Summer is HERE in Florida, and if you don’t live in sunny Florida, your warm weather is coming…I promise 😉 While I know we all love being outside and enjoying the sunshine, our skin can really take a beating in the summer.  It is important to care for it, so we can all have that summer-glow we all strive for.

Here are 12 Summer Skincare Tips:

1.  First, take a few moments to actually understand how the sun’s rays affect your skin. 

While Vitamin D is good for us, the rays from the sun can indeed be harmful.  Learn more how sun can damage your skin.

2.  Wear sunscreen

That may seem obvious, but you would be surprised how many people don’t do it. You must wear sunscreen…and don’t forget to reapply sunscreen regularly.  And don’t forget to protect your lips, lips need an SPF of at least 15 too!

3.  It’s a great idea to stay out of the sun between 10 am and 3 pm. 

That is actually the hottest part of the day and when the sun’s rays are the most harmful.  If it’s impossible to stay out of the sun during those hours, be sure to use sunscreen and check out the rest of this list on how to protect and care for your skin.

4.  Wear protective clothing

Think large brim hats (cover those ears!), sunglasses, UV Protective Clothing, etc.   You will notice that most stores carry UV protective clothing, just look at the tags 🙂

5.  Don’t be obsessed with getting a tan

There is no need to be outside extra time just to get a summer tan.  Your health is more important than an extra shade of color!

6.  If you get a sun burn, take care of it! 

Take a cool shower to cool down the skin, use aloe or shea butter to help heal the skin.

7. Give your skin a break

Let your skin breathe by taking off your makeup, sit in the shade, or maybe stay inside for a few hours so you don’t have to wear sunscreen all the time.  Your skin needs air too!  My backyard pool area is completely shaded by 3pm, so that’s when I sit outside and enjoy the fresh air, and when I encourage the kids to jump in.

8.  Exfoliate

With the holiday weekend right around the corner I thought we would all enjoy a fun little dessert idea!  I RARELY make pies, in fact, if I am being honest I don’t think I have ever made a fruit pie…And with my husband and I the only one that would eat it, it would probably go bad before we got the chance to eat it all.  So I decided Mini Pies were perfect idea.  The perfect serving size, perfect to share, and you can make an many or as little different varieties as you would like 🙂

I went with cherry, blueberry, apple, and a vanilla mousse.  My husband’s almost favorite pie is apple, so I made apple for him.  I wanted the cherry and blueberry because they were well…RED and BLUE 🙂

The vanilla mousse is delicious and the only one my kids will eat…and it’s WHITE 🙂

Mini Pies Recipes

To make the pie crusts, you just buy the ready-made pie crusts and use a cookie cutter, pancake mold, biscuit cutter etc. to get a perfect circle.

Once you have your mini pie crusts you gently push them into an ungreased muffin/cupcake tin.

For the fruit pies, you load each pie crust up with your favorite filling.

For the vanilla mousse ones, you actually bake the shell empty and add the filling later, so be sure to watch that in the directions.

As you can see, I used canned pie filling in these.  I’m sure I could have spent all day (and a small fortune) getting the fruit and making it into a homemade pie filling, but my life and my budget doesn’t allow for that.  Using canned pie filling definitely makes this recipe a bit easier, which I know many of us appreciate!

Ingredients
  • 1 Can Cherry Pie Filling
  • 1 Can Blueberry Pie Filling
  • 2 Packages of Ready Pie Crust
  • 8 oz Lite Cool Whip
  • 1 Package Vanilla Instant Pudding
  • 1 1/2 cups milk
Instructions
  1. Preheat oven to 400 degrees
  2. Unroll each pie crust and use a circle cutter – such as a pancake mold or cookie cutter – to make small circles
  3. Gently push each mini pie crust into ungreased muffin tin
For the Fruit Pies
  1. Fill each mini crust with desired pie filling
  2. Bake for 20 mins until golden brown
For the Vanilla Mousse
  1. Bake empty pie crusts at 400 degrees for 10-12 mins or until golden brown
  2. While they are baking, mix pudding mix, cool whip, and milk until well blended
  3. Refrigerate for 20 – 30 mins – it will get firm
  4. Once mini pie crusts are cool and mousse it firm, fill each pie crust with the vanilla mousse

  1. Feel free to arrange your pies into a flag!

Who doesn’t love BBQ? With Summer here I am sure you all are itching to get the grill fired up! Or, you could be like me, and have your outdoor kitchen area isn’t ready quite yet. We have a smoker and a grill that are just SCREAMING to be used, and they are about 99% ready…but they aren’t there just yet 🙁

But that’s not going to stop me from enjoying BBQ! No way! That’s why I love this BBQ Chicken Pockets Recipe. It has all the BBQ flavor and I prepped everything in the crockpot. So, it’s an easy and delicious recipe!

I got together a few ingredients and I was ready to get started.   I added in the carrots and green peppers for some hidden veggies and added crunch.

I love using shredded chicken in recipes, it’s so easy to make!  Just toss your chicken in the crockpot with a little chicken broth and leave it sit until it’s nice and tender!   Once my chicken was ready, I removed it from the crockpot, used 2 forks to shred it and then added the chicken, Stubb’s Original Bar B-Q Sauce, and the veggies back into the crockpot.

I let everything simmer on low in the crockpot for about an hour.  I wanted the veggies tender and the BBQ sauce to be good and soaked into the chicken.

Next up is making the “pockets”.  When you unroll the crescent rolls, don’t separate them into triangles.  Leave them as the rectangle shape and do your best to get rid of the perforation, so that the juices stay in 🙂  Just use your fingers to squeeze the sides together.

I stuffed mine pretty good.  You will fill half of it with the BBQ chicken mixture then fold the top of it.  Use the fork to seal the sides closed, and once again – check the perforation along the top.  Use your fingers to pinch them closed if needed.

I topped mine with Sharp Cheddar Cheese before tossing them into the oven…who doesn’t love some melted cheese?!

Ingredients
  • 1 can Big & Flaky crescent dinner rolls – if you don’t have big and flaky, regular would be fine as well
  • 1.5 lbs of shredded chicken
  • 1 jar of Stubb’s Original Bar B-Q Sauce
  • 1/2 cup diced green peppers
  • 1/2 cup matchstick carrots
  • Shredded Reduced Fat Cheddar cheese to top the pockets
Instructions
  1. Add 1 jar of Stubb’s Original Bar B-Q, carrots, and green peppers to the shredded chicken
  2. Cook on low in crockpot for about 1 hour – until veggies are tender
  3. Preheat oven to 350 degrees
  4. Make crescent rolls into a rectangle shape – see images above
  5. Fill half of the rectangle shape generously with the BBQ chicken mixture
  6. Fold close
  7. Use fork to seal edges closed
  8. Make sure seam on the top is sealed as well
  9. Top each “pocket” with shredded cheddar cheese
  10. Bake at 350 degrees for 15 mins or until deep golden brown
  11. Serve warm
  12. Enjoy!
Notes
I had enough leftover BBQ Chicken to easily make 8 pockets! So you can make more if you would like too. I used the leftover BBQ chicken for nachos the next day!

Doesn’t that smoothie have an absolutely beautiful color?  The beet and blackberries blended into a beautiful deep purple and I just love it 🙂  You have heard me say before that I just recently started “eating” beets, I am not daring enough to “cook” with them yet, but I have been doing pretty good with them in my smoothies.  Beets are loaded with vitamins!

I live in Florida and it’s HOT here.  We are talking upper 80s by 9 a.m.  I have a lot going on today and I really needed to get my exercise in, so I decided I would go for my run after the kids got on the bus.  I ran 3.5 miles and I think I sweated out about a million calories 😉  As soon as I walked through the door I opened the refrigerator to grab a coconut water.  Of course I didn’t have any cold.  Then I went to grab the gallon of DairyPure Milk, I didn’t have breakfast and my body was craving vitamins and something cold.  But I opted for water.  Why did I put the milk back?  Well, for some reason I view milk as the drink I have at dinner.  Like something weird would happen to me if I had it at a different time of the day.  Do you ever do that?  I’m weird I know.  Then as I sat there debating why I put the milk back, I decided I was going to break my mold!  I was going to get out the DairyPure and enjoy it.

  • ½ tbsp coconut oil

The Delicious Part Of My Day

It’s Monday. Time to get back on track for the relaxation and fun family time of the weekend.  Anyone else have a hard time getting motivated?!  How do you start your day? I never thought that I was a creature of habit, as I feel like I am always doing a million things, but I really am!

When I get back home and park the scooters, I water my flowers and grab whatever weeds may have snuck in. I am LOVING my flowers this year! The colors are just gorgeous and they make me smile.  Those pink ones are my favorite at the moment…they are so bright!

  • 4 - 6 boneless chicken breasts approx. 1½ - 2 lbs
  • cup your favorite BBQ sauce we used Sweet Baby Rays
  • 20 oz can pineapple chunks in 100% juice
  • cup soy sauce
  • ¼ cup brown sugar
  • 1 tbsp cornstarch

Instructions

  • Write BBQ Hawaiian Chicken and Cooking Times on Ziploc with Sharpie
  • Place all ingredients into the ziploc freezer bag, put in your freezer until ready for use
  • When ready - thaw overnight and cook on low for 4-5 hours or from frozen to 6 - 8 hours
  • Once chicken is tender, remove from slow cooker, shred it with two forks and place in bag into the crock pot for at least 30 minutes before serving
  • Serve over rice/quinoa, lettuce, on a bun or in a tortilla
  • Enjoy!

Do you lift weights? I know most men make it a part of their workout, but what about us women? Weights are very important for us too!  I will admit, I think doing cardio is more fun. I enjoy running, it’s a great way to get some fresh air and clear my head.  I enjoy going to Jazzercise because I it motivates me to work out with others and the music is always fun and upbeat.

How Can Beginner Build Muscle?

Adding weights to your workout is a great way for a beginner to build muscle. A beginner looking to build muscle should start using 2-15 lbs with 2 to sets per workout. You’ll know which weights you should lift by knowing how many pounds you can lift 10 to 12 times for 2 to 3 sets without harming yourself.

I will admit that I am absolutely horrible about motivating myself to lift weights at home, I even have a weight set and kettle bells, but I will rarely pick them up. I have to go to a class to get my weights in. I go to Jazzercise two times a week (the other days I run or walk) and Jazzercise is where I get my weights in! We do 30 – 40 mins of cardio and then we focus on strength training for the remainder of the class.

A popular question about adding weights to your workout is, “when should you increase weight when lifting?” I’ve found that you will need to be able to lift at least 5 to 8 reps, 12 to 15 for building muscle size, comfortably before you should increase weight when lifting.

I shared a little bit about my workout routine because it’s important to know that you everyone is different. And honestly, what I can lift one day may be different from what I can lift the next day. Taking a rest day will help your body rejuvenate and rebuild muscle tissue after being stimulated during a workout with added weights. It’s best to take one to two rest days per week if you plan to work out all week long.  I give my muscles a rest on the days that I walk or run, again they get their workout in when I am at Jazzercise.

If you plan to spend weekends with your family and prefer to get your workouts in during the work week, then you could make the weekends your two rest days, that’s what I do! This is a perfect way to indulge in some quality family time without any other obligations and allow your body to recoup from the week’s workouts.

Why You Should Lift Weights

Here are some Reasons Why You Should Consider Adding Weights to Your Workout:

Easy way to add more resistance

Adding weights to your workout will give you more resistance and in turn a better workout without having to add extra time to your daily exercise routine.

Easy to do at home

Lifting weights or adding weights to your workout is an easy process to do with your at-home exercises, so no need to go the gym to get your weight lifting session in.

Your metabolism will increase

Ummm….yes please. As women age, we lose muscle mass. It just happens. Less muscle means a slower metabolism. When you add weights to your workout, your metabolism will also stay increased long after your workout stopped.

Increases your endurance

You’ll be able to run longer, swim longer, spin long and just about do any other workout longer when you add weights to your workout.

You’ll burn fat

Did you know that each pound of muscle burns about 30 calories a day just to sustain itself? That means the more muscle you have, the more calories will you burn – even if you are just sitting at your desk!

Reduces muscle loss

As we age, our body starts to lose muscle mass so adding weights into your daily workout routine will help you maintain muscle mass as you age.

Improves motor performance

Weight training helps strengthen connective tissues, tendons, and muscles leaving you to have a better motor performance with everyday activities.

Your body will get firmer

Cardio helps us burn calories and fat, but adding weights tighten will your body. That helps us define those muscles…and help gravity 😉

Boost your balance

Adding weights to your workout helps improve muscle and balance which helps reduce the chances of falling. You can also try yoga! I know I need all the help with balance I can get!

You’ll start seeing your body change

Fat takes up more room in your body than muscle, as you start to replace fat with muscle – you will notice the changes. Maybe those jeans you haven’t worn in a while will make it to the top of your drawer again!

You’ll be healthier

As you work out more and add to your muscle mass, you will reduce your risk of heart disease and diabetes. “Muscle helps remove glucose and triglycerides from the bloodstream, which reduces the risk of type 2 diabetes, as well as hardening of the arteries,” says Timothy Church, MD, Ph.D., a preventive medicine expert at Pennington Biomedical Research Center. It could also help your blood pressure!

You could live longer

The more muscle mass you have, the longer you’ll live according to one 2014 study from UCLA.

You’ll lose more calories

Using weights also increases your heart rate, as your heart rate increases – you burn more calories.

Lifting weights is good for your bones

Strength training is one of the best ways to help protect your bones, and possibly help counteract age-related bone loss.

You’ll sleep better

People who exercise regularly, especially those who add weights to their workout tend to get a better night sleep.

You’ll be happier

If you are healthier, sleeping better, and fitting into your clothes better, you will just naturally be happier! Yep, I can agree with that!

You can wear cool graphic t-shirts

Lastly, adding weights to your workout will let you buy funny graphic t-shirts that are meant for bodybuilders and other weight lifters that will make others and you laugh.

Still not sold on the idea of weights? Maybe you are thinking you don’t have a Jazzercise close (find a location near you here), no gym nearby, no extra money to go out and buy weights or a kettle bell?

You can do lift weights at with things right at home!

If you’re not ready to invest in weights or hit the gym to use their weights during your workout, that’s fine! Many household items work well when you’re considering adding weights to your workout.

Some of the items that I use for weights include:

Ankle weights
Milk jugs
Cans that hold canned goods (cans of soup can work well)
Full plastic water bottles
Packages of rice or beans
Paint cans
Resistant exercise bands
Bags of produce

I mean, just think about any household item that’s stable and has a little weight to it. There are so many household items that you can turn into weights when you’re considering adding weights to your workout routine. Have a look around your house and use some of these household items to get started. Once you’ve decided that adding weights to your workout is a good fit for you, feel free to purchase some kettle bells or even barbells to have other options for weight lifting during your workouts.

Honestly, you don’t need special equipment or a gym to get strength training in. You just need YOU. You can do push-ups, sit-ups, workout your triceps by doing chair dips, burpees, squats, planks – just to name a few! You can do all these things right at home, at any time of the day.

I promised you guys another Beet Recipe and here it is! I’m not daring enough to add in a whole beet or anything yet, but I am proud to say that I officially have more veggies in this smoothie than fruit 🙂 Carrots are an easy vegetable, if you are just starting out with using your blender to make your own smoothies – I strongly recommend them – they add little taste but lots of vitamins!

I have also added carrots, strawberries, carrots, coconut water, and greens in this smoothie recipe. Greens are another easy addition to any smoothie- again, lots of vitamins and little taste. I would have never imagined that I would be drinking a salad for breakfast a few months ago…and now I crave it.  Who would have thought?!

I have been sharing smoothie recipes with you guys for awhile now.  I think it’s obvious that fruits are delicious in it, but did you know that adding in your salad could so good for you?  In fact, I don’t even taste it!  Which to be honest, makes it easier for me to add in it daily 😉

Best Strawberry Banana Carrot Greens Smoothie

For this smoothie recipe I layered in carrots, strawberries, banana, coconut water and greens into my Ninja Auto iQ.  I just grab a handful of whatever salad I have in the refrigerator for the greens.  I will admit that I have yet to use kale, but that is on my agenda to try one day soon!

I love using carrots, they are full of vitamins and they are a “sweeter” veggie, so the flavor in my smoothie is very mild.  You will notice that I use Juice Plus+ Complete Shake Mix in my smoothies, feel free to use a protein mix or shake mix that you use or leave it out.

Here are some of the health benefits of the ingredients I selected for this easy smoothie:

Ways To Volunteer As A Family

I was at SeaWorld last week talking to one of the animal trainers and I asked him what is one thing that he would say to kids that have an interest in working with animals, and he said “Volunteer at an Animal Shelter.” You have to know the behind the scenes too!

That got me thinking about all the ways you can volunteer as a family.  Volunteering is a great way to get more  involved in your community, as well as to teach your children how important helping others (and our environment!) is.  Especially since summer is coming up and the kids will be out of school, now is a good as time as any to check out ways to volunteer as a family.

There are lots of places volunteer, but I wanted to share a few ideas:

  • Animal Shelters
  • Schools
  • Soup Kitchens
  • Hospitals
  • Assisted Living Facilities
  • Churches
  • Pregnancy Help Centers
  • Women’s Shelters
  • Food Banks – you can donate food as well as time

These are all things that you can do together as a family, make Saturday or Sunday mornings for the month (or every month!) Family Volunteer time. Sit down as a family and pick the cause that you would like to assist with.
