I love desserts. Cakes, cupcakes, chocolate, vanilla, caramel, anything sweet really. I’m not overly particular, but that calorie count will keep me away most days. How does a vanilla Weight Watchers cupcake sound? Sounds PERFECT to me!  I adapted this recipe from one I found on Hungry Girl and I was excited to try it.  I will admit that these Vanilla Weight Watcher Cupcakes will take you a bit longer to prep than the regular out of the box cupcakes, but the fact that you won’t have the guilt is totally worth it!

It will take you about 10-15 minutes to prep and cook time for these yummy weight watcher cupcakes is about 15 minutes. That means in about 30 minutes you can be enjoying these WW Vanilla Cupcakes with friends and family. If you want to share that is…Well, I recommend sharing…this cupcake recipe makes about 22-24 low fat cupcakes and if you eat them all, you will lose out on that whole “healthier” part 🙂

How does a low calorie Weight Watcher cupcake sound? Sounds PERFECT to me! I adapted this recipe from one I found on Hungry Girl, grab the recipe!

Equipment

  • Oven

Ingredients

Frosting

  • 12 oz Whipped topping - Fat Free, thawed (1.5 containers if you buy the 8 oz. container)
  • 3 tbsp Sugar Free Fat Free Vanilla Instant Pudding Mix

Cupcakes

  • 1 box moist-style yellow cake mix
  • 3 tsp baking powder
  • 2 cups diet lemon-lime soda at room temperature
  • 1 tsp vanilla extract
  • 1 cup liquid egg whites or (about 8) raw egg whites

Topping

  • Sprinkles if desired

Instructions

Frosting

  • Combine whipped topping and pudding mix in a bowl, and mix until smooth. Cover and refrigerate until cupcakes are ready to be frosted.

Cupcakes

  • Preheat oven to 350°
  • In a large bowl, combine cake mix with baking powder and mix.
  • Add soda and vanilla extract, and stir or whisk until batter is smooth. Set aside.
  • In a separate bowl, whip egg whites with a handheld electric mixer (or with a whisk really fast) until fluffy, about 1 - 2 minutes.
  • Gently mix egg whites into the cake batter until thoroughly combined.
  • Line muffin pans with baking cups and/or spray with nonstick spray.
  • Evenly distribute batter among the cups. Cups can be full.
  • Bake for 15 - 17 minutes, until a toothpick inserted into the center of a cupcake comes out fairly clean.
  • Set aside and allow to cool completely.
  • Once cupcakes have cooled, top each evenly with the frosting and sprinkles.
  • Enjoy!

When the weather is chilly, there is nothing quite like a nice bowl of soup to warm you up from the inside out.  This Chicken Tortilla Soup recipe is made in the slow cooker and can be made today or it can be one that you prep ahead of time and toss in the freezer.   Personally, I love freezer meals!  There is nothing quite like waking up in the morning and having dinner started in about 2 minutes…all before coffee…no thinking required 🙂

This easy crockpot Chicken Tortilla soup recipe is prepped in about 5 minutes, then it cooks all day in the slow cooker making the chicken nice and tender.  Cooking the soup in the crockpot also allows all the ingredients to simmer together to maximize the flavor. I love using my slow cooker!

Slow cooker meals are fantastic for busy families for several reasons:

I put that this soup recipe makes 8 servings, and they are hearty servings, so you may end up with leftovers…which always makes me happy!  I love easy lunches for the next day! In fact, my friend and I make healthy lunches in batches for each other weekly, and this one is always in the rotation!

This is a healthy slow cooker recipe that can be prepped as a freezer meal or you can make this Chicken Tortilla soup for dinner tonight.

Equipment

Ingredients

  • 1 lb boneless skinless chicken breasts
  • 24 oz stewed tomatoes 1 can – you can use diced tomatoes as well
  • 15 oz corn 1 can
  • 10 oz original Ro*tel 1 can
  • 3-4 cups low sodium chicken broth depending on how thick you want your soup
  • 15 oz black beans 1 can
  • 1 medium onion chopped
  • 2 bell peppers sliced – I used red
  • 1 tbsp minced garlic
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1 tsp salt
  • 1 tsp pepper
  • Sour cream, shredded cheese and tortilla chips to garnish if desired

Instructions

  • Place all the items into the slow cooker and cook for 6-8 hours on low
  • If making the meal ahead of time, label freezer bag and then place all ingredients into the freezer bag and toss in the freezer until ready for use
  • At least 30 minutes before serving remove the chicken and shred it with two forks
  • Place the chicken back in the slow cooker
  • Top with Sour cream, shredded cheese, and tortilla chips if desired
  • Enjoy!

Why My Family Loves The Monster Jam

Tampa is a great city.  We have amazing restaurants, beautiful beaches, things to see, things to do, and there are always unforgettable shows to catch.  And with all of the things that can be on my calendar, there is one event that my family and I REALLY look forward to.  The Monster Jam.

Seriously??  You may be saying right now.  And my answer is simple.  Yes, seriously. 

I have told you all in the past how my love for the Monster Truck Show began.  Trust me, I never thought this would happen.  But, now I wouldn’t imagine missing a year.  This was our 4th year going together as a family and we loved it.  Our tradition started…well, 4 years ago, when my son made the decision to take some friend to the Monster Jam instead of have a birthday party, and each year he decides the same thing.  He has one friend that has come with him every year and the excitement from my son and his buddy is just too cute!  They will actually talk about it all year long!

This year we had our crew of 6 then we met up with another 14 people!  That is a totally of 20 of us!!  We all went to the Party in the Pits and got our autographs, got to meet some drivers and of course see lots of the amazing trucks.

After the Party in the Pits we “tailgated” with everyone.  We had a small grill, made hot dogs and played some football until it was time to go in and grab our seats.

I will say that there have been years where Grave Digger didn’t make it the whole show, but this year Adam Anderson rocked the Raymond James Stadium!

And MAXD…well, WOW.  His freestyle race was OUTSTANDING and when he jumped over THREE Monster Trucks with fireworks exploding, all of Tampa Bay must have heard those cheers.

New this year (well, at least to me) was the donut competition.  Which in my opinion El Toro Loco totally rocked.  You can see hers on my Instagram page here.

There were also Mega Trucks this year.  They were actually really fun to watch!  Not as big as the Monster Trucks, but there were still really loud, really fast, and did some good racing.

Some of our favorite trucks left the stadium after the races, and I will admit, we were a bit nervous that we weren’t going to see them again.  But, everyone but Avenger made it back out for the Freestyle.  Grave Digger and Monster Energy won the races 🙂

Monster Mutt, Junk Yard Dog at this show, is a personal favorite of mine, especially since I got to meet the driver when I was done at Feld Entertainment last month.  The mechanics were working on his truck in-between the races and the freestyle, he had some steering issues, but he still gave a great performance.

In the end, Grave Digger, the crowd favorite, did indeed win!  And so did we.  We all left the stadium with huge smiles and memories in our hearts.

The Trucks

I mean, where else are you going to see such awesome looking trucks that have tires bigger than you?!

The Drivers

If you go to the Party in the Pits, it’s great see them and get an autograph (or 10) but even if you don’t do that, you can just tell from the way they drive that they love us fans.  They are here for us, and they love that you are here for them.  So, YELLING as loud as you can is strongly encouraged 😉  I have been known to come home without a voice!

It’s Family-Friendly

There are fans in the stands as young as 2 years old to fans that are 72+ years old.  There is something for everyone to enjoy.

Ticket Prices

Tickets start as low as just $15.  As a mom that likes to watch her pennies, I appreciate an event that won’t break the bank

The Memories

I remember the 1st time we went as a family…my daughter was just 4 and she sat on my lap yelling her little heart out as Medusa jumped and flipped.  I remember when my son would just sit in awe and look at the trucks and how fast they would go.  And now today, as he sits with his two buddies, I look at them and think, they are going to be doing this when they are teenagers.  We have made a tradition.  We have made memories that will last in these boys’ hearts for years to come.  And that just melts my heart.  Memories, family, friends, and smiles.  What more could a parent ask for?

I love the trucks, the love the show, and I love that for the last two years I have been able to talk to the mechanics and some of the driver down at Feld.  I am not joking when I say that this is one of my favorite events of the year!  Hopefully it is one of yours too!

We are well into football season, in fact, there is a BIG GAME coming I hear! Will you be watching? I do enjoy watching some sports, but to be honest, I love the snacks, the time with friends, and the commercials the most! A good play is always better when it’s celebrated with friends and food 🙂

We love having friends over and we are definitely planning some fun for the big game. If you are too, I thought I would share a great way to share your snacks and finger foods with everyone at your party. Have you heard of a Snack Stadium? I will honest, it was a term that I was not totally familiar with, so I googled the term. And I strongly suggest you doing the same! I was completely amazed by some of the creations that some folks did! We are talking HUGE “stadiums” made completely from snacks and foods for your party. WOW.

Now, I am all for being a bit creative in the kitchen and surprising your guests with delicious foods, and of course, themes are always fun. But, I am also one of those folks that likes to create things that YOU can then create at home too! So, as I was planning my Snack Stadium to share with you all, I wanted it to be fun, but also easy for you guys to recreate at home.

The most important part to a Snack Stadium is the…SNACKS. I went to Walmart (you can also check them out online) and got all my favorite snack foods and treats and I was on my way back home. A good party has an appetizer, a “meal” option, dessert, and drink.
For the appetizer, I mixed cream cheese and TOSTITOS® Medium Chunky Salsa for an easy dip.

I put them in individual cups and stuck the TOSTITOS® CHIPS right in there so that folks could grab a cup and go…no need to worry about double dipping. The main meal was my favorite…and probably the easiest!

I grabbed a big bag SNICKERS® Minis 40oz. and decided to make SNICKERS® Rice Cereal treats for the dessert.

I grabbed the Skittles® XL 41 oz. and decided to make am easy and colorful punch for the drink.

Plus, that left me lots of extras to put out for snacks as the party went on.

For the “main meal” I took chicken, 2 cans of Pepsi™ and a half of onion and tossed it in the crockpot. Right before the party, you shred the chicken and toss it back in the “juices” in the slow cooker so that it’s nice and moist and you have Pepsi™ Shredded Chicken Sliders! So easy and so delicious! I’ll be sure to share the recipe below, so be sure to grab it!

Now that all my components for food are in order, the organization of the Snack Stadium was next.

  • I placed the Pepsi™ Chicken and Rolls right there in the center, as they were the main focus.
  • Next came the TOSTITOS® and Cream Cheese Salsa dip, I used smaller clear cups for those.
  • Then the Skittles® Punch (lemon lime soda with Skittles® in it! I recommend separating out the colors like you see above) was in the bigger cup.
  • Up front is the SNICKERS® Treats.  Dessert should be last 😉  To make the SNICKERS® Treats you just add about 20 SNICKERS® Minis to the marshmallow melting part of the process, they melt in and taste AMAZING.  Plus, your treats end up a light brown color…kinda like a football 😉

The different heights give you that stadium feel, and it also makes it easy for grabbing your favorite foods.

I did grab a tablecloth while I was at Walmart (for under $2!) All in all, our Snack Stadium was a hit!

As I mentioned above, I did use the extra SNICKERS® Minis to place around my stadium…I viewed them as the tailgaters 🙂

Recipe Type: Lunch/Dinner

Serves: 10
Ingredients
  • 3 lbs of chicken
  • 2 cans of Pepsi™
  • ½ onion, diced
Instructions
  1. Place all the ingredients into the crockpot and let it cook on low for 4-6 hours.
  2. When chicken is cooked throughout and is easily “shredded” with a fork, take it out of the crock pot and use 2 forks to pull it apart.
  3. Once the chicken is fully shredded, place it back in the crockpot for about 30 minutes .
  4. Serve on rolls and with BBQ sauce if desired
  5. Enjoy!

I love freezer to crockpot meals.  Especially ones that only have a few ingredients and are full of flavor, like this Apricot Chicken!  Using your slow cooker is a great way to make those busy nights a LOT easier.  Just add your ingredients into the slow cooker in the morning and be ready to enjoy a delicious meal with your family come dinner time.

This Apricot Chicken recipe requires just THREE ingredients:  apricot jam, french onion soup mix, and chicken!  And your prep time is under 5 minutes 🙂  It doesn’t get too much easier than that my friends!  And it has a ton of flavor for only 3 ingredients. I have seen people make a version of this slow cooker meal by adding Catalina dressing, I haven’t tried that yet, but I am planning on it.

  • If frozen cook for 8 hours on low or until done, it thawed cook on low for 4 - 6 hours

I’m sure you have pondered that question plenty of times.  What workout is best for ME?  There are so many to choose from.  Running, walking, jogging, biking, spinning, Beach Body , P90X, yoga, Jazzercise, dance classes, there is even pole dancing classes, Cross Fit, Zumba, Les Mills, there are group classes and there is personal training.  Oh the list goes on and on.  In fact, there are so many it could make your head spin!

So, What Workout Routine Is Right For You?

Well, the answer to that is simple.  It’s the Workout Routine that you DO.

All workout routines start with putting your mind to it, making a promise to yourself to do it, and by putting one foot in front of the other.  That first step to the DVD player, to your car, to the sidewalk out front, to your bike, etc. is the most important step.

Of course, I am not a doctor and can’t tell you that you are capable of doing every single type of exercise out there, but in my personal opinion, you can sure try them once!

All types of exercise are designed to encourage you to continue on with the routine.  Your job is to find one (or a few) that you like.

I enjoy mixing it up.  I like to run, bike, go to Jazzercise and swim every now and then.

I run because I can.  I have always been a runner and it seems as though it is something that my body just enjoys.  I can not run for 2 weeks, then lace up my shoes and take a 5 mile run.  Running is amazing cardio.

Biking is a way for me to really focus on my legs.  I love riding my bike up to the grocery store when I just need a few things.  I put on my backpack and I am ready to roll.  If I need to get my workout in and I need to hit the store…why not get them both in at the same time?

What Workout Routine is right for you?

Jazzercise is my full body workout.  It is my weights, it is my cardio, it is a FUN way for me to lose about 600 calories in 55 minutes.  I love that Jazzercise instructors always give you a high-intensity and low-intensity option at class, they call out the steps (that way I don’t mess up as much 😉 ), and I love the music.  The music is now, it is upbeat, and it keeps me motivated the whole class.  I honestly believe that Jazzercise makes me a better runner.  I honestly believe that Jazzercise makes me a better ME.

Swimming.  Swimming is an amazing full body workout and since we live in Florida where it’s HOT a LOT of the year, I do try to get in the pool and do some laps.  I can swim, sure, but laps are not always my strongest routine.  But I try 🙂

Is running, biking, swimming or Jazzercise for you?  Well, that’s up to you!  What is for YOU is up to YOU.  But the important part is taking that step.  No matter what direction you decide to head in, I encourage you to take that step.  That step to start walking, to try a class, to dust off your bike, to open that DVD that has been in your cabinet for months now, that step to a happier YOU.

Chicken Bacon Alfredo Pizza

Do you like to make pizza at home?  We definitely love takeout from our favorite pizza place, but sometimes making pizza at home is a fun experience!  Plus, you can get creative with your pizza and add whatever toppings you want without getting charged extra 😉 On this homemade pizza recipe I decided to skip the red sauce and use alfredo sauce.  I mean, it is our absolute favorite dipping sauce, so why not add it directing to the pizza crust!  Genius.  I used jar alfredo sauce in this recipe, but you can easily make your own alfredo sauce if you prefer.

Chicken, bacon, and Alfredo sauce.  You really can’t go wrong with that combination, can you? No, you really can’t…plus bacon makes everything just that much better, doesn’t it? This week my family and I wanted to get a little creative with pizza night, so we made a delicious pizza that we will definitely be making again!

Chicken Bacon Alfredo Pizza Recipe

You just need 7 ingredients to make our Chicken Bacon Alfredo Pizza.  I added the sweet pepper rings for an extra bit of color and flavor, and to my surprise the kids even ate them!  That’s pretty exciting here in our house since getting them to eat any veggie is a challenge 🙂

You spread on the Prego Homestyle Alfredo Sauce on the crust just like you would any pizza sauce.  I used 3/4 cup and it was perfect…not too dry and not too saucy.

Once the sauce is on, you layer on your toppings.  Start with the chicken, then bacon, then the veggies, and finally sprinkle on the cheese!

It bakes to a beautiful golden brown and all the flavors melt together perfectly!

Ingredients

  • ¾ cup Prego Homestyle Alfredo Sauce you can make homemade if you prefer
  • 1 ready pizza crust - found in refrigerated section I used the thin crust variety
  • 3 slices cooked bacon - roughly chopped
  • 1 cup cooked chicken I used rotisserie chicken
  • 3 mini sweet bell peppers sliced with seeds removed
  • ½ cup diced onion
  • ½ cup shredded Italian Blend cheese

Instructions

  • Preheat oven to 400°
  • Spray cookie sheet with cooking spray
  • Roll out the pizza crust to fit your pan. I used a 15x10 cookie sheet
  • Spoon the Prego Homestyle Alfredo Sauce onto the pizza crust
  • Layer on the chicken, bacon, onions, sweet peppers, and then sprinkle on the cheese
  • Bake for 12-14 minutes until the crust is golden brown and the bottom of the pizza is also a golden brown
  • Enjoy!

Notes

One pizza served our family of 4 with no leftovers.
I used rotisserie chicken because of the ease of it, you can easily substitute shredded, diced or even canned chicken if you prefer.

The holidays are over and the New Year has begun.  What goals have you set?  Have you even thought about it yet?  Today is the First Day to get back into the swing of things for me.  My husband is back at work, the kids head back to school tomorrow but most of their friends are back today, schedules will start getting back to normal.

I normally start my day with a smoothies, I have been doing it for months and I have found that it’s a fabulous way to get in fruit, vegetables, and lots of goodness to get my day off to a good start.  If I start the day off right, my choices throughout the day happen to be better.

BUT, I haven’t day a smoothie regularly for about 1.5 months.  With family travel, the holidays, and everything else in-between I just haven’t had my blended goodness.  And TODAY I changed that.  It’s a New Year and I am dedicated once again to a New ME.  Better choices = results.

In less than 5 minutes I can have a meal that is filled with nutrition and makes me feel GOOD.  No more holiday cookies, no more peppermint bark, no more miscellaneous snacking because I never got around to actually eating breakfast.

Peanut Butter Smoothie

Today, I started my day with my Super Peanut Butter Smoothie.  As I was at Walmart last night getting the kids some staples for their school lunches, peanut butter, bread, cuties, etc., I made the decision to grab some staples for me too.  I got some fresh produce and Jif™ Peanut Powder.  I have always enjoyed adding peanut butter to my smoothies for the added protein, but the fact that Jif™ Peanut Powder has the same amount of nourishing protein as traditional peanut butter, but with 85% less fat had me grabbing for the powder!

It’s a great way to add delicious peanut taste to my daily smoothie with less calories and sugar.  And I don’t know about you, but I am all for LESS calories and LESS sugar!  In fact, Regular Jif™ Peanut Powder is made from just one ingredient – fresh roasted peanutsNo added ingredients that my body doesn’t need.

Easy Peanut Butter Smoothie Recipe

I put carrots and cucumbers in just about every smoothie I make, they are inexpensive and have little flavor, so they are easy to add to just about everything.  That being said, they are indeed in my Super Peanut Butter Smoothie.

When I think Peanut Butter, I think bananas.  So I added a half of banana in too.

Avocado.  Yes, I added avocado to this amazing smoothie as well.  Avocado is a Super Food and adds a creamy texture to your smoothie.

I will admit, I don’t have a fun explanation for the raspberries, I saw them in the store and they called out to me, so I bought them!  That’s the beautiful thing about smoothies, you can add what you feel like that day!

Here are the health benefits to the ingredients in this protein smoothie:

Carrots – The orange powerfood will give you vitamin A and is also linked to preventing cancer, giving you healthier looking skin and aids in digestion.

Cucumbers – These are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

Avocados – Besides being loaded with the “good fat”, they help heart health, lower cholesterol and lower triglycerides. Plus, they make your smoothie extra creamy 🙂

Bananas – Besides tasting great, they are loaded with potassium which helps muscles recover and relax, and they have also been known to help you sleep better.

Raspberries – These beautiful berries are rich in vitamins, antioxidants and fiber.  They also have a high concentration of ellagic acid which has been said to help prevent cancer.

My favorite ingredient is the Jif™ Peanut Powder, the flavor added is peanut butter perfect and I don’t have to stress about the fat.  I used Silk Almond Milk for my liquid, which added another layer of creaminess.

Ingredients

  • 1 small zucchini shredded (about 1 cup) - we used a potato peeler to "shred ours"
  • 8 oz turkey sausage we used the HOT variety
  • 6 slices bread we recommend a good bakery bread
  • 2 cups shredded, reduced-fat sharp cheddar cheese
  • 6 eggs
  • 2 cups low-fat/skim milk
  • 1 tbsp Dijon mustard
  • 1 tsp olive oil

Instructions

  • Lightly spray an 11x 7” baking dish.
  • Heat the oil in a large, nonstick skillet over medium heat. Add the sausage and cook, stirring often, until the meat is cooked through, about 5 minutes.
  • Line the baking dish with overlapping slices of bread.
  • Sprinkle the zucchini evenly over the bread.
  • Spoon the sausage over the zucchini and sprinkle evenly with the cheese.
  • In a large bowl, stir the eggs with a fork until broken up.
  • Add the mustard then the milk into the bowl with the eggs and stir until well-blended.
  • Pour the egg mixture over the bread mixture in the baking dish.
  • Cover and refrigerate for at least 4 hours or overnight.
  • To bake, preheat the oven to 350 degrees.
  • Uncover the casserole and bake about 45 minutes or until the top is puffy and browned.
  • Allow to cool for 5 - 10 mins before serving.
  • Enjoy!
