Here’s another Beet Smoothie Recipe for you guys!  Beet are considered a SUPER FOOD, so I am been using my daily smoothies as a way to work them into my diet.  I have been trying all sorts of different combinations and I am loving sharing my favorites with you.

Strawberry Beet Smoothie

In this smoothie recipe I used Almond Milk and all those dark and beautiful fruits and veggies.  The blackberries, strawberries, and beet made for such a rich looking blended smoothie!

Here are some of the health benefits to the ingredients in this protein smoothie:

Beets – They are very high in vitamin C, fiber, potassium, and they also contain vitamin B.

Blackberries – They are high in antioxidants and Vitamin C, not to mention they taste great and make your smoothie a rich beautiful color.

Strawberries – These red beauties are loaded with vitamins, fiber, and potassium.  As an added benefit – they are fat-free 🙂

I made mine on a big ole cookie sheet, like I mentioned, it makes a lot, so it’s perfect for parties!  Or half the recipe and enjoy it anytime 🙂  The crescent rolls can be tricky, I always feel like I am putting a puzzle together, just take the pieces and make sure the whole sheet is covered.

Ingredients

  • 2 8 oz packages refrigerated crescent rolls
  • 8 oz reduced fat cream cheese
  • 8 oz reduced fat sour cream
  • 1 package taco seasoning
  • 2 cans refried beans
  • 1 can original Ro*tel drained
  • 1 cup shredded cheddar or Mexican cheese

Instructions

  • Unroll crescent roll dough and piece it into ungreased cookie sheet or baking pan. Make sure you seal the seams.

  • Bake at 375° for 8-10 minutes or until light golden brown
  • Allow to cool
  • In a small bowl, combine cream cheese, sour cream and taco seasoning until well blended

  • Spread refried beans over the cooled crust, then layer the cream cheese mixture, cheese, then drained rotel
  • Cut into serving-size pieces

Slow cooker meals are one of the easiest ways to get dinner going.  And this slow cooker sweet and sour chicken is not only easy to make, but it’s delicious!  You can make it as a freezer meal, so when you are meal planning, add this easy recipe to your list, or you can just toss all the ingredients in the crockpot in the morning and know that you will have a tasty dinner for the family that evening.

I have to say though, I love being able to walk to my freezer, grabbing a ziploc bag, opening it and tossing it in the crockpot knowing that my dinner is going to be ready when we get home. Set it and forget it. Yes please!

Sweet and Sour Chicken Freezer Meal

This easy sweet and sour chicken recipe only takes a few minutes to prep and I love that it’s light.  You know when you get sweet and sour chicken from take-out the sauce is always super heavy and thick?  This sauce is simple and flavorful.  You won’t miss that thick weird sauce, I promise!

I recently got a bunch of boneless skinless chicken breasts Buy One Get One Free at the local grocery store and since I had a large amount of fabulous chicken breasts at one time, I figured it was the perfect time to prep some Freezer to Crockpot meals.  As I mentioned, you don’t have to make this as a Freezer to Crockpot meal, just leave out the part that says “Toss in a ziploc bag and freeze until ready for use” in the instructions blow.

This slow cooker meal is a few simple ingredients and is full of flavor. You can also prep it and freeze it ahead of time making meal planning a breeze!

Equipment

Ingredients

  • 2 lbs boneless skinless chicken breasts
  • ½ small onion diced
  • 1 red bell pepper sliced, seeds removed
  • 1 green bell pepper sliced, seeds removed
  • 1 tbsp minced garlic
  • 20 oz pineapple chunks in 100% juice 1 can
  • 3 tbsp soy sauce
  • cup apple cider vinegar
  • ¼ cup water
  • ¼ cup brown sugar
  • ¼ tsp ground ginger

Instructions

  • Toss all the ingredients into a large freezer ziploc bag and freeze until ready for use
  • Thaw overnight and cook on low for 6 hours in slow cooker
  • Shred or break apart chicken into smaller pieces before serving and place back into juices in crockpot for 15-30 mins for added flavor
  • Serve over rice
  • Enjoy!

Notes

If you forget to take it out the night before to thaw - that's ok! I do that all the time! Just place the frozen ingredients into the slow cooker and add an additional 1-2 hours to the cooking time.

We LOVE Camping, in fact we are up in Michigan right now at Lake Leelanau RV Park – it is one of the best campgrounds in the world in my opinion 😉 There is all sorts of camping to do as a family, you can tent camp, go in a camper, go in an RV, rent a camper or RV, or stay in a cabin. Anyway you decide it to do, it is an amazing family bonding experience. It may take a lot of effort to get ready, but the payoff is huge. Everyone will definitely benefit from the mental break a tightly followed schedule, and there are endless ways to experience new things.

The natural setting that camping offers is an ever-changing canvas for you and your children to explore and observe. Staying active in the great outdoors is a great way to strengthen family ties!

10 Must Haves for New Parents

If you are blessed to be welcoming a little one into the world, then you are no stranger to the registry list. Heidi, one of my fabulous writers is a mom of 5 kids, and she is sharing her Must Haves For Parents!

We have had almost every baby gear/gadget run through our house at one point in time. We have purged many items, however there are some items that are certain “must-haves” when bringing your sweet bundle home.

Must Haves for Parents

Car Seat

You can’t bring your precious cargo home without one. Luckily there are so many adorable options out there! If you want to try to manage the amount of “stuff,” that comes into your home, look at seats that can grow with your kids. This is one item that I recommend you buy brand-new for your first child. For those of you who are bringing home baby #2, #3, #4, etc. be sure to check your car seat’s expiration date. If it’s passed (like one of ours was), it’s back to the store you go!   Many organizations will also offer a free car seat inspection. This is great especially if you are a first-time parent and are trying to decode the installation of one of these things! Diapers/Wipes

I know this goes without saying, but just in case it’s a step you have overlooked be sure to have some on hand. Diapering methods are just one of the many choices you will make as a parent. Only you know what’s best for your family: Cloth? Disposable? Hybrid? There are lots of great options out there no matter which route you go! And don’t forget to bring the ones home that they give you in the hospital!

Crib/Bassinet/Playard

Your sweet one will need a place to rest their head. Deciding what that will be on is one of my favorite decisions to make! Our kids have started in a playard in our room and then have gradually moved to a crib in a room with their siblings. Again, this is all what works best for your family.

Parent Must Haves

Nursing Cover (if you are nursing)

I have nursed all of my kids and absolutely LOVE nursing covers. I have more than one and keep them stashed away in diaper bags and rooms in my house.

There are only two issues I’ve ever really had with a nursing cover:

  1. the fact that my back was exposed if I wasn’t sitting up against something
  2. that my babies would get hot underneath the cover, especially in the summer time.

I have officially owned ALL the versions of baby carriers out there, EXCEPT the Moby Wrap. It’s not that I didn’t want to try it, in fact I REALLY did, but my husband politely asked me to stop buying baby carriers. Why? Because I never seemed to find one that worked well enough and stopped using them soon after they were purchased. Imagine my delight when the OneStepAhead Moby Wrap showed up! This baby has a lot of fabric and I was a bit overwhelmed when I opened it, but after looking at the instructions, and a few practice rounds, I LOVE it!! I only wish this had been my first purchase when my oldest was little! I love that you can wear it multiple ways to accommodate your growing child and it’s good for 8-35lbs. Plus, I have always loved the way it looked on the Moms I saw wearing them, and I can see exactly why this is many-a-momma’s go-to wrap!

Swaddling Blankets

I have swaddled all 5 of my kiddos and it has been a life saver. Every one of them have loved being swaddled. If your little one has reached the point where they can get out of their swaddle before they’ve outgrown their startle reflexes, the Magic Sleepsuit is for you! I always thought to myself, “I just wish someone would come up with a weighted blanket that was safe for infants.” Well, enter the Magic Sleepsuit.

Parent Must Haves

This wonderful suit was invented by a pediatric physical therapist mom (you go, Momma!). This gives baby a secure feeling that helps with startling. I put this on my 8 month old son, who has always had issues falling asleep on his back, and he feel asleep IMMEDIATELY, without ANY issues. Hallelujah!

Bouncy Seat

There are so many cute designs to choose from! A portable bouncy seat will provide a place for baby to stay, while you go about getting things done around the house. My older kids love to play with the little ones in their seat (with some reminders to be “gentle”, of course).

Baby Monitor

Again, lots of great options—Standard audio monitor? Video? One that links to an app? One that has multiple receivers? There’s an option out there for everyone! Choose the one that works best for you!

Diaper Bag

This is where a lot of Mommas get to show their sense of style. With so many great options out there, you’re sure to find something you like. There are even bags geared towards Dads!

A whole lot of humility

Humility- if you don’t already have it, you will get it. Believe me. I just spent the afternoon at a cherry orchard digging a peanut out of my 2 year olds nose while trying to tend to a screaming baby with spit-up all over me, all the while trying to find a bathroom for my 4 year old (luckily, he loves the chance to water plants). Being a parent is the most humbling experience. HOWEVER, it is also the richest, most rewarding and fulfilling experience I have ever had. And yes—I did get the peanut out.

Blackened Salmon with Maple Reduction

You guys know that my husband and I love our salmon. Our fall back salmon recipe is usually the Maple Glazed Salmon or Grilled Salmon and Strawberry Salad, but I have been wanting to try something different.  I wasn’t sure what though.  Then last week my husband and I went to our favorite Italian Restaurant to celebrate our wedding anniversary and I ordered Blackened Shrimp with a Maple Glaze.  It only took one bite for me to realize that this was how I would be cooking our next salmon recipe.  Blackened Salmon with a sweet Maple Reduction.  Sweet and Spicy.

Easy Blackened Salmon with Maple Reduction

Now remember, the name of this dish is BLACKENED Salmon.  So don’t be alarmed when your beautiful Salmon looks well, blackened 😉  All those beautiful spices that you rub in get cooked into your salmon for a delicious flavor.  If you haven’t cook anything to blacken it before, you may get nervous that you just burned it….but don’t worry, you didn’t!  And, to be honest, I think that every time I do it.  But like I said, don’t worry!  This Blackened Salmon dish is absolutely amazing and the Maple Reduction is the perfect compliment to those spices.

Tasty Blackened Salmon with Maple Reduction

I served mine with a generous helping of pan sauteed zucchini.  I season my veggies with VooDoo Chef DUST and use about a half tablespoon or so of olive oil, I swear they turn out perfect every time!  I get my salmon from Anderson Seafoods, as you can see, it is a nice thick fillet, if your fillet is thinner be sure to adjust your cooking times.  Just make sure the pink center is gone and you can easily flake your salmon with a fork.

How to make Blackened Salmon with Maple Reduction

The Maple reduction takes the longest to cook, so be sure to start that first.  It is very easy to make, you just have to keep an eye on it, as the liquid boils out, it will get thicker, which is what you want, but you don’t want to burn it or reduce it to nothing.  If you don’t use it right away, it will get really thick as it cools, like stuck on a spoon thick, but don’t worry, the moment you place it on the hot, beautifully blackened salmon it will liquefy again.

Equipment

  • Stove

Ingredients

  • 2-4 salmon fillets
  • 1/2 cup melted unsalted butter melted

Reduction Ingredients

  • 1/4 cup maple syrup
  • 1/2 tablespoon minced garlic
  • 1/4 cup balsamic vinegar

Seasoning Ingredients

  • 1 tablespoon ground paprika
  • 1/2 tablespoon ground cayenne pepper
  • 1 teaspoon red pepper flakes
  • 1/2 tablespoon garlic salt
  • 1 teaspoon salt
  • 1/2 teaspoon ground white pepper
  • 1/2 teaspoon ground black pepper
  • 1/4 teaspoon dried basil
  • 1/4 teaspoon dried oregano

Instructions

Maple Reduction Instructions

  • Place ingredients into a small pot on the stove and bring to a boil while stirring regularly
  • Let simmer until the mixture is approx half the started amount
  • *Be sure to keep an eye on it, as it will start to cook fast - be sure not to burn it and stir regularly!

Blackened Salmon Instructions

  • In a small bowl, mix the seasoning ingredients
  • Brush salmon fillets on one side with melted butter and generously sprinkle on the seasoning mixture - see image above
  • Place the salmon into a large, heavy skillet over medium to high heat, butter side down, until blackened, 2 to 6 minutes.
  • While the one side is cooking, brush the other side with butter and sprinkle on seasonings
  • *You can flip the fillet multiple times, if pan starts looks dry, drizzle some of the extra butter onto the fillets while cooking
  • Continue cooking until blackened and fish is easily flaked with a fork
  • Serve with Maple Reduction
  • Enjoy!

Enjoying the Farmers Market With The Family

When the seasonal farmers markets are in full swing, it can be overwhelming. Here are some tips for buying, cooking, and saving fresh local produce.

Not only are Farmer’s Markets filled with fruits and vegetables you will also find crafts, fresh baked goods, unique gift ideas and some even have entertainment! If you are looking for a fun family outing and a way to support your local farmers – your local Farmers Market is the way to do it 🙂

Here are a couple of tips for shopping at the farmers market and some ways to keep the seasonal vegetables on hand for months to come. Learn how to shop for the best local produce, cook it the produce and how to store produce once you buy it.

Visit Your Local Farmers Market

Buying Corn At The Farmer’s Market

Shop for it – Look for firm, heavy ears with silks that look fresh, not dried out. Varieties here include Silver Queen and Butter & Sugar or Tuxedo, which are some favorites.  Sweet corn is in season in Florida from late October to June.

Cook it – Did you know you can eat corn raw? However, you choose to prepare it, be sure to do cook it within a day or two of purchase.

Ways to preserve corn: can it in relishes, or on its own, blanch and freeze it whole on the cob or cut from the cob in kernels (it will keep longer on the cob.)

Try this Fresh Corn and Cucumber Salad.

To get corn kernels off the cob, you don’t need a fancy tool people to try to sell every summer. All you need is a knife, and a big bowl makes it easier to collect the kernels. Clean off the husks and silks. Hold the ear at a 90-degree angle to the bowl (steady it by snapping off or cutting the stem end.) Run your knife blade straight down the cob, and the kernels will fall into the bowl.

Save those corn cobs! Place in a pot of water and make stock which you can use for soups, for chowders, for making polenta. You can run the backside of your knife along the cobs to release all the bits of juice.

Buying Tomatoes At The Farmer’s Market

Shop It – Heirlooms or hybrids; there are plenty of delicious tomatoes available. Tomatoes at your farmers’ market will be riper and, therefore, more delicate than what you’re accustomed to finding at the supermarket. Look for many delicious heirloom varieties to enjoy. Supporting farmers growing heirloom varietals helps preserve biodiversity, which is essential to our food safety but also diminishing at alarming rates.

Cook it – Keep – Tomatoes this fresh are best enjoyed simply. Slice and enjoy with a little salt and a drizzle of good olive oil and or balsamic vinegar. Eat-in a BLT, one of the simplest and best “recipes” ever. Cut chunks and enjoy with cucumbers and red pepper in a summery chopped salad. Your chopped salad can include feta cheese or olives, or sweet onions. Red bell peppers are nice, too.

Keep it – Roma, plum, or “paste” tomatoes for sauces and canning. Dehydrate tomatoes you’d use for canning in a very low oven (200 degrees) overnight, cut in half skin side down.

Tomatoes are rich in vitamins and phytochemicals like Lycopene that helps reduce the incidence of heart disease, cancer, and muscular degeneration.

When tomatoes are in season in Florida depends on the climate, but here in Central Florida tomatoes are in season December thru May.

Buying Strawberries At The Farmers Market

Strawberries are in season here in Florida from December thru March.  Florida is the Winter Strawberry Capital after all!  Look for red berries that look plump and ready to eat.  If you buy too many, freeze them!  Strawberries freeze great and make for the perfect addition to smoothies.

You can also bake with strawberries, make jams and jellies, can them and make fruit leathers.

Store your fresh strawberries in the refrigerator, but don’t them until you are ready to eat them.

Buying Blueberries At The Farmers Market

Blueberries are in season here in Florida in April and May.  This is the best time to grab blueberries at the farmers market. 

You can also bake with blueberries, use them to make smoothies, make jams and jellies, can them and they also freeze well.

Store your fresh blueberries in the refrigerator, but don’t them until you are ready to eat them.

Find Your Local Market

Look for locally-grown items to support farmers in your area. Just Google markets near you or ask a friend!  If you find several in your area, the prices will probably be more competitive, which means extra savings for you.

Make Friends

The farmers love what they are doing, take the time to talk to them about it. Over time, they may start letting you know when there’s a deal to be had.  Don’t be afraid to ask lots of questions! Let the kids get in on it too 🙂 If the produce isn’t something you are familiar with, let farmer’s explain what it is and how to use it in a yummy recipe.

Stay Knowledgeable

Know what’s in season!  When things are in season, you will also get the best deal 🙂  Here is a free printable from Fresh From Florida that you can toss on the refrigerator that will always show you want is in season here in Florida.

Keep an Open Mind

Go off the beaten path, try something new! Challenge your kids (and yourself) to choose at least one thing you’ve never tried before, then take it home and pick a recipe to use it in.  Maybe do a family cooking competition with the new ingredients!

Limit Your Shopping List

Be sure to buy only what you can eat in a week. It may be tempting to buy everything you see, but you don’t want to waste it either. Carrots, apples, and heartier greens tend to last a bit longer where delicate greens are only good for a few days.

Bring Your Bags

Bring a couple of big, sturdy bags to carry your goods home in.

I love to seek out Farmers Markets while we are on vacation – the Farmers Markets in St. Augustine are absolutely amazing! Each market is unique and will have different vendors and fun things to find.
