Weeknights usually are pretty hectic our house, I appreciate a hearty, easy weeknight meal. And since this week we have an extra soccer practice in with baseball practice, guitar lessons, and my husband is going to traveling some, I knew I would definitely need an easy weeknight meal or two! I know you have been there before too, the moment where it’s 4:30 P.M. and you realize you have to leave the house in a little over an hour and you have NO IDEA what to cook for dinner. Well, I am here to save your day…well, dinner time 😉

When I was at Publix this week I grabbed some staples – Tyson® Chicken Fillets 25 oz (frozen), a box of Barilla® pasta, and a jar of Barilla® Sweet Peppers and decided that they would save my dinner one night. And they sure did!

While you are boiling your pasta you will saute the vegetables.

And add in the sauce.

Once your pasta is ready you will add in the creamy cheese mixture that is a blend of ricotta, cream cheese, and sour cream.

Then let the layering begin!  Pour the pasta into the baking dish first, then layer on the vegetables in the Barilla® Pasta Sauce.

Next is the Tyson® Chicken fillets.

Top with the remainder of the sauce and sprinkle on some mozzarella cheese and you are ready to toss this Zucchini Chicken Parmesan Casserole into the oven.

Looking for a delicious, hearty meal that is ready for your family in about 45 minutes? This Zucchini Chicken Parmesan Casserole is the answer.
Ingredients
  • 3/4 box Barilla® Farfalle Pasta (can use penne or mostaccioli noodles if desired)
  • 1 jar Barilla® Sweet Peppers Pasta Sauce
  • Tyson® Fully Cooked Chicken Fillets (frozen)
  • 1/2 cup low fat or fat free ricotta cheese
  • 4 oz (half package) low fat cream cheese
  • 1 cup low fat sour cream
  • 2 cups of zucchini, squash and onions, thinly sliced
  • 1/4 cup low fat mozzarella shredded cheese
Instructions
  1. Preheat oven to 350 degrees
  2. Cook the pasta according to package instructions
  3. While the pasta is boiling mix the ricotta, cream cheese and sour cream well and set aside
  4. In a pan, add 1 tablespoon of olive oil and saute the fresh vegetables until tender, turn heat to low and pour in 3/4 of the jar of Barilla® Pasta Sauce (saving some to pour on the top of the dish before baking)
  5. Once pasta to cooked, drain it and pour back into the same pot
  6. Slowly stir the cheese mixture and pasta noodles together until well blended
  7. Pour noddles into a 9×13 baking dish
  8. Pour sauce and vegetable mixture on top of the noodles
  9. Place 3-4 Tyson® Fully Cooked Chicken Fillets (frozen) on top of the layer of sauce and vegetable mixture
  10. Pour the remainder of the Barilla® Sweet Peppers Pasta Sauce on top of the Tyson® Fully Cooked Chicken Fillets
  11. Sprinkle on the low fat mozzarella shredded cheese
  12. Bake at 350 degrees for 35 minutes or until chicken is heated throughout
  13. Enjoy!

Baby, it’s cold outside! One of my family’s favorite way to warm up on a chilly day is with hot chocolate. There’s nothing quite like a steamy cup in your hands that is filled with chocolate and marshmallows. And the best hot cocoa and marshmallows comes from TruMoo.

Today, I wanted to make a yummy compliment to our favorite cold weather drink, so I treated my family and friends to Marshmallow S’mores! You don’t need a campfire to make a s’more, just a few ingredients and a few minutes! In fact, the kids can definitely help you make these.

Grab some marshmallows, chocolate melting wafers and crush some graham crackers so you have crumbs.

The kids wanted regular and chocolate vanilla swirl marshmallows, so we used white and dark chocolate.

You can use your fingers to dip the marshmallows into the melted chocolate and graham crackers crumbs or you can use a skewer or even mini pretzels.

Ingredients
  • Dark, milk, or white chocolate wafers for melting – these are the easiest, but you can also use chips
  • 1/2 cup graham crackers, crushed
  • Marshmallows – we used white jumbo and the chocolate vanilla swirl marshmallows
  • TruMoo Chocolate Marshmallow
Instructions
  1. Melt the chocolate in small glass or heat safe bowls
  2. Put the crushed graham crackers in a small bowl
  3. Using your fingers or skewers (or mini stick pretzels) dip the marshmallow in the chocolate then in the graham cracker crumbs
  4. Place the “s’more” on wax paper on a cookie sheet to dry
  5. Repeat until you have all the “s’mores” that you and your family can enjoy!
  6. Fill your mugs with TruMoo Chocolate Marshmallow and top with your marshmallow s’mores

Smoothies are an important part of my day.  It is the one meal that makes me less than 5 minutes to prepare, I can make it anyway I want to, and it is always loaded with fruits and vegetables.  I ran my 4th half marathon this past weekend and last week I was really making sure I was giving my body everything it needed to be prepared for that long run.  And this Blueberry Avocado and Greens Power Smoothie was created!

  • 15 blueberries big handful
  • ½ banana

  • 6 oz coconut water - or your choice of liquid

Instructions

  • Place ingredients as listed into your blending device
  • Blend until smooth

As a parent, I want to be able to give my children as much as possible. And the chance at a long and healthy life definitely fits into that category. By helping our children develop positive attitudes toward healthy lifestyles now, and they’ll be more likely to carry those healthy habits with them into adulthood.

Here are some Tips For A Healthy Family Lifestyle:

Enjoy Activities Together

Pick out common interests to get your family excited about exercise. We decided this year that we would all get new bikes, and with that decision we made a commitment to each other that we would have bike rides (Safety first, always remember your bike helmets) as a family weekly.  Some weekend we make it out to a trail and go over 10 miles, and other weekends we just make it around the subdivision, but it is something we are doing together.

I know that every family is different so work with yours to create a list of physical activities everyone enjoys doing together, then think about new activities to try, such as gardening, hiking, playing soccer or baseball at the park, swimming in the summer, sledding or hiking in the winter.

*Tip – As you think of activities, make a list and hang it on the refrigerator or somewhere you will see it on a regular basis.  This will not only remind you to keep doing your activities, but it will remind everyone to keep adding fun family activities to the list!

Consider Trying Something New

Ask friends and neighbors if there are fitness clubs or rec centers in your town that have classes.  There are often yoga or fitness classes that parents and kids together. If your child is too young to participate, look for classes that help you burn calories by incorporating your baby – think pushing them along during stroller workouts (Stroller Strides) or yoga with babies.

Set Limits On Tech Time

Too often families can find themselves sitting on the comfy couch, playing video-games, or watching movies, these activities don’t really encourage fitness or physical activity. Set time limits on daily television viewing or playing video games to help keep your family moving.

Determine Goals

Before making any type of goals, be sure to consider the ages and current fitness levels of everyone in the family. For example, one week, you and your family may take 30-minute walk each night after dinner, then next week, you may walk a little longer and a bit faster.  Our kids will ride their bikes while my husband and I run, that is another example of still being together as a family, but working out at different levels.

It can be motivating (even fun!) to track your family’s fitness goals.  You can write them down or use one of those activity trackers. They make activity trackers just for kids, so they are a bit more fun than the ones for us adults.  Be sure to review your goals every now and then to see if they need to be increased.  The most important goal is for all family members to participate in physical activities regularly and to keep each other motivated.

Nothing is Perfect

Have we missed one of our family bike rides?  Of course we have.  But does that mean we decided we might as well stop all together?  Nope.  Life happens.  Things come up all the time.  Do your best to not get discouraged and just be excited to plan that next ride/walk/hiking trip etc.  It takes time to build healthier habits!

Talk about the Importance of Good Nutrition and Healthy Eating (and SHOW your kids how to eat healthy)

We are HUGE fans of taking along a picnic lunch or packing healthy snacks when we will be out for an extended period.  Fresh fruits and vegetables, yogurt, cheese, trail mix, beef and turkey jerky are all good ideas! Whether it be for our bike ride or because we are at all the ball field all day, having healthy snack options on hand encourages healthy eating long term.

The best way to teach children about foods that are healthy for their bodies is to model eating healthy foods. Talking about good nutrition can be as easy as explaining that we eat foods from different food groups to make sure our  bodies get the different vitamins and minerals we need to stay healthy and strong.

As the parent, it is your job to make meals that include foods that are healthy and that everyone enjoys. In this Peanut Butter Vanilla Protein Smoothie you will see that I also added in turmeric and cinnamon, both of which are in my smoothies on a fairly regular basis, they are great for you! This Chicken Sausage and Pear Pizza is the perfect addition to your game day spread or any day!  This easy Chicken Sausage and Pear pizza recipe is full of flavor, not fat, and is ready in under 20 minutes.  I used al fresco’s Sweet Apple Fully Cooked Chicken Sausage on this delicious pizza, it adds that extra bit of sweet to this sweet and savory pizza recipe. I promise you won’t miss all the calories that are in the regular pizza 😉

For this pear and chicken sausage pizza recipe you will need just a few ingredients: goat cheese (you could also use Gorgonzola), mozzarella cheese, a pear, al fresco’s Sweet Apple Fully Cooked Chicken Sausage, store bought thin crust pizza crust, greens and olive oil and balsamic vinegar for your dressing.

There is no “sauce” on this pizza, but don’t worry, it is not dry at all. All your ingredients blend together so well, you don’t need any sauce!

Even though al fresco’s Sweet Apple Chicken Sausage is fully cooked, I did slice it up and toss it in a pan on medium for a few minutes just to crisp up the edges some.

Once you have your pizza crust laid out on your pan, you will sprinkle on the mozzarella and goat cheese.

Once the cheese is on, you will layer on the thinly sliced pears and the al fresco’s Sweet Apple Chicken Sausage.

While your pizza is baking at 400 degrees for about 8-10 minutes, whisk together 2 tablespoons of balsamic vinegar and 1 tablespoon of light extra virgin olive oil. This will be the “dressing” for your pizza. Dressing? Yep! You are going to top that amazing pizza with beautiful dressing and a bit of dressing. SO GOOD!

Ingredients

  • 1/4 cup Goat cheese you could also use Gorgonzola

  • Greens - I used a spring mix
  • 1 tbsp olive oil
  • 2 tbsp balsamic vinegar

Instructions

  • Slice the al fresco's Sweet Apple Fully Cooked Chicken Sausage and warm it in a pan for approx 3 mins
  • Roll out your pizza crust on a pan
  • Sprinkle on the mozzarella cheese
  • Sprinkle on the goat cheese
  • Add a layer of sliced pears
  • Add the al fresco's Sweet Apple Chicken Sausage
  • Bake at 400 degrees for approx 8 - 10 mins until edges are golden brown
  • While pizza is baking mix the olive oil and balsamic vinegar
  • When pizza is done, slice it and top with greens and a small amount of dressing
  • Enjoy!

Instead of soymilk, I used Fat Free Milk and a splash of vanilla coffee creamer and just one sugar packet. Results were still FANTASTIC!
