I love salmon.  I got hooked well over a year ago when I received the best salmon ever from Anderson Seafoods.  It is a hearty fish that is incredible when it’s cooked right.  Over the years we have tried lots of different recipes and we always lean towards the ones that have a nice glaze and are a bit sweet.  This Balsamic Glazed Salmon has great flavor and is easy to make!  That makes it a winner in our book 😉

Health Benefits of Salmon

High in Omega-3 Fatty Acids: Salmon is an excellent source of omega-3 fatty acids, such as EPA (eicosapentaenoic acid) and DHA (docosahexaenoic acid). These essential fatty acids have been associated with various health benefits, including reducing inflammation, supporting heart health, and promoting brain function.

Heart Health: The omega-3 fatty acids found in salmon can help lower triglyceride levels, reduce blood pressure, and decrease the risk of heart disease by reducing inflammation and improving blood vessel function.

Brain Health: DHA, one of the omega-3 fatty acids in salmon, is particularly important for brain health. It plays a crucial role in brain development and function, and consuming enough DHA may help improve cognitive function and reduce the risk of neurodegenerative diseases.

Salmon is one of my favorite fish to cook, it’s hearty and easy to pair with a delicious glaze, like this Balsamic Glaze. Bake up this salmon recipe soon!

Ingredients

  • 2 fillets of salmon
  • 1 tablespoon honey
  • 1 tablespoon minced garlic
  • 1 tablespoon dry white wine
  • 1 tablespoon dijon mustard
  • 1/3 cup balsamic vinegar

Instructions

  • Preheat oven to 400 degrees
  • Place aluminum on a baking sheet – make sure it’s big enough to wrap the salmon
  • Spray foil with cooking spray
  • Place salmon on foil
  • Mix remaining ingredients in a small bowl
  • Pour sauce mixture on the salmon
  • Close the foil around the salmon
  • Bake for 20 – 25 minutes until salmon is cooked throughout
  • Pour some of the extra sauce on the salmon before serving – it’s delicious!!
  • Serve with rice and fresh vegetables
  • Enjoy!

I have been using coconut oil for cooking for quite some time now and I love it! And I knew that there were many more uses for coconut oil, but I didn’t realize just how many. I recently made Powerfoods Snack Bars and the recipe called for coconut oil, then I had a friend tell me that she puts coconut oil in her smoothies, and then I had another friend that she uses coconut oil around her eyes to help prevent wrinkles! So, I decided it was time to share a list that highlighted some fabulous ways and benefits of using coconut oil.

  1. For Cooking – use it to replace olive oil and butter.  I especially love it in my seafood recipes and stir-fry
  2. Use as a salad dressing – melted
  3. Add to your coffee for flavor – this is an easy way to add more coconut oil to your daily diet
  4. Use in healthy powerfood snacks like Superfood Power Bars
  5. Add coconut oil into your smoothies and instantly make it a Power Smoothie
  6. Use it as an anti-aging facial moisturizer – I use a very small amount around my eyes, as all over my face tends to leave me a bit greasy
  7. Apply it directly to your body as a lotion – it will take a few to soak int your skin fully, so I don’t recommend getting dressed immediately
  8. Rub directly on age spots to help lighten
  9. Rub directly on skin to help prevent stretch marks during pregnancy
  10. Coconut Oil can be used as a mild sunscreen, it has a SPF 4
  11. Use coconut oil in homemade lotions, body butter (use with shea butter for the ultimate body butter!) soap, deodorant, shampoo, vapor rub, sugar scrubs, salt scrubs, natural bug repellent and chapstick recipes
  12. Use as a natural makeup remover
  13. Shave Oil – it will leave your skin silky smooth
  14. Massage oil
  15. Rub coconut oil directly on lips as a natural chapstick
  16. Rub into dry hair, put a shower cap on and leave for several hours and you have an intensive conditioner for your hair
  17. A very small amount rubbed on your hands and then through hair will help get rid of frizz

I am really excited to share this Peanut Butter and Fruit Smoothie Recipe with you guys today.  Smoothies recipes are limitless.  You can put so many wonderful things into that blending cup and end up with a drink that is absolutely amazing for you.  I try different combinations all the time and really enjoying sharing my favorites with you.  If you are a regular reader, you know that I put carrots and cucumbers in just about every smoothie I make.  They are inexpensive and add a little flavor to your smoothie, so they are an easy addition to just about everything.

The POWER part of this smoothie can be found in the smallest additions – the coconut oil, chia seeds, and PBfit.  In about 2 tablespoons you are getting a massive punch of good stuff.  Antioxidants, protein, “good fats”, and so much more.

12 Chicken Freezer Meals in 45 Minutes – Our Family Favorites

I have been getting Zaycon Chicken for awhile now, that means I place an order for 40 lbs of fresh, amazing chicken and I split it with a friend.  That means I get 20 POUNDS of chicken in one day.  The wonderful thing about that is that not only is the chicken absolutely amazing, it’s also really cheap in comparison to what I pay at the grocery store, and it forces me to make Chicken Freezer Meals and be organized.  Since I have been doing this now for awhile, I actually really look forward to stocking up the freezer with our favorite meals!  I have made a LOT of Freezer meals over the years and I have shared them all with you, but I thought today I would share the meals that have “made the cut” with my family and were a MUST-HAVE on this round of meals.

This is what I made:

What you need to freezer prep your meals:

  • CHICKEN – each recipe calls from 1.5 – 2lbs of chicken, use more of less depending on your family size
  • Gallon size Freezer ziploc bags – and a sharpie for writing on the bags
  • 2 jars Apricot Jam
  • 1 box of French Onion Soup Mix (it has 2 envelopes in it)
  • 1 bottle of Ranch Dressing
  • 1 bottle of Frank’s Redhot
  • 1 bag of shredded Cheddar Cheese
  • 3 8oz packages of 1/3 less fat Cream Cheese
  • 1 small Jar of Pesto
  • 1 envelope of Ranch Seasoning and Dressing Mix
  • 1 envelope of Zesty Italian Dressing Mix
  • 1 can of 98% Fat Free Cream of Chicken Soup
  • 1½ tablespoons minced garlic
  • 1/3 cup low sodium soy sauce
  • 2/3 cup ketchup
  • 1/4 cup honey
  • 2 jars of your favorite salsa – divided
  • 1 taco seasoning packet
  • Juice from 1 lime or 2 tablespoons of lime juice
  • 1/4 cup cilantro
  • 1/2 cup dijon mustard
  • 1/4 cup maple syrup
  • 1 tablespoon rice wine vinegar

Prior to serving (but not for the freezer prep) you will need these ingredients for the Easy Chicken Pot Pie, Chicken Taco Bake, Pesto Ranch Chicken and BBQ Chicken Sliders:

  • 1 can of Chicken Pot Pie Soup (Progresso makes one) – For the Pot Pie
  • 1/2 bag frozen mixed vegetables – For the Pot Pie
  • 1 package of refrigerated pie crust – For the Pot Pie
  • 1 bottle of your favorite BBQ Sauce – for the BBQ Chicken Sliders, you just shred the chicken and add the sauce!
  • 1 roll of crescent rolls – For the Chicken Taco Bake
  • 4 – 8 oz of shredded cheddar cheese – For the Chicken Taco Bake
  • 1 box of linguini – For the Pesto Ranch Chicken

Overall, I prepped 10 meals and 2 appetizers (the Buffalo Chicken Dip) in about 45 minutes!

Easter is such a cute holiday, celebrated mostly in the morning time and with yummy treats, I thought I would make a cute Mason Jar Craft for you all!  These Easter Bunny Mason Jars are not only easy to make, but they are also very cost effective to make…oh and they are adorable!!

DIY Easter Bunny Mason Jars

Here’s what you need to make Easter Bunny Mason Jars:

  • White Spray Paint – I used Rust Oleum Semi-Gloss, you can pick up a can at Walmart for under $4 or on Amazon
  • Mason Jars – I got a 12 pack at Walmart for under $9, or check on Amazon
  • Construction Paper – white and pink for the ears
  • Pink Craft Pom-Pom – or something similar for the nose and tail
  • Glue – I used hot glue, but super glue would work too
  • Googly eyes – if desired

Easy Easter Bunny Mason Jars

Here’s how to make your Bunny Mason Jars:

  • Take the lid off the mason jar, and then spray the entire jar white – I place my hand inside the jar partially while spraying
  • Allow the jar to dry – mine was ready to go in about an hour or two. I let it dry outside.
  • While your jar(s) are drying, cut out the bunny’s ears.  I just folded a piece of the construction paper in half and cut out an “ear” shape, then cut that in half so I had two “ears”
  • You can use pink construction paper to make the middle of the ear by following the same method, you can also color it pink with crayons or markers, or if you happen to have some pink faux fur laying around like I did, you can glue that on 😉
  • Once your jar(s) are dry, use hot hot glue to glue on your ears, nose, and tail…eyes if desired
  • Fill with candy, eggs, or your favorite treats if desired

I am a avid runner and I love going to Jazzercise, being physically active also means that my joints and muscles need extra attention at times. So, making smoothies like this Blueberry smoothie are great for my body! You have to learn to take of ourselves from the inside out!

In this Blueberry Superfood Antioxidant Smoothie I use fresh frozen blueberries, carrots, cucumbers, greens, turmeric, cinnamon, chia seeds, and a splash of milk.

Antioxidants are important. Antioxidants protect our bodies from damage and can even help with anti-aging.

Chocolate Coffee Cake.  So that means we get to have chocolate for breakfast.  AND I made us a lower-fat version, so we don’t have to feel guilty either 😉  One of my most popular, most pinned recipes, is my Low Fat Pumpkin Coffee Cake, and what made that recipe special is the topping is actually Honey Bunches of Oats!

That being said, can you guess what the secret ingredient to my Chocolate Coffee Cake is?  I’m sure you are thinking that Honey Bunches of Oats is involved in some way, but did you think it was Honey Bunches of Oats Chocolate?  Did you know that Honey Bunches of Oats had a Chocolate variety?  Well, it’s the newest variety to hit the shelves and it is not only amazing in a bowl with milk, but it is the perfect lower-fat ingredient in my Chocolate Coffee Cake Recipe, no chocolate chips needed! Honey Bunches of Oats Chocolate delivers the perfect combination of crispy flakes, crunchy bunches and the yumminess of real cocoa.

I used Coconut Palm Sugar in my recipe, that is why my batter is a light brown in color, if you substitute white sugar, yours won’t be as brown.

Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup butter, softened
  • 1 (8 ounce) package 1/3 less fat cream cheese, softened
  • 1 cup Coconut Palm Sugar or white sugar
  • 1 teaspoon vanilla extract
  • 2 eggs
  • 1/4 cup skim milk
  • 1 cup Honey Bunches or Oats Chocolate
  • For the Topping
  • 1/4 cup Honey Bunches or Oats Chocolate – crushed
  • 2 tablespoons Coconut Palm Sugar or white sugar
Instructions
  1. Preheat oven to 350 degrees
  2. Spray a 9×9 baking dish with cooking spray
  3. Combine baking powder, flour, baking soda, and salt in a bowl and set aside
  4. Beat softened butter and cream cheese with a mixer, until well-blended
  5. Slowly pour in the 1 cup sugar and vanilla extract until mixture is fluffy
  6. Add eggs one at a time, allowing each egg to blend into the mixture before adding the next
  7. Pour in about half of the flour mixture, allow it to blend some
  8. Pour in the milk, allow it to blend some
  9. Pour in the remaining half of the flour mixture, mixing until well blended
  10. Stop the mixer
  11. Gently stir in Honey Bunches of Oats Chocolate, until it’s evenly combined
  12. Pour the batter into prepared pan
  13. Mix 1/4 cup crushed cereal and sugar and sprinkle it over the top of your coffee cake batter
  14. Bake for 50 to 55 minutes or until you can insert a toothpick and the center comes out clean
  15. Cool for 10 minutes
  16. Enjoy!
Notes
I used Coconut Palm Sugar, you can easily substitute white sugar if you prefer. The Coconut Palm Sugar is a darker color which is why my batter is a bit darker in color.

I love to snack.  I love food.  I love to eat.  The trick for me is to find and make foods that are good for me.  I love cooking healthy, I love making my smoothies, but sometimes I get off track when it comes to snacking.  Since I work at home, I swear the chips and crackers in the pantry call out to me.  So, I really have to work on having easily accessible, great tasting food on hand that is also good for me.  And that is exactly where this Superfood Power Bars Recipe comes in.  Plus, the kids love these, and I feel great giving them to them because I know what’s in them…because I made them!

This Superfood Power Bar Recipe involves no baking and only about 10 minutes to make about 25 bars.  I adapted the recipe from BetterBody Foods, who sent me most of the ingredients to make them.

Superfood Power Bars Recipe

These no bake oatmeal bars are filled with the goodness that your body needs. Make a batch of these Superfood Power Bars today and have a healthy snack option the whole family will love.
Ingredients
  • 1/2 cup Better Body Foods LIV Fit Superfood Blend
  • 1 cup Organic Agave
  • 1 cup Extra Virgin Coconut Oil
  • 1 tablespoon Organic Vanilla
  • 1 teaspoon kosher salt
  • 4 cups rolled oats
  • 1/2 cup PB Fit Chocolate
  • 1/2 cup shredded coconut
  • 1/2 cup Peanut Butter Chips
  • 1/4 Organic Chia Seeds
Instructions
  1. Line a cookie sheet with wax paper
  2. Mix/blend, agave, melted coconut oil, vanilla, and salt until smooth
  3. Mix in other ingredients
  4. Spread on pan, cover top with wax paper and press
  5. Cut into bars
  6. Refrigerate if desired
  7. Enjoy!

Easy Superfood Power Bars

I can honestly say that these Power Bars not only taste amazing, but they actually fill that hole that my stomach seems to get between lunch and dinner!  They are also the first thing I grab after a hard workout to give my body a bit of fuel again.  I do store mine in the refrigerator, but you don’t need to.

Power Smoothie. Green Smoothie. Power Greens Smoothie. Super Foods Smoothie. Power Super Foods Smoothie. There are a bunch of different ways to say it, and there are a bunch of different ways to make a Green Smoothie. One of my favorite things is to come up with different ways to start my day. I always start my day with adding a variety of ingredients into my blender and I take pride in finding delicious and nutritious combinations and sharing them with you all!

Healthy Green Protein Smoothie

So, be honest, does the idea of a “Green” smoothie gross you out some? Don’t really drink “green” things all that often unless it’s green beer on St. Patty’s Day? Well, I would be one of those people that if you told me that I would be drinking anything with vegetables in it, I would have told you NO WAY. But, I have found that making smoothies is not only INCREDIBLY easy, but they are also a fabulous way to get in extra vitamins and nutrients into your diet without eating a plate full of food. I can have my smoothie made in and drank in just a matter of minutes – what other meal option can you have ready that fast that is this good for you??

Easy Green Smoothie

Get a healthy start to your day or replenish after a workout with these easy to make green smoothie.

Equipment

Ingredients

  • 6-7 baby carrots
  • 2 big slices of cucumber
  • ½ banana
  • ½ avocado - peeled and pitted
  • 1 cup greens Big handful. I used Spring Mix bc that's what was in my fridge.
  • 1 serving of your favorite protein powder I used vanilla
  • ½ tsp turmeric
  • ½ tsp cinnamon
  • 2-3 ice cubes
  • 4 oz skim milk or your liquid of choice

Instructions

  • Place ingredients as listed above into your favorite blending device
  • Blend until smooth
  • Enjoy!

Here’s why I chose the ingredients in this Green Smoothie:

Avocados – Besides being loaded with the “good fat”, they help heart health, lower cholesterol and lower triglycerides. Plus, they make your smoothie extra creamy 🙂

Bananas – Besides tasting great, they are loaded with potassium which helps muscles recover and relax, and they have also been known to help you sleep better.

Cucumbers – These are great for rehydration. Cucumbers are also a great source of vitamin B, so that means they are a natural pick-me-up.

Carrots – The orange powerfood will give you vitamin A and is also linked to preventing cancer, giving you healthier looking skin and aids in digestion.

Chia seeds – These little guys are nutritional powerhouses, I add them into every smoothie I make.

Turmeric – Soooo many benefits, but one of the main ones is it helps with inflammation.

Cinnamon – Also many benefits, one of my favorites is that it helps increase your metabolism.

Protein Powder – Helps keep you full longer and makes your smoothie extra creamy.

How creative do you get with your smoothies? I will admit, I love trying new varieties and there isn’t many that I have tried that I don’t like. Smoothies are an easy and delicious way to bring more fruits, vegetables, and other good stuff into your diet that you normally wouldn’t eat on a daily basis. I mean how many days can you say that you had carrots, cucumbers, some greens and some fruit all before lunch? Well, that’s what a smoothie is all about.

Be warned, too many fruits mean that you are just drinking a glass of sugar. A blender full of all vegetables may not have the flavor that will have you making it again tomorrow. I like to make my smoothies with at a 50/50 mix of fruits and vegetables and then I can add in my greens and spices.  I have been adding cinnamon and turmeric lately as they are both really good for us…and when you just add a small amount, you don’t taste them much at all in your smoothie.

Apple Avocado Smoothie Recipe

Today, I am sharing my Apple Avocado Smoothie with you all. We all know that avocados are good for us, they are loaded with those “good fats,” but you have to enjoy them in moderation 😉 I used a half avocado and added in Crunch Pak Green Tart Apples. I figured the apples would add a sweetness and some great juice, if you have ever added avocado to your smoothie, you know that they make them really creamy and thick, so the apples were the perfect accompaniment. I love using Crunch Pak Apples for their freshness, flavor, and sheer convenience. A bag of Crunch Pak Apples never lasts too long in our house because everyone loves that they can just open the refrigerator and grab a slice or two!  Be sure to look for Crunch Pak at your favorite retailers.
