on your “belt buckle”
  • Fill with kisses if desired

DIY Santa Mason Jars

Santa needs reindeer!  So, of course I had to make Rudolph too 🙂

Reindeer Mason Jar Craft

 

Here’s what you need to make Rudolph the Red Nose Reindeer Mason Jars:

  • Glue – I used hot glue, but super glue would work too

Here’s how to make your Rudolph the Red Nose Reindeer Mason Jars:

  • Take the lid off the mason jar, and then spray the entire jar brown – I place my hand inside the jar partially while spraying
  • Allow the jar to dry – mine was ready to go in about an hour or two. I let it dry outside
  • Using a hot glue gun, glue the eyes and “nose” (the red pom-pom) onto your jar
  • To make the reindeer antlers, you will need 2 brown pipe cleaners. Twist the two ends together so you have one long pipe cleaner. Wrap the pipe cleaner around the top of your jar, starting at the front and ending in the back. Do one simple twist in the ends of the pipe cleaner so that it will stay up on the jar. Gently bend the remainder of the pipe cleaner on both sides to resemble antlers.

Candy Cane mason jars

Here’s what you need to make Candy Cane Mason Jars:

Here’s how to make your Candy Cane Mason Jars:

  • Paint the entire jar white
  • Allow the jar to dry for at least 30 minutes
  • Spray a red “line” on the top and bottom of the jar
  • Allow jar to dry thoroughly
  • Fill jar with candy canes or red and silver kisses if desired

Mason Jar Crafts

I love decorating in snowflakes and light blue over the holidays, so I also made a simple light blue jar and attached a silver bow. You just need the light blue paint, mason jars, and silver ribbon to make this one. Simple and classy!

Our 1st USF Football Game #BullsUnite

My kids have been telling us for awhile now that they have never been to a football game. And come to think about it, it’s been about 10 years since I have been to one. My husband and I discussed that we would work on getting them to a USF game – since it is close and he is actually an Alumni.

Then I got an invitation to go to the game USF vs Temple at Raymond James Stadium last weekend from my awesome relationship with the Tampa Bay Bloggers! Talk about perfect timing 🙂

I haven’t been to a college football game since I was in college…so just a few years ago ;)…so I wasn’t sure what to expect. My husband was a bit concerned that the crowds were gonna be crazy and that parking was going to be a mess.

So, how was it?

It was AWESOME! USF Bulls fans are a blast! EVERYONE and I mean EVERYONE had on some form of USF gear, from shirts to hats to face paintings to jewelry.  There was so much participation from the fans during the game that you couldn’t help but get involved. The singing, the cheering, the “1st Down” calls. We had a BLAST! It was absolutely the perfect 1st Game experience for our kids (ages 10 and 8) and we are totally looking forward to going back again. It was more fast-paced and enjoyable than a professional football game (my husband has been to a few). And the Team Spirit was just so FUN!  Oh, and the parking was a breeze and the crowds was fab!  AND….WE WON!  GO BULLS!!!

Oh, and be sure to visit the Bull Zone tailgate, there are vendor tents and a live DJ. Our game was at 7:00 and the Bull Zone area was open from 4-6:30 p.m., and the USF Football players and coaches walk in a procession from their buses into the stadium during what is called the “Bulls Stampede.” The USF Herd of Thunder (HOT) marching band comes to Bull Zone after Bulls Stampede.

It’s official. I am a soccer mom. When the kids were younger, we had them try all sorts of different sports, ice hockey, basketball, baseball, karate, soccer, etc. And the sport that has stuck with them both is soccer. Of course, it’s the one sport that neither my husband nor I have ever played.

But we bought Soccer for Dummies (for my husband and I), started watching soccer on TV, and are now more involved than ever 🙂 And as we go to and from the soccer field on a regular basis, I thought I would share some of our must-haves.

Here are my Soccer Mom Must Haves:

Water Bottle

Not only for your child playing, but for you and yours that are sitting on the sidelines. It’s November and it was 95 degrees at our last game. My husband, daughter, and I went through plenty of water that day too!

Soccer Ball

Yes, there is always a game ball, but we always bring our own for practice before the game.

Phone Numbers of the Coaches

Store ’em in your phone, you know, just in case you forget what field you are playing on. Not like I have ever done that before….. 😉

Soccer Mom Essentials

Athletic Bag

My kids both have one. Steven carries his goalie gloves, his goalie shirt, and his ball in his. If you carry the ball, you can easily fit in water, sunscreen, bug spray and our all-star players other essentials right in the bag.  I love that they have their own bag, it gives a sense of responsibility for what they need to make sure they bring.

Healthy Snacks

Our team rotates snacks weekly, but remember to bring something for your other kiddos sitting on the sidelines watching. It never fails that my daughter tells me she’s hungry within 5 minutes of my son’s game starting.

The bugs are HORRIBLE here in Florida, I swear mosquitoes could totally lift up my daughter and carry her away. Our coach has actually started asking for parent volunteers to bring some in for the players to our nightly practices.

The holidays are coming and schedules are being made and meals are being planned.  There is something about a warm and yummy breakfast that just screams family memories!  And the Cream Cheese Cinnamon Roll Monkey Bread Recipe I have for you guys today is just that.

You only need a few ingredients (which I have a coupon for those Cinnamon Rolls for you guys listed below!) and about an hour or so to get a little messy.  I actually have a Winn-Dixie real close so I rode my bike up, used my coupon, and rode home – savings, exercise, and the ingredients for a delicious meal!

You actually take the Pillsbury cinnamon rolls out of the package, unroll them, then cut the strips in half, then you fold them in half.  I did these steps right on my counter.

Once you have them folded in half, you place equal amount of cream cheese right onto the cinnamon roll strips.

Now that you have the cream cheese on the strips, you fold the cream cheese into the middle of the roll and gently “crimp” the ends of the cinnamon roll so that the cream cheese is nicely tucked inside.  Then you will layer your cinnamon roll cream cheese balls into your greased baking dish.

Once 40 minutes of baking at 350 degrees and you have allowed your Cream Cheese Cinnamon Roll Monkey Bread to cool, you will drizzle on the icing for a breakfast that your family will LOVE.

Ingredients

  • 2 cans 17.5 oz each Pillsbury™ Grands!™ Flaky Supreme refrigerated cinnamon rolls with icing
  • 8 oz 1/3 fat cream cheese
  • 1/4 cup butter cut into pieces

Instructions

  • Heat oven to 350° F.
  • Grease 12-cup fluted tube cake pan with shortening or cooking spray.
  • Cut block of cream cheese into 24 equal-sized cubes. (Start by first halving block so that you have 2 thin pieces, and then cut each thin half into 12 equal squares.)
  • Set aside icing from cinnamon rolls and set it aside
  • Separate each can of dough into the 5 rolls; unroll each roll, and cut each in half.
  • Take a section of dough and fold it over so you have a rectangle shape that is 1 layer of dough thick.
  • Place a square of cream cheese in the dough; fold over the dough, and gently crimp it around the cream cheese.
  • Repeat with remaining dough pieces.
  • Place cream cheese-filled dough balls in pan.
  • Place butter pieces on top.
  • Bake 40 to 45 minutes or until golden brown across top. Cool 10 minutes; run knife around edge of pan to loosen.
  • Place heatproof serving plate over pan and turn over; remove pan. Cool 10 minutes longer.
  • Drizzle reserved icing over top of bread, allowing some to drizzle down side.
  • Pull apart to serve; serve warm.
  • Enjoy!

Pumpkin Rolls with Honey Butter

Fall is the time to enjoy all our favorite seasonal flavors.  And pumpkin is always on the top of that list.  I usually think of pumpkin in desserts, so I wanted to make something a bit different.  Pumpkin Dinner Rolls.  They are made from scratch, the rise time is only about 2 hours, and they have just a touch of sweetness to them that make them perfect for any dinner.

If you know me, you know I am not much of a baker.  I will make the occasional cupcake or cake, but I am much more comfortable in the kitchen when it comes to slicing, dicing, sauteing, and using the crockpot.  That being said, if I can make these delicious Pumpkin Rolls, you can too!  Once the dough is made (pictured above) you let it rise for at least an hour and it has doubled in size.

Once the dough has risen, you take it out of the bowl, cut it in half, then you cut in 2-3 squares or circles (whichever shape you would like your rolls in) and place them on a greased cookie sheet for another 45 minutes or so.  You will find that the rolls with rise again.

Then you can let the baking begin!  And be prepared, because your house is going to smell absolutely amazing 🙂

This recipe for Pumpkin Dinner Rolls will make about 30 rolls, so it’s great for a family gathering, like Thanksgiving or Christmas!  You can also freeze any leftovers, or reduce the recipe size to make less if you prefer.

I actually had all the ingredients for this recipe right in my pantry, I love it when that happens 🙂  If you have a can of Pumpkin Puree in your pantry, I bet you have the rest of the ingredients too!  I love cooking with cans, it makes for cooking and baking a LOT easier when I don’t have to worry about what ingredients may still be ready-to-use in my crisper drawer in the refrigerator.

Ingredients

  • 5 cups better for bread flour
  • 15 oz pure pumpkin puree
  • ¾ cup 2% milk, scalded
  • cup light brown sugar
  • cup white sugar
  • 1 tsp cinnamon
  • tsp allspice
  • tsp nutmeg
  • 6 tbsp butter
  • 1 egg
  • 1 tsp salt
  • 2 packages active dry yeast (1/2 ounces)
  • ¼ cup lukewarm water

Honey Glaze

  • 2 tbsp honey
  • 1 tsp water

Honey Butter

  • 1 cup soften salted butter
  • cup honey
  • ½ tsp salt

Instructions

  • Pour hot milk in a mixing bowl, add butter and stir to melt.
  • Add sugars, pumpkin puree, and salt to the milk and mix well.
  • In a separate small bowl, put yeast in with lukewarm water and a teaspoon sugar.
  • When the yeast gets foamy, add to the pumpkin mixture.
  • Add the egg, mix well.
  • Slowly add in flour and mix with a wooden spoon or in your mixer (using the bread hook) until well combined. *The dough will be sticky. If using a mixer, the dough will pull itself from the side of the bowl.
  • Remove the dough from the bowl and put it on your counter or a wooden board dusted with a little flour.
  • Knead with your hand for 1 minute.
  • Form the dough into a ball shape, place in a greased bowl and cover with a cloth.
  • Let it rise in a warm place until it doubles in volume, about 1 hr.
  • Punch the dough to deflate and knead it for a few seconds on a wooden board or your counter. Cut the dough in half.
  • Cut each half into equal pieces. *You will get about 15 pieces per half
  • Roll each piece into a ball shape with your hand if you want them round. *I left some of mine square
  • Place them, 2" apart, on a baking pan or greased cookie sheet and let them rise again, about 45 minutes.
  • Preheat oven to 350°
  • Bake for 10-15 minutes. *Start checking regularly at 10 min mark, you don't want them to brown too much. The bottom should be a nice golden brown.
  • Brush the rolls with a little honey diluted with water last 1-2 mins.
  • Serve with honey butter.
  • Enjoy!

  • Mix the water and honey.

  • Mix together ingredients and serve with rolls
  • Refrigerate or freeze leftovers

Notes

You will notice that in the recipe I mention to brush a little bit of diluted honey on the rolls in the last minute or two of baking. This makes the rolls not only shine, but it adds a bit of sweetness to them with is amazing. That is why I also recommend serving them with Honey Butter. You can make the honey butter at home in just moments.

Cooler weather is here, and I know that means many of us will start to worry about winter weight gain. We crave comfort food, sometimes it’s hard to find the motivation to head out in the cold (fuzzy socks and a warm bed always sound better!), and schedules start to get crazy and all of a sudden! I thought I would share a few tips that will hopefully help you stay on track with your goals.

Drink Water

Even though you are chilly, you still need to hydrate your body! Try to keep a glass of water next to you all day. This time of year is also a great time to infuse your water or add flavor to it.

Be Prepared

Leave your workout clothes out the night before. If you see them out in the morning, you are more likely to put hem on. And DO NOT let your workout clothes turn into your comfy clothes!

Work out

Now that you have your workout clothes on, make sure to work out! Walk outside, go to the gym, go for a run, go to Jazzercise, do a DVD at home. Rake leaves 🙂 Just make sure you are still moving.

Watch what you eat

We are going to start seeing candy, cookies, and desserts just about everywhere now. And it may be hard to resist.
