Do you ever have one of those days where you look in the freezer and refrigerator and you have NO IDEA what to make for dinner?  Well, that’s where this Easy Slow Cooker Chicken Pot Roast recipe comes in to rescue the day.  I opened my refrigerator to find some not-so-fresh carrots and squash, then I opened my pantry (CANTRY…the place where you store all your delicious canned vegetables!), noticed I had canned green beans with mushrooms, canned carrots, and some canned potatoes.  Sounds like the perfect start to dinner to me!

I took out the chicken that has been hanging out in my deep freezer this morning, and my dinner dilemma was well on the way to being solved.

I grabbed some seasonings from my cabinet, seasoned my chicken, tossed it into the crockpot and loaded on the canned veggies!

Slow Cooker Roasted Chicken

Roasted Chicken in the slow cooker is an easy dinner idea! Simple, delicious and healthy.

Equipment

Ingredients

  • 1 whole chicken
  • ¼ cup low sodium chicken broth
  • 1 can sliced or baby carrots
  • 1 can sliced of whole canned potatoes
  • 1 can green beans
  • 2 tsp olive oil
  • 1 tbsp minced garlic
  • 1 tsp black pepper
  • 1 tsp salt
  • 1 tsp paprika
  • 1 tbsp chicken rub/seasoning
  • 2 stalks celery

Instructions

  • Put the celery on the bottom of the crockpot so that the chicken rests on the celery and not the bottom of crockpot to help prevent the bottom from browning too much
  • Rub/Drizzle the olive oil on the chicken
  • In a small bowl mix together the dry seasonings
  • Rub the dry seasonings onto the chicken
  • Rub the garlic, and any remaining dry seasoning mix into the cavity of the chicken
  • Place the chicken on top of the celery
  • Pour in the chicken broth
  • Drain the canned vegetables
  • Put the canned vegetables in the slow cooker around the chicken
  • Cook on low for at least 6 hours and chicken is cooked throughout
  • Enjoy!

It’s hard to believe that we’re only a few short days from the official first day of winter. Up here in Michigan, by now we’ve usually been buried once or twice by snow and are spending a lot more time indoors trying to keep warm. Luckily, this year has started of mild! Though I’d like to think our warm weather streak is going to continue, I know better. We’ve been using this time to play outside (a lot) and to put together our favorite activities to use when the impending cold and snow finally make it our way!

Here’s a list of some of our favorites:

Winter Activities for Kids

Rody Max

This guy us a larger version of the original Rody, and he has served our family well over the past three years. Our 5 kids use it many times throughout the day to chase each other or get their wiggles out. We’ve even come home to our teenage babysitters making a few rounds around the house. Truth be told, my husband and I have had our fair share of turns too. This guy has held up under a lot of use and has helped us break the tension when people get stir crazy.

My kids love to hop, skip, and jump on these and I love that they are working on their balance and core strength. Many an obstacle course can be created, and even my one year old loves to play with the different stones.

Supplies to make Tunnels and Forts

We have a lot of activity in our house between our 5 kids, and one of their favorite things to do is to build forts. Whether your using sheets and blankets on your furniture, or a premade fort, many hours can be spent constructing and then playing in your kingdom. And what’s a fort without a grand entrance or a monster to protect it from? Enter our tunnels. We were gifted a couple of tunnels that our kids have not let us part with. Most of the time, someone is the monster trying to attack the fortress, but every once in a while it is used for its intended purpose. My husband grew up using expandable ducting for his tunnel, and the games always stayed the same. I love the hours of imaginative play we get from our forts and tunnels!

I have three boys, 5 and under, and you can imagine the energy in our house! If they start getting cabin fever, I send them to their punching bag! It gives my kids a healthy, indoor energy release. This is rugged, stable, and self-standing; all you have to do is fill the base with sand or water to anchor it securely.

All five of my kids love to take swings at the punching bag, and for once, not get in trouble for hitting something! This will get lots of use this winter. Mom may even take a swing or two!

Indoor Trampoline

My kids love to move, and they love to exercise with Mom (when I can). We have had a small indoor trampoline, (made for adults but comes with a handle for kids) for about 2 years, and I can think of no better way to quickly expend some energy. They’ll jump on the trampoline while I run on my treadmill, or take a few jumps if they need get some pent up energy out. My 6 year old loves to take turns practicing her reading, and jumping, reading and jumping. It works wonders for her! Remember to always use caution and only let your kids use it under supervision. Used safely, it’s a great option to get all those mid-winter wiggles out.

We’re always on the look out for activities to do and we’re off to a great start for this winter. Now, if only the snow would start falling….

Have you ever noticed that some of your favorite holiday memories are centered around food? A specific menu item, a fun dessert that you made with your mom, that special meal that you have every year. Home is where your heart is, and you know the saying…the heart of the home is the kitchen.

There are so many traditions that start in the kitchen. Lasagna has always been a meal that has brought my family around the table. I remember my mom making it for me when I was young…who am I kidding…she still makes it for us when she comes to visit!

And with the holidays near, I wanted to share my Lasagna recipe with you, just in case you would like to one of my family traditions with yours!

Lasagna is actually fairly simple to make, you need a few staple ingredients and need to follow a few easy steps.

Traditional Lasagna

You start with an amazing pasta sauce.  You can make it from scratch if you would like, but to simplify things I recommend just grabbing your favorite sauce at the store.

First, you will brown your beef in a large pan.

Yummy Lasagna

While the beef is browning, pour a small amount of the the sauce into your baking dish.  Just enough to put a small coat on the bottom.  Now, set that aside.

Simple Lasagna

Next you will prepare the cheese mixture.  Grab a medium bowl and mix ricotta cheese, an egg, Italian Seasoning, and Italian Blend Shredded Cheese.  Set that aside until you are ready to layer your lasagna.

Easy Lasagna Recipe

Once the beef is cooked (drain grease if needed) pour the remainder of the sauce into the pan with the beef.  Allow your beef mixture to simmer for a few minutes so that all the flavors absorb into the meat.

Delicious Lasagna

Now you you start layering the goodness!  You will start with the noodles and continue to repeat the layers until your baking dish is full.  Sprinkle the top with any remaining sauce mixture and a little extra cheese.  I do use oven ready lasagna noodles, again, it just simplifies things 🙂

Then before you know it, you will have a delicious meal ready for your family!  Serve with a nice loaf of bread, a fresh salad and a glass of Cabernet Sauvignon (well, for those 21+ years old 😉 )

Tips for Perfect Lasagna Every Time

  • Pick the Right Baking Dish: Use a sturdy 9×13-inch baking dish for larger batches or an 8×8 dish for smaller portions. Glass or ceramic dishes work best for even cooking and presentation.
  • Don’t Skip Resting Time: Let your lasagna rest for at least 10-15 minutes after taking it out of the oven. This helps the layers set and makes slicing much easier.
  • Use Fresh Herbs for a Gourmet Touch: Add freshly chopped basil or parsley between layers or as a garnish to brighten up the flavors and add visual appeal.
  • Make It Ahead of Time: Lasagna tastes even better the next day! Assemble it the night before, store it in the fridge, and bake it when you’re ready. It’s perfect for meal prepping or busy holiday schedules.

Ingredients

  • 1 24 oz jar your favorite pasta sauce
  • lbs ground beef – I used lean
  • 1 15 oz container of Ricotta Cheese – I used Part skim
  • 1 egg
  • 1 ½ cups Italian Blend Shredded Cheese
  • 1 tbsp Italian Blend Seasoning
  • 1 oven ready lasagna noodles

Instructions

  • Preheat oven to 350 degrees
  • Brown beef in large skillet
  • Mix ricotta, seasonings, egg, and 1 cup of shredded cheese in a medium bowl
  • Pour a small amount of pasta Sauce on the bottom of the a 8×8 baking dish , just enough to lightly cover the bottom
  • Once the beef is browned, pour the remainder of the sauce into the skillet with the beef
  • Place two of the noodles in the baking dish on top of the sauce
  • Spread on a thin layer of the cheese mixture
  • Layer on the part of meat mixture on top of the cheese mixture
  • Place two more noodles
  • Continue to layer cheese and meat until you have reached the top of your baking dish, for me, it was three layers of noodles
  • On the last layer of noodles, pour on the remainder of the meat mixture and sprinkle on the remainder of the shredded cheese
  • Cover the baking dish with aluminum foil
  • Bake for 45 minutes or until heat throughout and the cheese is bubbly and looking fantastic
  • Enjoy!

Notes

I recommend serving with a salad and bread.

I wanted to bake up something fun and festive for the holidays and I sure did it with this Peppermint Chocolate Icing in the Cake recipe! First, let me explain what it is…I can understand where the name of this cake can be a bit confusing. But in fact, it is actually quite simple. You put the icing in the cake! Yep, the icing is mixed into the cake mix before you bake it. Sounds yum doesn’t it?!

One of my favorite flavors of the holidays is peppermint, in my coffee, in my cookies, my kids love to hang candy canes on the Christmas tress, so I knew that my Icing in the Cake “Cake” would also have peppermint in it. So, if you are looking for a unique dessert recipe this holiday season, I would have to say, this is it!

I grabbed everything at Publix and was on my way back home in moments 🙂  I used the Pillsbury™ Moist Supreme® Cake Mix and the Vanilla Frosting because I didn’t want it to be too rich. I figured the chocolate, vanilla, and peppermint would all make for a delightful mix.

You simply hand mix the ingredients all together and pour them into your bundt pan.

Be sure to save a bit of the frosting so that you can melt it and drizzle it onto the cake once it’s cooled.

Ingredients

  • 1 1 box Devil's Food Cake Mix
  • 4 eggs
  • 1 cup milk - I used skim
  • ¾ cup vegetable oil
  • ¾ tsp peppermint extract
  • 1 can Creamy Vanilla Frosting
  • 2 candy canes - crushed

Instructions

  • Preheat oven to 350 degrees.
  • Mix cake mix, eggs, milk, peppermint extract and oil by HAND until well blended.
  • Add 3/4 of the frosting to the cake mixture and mix until well blended.
  • Pour the mixture into a well greased 12 cup bundt/angel food pan
  • Bake at 350 degrees for 50 minutes to 1 hour/until done.
  • Cool for approx. 10 minutes then turn out on to plate.
  • Take the remainder of the frosting and put it in a microwave safe bowl and warm in 20 second increments until melted.
  • Drizzle the melted frosting over the cake.
  • Sprinkle crushed candy canes over the top of the cake.
  • Enjoy!

Notes

*Now, be warned, you must mix the ingredients by hand, NOT with a mixer, if you mix with a mix, the cake tends to over flow!

My personal experience with Florida Prepaid College Plans:

Put a fun spin on traditional chocolate chip cookies with this Coconut Chocolate Chip Cookies Recipe. Perfect for the holidays or any day really! Enjoy!
Ingredients
  • 1 pouch (1 lb 1.5 oz) Betty Crocker™ Chocolate Chip Cookie mix
  • 1/2 cup (1 stick) butter or margarine, softened
  • 1 egg
  • 1 cup flaked coconut
  • 2/3 cups white vanilla baking chips
  • 1 teaspoon shortening
  • Green/red Sugar Sprinkles if desired
Instructions
  1. Heat oven to 375°F.
  2. In large bowl, stir cookie mix, butter, egg, coconut, until dough forms.
  3. Drop dough by rounded teaspoonfuls 2 inches apart onto ungreased cookie sheet.
  4. Bake 9 to 11 minutes or until golden brown around edges.
  5. Cool 1 minute before removing from cookie sheet; cool completely, about 20 minutes.
  6. In small microwavable bowl, microwave 2/3 cup baking chips and the shortening on High 30 to 60 seconds or until mixture can be stirred smooth.
  7. Drizzle over cookies; sprinkle with sugars as desired.

I have the cutest cookie recipe for you guys today. With the holidays coming, I know we will all be baking up a storm, so I wanted to share something that is simple, sweet, and easy to make and decorate!

Krusteaz sent me a bunch of easy to make cookie mixes so that I could spread the Christmas cheer with my friends, family, and neighbors this year and this Santa Hat Shortbread Cookie recipe will definitely be one of the favorites this year.

You only need a few ingredients, Krusteaz Shortbread Cookie Mix, butter, strawberries, frosting, white chocolate chips, and about 20 minutes to make these cookie for your next cookie swap, family function, or just as a special treat.  I love the natural sweetness that the strawberries add to these cookies, plus with that little white chocolate chip on top, it looks like Santa’s hat!

Ingredients

  • 1 box of Krusteaz Shortbread Cookie Mix
  • 1 1/2 sticks of unsalted butter - softened
  • Strawberries
  • Whipped white frosting
  • White chocolate chips if desired

Instructions

  • Preheat oven to 350 degrees
  • Make the shortbread cookie mix according to the box
  • Roll the dough into 2-2 1/2 inch balls
  • Using the palm of your hand or the bottom of a glass jar, lightly flatten the cookie balls
  • Bake 10-15 mins until golden brown on the edges
  • Allow to cool
  • Spread on the white frosting
  • Top with strawberry (with stem cut off)
  • Put a dab of frosting on the top of the strawberry
  • Place white chocolate chips on the frosting if desired
  • Share with friends and family
  • Enjoy the holidays!

The holidays are coming and that means our schedules are all filling up.  That’s why I love make ahead meals!  Especially breakfast options 🙂  Come Christmas Eve and Christmas Day, we are busy doing fun stuff!  There is no time in the morning to make a huge breakfast!  But, this Breakfast Sausage and Sweet Potato Meatballs recipe is perfect to make the night before…it’s even paleo!  Just pre-make your meatballs, place them on a baking sheet, cover, and then bake them when you wake up!

Ingredients

  • 1 lb low-fat breakfast sausage - you can also use turkey sausage
  • 1 small sweet potato - shredded *we used a potato peeler to get our fine see notes for other option
  • 4 oz button mushrooms - finely chopped
  • 1/4 sweet onion finely chopped
  • 3 slices of bacon cooked crispy and chopped
  • 1 garlic clove minced *you can use 1 teaspoon of minced garlic if you have that on hand
  • 2 tablespoons maple syrup

Instructions

  • Preheat oven to 375 degrees.
  • Place the shredded sweet potato, mushrooms, and onion into a medium bowl with breakfast sausage, maple syrup, garlic clove, and cooked bacon
  • Mix well - using your hands is the easiest way
  • Once mixed well, make 1-2 inch size meatballs with your hands and place them on a baking sheet
  • Bake for 30-35 minutes until meatballs are golden brown and completely cooked through
  • Drizzle with maple syrup right before serving
  • Serve with waffles, pancakes or eggs if desired
  • Enjoy!

Notes

If you have a shredding attachment on your food processor, you can use that to "chop" the mushrooms, sweet potato, and onion.  You can easily make this recipe the night before and toss it in the oven in the morning.
