Does it matter which mushrooms you use?

No! Use the ones you enjoy the most, I used baby bella mushrooms. You can use sliced mushrooms like I did or whole mushrooms. Just make sure they are cleaned.

How do you roast mushrooms?

It’s easy!

Preheat your oven to 400 degrees
Spread the in a prepared baking dish, add the wine and fresh herbs.
Roast the mushrooms in the preheated oven for about 20-25 minutes or until they are tender and have a rich, roasted color.

These wine-roasted mushrooms can be served warm as a side dish, added to salads, pasta, or used as a topping for your favorite bakery bread.

Do you have to use goat cheese on your crostini?

No, you don’t have to. My husband doesn’t like goat cheese (breaks my heart!) so sometimes I will substitute cream cheese or ricotta cheese. You can also leave off the cheese overall for a vegetarian option. Me, I just love goat cheese….and I love it on this appetizer 🙂

What are the best herbs to use?

That’s up to you! I have a ton of rosemary in my garden, so I used that. I also had fresh thyme here, so I used that too. Feel free to experiment. Parsley would also be a good option.

Garlic would also be a delicious addition….Roasted garlic is DELISH.

  • Baking dish

Ingredients

  • 8 oz fresh mushrooms – I used sliced bellas 1 package
  • 6 oz goat cheese
  • 2 sprigs of fresh thyme + more for garnish
  • 2 sprigs of fresh rosemary + more for garnish
  • ¼ cup red wine I used CK Mondavi and Family Dark Cabernet Sauvignon
  • Olive oil spray
  • ¼ teaspoon Coarse salt + more for garnish optional
  • Black pepper
  • 12 slices baguette bread

Instructions

  • Preheat oven to 400℉.
  • In a baking dish, spray olive oil spray, add mushrooms, herbs, wine, salt and pepper.

  • Roast mushrooms in oven for 20 minutes, or until the mushrooms begin to soften.
  • While mushrooms are roasting, make the crostini by slicing the baguette and lightly toasting in the oven. *Tip – ask your bakery to slice it for you
  • Spread goat cheese evenly over 10-12 slices of baguette
  • Once mushrooms are done, top mushroom mixture over goat cheese and garnish with more fresh herbs, salt and pepper.
  • Serve with remaining CK Mondavi and Family Dark Cabernet Sauvignon

Double the amount of mushrooms used to use more of the baguette.
Use the bread that you enjoy most! I used a cuban bread, but a french bread would also be amazing.

How To Plan A Bourbon Trail Trip + Maple Bourbon Milk Punch Recipe

Looking to plan a trip to the Bourbon Trail? Or maybe plan a bourbon themed party? Here’s some tips from our Bourbon Trail Trip and an amazing bourbon cocktail to make at home! We celebrated a big milestone birthday in my house this year. The big 5-0. Not mine 😉 I will forever be 45….I’m not greedy, I don’t have to be 21 or even 31, 40s are fun! Ok, back to my hubby’s birthday….Last year around this time my husband and I started talking about what he may want to do to celebrate being 50 years young and he mentioned that doing the Bourbon Trail would be fun.

The next day, I started planning. Bourbon and the Bourbon Trail have become a lot more popular over the last few years and I knew I would be inviting about 20 people, so I knew I had to start planning sooner than later.

I guess before we get to the planning for a Bourbon Trail Trip or a 50th Birthday Party in Kentucky, I should tell ya what the Bourbon Trail actually is.

How to plan a Bourbon Trail Trip

What is the Bourbon Trail?

The Bourbon Trail is a tourist attraction and marketing initiative in Kentucky, that celebrates the rich tradition of bourbon production in the state. It is a collection of distilleries, each with its own unique history and methods of producing bourbon. The Bourbon Trail offers educational experiences that delve into the history of bourbon, the significance of the region in bourbon production, and the unique characteristics that distinguish Kentucky bourbon.

Distillery tours often conclude with tastings, allowing visitors to sample a range of bourbons produced by the distillery. This provides an opportunity to appreciate the diversity of flavors within the bourbon category.

Here’s the steps I went through to plan our Bourbon Trail Trip

Send a Save The Date to everyone you want to invite. This will give you an idea of how many people are coming and let people mark their calendars and start thinking about travel plans.

Contact a travel agent. They can give you ideas on where to stay for the size of your group. Also, take into consideration budget of everyone coming. If you are expecting everyone to pay for 3 nights at a hotel, you may not want to pick a hotel that’s $400/night.

Get a block of rooms. Once you pick the hotel, call them (or ask your travel agent to) and get a block of rooms. Sometimes this will get you a discount too!

Educate yourself. Learn about the bourbon-making process and the history of the distilleries you plan to visit. This will enhance your appreciation during the tours. Encourage your guests to do the same.

Define Your Itinerary. Talk to friends and family that like bourbon. Research the distilleries along the Bourbon Trail. Popular ones include Maker’s Mark, Jim Beam, Woodford Reserve, Buffalo Trace, and many others. Decide how many distilleries you want to visit and the duration of your trip. We visited Buffalo Trace, Lux Row, Willett and Heaven’s Hill. *Don’t do more than 3 or 4 in one day.

Plan your distillery visits. There are companies that will help you with this for a fee, I did ours on my own to save some money. Tours fill up FAST. They book up to 3 months in advance, book as soon as possible. Another important fact to note that many distilleries have a bourbon release of the day, and these sell out FAST, so plan your tour with your MUST BY being your first stop. Our first stop was Buffalo Trace. Our second stop was Lux Row….we got there at 12:30, finished our tour at 1:15 and their limited release of the day was sold out by the time we finished the tour.

Planning Bourbon Trail Trip

Transportation. Decide on your mode of transportation. If everyone is drinking, don’t drive. Use a tour companies or transportation services that cater specifically to bourbon enthusiasts. We used Pegasus and they were amazing! Bruce was our driver…highly recommend! We had a party of 17 and got the limobus that held up to 22, it was the perfect size for our group.

Stay Hydrated and Plan Responsibly. Bourbon tastings can be strong, so stay hydrated and plan responsibly. Designate a driver or consider guided tours that provide transportation.

Where to eat in Louisville
Noche Mexican BBQ

Plan local dining options. Kentucky is known for its delicious cuisine, so plan to enjoy meals at local restaurants along the way. We ate at Noche Mexican BBQ, Le Moo Steakhouse and Lou Lou on Market. And we grabbed Uber eats one night. For breakfast, we enjoyed the free meal at the hotel!

Check Events and Festivals. See if there are any bourbon-related events or festivals taking place during your visit. These can add extra excitement to your trip. We didn’t have any, but our tour guide at Lux Row told us that the Kentucky Bourbon Festival was definitely one to check out.

Things to do in Louisville

Explore the area. We did a self-guided walking tour as well as a Historic Old Louisville Walking Tour. On our self-guided tour we stopped at Old Forrester and Angel’s Envy.

Enjoy the Journey. The Bourbon Trail is not just about the destination but also the journey. Enjoy the scenic routes, explore local attractions, and immerse yourself in all things Louisville and bourbon.

What is the history of Bourbon?

The history of bourbon is deeply intertwined with the history of the United States, particularly Kentucky. Bourbon’s roots can be traced back to the whiskey-making traditions of early American settlers. Distilling skills were brought to the New World by Irish and Scottish immigrants in the 18th century.

Kentucky, with its abundant limestone-filtered water and ideal climate for aging whiskey, became a prominent region for whiskey production. The first settlers in Kentucky are believed to have started distilling corn-based spirits.

Evan Williams, often credited as Kentucky’s first commercial distiller, set up his distillery in the late 18th century in what is now Louisville. The Whiskey Rebellion of the 1790s, a protest against a federal whiskey tax, also played a role in shaping the whiskey industry.

Fine dining is a fabulous culinary experience that everyone needs to try. However, there is a code of behavior you need to know about before you take a seat at the table. You must learn a little about fine dining etiquette first.

Indulging in quality food and wine with people you love is one of life’s greatest pleasures. However, there’s a major difference between sharing a casual dinner al fresco on a wine farm or in a local bistro and enjoying a fine dining experience.

And we don’t just mean the food.

This fine dining etiquette also changes depending on where in the world you’re eating and drinking, so we’re going to stick to the more Westernized rules. But if you plan on traveling, don’t forget to do your research on the topic too. Table manners will never go out of fashion!

Basic Fine Dining Etiquette

What Is Fine Dining?

Fine dining typically refers to a restaurant-quality experience that is more sophisticated, expensive, and refined than your regular sit-down meal. Fine dining meals often span several courses and include carefully chosen wine pairings.

Summing it up, fine dining exudes an aura of formality, evident in both the proceedings and the manner in which the food is presented. It’s no surprise, therefore, that fine dining comes with its own set of etiquette!

Fine Dining Etiquette for Beginners

The menu stays on the table

In the world of fine dining, it’s considered poor manners to lift your menu up off the table completely as it creates a sense of disorder. At the very least, a corner of your menu should always touch the table.

However, to avoid breaking this rule, the best course of action is to leave the menu on the table in front of you, paging through it as you would a book. This maintains a sense of structure and allows the waiter to remove it without fuss.

Hold your wine glass from the stem

As many wine-tasting etiquette experts will tell you, the best way to hold a glass is by the stem. This ensures a solid grip and prevents spillage.

But most importantly, it stops any scent from your hand from compromising the flavor of the wine as 90% of taste relates to smell. Additionally, it hinders the formation of fingerprint smudges on the glass, maintaining a neat and tidy appearance.

Don’t sip from multiple wine glass angles

Another important piece of wining and dining etiquette is to only sip from one angle on your glass. This keeps your lips from smudging up the rim, keeping your wine glass looking clean and sparkling.

If you’re wearing lipstick or gloss, this rule is doubly important, as the rim will quickly get smudged and look untidy.

The rim of the plate stays clean

As you can gather by now, a lot of the etiquette focuses on maintaining a sense of order and formality.

When eating a meal at a fine dining table, you must aim to keep your food as central to the plate as possible—or as close to the arrangement that it came in as possible. This aids in maintaining a neat and clean appearance for your plate, while also minimizing the risk of food spillage over the plate’s edge.

If you aren’t able to finish all the food on your plate, that’s perfectly acceptable; fine dining etiquette covers that problem, too.

Gently relocate any undesired food or garnish to the upper-left corner of your plate. This is deemed the appropriate section for discarded food.

Never clink your glass against another

While this one can be hard to resist if it’s a particularly celebratory night, clinking your glass against another is considered poor fine dining etiquette. It can damage delicate glassware, especially if it’s crystal.

Of course, guests are allowed to simultaneously raise their glasses when a toast is being made.

Swirl your glass with finesse

Upon receiving a glass of wine poured by a waiter or host, it is considered good etiquette to elegantly swirl the wine. This demonstrates your appreciation for the viscosity and aromatics while indicating that you appreciate a fine wine.

If you don’t know your way around a glass of wine, it’s a good idea to do some research. Visit wine farms and go for tastings, join a wine of the month club, and ask sommeliers for advice when choosing a bottle or glass. This will give you confidence when fine dining and ensure you enjoy every wine pairing to its full potential.

Wine and dine in sync with others

Rushing through your meal or glass of wine is a bad idea for several reasons. One of them is that it puts you out of sync with your fellow fine diners.

The same goes for approaching your meal with extreme slowness. Rather than working through your meal at an individual pace, try to match that of the people around you so that you all finish comfortably at the same time.

Leave one bite on the plate

If a substantial amount of food remains on your plate, it might suggest a dislike for the dish, while finishing every bit could be seen as gluttonous or imply that the portion was inadequate.

Both of these extremes are to be avoided. Instead, leave one bite—the perfect amount to show you are perfectly satiated.

Never announce a trip to the restroom

If you need to use the restroom, don’t say it like it is. Instead, simply say “excuse me”, and take yourself wherever you need to be. It’s not information your fellow guests need to know!

It’s Florida Starburst Pummelo Season and what better way to celebrate than with this sexy Pummelo Gin Fizz cocktail?

So, what exactly is a pummelo?

Well, I’ve been chatting about them for a few years with you all, so hopefully you remember that they are the BIGGEST, MOST AMAZING FLORIDA CITRUS. Noble Citrus here in Winter Haven has rows and rows of citrus trees that grow the Florida Starburst Pummelo. They are then hand-picked and shipped to your local grocer so that you can enjoy them from October to January. The Florida Starburst Pummelo may remind you of a grapefruit, but it is larger, juicier, sweeter and they are actually less acidic than grapefruit.

How to make A Pummelo Gin Fizz

Alright, so what is a gin fizz cocktail?

A Gin Fizz is a classic cocktail that’s both refreshing and slightly tart, featuring gin as the primary spirit. It’s known for its frothy and effervescent texture, achieved by vigorously shaking the ingredients with ice and topping the drink with carbonated water (soda water or club soda).

Here’s a basic recipe for a Gin Fizz:

Ingredients:

2 oz (60 ml) gin
3/4 oz (22 ml) fresh lemon juice
1/2 oz (15 ml) simple syrup (equal parts water and sugar)
1 egg white (optional, for frothiness)
Soda water (club soda) to top
Ice
Lemon twist or slice, for garnish

Instructions:

  • In a cocktail shaker, combine the gin, fresh lemon juice, simple syrup, and, if desired, the egg white.
  • Add a handful of ice to the shaker, and shake vigorously for about 10-15 seconds. This not only chills the cocktail but also creates frothiness from the egg white.
  • Strain the mixture into a highball or Collins glass filled with ice.
  • Top off the glass with soda water, leaving about an inch of space at the top.
  • Give it a gentle stir to combine the ingredients.
  • Garnish with a lemon twist or slice.

The egg white is an optional ingredient that gives the Gin Fizz its characteristic frothy head. If you choose to use it, make sure to shake the cocktail thoroughly to create the foam. If you prefer a vegan or egg-free version, you can omit the egg white; the drink will still taste delicious but won’t have as much foam.

So, why make a Pummelo Gin Fizz?

Well, the Pummelo Gin Fizz is a variation of the classic Gin Fizz cocktail that incorporates pummelo simple syrup juice for a citrusy twist. I didn’t do the egg white in my recipe, adding egg white just wasn’t up my alley.

The combination of gin’s botanicals, pummelo’s mild tartness, and the effervescence of soda water creates a refreshing and flavorful cocktail.

Why add rosemary to your Pummelo Gin Fizz

Honestly, I did it because it’s growing like crazy in my garden and it’s pretty!  But, adding rosemary to a Pummelo Gin Fizz is an easy way to enhance the flavor profile and aroma of the drink. Rosemary is a fragrant and aromatic herb with earthy and pine-like notes that can complement the citrusy and botanical qualities of the cocktail.

To incorporate rosemary into a Pummelo Gin Fizz cocktail, follow these steps:

  • Muddle a small sprig of fresh rosemary in the bottom of the glass or shaker to release its aromatic oils.
  • Proceed with the standard Pummelo Gin Fizz recipe, which typically includes gin, pummelo simple syrup, and soda water or sparkling water.
  • Garnish the finished cocktail with an additional sprig of fresh rosemary for both aroma and visual appeal.

Keep in mind that the intensity of the rosemary flavor can vary depending on how much you muddle and how long you let it infuse in the cocktail. You can adjust the amount of rosemary to suit your taste preferences, from a subtle hint of aroma to a more pronounced herbal flavor.

To make pummelo simple syrup, follow this recipe add in the rind of the pummelo to the pot and then remove it once you remove the pot from the heat.

Pummelo, with its sweet and mildly tart flavor, pairs well with a variety of alcoholic beverages, particularly in cocktails.

Tasty Pummelo Gin Fizz

Here are some alcoholic options that complement the flavor of pummelo:

Vodka: Vodka’s neutral flavor allows the pummelo’s natural sweetness and citrus notes to shine. You can create a refreshing pummelo vodka cocktail with pummelo juice, vodka, and a splash of soda or tonic water.

Gin: Gin’s botanicals, including juniper and various herbs and spices, can enhance the citrusy profile of pummelo. A pummelo gin and tonic or a pummelo Collins (similar to a Tom Collins) are excellent choices.

Rum: Light rum or white rum can provide a tropical and fruity backdrop for pummelo. Consider mixing pummelo juice with rum, a bit of lime juice, and a touch of simple syrup for a delightful cocktail.

Tequila: Tequila, especially silver or blanco tequila, pairs nicely with pummelo’s citrus notes. A pummelo margarita or a pummelo Paloma (with grapefruit soda) can be delicious options.

During fall, pumpkin shows up in everything from coffee and cookies to hummus and cereal. While this recipe isn’t pumpkin pie spiced, it still lets you enjoy all the flavor and nutrients of pumpkin. I love cooking with pumpkin year-round; just a little puree in soups or sauces packs in nutrients without altering the taste.

I have seen pumpkin mac n cheese all over social media and I was soooooo excited when Florida Milk challenged me to make it.

This recipe for Pumpkin macaroni and cheese is a simple one-pot meal. You can have it on the table in just about 30 minutes so it’s perfect for any night of the week. It is a hearty and comforting dish perfect for a cool fall evening. 

The pumpkin flavor in pumpkin macaroni and cheese is not overwhelming, in fact, it just gives the dish a subtly sweet flavor that pairs perfectly with the homemade cheese sauce. Don’t worry homemade cheese sauce is not hard to make, and once you have made it and tasted it, you will always want to make it from scratch!

So what do you need to make pumpkin macaroni and cheese? Don’t worry, you probably already have most of the ingredients in your pantry!

One Pot Pumpkin Mac N Cheese

Pumpkin Macaroni and Cheese Ingredients

Milk –  You will need milk to make your cheese sauce from scratch. Be sure to use Florida Milk, of course 😉 Not sure if you are buying Florida Milk, here’s how to know: Look for the number 12 on the series on numbers on your milk jug.

Cheese – You are going to need some shredded sharp cheddar cheese for your homemade cheese sauce. You can also add gouda, gruyere, or parmesan cheese to your cheese sauce if you would like to. If possible shred your own cheese, and the sauce will turn out much creamier and smoother. Store-bought shredded cheese has potato powder in it and the end result is not as good. 

Butter –  You need butter to work as your fat content to make your homemade cheese sauce. To make bechamel, which is just a fancy name for cheese sauce, you need equal parts of fat (butter) and flour. 

Pasta – You’ve got to have pasta to make pumpkin macaroni and cheese, but you don’t have to use elbows if you don’t want to. Some alternatives are shells, fusilli, cavatappi, rotini, or penne. I found those cute little pumpkin shells at Trader Joe’s for under $3.

Pumpkin Puree – You will need a can of pumpkin puree to make this amazing pumpkin macaroni and cheese. You can also use roasted pumpkin or butternut squash in place of the canned pumpkin puree if you have it on hand.

Pumpkin Macaroni and Cheese Variations

You can make this pumpkin macaroni and cheese your own with a few simple variations, here are a few ideas:

  • Cooked chopped bacon would go great in this dish.
  • You could also add caramelized onions to take the flavor up a notch. 
  • Top your pumpkin macaroni and cheese with Panko bread crumbs and toss it in the oven for a few minutes to brown them up.
  • Add some diced green onions.
  • You can also add a pinch of cinnamon, nutmeg, or clove to the pumpkin puree if you want to give this dish a pumpkin spice flavor. 
  • Like it spicy? Add extra red pepper flakes, top with hot sauce or add in some diced jalapenos when you are sauteing the onion and garlic.

This pumpkin macaroni and cheese is a flavorful fall dish that people may be surprised at how much they love. The pumpkin puree flavor is very subtle.

You can serve this hearty dish as a main meal or as a side dish with a main course, veggies, or a salad. Don’t forget the Florida Milk!

This would be an amazing dish to bring to a potluck or you could serve it as a side dish for Thanksgiving dinner.

Equipment

  • 1 Large pot or dutch oven

Ingredients

  • 2 tbsp salted butter
  • 2 cloves garlic minced
  • 1/4 cup sweet onion diced
  • 3 springs fresh thyme
  • 8 leaves fresh sage
  • 1 pound pasta
  • 3 1/2 cups water
  • 1 cup whole milk
  • 2 ounces cream cheese softened
  • 1 cup pumpkin puree
  • 1 1/2 cups shredded sharp cheddar cheese – I used a cheddar mix
  • 1 cup shredded creamy gouda cheese
  • 1 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • Kosher salt and black pepper

Instructions

  • Melt the butter with the garlic, diced onion, thyme, and sage in a large pot set over medium heat. Saute for about 2-4 minutes, until the garlic is fragrant.
  • Remove the sage leaves and set aside.
  • Add the uncooked pasta to the pot and stir well so that the pasta gets covered with the butter.
  • Add 3 1/2 cups of water and bring to a boil over high heat.
  • Add pinch of salt. Cook, stirring occasionally, for approx. 8 minutes. Do not drain the water.
  • Stir in the milk, cream cheese, and pumpkin, and cook until the pasta is al dente, about 4-5 minutes.
  • Add shredded cheese, paprika, red pepper flakes, and stir until melted and creamy. Remove from the heat.
  • Season with salt and pepper.
  • Top with black pepper and the reserved sage if desired.
  • Enjoy!

Notes

Notes: If the sauce feels thick, add a little milk or water to thin. If you have too much sauce, make additional pasta and stir it in.

If you haven’t gotten serious about your diet and nutritional needs before now, your 40s is the time to start. The healthy choices you make now in your 40s can prevent diseases and health problems as you get older.  A healthy diet should include protein (more on that in a minute), lots of healthy fruits and vegetables, healthy fats, and carbohydrates from whole grains. 

In your 40’s your estrogen levels begin to decrease and so do your thyroid levels. As a result, you may find that you feel hungrier so it’s important to eat healthy foods filled with fiber and protein to give you energy and keep you full. Your metabolism can slow down at this age causing you to gain weight, but you can give it a boost by drinking ice water, eating spicy foods, exercising, eating breakfast every day, and getting plenty of sleep.

This slowed production becomes more visible in our 40’s with sagging skin, wrinkles, fine lines, and less elasticity. Don’t fret though because there is something you can do about this part of the aging process. 

You can start taking collagen at any age, but if you haven’t started taking it before turning 40, now is the time. Collagen is very important for the health of your skin and your bones, and it is easy to add to your diet. Not to worry though because you can improve your gut health at any age by making a few simple changes to your diet. Probiotics are live organisms that improve the health and efficiency of your gut. You can take them as a supplement and they are also found in fermented foods like yogurt, kimchi, and kombucha. 

In addition to adding a probiotic supplement or probiotic foods to your diet, there are a few other things that you can do to improve the health of your gut no matter how old you are. These include drinking more water, exercising daily, getting quality sleep at night, and adding some avocados to your diet. This one might sound strange, but studies have shown that eating avocados diversifies your gut bacteria. The more diverse your gut bacteria is the healthier your gut is overall. 

Increasing your protein intake and adding collagen and probiotics or fermented foods to your diet are all simple steps that you can take to improve your health in your 40s and beyond. It is NEVER too late to start improving your health and your future (younger-looking) self will thank you!

My daughter and I actually went to Raleigh for our first time earlier this month and had a great time! The trip was planned around going to the Tyler Childers concert at the Red Hat Amphitheater and since we always stay at Marriott hotels for the points I knew we would be staying where we could walk to the concert. Once the hotel was in place, I crossed my fingers that there would be plenty to do in the area, as we were going to be there for 3 full days.

There are plenty of amazing things to do Raleigh. And lots of great places to eat! I was thankful that we could walk to most of them….since we seemed to eat our way around town 🙂

Best Places to eat in Raleigh

Since I did a lot of research on things to do in Raleigh with a teenager, I figured I would share it all with you and then make note of the things we actually did do. I mentioned that we were in town for a concert, and not only is Tyler Childers absolutely incredible to see in concert, the Red Hat Amphitheater is an amazing venue! If anything is happening at the Red Hat Amphitheater while you are in Raleigh, I definitely recommend checking it out. They hold many festivals and events at the Red Hat Amphitheater throughout the year.

Places to eat in Raleigh

Here are some of the best things to do in Raleigh:

  • North Carolina Museum of Art: Explore a diverse collection of art, including European, African, American, and modern works. The museum’s outdoor park also features impressive sculptures and walking trails.
  • Pullen Park: One of the oldest amusement parks in the United States, Pullen Park offers paddle boats, a carousel, train rides, and playgrounds, making it a great family-friendly destination.

Like I mentioned, I was there with my teenage daughter, and while some teens enjoy history and culture, museums are not my daughter’s favorite, so we spent a lot of our time shopping, eating and walking.

How to plan a weekend in Raleigh

Here are the things we did while in Raleigh:

  • Tested out the coffee at multiple local coffee shops
  • Cruised around Moore Square Market
  • Visited the State Capitol
  • Took an Uber to the State Farmer’s Market – it’s HUGE and 100% worth it!
  • Did the free tour at Videri Chocolate Factory – It’s super small, but cute to walk through, and it’s right across the street from The Pit, so eat there after you have a coffee or ice cream.
  • Shopped
  • Walked through numerous parks
  • Saw Tyler Childers
  • Took our picture with the North Carolina Acorn….apparently it moves around the city?!
  • Ate….a lot. More on that below!
Things to do in Raleigh this weekend

Raleigh has a diverse and vibrant food scene, offering a wide range of dining options from Southern comfort food to international cuisine.

Raleigh Restaurants

Here are some of the best places to eat in Raleigh:

  1. The Pit: If you’re looking for barbecue, The Pit is a go-to spot. They serve up mouthwatering North Carolina-style barbecue and classic Southern sides. We had the brisket and shrimp.
  2. Wye Hill: Located on the Boylan Bridge, the views and the food is fantastic. I recommend staying for sunset it your schedule allows…the Raleigh Skyline is gorgeous! We had the caeser kale salad, brussel sprouts and the dill pimento cheese (which seemed to be everywhere in Raleigh, so we decided that we had to try it!)
  3. Brewery Bhavana: This is a brewery, a taproom, a flower shop, a bookstore, a dim sum house and a Chinese restaurant. This was actually our favorite meal in Raleigh. We walked through the door and it was so welcoming and unexpected! There were books to borrow if you wanted to read while you waited for your food, the lighting was gorgeous, and the food was absolutely incredible.
  4. Morgan Street Food Hall: If you can’t decide on a cuisine, this food hall has a wide variety of options, from tacos to sushi to Mediterranean fare. We went here for lunch on our first day, we wanted to see all the options available. We opted for loaded BBQ french fries and a oreo shake to start our Raleigh culinary adventure 🙂
  5. Transfer Co. Food Hall: This another fun food hall atmosphere and is a great place to experience the local food scene in Raleigh, try a variety of dishes, and enjoy a vibrant atmosphere that’s popular among both locals and visitors.
  6. Poole’s Diner: A local favorite known for its modern take on classic Southern comfort food. Their macaroni and cheese is a must-try.
  7. Bida Manda: This award-winning restaurant offers authentic Laotian cuisine in a stylish setting. Try their crispy rice lettuce wraps and flavorful noodle dishes.
  8. Death & Taxes: A contemporary American restaurant with a focus on locally sourced ingredients. Their wood-fired cuisine and inventive cocktails are highly regarded.
  9. Beasley’s Chicken + Honey: Another venture by chef Ashley Christensen, this restaurant specializes in fried chicken and Southern comfort food with a touch of sweetness.
  10. Boulted Bread: A bakery and cafe that offers artisanal bread, pastries, and sandwiches made from high-quality ingredients.
  11. State Farmers Market Restaurant: This restaurant focuses on fresh, local ingredients and offers classic Southern dishes like country-style steak and biscuits. You eat while walking around the market…that’s what we did! There are sooooo many of local treats and eats to choose from.
  12. Trophy Brewing Company: Along with a great selection of craft beers, Trophy Brewing serves delicious pizzas and innovative pub fare.
  13. The Fiction Kitchen: A vegetarian and vegan restaurant that offers inventive plant-based dishes with international influences.

Remember that the restaurant scene can change, so it’s a good idea to check online reviews and current menus before you go. Reservations might be necessary for some of the more popular establishments, especially during busy weekends.

Caramelized onions are so easy to make, but they can really elevate the flavor of a lot of dishes. Caramelized onions are the perfect topping for burgers or a steak, you can put them on top of a salad, or simply eat them on their own! I always use RealSweet sweet onions when making caramelized onions, it makes the even better 😉

If you aren’t sure how to caramelize onions it is really simple, all you need are onions, olive oil or butter, a dash of salt, and some time. Caramelized onions do need a while to cook, but the time they take is so worth it. When they are done you have transformed a simple onion to a sweet and savory bite that will melt in your mouth. Can I make my caramelized onions in advance? 

Absolutely! The caramelized onions are the only part of this dip that takes a little time and you can make them a day or two ahead of time. Cool them completely after cooking and store them in the refrigerator in an airtight container until you are ready to make the dip. 

Can I make the caramelized onion dip with cottage cheese ahead of time? 

Yes, if you want to serve this dip cold instead of at room temperature you can make it the day before and keep it in the refrigerator to chill overnight. 

Can the caramelized onion dip be served hot? 

This dip can be served hot or cold. If you want to serve the dip warm simply put it in a casserole dish, and heat it at 350 degrees for 15 or 20 minutes until it is bubbly.

You can store this yummy dip in your fridge in an air tight container for up to 5 days. But, my guess is that it won’t be around that long 😉

Can you use sour cream instead of Greek yogurt?

Sure can! The flavor profile is pretty similar, so yes, feel free! It will change the nutritional facts below though.

Can you blend the cottage cheese?

Not a fan of the texture of cottage cheese? It happens! Feel free to toss it in a food processor first to give it that smooth texture. You can add the Greek yogurt in there too to make sure it’s all mixed together evenly.

Cottage cheese is such a versatile food that can be used in a lot of different recipes in many different ways.

How long does it take to caramelize onions?

Ah, this is a labor of love. Don’t rush the process. I have found that making caramelized onions in my cast iron pan is sometimes faster than making then in my stainless pans…But I have no real reasoning for that. Depending on the amount of onions you are caramelizing, you can count on at least 20-30 minutes.

Alright, let’s make some caramelized onion dip shall we?

Ingredients

  • 3 vidalia or sweet onions caramelized
  • 2 cups cottage cheese – I used the low fat variety
  • 1 cup greek yogurt – I used the non fat variety. *You can also use sour cream.
  • 1 tsp soy sauce
  • 1 tsp garlic powder
  • 1 tbsp butter
  • 1 cube beef bouillon
  • 2 tbsp green scallions – diced
  • salt and pepper to taste

Instructions

  • Once the onions are caramelized add the beef bouillon and butter to the same pan and stir well. Remove from heat and allow the onions to cool.
  • Add the cottage cheese, greek yogurt, garlic powder, soy sauce to a small-medium size bowl and stir well.
  • Add the cooled caramelized onions and 1 tbsp of the scallions to the cottage cheese mixture. Stir.
  • Add salt and pepper to taste.
  • Cover for at least 2 hours or until ready to serve.
  • Serve with your favorite veggies, chips and/or pretzels.

Our Halloween Spiked Punch has an extra spookiness to it with the addition of dry ice. It literally makes the glass look like it’s smoking. It is the perfect substance for adding a touch of drama to special events or creating an eerie atmosphere in horror movies. But what many people don’t know is that it can be dangerous if not handled correctly. 

If you’re planning on using this mysterious material, here are some tips and tricks to ensure your safety:  

First of all, never handle dry ice with bare hands! Make sure you wear gloves or use tongs when handling it since contact with skin can cause severe frostbite. 

Secondly, always store your dry ice in an insulated container such as a cooler or Styrofoam box—it will help contain the cold and keep it from evaporating too quickly.

Third, and perhaps most importantly, never consume it while it’s still in “ice form.” Dry ice can be incredibly dangerous if consumed incorrectly. But what actually happens if you decide to take a bite out of this -218 degree Celsius delicacy? 

Well firstly, your mouth will feel like it has been plunged into the icy depths of Antarctica. This intense cold will cause an extreme amount of pain as all moisture in your mouth quickly evaporates due to the sublimation process. You may also experience loss of sensation in your tongue, as well as hand and foot numbness due to nerve damage caused by the cold temperatures. 

That is why we recommend you let it dissolve completely before consuming your drink.

Halloween is one of the best times of year to get creative with your cocktail creations. Here are just a few of our favorites:

  • Blood-red Jell-o shots: Just add your favorite liquor to red jello. Make it extra red with food coloring.
  • Smoking cauldrons of your favorite margarita: Make it green with food coloring and just add dry ice.
  • Zombie Highball: half an ounce each of silver and spiced rum, triple sec, orange juice, lime juice, simple syrup and grenadine.
  • Green Goblin Fizz: one ounce each of vodka, coconut rum, peach schnapps, sour apple liqueur, and sweet and sour mix with ginger ale to top it off.
  • Spooky Sangria: Fill a rubber glove with water – make sure it’s a latex free glove with no powder! Tie off the glove and freeze it. Then, when it’s frozen, peel off the glove and drop it into your sangria for a spooky effect!

Ingredients

  • Regular Ice
  • 8 oz Vodka 1 cup
  • 8 oz Rum spiced or white – 1 cup
  • 16 oz. Fruit Punch 2 cups
  • 16 oz ginger ale or lemon-lime soda 2 cups
  • 8 Lime wedges
  • Dry Ice for garnish optional (see notes for safe handling)

Instructions

  • In a medium size bowl, add the soda and liquors. Still well.
  • Serve in glass of choice with a wedge of lime.
  • Carefully add 1-2 pieces of dry ice to the glass.
  • Important: Consume after the dry ice has completely dissolved.
  • Cheers!

Notes

Carefully follow all precautions when handling dry ice. Wear gloves, keep ventilated, etc. It is usually sold by the block- so you can break it into pieces in order to use for cocktails.
You do not need the dry ice- but it is a fun effect. DO NOT CONSUME dry ice pieces or let them touch your skin. Dry ice is safe to consume after it has dissolved completely.
