The kids and I have been working on getting situated for Back to School. We were at Walmart picking up some of the teacher Wish-List items when I realized I should get some things for dinner for the week and our weekly Pancake Sunday breakfast.

I don’t know about you, but I need items that are easy to make, especially on those busy back to school nights! I grabbed for Tyson Grilled and Ready Chicken Strips because they are so versatile. You can make fajitas, chicken salad, and more in just minutes!

I know I mentioned we have Pancake Sunday at our house weekly, well we have all the neighbors come too – sometimes up to 20-25 people! The kids all eat pancakes, but us adults like to get a bit more creative with our breakfast so I decided to make that beautiful Chicken Breakfast Skillet pictured up there. It was so easy and I got so many compliments!  I love that we only needed a few ingredients.

Equipment

  • Stove

Ingredients

  • Tyson Grilled and Ready Chicken Strips
  • Mushrooms - diced
  • Sweet mini pepper - diced
  • 2 tbsp onion - diced
  • Hash browns - I used the O'Brien ready-to-cook variety
  • 2 Eggs

Instructions

  • Heat one pan with a small amount of olive oil
  • Cook hash browns until lightly brown
  • Heat another pan with a small amount of olive oil
  • In the 2nd pan, saute the veggies until soft, then add in the desired amount of Tyson Grilled ad Ready Chicken Strips *I used 4 pieces for one serving
  • When veggies are cooked and chicken is warm, add to the pan with the hashbrowns
  • Using a spoon, make a small opening in the pan for the egg
  • Add the egg to the opening you made
  • Cover and cook until egg is to your liking - I cooked mine over medium and it took approx 5 mins
  • Top with cheese and salsa if desired
  • Enjoy!

Has school started for your child(ren) yet?  Our kids started on August 24th and we had Meet The Teacher last week.  Meet The Teacher is a great way to see the classroom and how YOU can get more involved.  I signed up to volunteer, took the teacher wish list, and signed up for the teacher emails so I could touch base to see what I can do to help.  If you are looking for ways to get more involved in your child’s classroom, I have 7 easy ideas listed for you below!

Be a Class Reader

This is a great opportunity to come in and see how your child’s class is doing and they get the chance to hear from someone new

Offer to Tutor

Being available to give one-on-one support to students gives the teacher more time to focus on the classroom as a whole.

Volunteer

Even just 3 hours over the school year can help out a teacher! If you can’t make it into the classroom, there are usually things your child can bring home and you can do at home.

Help at Center Times

This is another great way to help the teacher spend more time with the classroom as a whole because you can help with some of the one-on-one activities.

Look at the Supply List Requests

A lot of times, teachers are NOT reimbursed for the supplies they need for a classroom, if a request comes home. Consider picking up some of the items, or a few extras. The teacher and the class will appreciate it. Don’t have time to do extra shopping? A simple monetary donation goes a long way as well.

I have a fun and pretty easy recipe for you guys that is sure to be a hit in school lunches! Mini Pizza Pockets! In fact, you may find that are making a few extra of these pizza pockets for you too 😉 School is in session, or about to be if your area hasn’t started yet. That means it’s time to start thinking about lunch. Yes, that very important meal that comes in the middle of the day that keeps our kids fueled and ready to learn all day long. I don’t know about you, but I enjoy giving the kids something fun and different. There are only so many peanut butter sandwiches my kiddos will eat!

I will admit, I didn’t make my pizza dough from scratch, but they still turned out delicious.

To make your mini pizza pockets, you just grab your favorite fillings from Publix (or your favorite retailer), I used mushrooms, Pero Family Mini Sweet Peppers, cheese, mini pepperonis, and sauce.

I did get the premade pizza dough from the deli at Publix, once it was rolled out I used a pancake ring to make 4 inch circles.

What I really love about these, is that they are completely customizable! Add extra cheese for one child, extra sweet peppers for another, no mushrooms for one day…oh the possibilities are endless!

In fact, since these are so small and bite-sized, it’s easy to sneak in a veggie without the kids really noticing!  Mine at a mushroom for the first time ever and had no clue 😉

Once the pizza pockets are all filled, you will then fold them over and use a fork to seal the edges.  Cook them for about 15 mins at 425 degrees and BAM – fun lunch ready!

You can easily make a bunch of these ahead of time, refrigerate them for a few days, freeze them, etc.  They are the perfect size for little hands and fit perfectly into Bento Boxes.

Equipment

  • Stove

Ingredients

  • cup no-salt-added tomato sauce
  • ½ cup part-skim shredded mozzarella cheese
  • mini slices pepperoni
  • 4 mushrooms sliced
  • 4 Pero Family Farms® mini sweet peppers sliced
  • 1 pre-made fresh pizza dough

Instructions

  • Preheat oven to 425ºF.
  • Spray large baking sheet with cooking spray.
  • Use 4-inch round cookie cutter to cut rounds.
  • Spoon 1 tsp. tomato sauce in middle of each round.
  • Add ½ Tbsp. cheese, 4 quarters of pepperoni, mushroom slice and 2 pepper rings.
  • Moisten edges of dough with water.
  • Fold dough over filling and press to seal.
  • Use the tines of a fork to crimp and further seal the edge.
  • Place pizza pockets on large baking sheet coated with cooking spray.
  • Poke the top of each with fork.
  • Bake 15 minutes, or until tops are browned (some cheese may leak out).
  • Once cool, freeze single layer on baking sheet. Once frozen, wrap individually in plastic wrap and transfer to freezer bag. If placed frozen in a lunchbox, even with an ice pack, they will defrost by lunchtime.

Painting on canvas is an excellent way to allow your children to be creative and have fun. Canvas painting for kids is a frugal and easy activity for kids.

Easy Canvas Painting For Kids

Canvas painting for kids is a fun and fairly inexpensive activity that encourages creativity, develops fine motor skills, builds confidence and helps develop cognitive skills. Canvas painting for kids will also bring hours of fun! Painting with kids is an excellent indoor activity for kids, and if the weather is nice and you have a table outside, it would be fun to do in the backyard as well.

All you need are a few basic supplies when painting with kids, all of them can be found at your local craft store, online and you may be able to find some at the dollar store. You will need canvases, paints (acrylic work well) and brushes. If you have little kids and are nervous about using acrylic paints, consider washable paints or you can also just make your own paints with ingredients from your pantry with my simple finger paint recipe, it’s even edible in case you have very little ones who like to taste things 😉

I recommend picking up a variety pack of brushes, and if you are painting with little kids, get the brushes with the thicker handle or ones that have a grip so that their little hands can work with them better.

Children love creating and canvas painting will provide them with a sense of pride when they see their completed masterpiece, be sure to tell them “Good job” as well, everyone likes a little positive reinforcement. Canvas painting is a great activity for kids of all ages, if you are looking for a bit of canvas painting inspiration, you can find a ton on Pinterest.  You can also let your kids paint about a favorite memory, character, or whatever that they would like to paint a picture of.

A handmade painted canvas by your child gives you a keepsake to treasure forever, long after the kids are tired of having it hanging in their room.

If your kids want to get a bit more creative when painting on canvas, try adding a little bit of water to your paint and put a dollop of a few different colors on the canvas. Then have them take a straw and blow the paint around. Ask them what they see in the blown paint on the canvas. This is really easy to do, but does require two people, one to blow and one to move the canvas around as needed.  This encourages them to stretch their imaginations even further.

Indoor activities for kids

This is a great way to keep the kids busy for the afternoon help the kids expand their imagination and see what they see and the shapes that they create with the paint. As we were blowing the colors around we would ask “What do you see?” We saw a clown face, balloons, cats, and more – you see a FUN new shape every time a color is added and blown.

Making a list, checking it twice…No it’s not the holidays…yet. It’s Back To School time. How many times have you double-checked your Back To School Supply list? Do you have all your Back To School essentials? There are bound some things that your child will need that won’t be on the list that you get from the school. And there are some things that YOU will want your child to have that won’t be on that list either, so I wanted to share a list of Back To School Essentials that will help you this Back To School season.

Back to School Essentials:

Backpack

The oh-so-important backpack. Yes, when they are in preschool and 1st grade, my kids liked to pick out fun characters for theirs, now as they enter 3rd and 5th grade, they just want simple, “cool” colors, no designs. No matter what your child’s backpack looks like, make sure it is sturdy and can handle being thrown, dropped, pulled on, stepped on, etc. I learned quickly that I would rather spend a few extra dollars up front than have to replace it one of two times before the year is up.

Lunch Box

The lunch box is almost as important as the backpack! Make sure you bring the kids along with you to check out the latest styles and colors. It is something that they will be using daily and opening and closing in front of their friends.

Reusable Containers

I am a HUGE fan of reusable containers for snacks, sandwiches, you name it. There is no need to waste several plastic snack bags a DAY. It’s a waste of money and it’s horrible for our environment.  Plus, you can then use those containers for everywhere you go – day trips, travel, etc. You can even put your snacks in them 😉

Thermos

If your child will appreciate a warm or extra cool lunch or snack on day, a thermos is a must-have in your back to school supply cart. I like the ones that are stainless steel and have double-walled insulation, they tend to keep your food warm/cool longer.

Freezer Packs

I recommend having at least two. One for today and one for tomorrow when you realize that you forgot to refreeze the other from the day before 😉

Water Bottle

Look for one that is BPA free and is at least 12 oz.  One with a fun design or character on it will help your child pick it out in a crowd 🙂

Hand Sanitizer

I like for my kids to have one either attached to their backpack or that they can put in one of the pockets of their backpack. You never know when they may need it.

Labels

Personal labels for belongings that you actually want have come back home. I know I’m not the only parent out there that has been through multiple water bottles because they just “disappear.”  It is important to me that the labels don’t come off easily too, I love Mabel’s Labels because they are dishwasher safe, laundry safe…well basically kid proof!  The Back To School Combo has just about everything you need to make sure your kids’ belongings actually stay your kids” belongings!

Allergy Labels

If you have a child with allergies, these are a must. You can write notes, tell the teacher, tell the lunch room staff, and tell your little one to tell everyone that they have a food allergy…but no one is perfect. A meal that is pre-made and ready to throw in the oven or crockpot is a parent’s dream come true on a busy night.  Now that school is either back in session or about to be, I am sure you are looking for ways to make dinner time easier.  And that is why I am loving this Stuffed Peppers Recipe.  It’s easy, delicious, and you can make a bunch ahead of time and just pull them out of the freezer when you are in need of a fabulous dinner.   Don’t worry, I will list a bunch more Freezer to Crockpot meals below this amazing Stuffed Peppers Recipe so that you can really stock up your freezer 😉

It has been awhile since I have made Stuffed Peppers, years to be exact, but my mom was down visiting from Michigan and we decided it was the perfect time to prep some Stuffed Peppers!  Who can resist mom’s help in the kitchen?!

I do have the cooking instructions for the oven and the slow cooker listed below, so you are set either way you would like to cook these delicious stuffed peppers.

Easy Slow Cooker Stuffed Peppers

I love that you can make make Stuffed Peppers in just a few easy steps and you only need a few ingredients.  The peppers add such flavor to the meat!

Once you have your peppers stuffed, you simply toss the tops back on and put them in the freezer until you are ready to make them.  Ready to make them now?  You can cover them with pasta sauce and put them in the crockpot and let them cook all day or toss them in the oven.  So many options 🙂

Slow Cooker Stuffed Peppers

Nervous that your kids will be scared off by the peppers?  They don’t have to eat them!  Just cut the stuffed pepper in half and let them eat the meat mixture.  My kids loved it!  And even though they didn’t eat the pepper, they thought it was cool that their dinner came in a edible bowl 🙂

This easy stuffed peppers recipe is a delicious freezer meal that is prepped in about 15 minutes. Cook it in the slow cooker or oven when ready!

Equipment

Ingredients

  • 4 bell peppers
  • 1 - 1½ lbs lean ground beef
  • ½ cup Minute White Rice
  • ¼ cup bread crumbs
  • 1 small diced onion I used a red onion
  • 1 egg
  • ¼ cup cubed bread
  • 1 tbsp Italian seasoning
  • 24 oz tomato sauce - divided one large can

Instructions

  • In a large bowl mix everything but the tomato sauce together
  • Add in 1/3 cup canned tomato sauce
  • Stuff peppers with meat mixture - fill peppers slightly over the top
  • Put top of the pepper back on if desired
  • Freeze until ready for use. I used an disposable alumium pan.

Oven Instructions

  • Allow to thaw overnight if you are cooking in the oven, top with pasta sauce and bake for 1 -1.5 hrs at 350 degrees until meat is thoroughly cooked.

Slow Cooker Instructions

  • If freezer to slow cooker meal, simply remove peppers from freezer, place in crockpot, cover with one jar of sauce and cook on low all day - approx. 8 hours or until meat is cooked thoroughly

We love ribs here at our house and our favorite way to cook them is by smoking them. There is just something about that smokey delicious flavor that will have you hooked. And smoking ribs is actually pretty easy, you will have to keep an eye on the temperature and your wood supply a little bit throughout the day. We follow the 3-2-1 Method when smoking ribs.

What is the 3-2-1 method for smoking ribs?

  • 3 hours of smoking unwrapped at 225 degrees
  • 2 hours of cooking wrapped in foil
  • 1 hour of cooking unwrapped covered in your favorite of barbecue sauce, we used Stubb’s Sticky Sweet BAR-B-Q Sauce

Before you toss your ribs onto the smoker, be sure to use a dry rub for extra flavor.  As you can see we counted our baby backs generously with Stubb’s Pork Rub.  Pour it on and Rub it in!

Don’t those look fabulous?  YUM!  Now that the first 3 hours are done, you will cover them up in aluminum foil for another 2 hours.

When those 2 hours are done, it’s time to add on the BAR-B-Q Sauce.  Are you hungry yet??

You will notice that the meat of the ribs will start to pull back off the bone, that’s when you know that they are done and are going to be tender.

Well, I did it. I combined two ingredients that I never thought I would even add to my smoothie individually. Beets and avocados. Talk about super foods, huh?  I had a beet that needed to be used and an avocado that was calling my name, so to the blender I went!  And much to my surprise, it was good!  The avocado and banana really work well together to give you a creamy texture and I just love the color that beets give you 🙂

Here are some of the health benefits of the ingredients in this protein smoothie:

Avocados – Besides being loaded with the “good fat”, they help heart health, lower cholesterol and lower triglycerides. Plus, they make your smoothie extra creamy 🙂

Beets – They are very high in vitamin C, fiber, potassium, and they also contain vitamin B.  Beets have many health benefits, that’s why they are considered a super food!

Bananas – Besides tasting great, they are loaded with potassium which helps muscles recover and relax, and they have also been known to help you sleep better.

Coconut Water – Is a great way to re-hydrate your body and it is loaded with potassium as well. Both of these benefits are great any time of day, but especially if you exercise on a regular basis, it’s great for your muscles.

Cinnamon – If you want to add that natural touch of sweetness to this healthy smoothie, go ahead and sprinkle a little cinnamon on top!  Cinnamon also has health benefits, such as helping to increase our metabolism.  As a 40+ year old momma, I can say that I will take all the help I can get in that department.

So adding these ingredients together will definitely help you to get your day going or re-power you after your workout.  I know that the combination may seem weird at first, but I promise you it’s actually really good.  And it’s pretty!

  • 1/2 avocado

Chicken Pad Thai is a restaurant meal favorite for us, it is is one of the meals that our family actually orders every time we go to our favorite Thai restaurant, and when we don’t eat-in, we order Chicken Pad Thai takeout. It’s a bit spicy, the chicken is always nice and tender and pad thai noodles are just delicious!  It took years of ordering this dish before deciding that we should try to make it at home.  And guess what?!  It wasn’t nearly as hard as I expected.  Cheaper too 😉  In fact, you may have many of the ingredients at home right now…I know I do!  Well, besides the pad thai noodles, but you can get those at just about any grocery store or online.

Easy Chicken Pad Thai

You will make the sauce, then brown the chicken, then the noodles.  So, there are a few extra steps, but once you get the hang of it, you’ll see that it’s worth it!  Then if your favorite take-out restaurant is closed one afternoon and you really want chicken pad thai, you can just make it!

This is definitely one of those recipes that the more you make it, the more comfortable you will get with the steps and the easier it will become.

As you can see, it is filled with all sorts of deliciousness!  The sauce is amazing, the noodles are easy to make, and the chicken cooked up beautifully.  I added sweet mini peppers to our chicken pad thai, but feel free to add whatever vegetables you would like.  Think mushrooms, onions, butternut squash…you name it.

Once the chicken and noodles are cooked, you top with quick scrambled eggs, your cooked veggies, and the sauce and VOILA!  You have successfully made Chicken Pad Thai!  No uber eats, grub hub, door dash required 😉  Plus, you can probably make this dish faster than you could get it delivered!  This easy chicken pad thai recipe is ready from start to finish in less than 45 minutes.

Ingredients

  • 8 oz pad thai noodles
  • 1 lb boneless skinless chicken breasts
  • 3 mini sweet peppers – sliced lengthwise
  • chopped peanuts for garnish if desired

Pad Thai Sauce

  • 1 tbsp creamy peanut butter
  • 3 tbsp soy sauce – I used low sodium
  • 1 tbsp sriracha
  • 2 tbsp fresh lime juice
  • 1 tbsp olive oil extra virgin
  • 2 tbsp brown sugar

Instructions

Pad Thai Sauce

  • Mix all ingredients well in a small bowl and set aside

Chicken Pad Thai

  • Heat oil in large skillet and saute chicken along with a splash of soy sauce
  • Prepare noodles according to package instructions
  • While chicken and noodles are cooking scramble 2 eggs, put them in a bowl and set aside
  • Saute the diced peppers until soft – this will take just a few minutes
  • When the chicken is cooked, cut it into strips or bite size pieces and set aside
  • In a large skillet or wok, combine noodles, cooked chicken, peppers and sauce

  • Top with chopped peanuts if desired
  • Enjoy!

Notes

If it doesn’t seem like this will be spicy enough for you and your family, feel free to add red pepper flakes or extra sriracha.

If you don’t have a wok at home, you can use a skillet, just make sure it’s large enough to fit everything in it.  You will want all the ingredients in one pan at the end so that all the flavors mix together.
