This recipe was originally created for Noble Citrus, but I wanted to make sure to share it with you all too!

It’s officially Florida Starbust PUMMELO SEASON! And I am celebrating this massive citrus fruit with Pummelo Simple Syrup that I used to make an incredible cocktail. Of course, you can use in a variety of other ways too 😉

First things first…

What is Simple Syrup?

Simple syrup is a basic sweetening agent commonly used in culinary applications, especially in mocktail and cocktail preparation. It’s easy to make and incredibly versatile.

How to Make Simple Syrup:

  1. Heat the Water: Start by heating water in a saucepan. You can use equal parts water and sugar (e.g., 1 cup of water and 1 cup of sugar), or adjust the sweetness to your preference.
  2. Dissolve the Sugar: Over medium heat, stir continuously until the sugar completely dissolves into the water. This typically takes just a few minutes.
  3. Cool the Syrup: Remove the saucepan from the heat and let the simple syrup cool to room temperature.
  4. Store the Syrup: Once cooled, transfer the simple syrup to an airtight container, such as a glass bottle or jar, and store it in the refrigerator. It can be kept for several weeks.

How to Make Pummelo Simple Syrup:

  1. Add Pummelo Rind: Add the rind of the pummelo to the pan along with the sugar and water.
  2. Infuse the Flavor: Once you remove the syrup from the heat, remove the rind.
  3. Cool and Store: Allow the syrup to cool before adding it to your favorite dishes or drinks.

Ingredients

  • Equal Amounts of Sugar and Water
  • Pummelo Rind – more rind more flavor!

Instructions

  • Add the sugar and water into a pot and heat the ingredients until dissolved.
  • Stir the mixture over medium heat until the liquid is completely clear, not cloudy.
  • Immediately remove from the heat source.
  • Add the rind of the pummelo to the pan along with the sugar and water.
  • Once the mixture is cool, remove the pummelo rind.
  • Store your simple syrup in an airtight container, in the refrigerator, until ready to use.

Storing Leftovers

If you have any leftover one-pot mac n cheese, it can be easily stored for later. Store it airtight container and refrigerate for up to 5-7 days. When you’re ready to enjoy it again, you can reheat it in the microwave or oven.

  • Microwave: Warm on microwave-safe dish and heat for 1-2 minutes, or until warmed through.
  • Oven: Preheat your oven to 350°F, place in an oven-safe dish, cover with foil, and bake for about 15-20 minutes until heated through.

Jack O Lantern Mac and Cheese Stuffed Peppers

These fun and festive Jack O Lantern Mac and Cheese Stuffed Peppers are perfect for Halloween night! Creamy, cheesy pasta is stuffed into bell peppers carved like jack-o-lanterns, offering a nutritious and delicious meal to fuel up before trick-or-treating.

Ingredients

  • 1 pound uncooked pasta I used elbows
  • 3 cups water
  • 2 cups Florida milk – I used whole
  • 1 teaspoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon red pepper flakes
  • 3 cups your favorite cheeses I used gouda, pepper jack and cheddar
  • salt and black pepper to taste
  • 6-8 orange bell peppers

Instructions

  • Combine the pasta, water, milk, mustard, and seasonings in a large stockpot.
  • Heat over medium-high heat, stirring the pasta once every few minutes, until it reaches a boil.
  • Continue cooking the pasta, stirring once or twice per minute, until the pasta is al dente. (Cooking time will depend on the shape of pasta that you use, so please keep a close eye on it.)
  • Remove pot from heat.
  • Remove excess water (if needed). I did not have excess, depending on the type of pasta you used, you may. You do want some left in the pot.
  • Add the cheese to the pasta and gently stir until completely melted. If the pasta seems too dry, stir some of the reserved liquid back in as needed.
  • Taste and season with salt and pepper if desired.
  • Cut the tops off the peppers and reserve. Remove the seeds and membranes. Use a sharp knife to carve a jack-o-lantern face into one side of each pepper.
  • Fill each pepper with mac n cheese and enjoy!

Notes

You may have leftover mac n cheese depending on how many goblins you are serving. Store leftovers in an airtight container in the fridge.
When “carving” your peppers, cut off the tops, remove seeds and the membrane and carefully carve a simple face on one side of the pepper.

Learn as much as you can about the wine that you have chosen. The internet can provide you with a wealth of information, and so can your local bottle shop. Start in the United States by sampling bottles from California, Virginia, Colorado, and Oregon.

In addition to the wine, you will also be provided with a wine education on the wines that were sent.

Club wines are a great way to bring some diversity into the learning process without breaking your wine budget. Who hasn’t been frustrated by buying an expensive bottle of wine that did not meet their expectations? With club wines, the experiment is always at the same reasonable price.

If you find yourself in wine country, wine tours are a great way to learn more about wine in that region. My best friend and I did a wine tour in San Diego, I have done several in Michigan and my husband and I recently did a wine tour when we were in Sedona. And one of our favorites was when we were in Beaune France. Wine tours are a great way to have an expert from that area drive you around and take you to some incredible wine tasting experiences!

Once you arrive at the winery you will be given a tour of the vineyards, and then you’ll learn how the wine is made and where it is stored. Then you will head to the tasting room to sample some of the wines. If you find something you really enjoy make sure to stop by the gift shop and make a purchase before you leave. Tasting menus are a fun and easy way to learn more about wine! You can find them at wineries and restaurants. There will be a set menu where each course of the meal is paired with a wine that compliments it best. Traveling will broaden your horizons and your wine education! When you visit a new place, be sure to sample local cuisine and wines. Visit their wineries, participate in a tasting and your wine knowledge will grow by leaps and bounds in a matter of days! Don’t forget to bring back some of your favorites to enjoy at home!

Find a Food & Wine Festival to Attend 

Wine festivals are decidedly informal affairs where you can taste and purchase wine from vendors who are eager to educate (and sell) you on their products.  For a fee that can range from ten to a hundred dollars, you get a glass and enter the festival, where a few dozen wine distributors stand in their booths barking at the crowd of liquor store owners, writers, collectors, and enthusiastic amateurs. Some Food & Wine Festivals to check out here in Florida are: South Beach Wine & Food Festival and Savor St. Pete.

On the tables in front of the vendors are bottles of wine and pre-printed sheaves of tasting notes (in case you want someone else to tell you what you tasted). Everybody’s willing to pour you a glass, and everybody wants to talk. It’s fun, as you would expect any festival to be. There’s the energy of people primed to sell, there’s the excitement of people out to taste 10 or 15 wines, and of course, there’s all that wine. 

Learning more about wine is fun, easy, and benefits, not only you but those around you too. You may even find that friends and family start coming to you to ask which wine might be best! Don’t let the wonderful world of wines intimidate you, just jump right in and start to explore! The more you do, the more you are going to love it!

This cocktail is a celebration of summer in a glass. BUT, don’t just enjoy this cocktail over the summer, fresh watermelon is actually available YEAR ROUND, so save this tasty watermelon cocktail so you can enjoy it all year. Because sometimes we just like something pretty in pink 😉

The star of the show, fresh watermelon, is naturally sweet and juicy, and it pairs perfectly with the smooth kick of vodka. Each sip is a balance of sweet and tart, with the watermelon’s freshness shining through. The first sip for me and bestie had us thinking we needed a natural sweetener, it was a tad tart. But the second sip had us saying, nope – this is perfect! So, don’t judge on the sip! The addition of a squeeze of fresh lime juice elevates the drink, adding that tangy twist.

You guys know how much I enjoy a nice glass of wine, learning about wine, and discovering new wines. And when my local recycling stopped taking glass, I was left with my fair share of empty wine bottles. I hate not being able to recycle them! So, I decided to do some research on fun uses for empty wine bottles. Just in case you all want to do some upcycling with me!

Wine Bottles Crafts

While most wine is made in a similar manner, wine bottles can take many forms. Instead of simply throwing away the empty glass wine bottles, why not try to repurpose them instead? From wine bottle crafts to lights, and more! There are many beautiful and useful ways that you can put those empty wine bottles to good use, and I am sharing over 10 ways to upcycle empty wine bottles below. Let’s get creative, shall we?

Vase

Yes, that seems like a simple one, but it’s one that we may not think of and it’s super easy! Just rinse out your wine bottle and add some of your favorite flowers. This makes for a great gift idea as well.

Paint Them For Seasons

I simply painted a few empty wine bottle orange and added a few leaves to the neck of the bottle and they looked like wine bottle pumpkins! Perfect for fall. Here are some ideas for Christmas, an idea for Easter, and ideas for Halloween.

Bottled Lights

Arrange 5 to 15 wine bottles on a mantle, ledge or wall. String Christmas lights (or any small stringed lights) in each bottle opening all the way to the bottom of the bottle and back out again. Don’t allow any of the lights to hang outside of the bottles. If you need to you can remove the bulbs from the outside lights. The thick and often colored glass of the bottles will give a firefly-like quality to the light that they put off. If you are feeling a bit more adventurous, here’s a tutorial on how to drill a hole in the wine bottle so that the wires aren’t coming out of the top. I have 3 of these at home, but my father-in-law made them for us! Pro-tip: be sure to use LED lights, the old school ones will get hot inside the glass bottle.

Flowered Bottles

Lots of people have used an empty wine bottle as a vase to display fresh or silk flowers. You can take it a step further by decorating the bottle with flowers too. Hot glue silk flowers to the bottle from the bottom up, gradually exposing the glass. Avoid gluing over the label so that it can serve as a reminder of the wine you enjoyed. Fill the bottle with water and display some fresh flowers.

Mosaic

Carefully peel the labels off of each wine bottle and put them to the side. Wrap the bottles in a towel and tap them with a hammer until they are thoroughly shattered. Pick a few pieces from each bottle and hot glue them on a piece of wood to create a mosaic of bottle pieces. Glue the labels around the edges nearest the bottles each one represents.

Wine Capsule

After enjoying a bottle of wine, write down the memories you have associated with it. Maybe it was the wine you drank when friends were over to play board games, or you brought it home from the fair. Roll up the memoir, note, poem, or journal entry. Slip the paper inside of the bottle all the way down and set the bottle aside. Collect these wine time capsules all year long. Once a year, break the bottles open to retrieve the notes and relive the old memories.

Soap or Olive Oil Dispenser

Repurpose your empty wine bottle into a soap or oil dispenser. Wash the bottle out thoroughly with a dish or hand soap. Get a pour stopper from your local craft or beverage store to the top of the bottle. You now have a creative way to dispense liquids such as olive oil, balsamic oil, or syrups.

Garden Path

Drip System

Wine bottles can be excellent at providing hydration. Simply fill a bottle with water and tip it into a planter at an angle. The dirt will absorb the water and disperse it slowly, like a drip system.

Wine Chimes

Tie empty wine bottles with a string and hang them from a small block of wood. Cut the string at different lengths and fasten the string tightly so the bottles can’t slip. The bottles will blow in the wind and create a wind chime. Glittered Wine Bottles

What household doesn’t need a little more sparkle? These glittered wine bottles would be perfect for the holidays or any time you need a little more sparkle in your life. These would look amazing as a table centerpiece or on your fireplace mantle during the holidays! 

Wine Bottle Citronella Lamps

Let your empty wine bottle be a part of future parties and celebrations by upcycling it into a citronella candle. These homemade citronella lamps look classy, offer some light in your outdoor entertainment space, and keep the mosquitos at bay so that you can enjoy the fresh night air while sipping your wine!

Well, my youngest started her last day of high school today. My oldest heads back to college in a few days. The thing about time, is that it just goes so fast. And the last thing you want to be doing is spending a ton of the time in the kitchen when there are memories to made.

So, while I am not the official Uber in my house anymore and I don’t have a million things to drive to and from, I 100% would rather spend my time chatting with the kids or playing a random game of Qwixx than spending a bunch of time cooking and cleaning.

And that’s just one of the reasons why I love this one pot meal! A few more reasons are: it’s hearty, it’s comforting, it’s loaded with nutrients thanks to the veggies and Florida milk, and don’t forget it’s a good source of protein. Hello One Pot Cheesy Beef and Potatoes.

One Pot Beef and Potatoes

Main Ingredients

  • Cheese – there is the word Cheesy in the title 😉
  • Beef – of course
  • Potatoes – yep!
  • Florida Milk
  • Fresh veggies – I used a combination of onion, bell pepper, jalapeno pepper, mushrooms and garlic
  • Seasonings
  • Tomato paste

While everything does cook in the same pot, it does take a little time for everything to cook to perfection. So, don’t try to rush it!

One Pan Beef and Potatoes with Cheese

Can you customize the ingredients?

Yes! I recommend looking through your produce drawer in the refrigerator to see if there is anything that you should use up too.

Protein Swap and/or Additions

Ground chicken or ground turkey: While I used lean ground beef, you can lighten this dish up by switching to ground turkey or chicken. Both work well and bring a slightly different flavor profile to the dish.

Sausage: Add a bit of spice or smoky flavor by using ground sausage.

Bacon: Cook and crumble some bacon to sprinkle on top before serving for an extra layer of flavor. Plus, who doesn’t love bacon?!

Plant-Based Protein: Use plant-based ground meat for a vegetarian or vegan option.

Vegetable Variations and/or Additions

Zucchini or Squash: Add sliced zucchini or yellow squash for extra veggies.

Spinach or Kale: Stir in some fresh spinach or kale during the last few minutes of cooking for a nutrient boost.

Cooking Tips

Be sure to do your prep work ahead of time. Slice the potatoes, chop the veggies, and have everything ready to go before you start cooking. It’ll make the cooking process a lot easier, trust me! I left the skin on my potatoes, feel free to peel them if you prefer.

If you’re short on time, consider microwaving the potatoes briefly.

If you find the dish has too much liquid at the end, remove the lid for the last few minutes of cooking to let some of it evaporate. This will help thicken the sauce and concentrate the flavors.

One Pot Cheesy Beef and Potatoes

This Ground Beef and Potato dinner is a hearty, one-pot meal perfect for busy weeknights. Made with potatoes, flavorful ground beef, and colorful veggies, it’s topped with melted cheddar cheese for a comforting, family-friendly dinner.

Ingredients

  • 2 tbsp salted butter
  • 2-2 ½ lbs potatoes I used russet – approx 5-6 medium-sized potatoes
  • 1 ¼ lbs lean ground beef
  • 1 bell pepper chopped – I used red for the pop of color
  • 1 jalapeno chopped
  • 1 sweet onion chopped
  • 4 oz mushrooms chopped – I used the gourmet blend
  • 3 cloves garlic minced
  • 1 tbsp your favorite all purpose seasoning I used DUST by VooDoo Chef
  • 1 tsp salt
  • 2 tbsp tomato paste
  • 2 cups whole Florida Milk
  • 1 cup shredded cheddar cheese
  • chopped parsley for garnish if desired

Instructions

  • Cut the potatoes lengthwise in half and slice into ¼ inch thick slices.
  • Heat butter in a dutch oven or large non-stick skillet over medium high. Add potatoes and cook for about 8 minutes, until they just start to get tender. Stir frequently. Remove from the dutch oven/skillet and set aside.
  • To the same dutch oven, add peppers and onions and cook for 3 minutes until they start to soften.
  • Add ground beef, and cook until slightly browned.
  • Add garlic, mushrooms, seasoning and tomato paste. Stir well.
  • Add the sliced potatoes, stir gently until combined.
  • Pour in whole milk, cover with lid and cook for about 15-20 minutes until the potatoes are tender. *If it appears to have too much liquid, leave the lid off for another 5 minutes to allow it to evaporate some.
  • When ready, sprinkle cheddar on top and toss in the broiler for a minute or two to get that nice cheesy topping.
  • Top with parsley if desired.
  • Serve with a big glass of Florida Milk and a simple side salad.
  • Enjoy!

Notes

Get all the prep done before you start cooking. Cooking time for the potatoes may vary depending on how thick you cut your slices. Make sure the potatoes are tender before serving. To potentially lessen cooking time, pop the potatoes in the microwave (make sure you poke holes in them first!) for a minute or two.

Cooking can be a difficult task for  students to master, but starting with a couple of simple, inexpensive recipes is a great way to learn to cook.

Once you have mastered a few basic skills, cooking healthy and inexpensive meals right in your dorm room is easy. There are a number of healthy and cheap meals that any student can easily make. Maintaining a healthy diet in college is one of the best things any student can do for themselves. Not only can they help you avoid the dreaded “freshman fifteen” but you’ll have cooking skills that you can use for the rest of your life! 

Before packing up your kitchen supplies for college make sure that you read the rules and are aware of what is allowed on campus. Nearly all colleges will allow you to have a microwave and dorm sized fridge. However, some do not allow toaster ovens or hot plates to be used in the dorms. My son is starting his 2nd year of college in a few weeks, he lived in the dorms last year and he opted to NOT have a meal plan. A small fire extinguisher, like those used in a car or boat, is also not a bad idea, just in case.

The schedule change is enough to make anyone feel frazzled, not to mention meal planning for breakfast, lunch, and dinner, and the start of school sports again.

Are you looking for an easy way to simplify meal planning? Want to pack a nutritious meal for the kids that’s also easy to prepare? Try building a bento box lunch! They are perfect for breakfast on the go and snack time too. Yes, I’m speaking from personal experience.

Building a bento box involves assembling a well-balanced meal in a compact container. Traditional Japanese bento boxes typically consist of rice, protein, vegetables, and a variety of side dishes. However, modern bento boxes have evolved to include a variety of nutritious options featuring protein, veggies, fruit, and usually a snack.

Build A Bento Box

Here’s a step-by-step guide to building a basic bento box:

1. Choose a Good Bento Box: Select a bento box that suits your needs. There are various sizes and styles available, including silicone, plastic, and stainless steel designs with multiple compartments.

2. Protein: Select a source of protein. Some options include PB&J, turkey sandwich, hard-boiled egg, or grilled chicken from last night’s dinner.

Tips for the Perfect No Churn Ice Cream

  • Use a Metal Loaf Pan: Metal pans freeze the mixture more evenly than glass or plastic pans. Plus, glass and plastic can chip when frozen and glass/plastic are two mix-ins you do not want in your coffee dulce de leche no churn ice cream.
  • Use Heavy Cream: This will make your ice cream extra creamy and will be the way you get those soft peaks when whipping.
  • Instant Espresso: Did you buy instant espresso instead of espresso powder like we did? It’s okay! Just toss it in the blender or your favorite food chopper device and give it a quick pulse.
  • Swirling Technique: Dulce de leche can be thick, don’t stress about getting the perfect swirls. We found chopsticks worked best, but a knife would also be great. Be sure to not over-mix the dulce de leche with the cream mixture.
  • Room Temperature Rest: When it’s time to serve, allowing the ice cream to rest at room temperature for just a few minutes makes it easier to scoop and enhances the texture.

Indulge in the rich flavors of homemade Dulce de Leche Espresso Ice Cream. This no-churn recipe combines creamy heavy cream, sweetened condensed milk, and robust espresso, swirled with luscious dulce de leche. Perfect for a decadent dessert without the need for an ice cream maker!

Ingredients

  • 2 cups heavy cream
  • 1 Tbsp vanilla extract
  • 2 Tbsp espresso powder
  • 14 oz Sweetened Condensed Milk 1 can
  • 13.4 oz Dulce de Leche 1 can

Instructions

  • Using a hand mixer, or a stand mixer fitted with a whisk attachment, whisk the heavy cream, vanilla extract and espresso powder together just until soft peaks begin to form in the bowl.
  • Using a spatula, fold in sweetened condensed milk, mixing gently.
  • Pour half of the cream mixture into loaf pan.
  • Using a spoon, add about 1/3 of the dulce de leche. Dulce de leche can be thick, do you best to gently spread it around if possible.
  • Pour remaining ice cream base on into the loaf pan. Add another 1/3 of dulce de leche.
  • Using a knife, spoon or chopstick, gently swirl the ice cream base and dulce de leche together but do not over mix.
  • Place loaf pan in the freezer for 6-12 hours, until firm. Cover with saran wrap if desired.
  • Allow ice cream to set out at room temperature for about 5 minutes, prior to serving.
  • Drizzle with remaining dulce de leche for serving if desired.
  • Enjoy!
