Slow Cooker Southwest Chicken

I love an easy dinner. A dinner that is light, delicious, and one that I can just toss in the crockpot. This Southwest Chicken Recipe is just that. You can easily toss it in the slow cooker before you head out the door in the morning, or make it a freezer to crockpot meal. Freezer to crockpot meals are nice because they allow you to plan ahead and make for a really easy morning 🙂

Healthy Southwest Chicken

When chicken is on sale, it’s the perfect time to stock up and make a few freezer to crockpot meals, I checked out my Flipp app and noticed that Chicken Breasts were on sale for just $3 a pound at Winn Dixie, so that’s exactly what I did!

I grabbed extra chicken, grabbed my neighbor, and we worked together to prep a couple of these Southwest Chicken Freezer to Crockpot meals so we both had a few dinners ready to go for our families when we needed them 🙂

Slow Cooker Southwest Chicken

This easy slow cooker recipe is prepped in about 5 minutes and can be made into a freezer meal for meal planning. Healthy and delicious!

Equipment

Ingredients

  • 1½-2 lbs boneless skinless chicken breasts
  • 1 can southwest or fiesta corn, drained
  • 1 can black beans, rinsed and drained
  • 16 oz your favorite salsa I recommend medium to hot heat to added flavor
  • 8 oz reduced fat cream cheese

Instructions

  • Write name of recipe and cooking time on a freezer bag
  • Cut the cream cheese into cubes
  • Add all the ingredients into a large freezer bag
  • Place in freezer until ready for use
  • When ready for use thaw the night before and place in slow cooker for 6-8 hours on low
  • About 30 minutes before the meal is going to be served remove and shred the chicken and place back in the slow cooker so that the chicken is nice and juicy
  • Serve over rice or in tortillas or taco shells
  • Enjoy!

Notes

If you are making this as a freezer meal, skip steps 1-4 in the instructions and just place everything into the slow cooker.
Forget to take out the meal from the freezer the night before? No worries, I do it ALL THE TIME! Just place the frozen ingredients into the crockpot and allow it to cook on low for approx. 8 hours, be sure to stir it every now and then.

  2. We love mexican food and we love easy meals. This looks and sounds delicious and I love that you can throw it in the crock pot and let it cook. Pinning for my recipes.

  3. My husband would love this. I’m not a bean lover (one of my faults, my husband will say!) but I can eat black beans if they are mixed with corn and salsa – so that means this would be a meal that would work for both of us!
