Ingredients

  • 4 Mini Naan Bread I used Stonefire Original Mini Naan
  • Chive & Onion cream cheese spread about 4 oz.
  • ¼ cup broccoli chopped
  • ¼ cup cauliflower chopped
  • ¼ cup mini sweet red peppers chopped
  • ¼ cup shredded carrots
  • ¼ cup shredded cheddar cheese

Instructions

  • Lay the naan breads out on a clean surface.
  • Spread with some of the Chive & Onion Cream Cheese to your liking.
  • Add on the chopped veggies.
  • Sprinkle with a little cheddar cheese.

Ingredients

Cake

  • 13.25 ounces chocolate cake baked according to package or recipe directions 1 box – bake on a rimmed cookie sheet so that that cake is thinner

Chocolate Mouse

  • 2 boxes 1.4 oz sugar free instant chocolate pudding mix – you don't have to use sugar free
  • 8 oz container of whipped topping
  • 1 1/2 cups whole Florida Milk

Cherries

  • 3 Tbs grand marnier you can also use cointreau, kirsch, or chambord
  • 2 1/2 cups pitted cherries halved

Homemade Whipped Cream

  • 1 pint heavy whipping cream
  • 2 tbs confectioners sugar
  • 1/2 tsp vanilla extract

For garnish if desired

  • Fresh mint leaves
  • Chocolate shavings
  • Fresh cherries

Instructions

  • Put the prepared cherries in a bowl, add the grand marnier, cover and put in the fridge. *You can do this the day before if desired!
  • Once the cake is cooled, cut it into 1 inch squares *You can make the cake the day before if desired
  • Prepare the chocolate mouse by mixing the pudding mix and milk. Stir well, add in the whipped topping. Mix well and put in fridge until ready to use. *You can make this the day before if desired
  • Prepare the homemade whipped cream in a stand mixer by adding the heavy whipping cream to bowl, mix on medium speed, add in sugar and vanilla. Once peaks start to form, stop.

Now it’s time to layer your trifle bowls!

  • Place several cubes of chocolate cake on the bottom.
  • Top with chocolate mouse.
  • Scoop on cherries – don’t forget that grand marnier!
  • Top with the whipping cream.
  • Sprinkle with chocolate shavings, fresh mint and a cherry if desired.
  • Serve with a cold glass of Florida Milk.
  • Enjoy!

Florida is filled with vibrant, fresh, and seasonal ingredients. From sun-kissed citrus to antioxidant-rich berries, there’s so much natural goodness right in our backyards. So, what do we do with this deliciousness? Eat it, of course! Why not experiment and make some wellness elixirs that support immunity, energy, and overall vitality?

I’m always looking for simple, nourishing ways to feel my best, and I’ve found that some of the most powerful remedies start right in the kitchen, using what’s fresh and local.

Read on for some wellness elixirs that you can easily make at home.

Florida Produce Natural Wellness

Kale Shots

Kale is incredibly versatile, and it grows well in Florida in the fall-winter-spring season, so it’s available almost all year. I love making kale shots because they pack a serious punch in a small glass. This leafy vegetable is full of nutrients that help keep my immune system strong and my vision sharp, and it’s one of those greens that actually delivers when it comes to antioxidants. Research also shows it can lower your cancer risk, so it’s a real superfood.

When I juice kale, I feed it through my juicer in small handfuls. I’ve tried using a manual juicer before, but honestly, it’s a lot harder work. A mechanical juicer makes the job faster and cleaner, and I can get more juice out of each bunch.

I usually consume one or two shots of kale juice daily. That’s more than enough since a few servings a week are enough to reap the benefits. A single glass already provides close to half my daily fiber, and it’s also loaded with calcium, beta-carotene, and vitamins C and K. I’ve found it helps with digestion and gives me a good boost without needing caffeine.

Pro tip: Add a splash of lemon or lime juice to reduce bitterness.

Florida Produce Homemade Natural Wellness

Natural Rosemary Oil

Rosemary (not to be confused with Ceratiola ericoides, a native Floridian rosemary that’s not edible) is very Florida-friendly as it’s quite tough and thrives in hot, dry spots. You can even grow it in your kitchen on your windowsill!

I love the smell of this fresh herb, but I also love what it can do for me. Rosemary contains iron, calcium, and vitamin B6, and when combined with olive oil, which supports heart health, reduces inflammation, is good for gut health, and has a whole lot of other wellness benefits, it’s a powerhouse duo for boosting immunity, enhancing digestion, and supporting overall well-being.

To combine the two, I make my own rosemary olive oil by combining a bottle of olive oil with five sprigs of rosemary and cooking it over a low heat for about five minutes. Once it’s cooled, I decant it into a bottle and use it in my cooking, as a salad dressing, and even as a butter replacement. You can choose to leave the rosemary in or remove it, or you can use it in cooking to ensure nothing goes to waste.

Pro tip: To make your rosemary olive oil last longer, refrigerate it.

How to make cold pressed juices

Cold-Pressed Juice

Making juice is like making your own fountain of youth, health, and wellness. I stick with the cold-pressed method because it doesn’t use heat, which helps the juice retain more of its vitamins and antioxidants.

In terms of flavor, I like mixing things up, and I depend on what’s in season. Lemons are at their peak from late winter through early summer, which makes them perfect for adding brightness. Spinach grows well in the fall and early winter, so I pair the two for a clean, green blend.

Florida limes thrive in the summer and early fall, complementing the juicy watermelon that peaks from April to July. For cooler months, I reach for blueberries from March to May or earthy vegetables like carrots and beets, which are harvested from fall through early spring.

When juicing, I like to follow the 80/20 rule, which involves using mostly vegetables with just a little fruit for sweetness. This makes the perfect tasty mix that doesn’t have too much natural sugar but still tastes amazing. 

Pro tip: Adding oranges or in-season tangerines gives your juice a fresh flavor and helps it stay tasty a bit longer.

Things to do with fresh produce

Thick Fruit Shake

The indulgent version of a smoothie, fruit shakes can be a wonderful way to boost your energy, especially when made with wholesome ingredients full of complex carbohydrates and nutrients. I like to use fruits grown right here in Florida, like strawberries, blueberries, mangoes, and peaches. These local ingredients are packed with vitamins and nutrients that keep your immune system strong, aid in digestion, and help regulate blood sugar. Blueberries are also full of Pterostilbene, which is a powerful antioxidant that helps fight against aging and age-related illness.

To make one of my favorite fruit shakes, I slice up a banana and add it to the blender. Then I add a 6-ounce container of yogurt (preferably made from Florida milk!). The state has a strong dairy industry, with over 100,000 dairy cows producing around 300 million gallons of milk each year. Much of that milk goes into making yogurt and other dairy products.

After that, I mix in about 1 1/2 cups of fruit. I usually pick a variety like mangoes and peaches grown in Florida during their peak seasons, along with locally grown blueberries and strawberries.

Next, pour in 1 1/3 cups of juice. Orange juice is my go-to, especially when it comes from Florida oranges, but occasionally I like to try peach or mango juice for a change. If the shake is too thick, I just add a little more juice and blend again until it reaches the right consistency.

Pro tip: Portion your fruit up and freeze it in advance. This keeps it fresh and prevents the need for ice blocks, which can dilute the creaminess of your shake.

I’ll be honest – I spent years just grabbing the same white wine whenever I served seafood. Then one day at a little beach restaurant in St. Pete, the server suggested a Vermentino with my grouper, and wow! Since then, I’ve been on a mission to find the perfect white wine for all my favorite Florida seafood dishes.

You’ve probably heard that white wine goes with fish, and red wine goes with meat. But there’s so much more to it than that! While white wines generally pair better with seafood (something about the acidity acting like a squeeze of lemon), picking the right white makes ALL the difference.

Many seafood lovers spend years enjoying fish and shellfish but never explore beyond a few familiar wine pairings. I used to stare at restaurant wine lists completely lost, especially when friends would start talking about “mineral notes” and “acidity levels.” But I’ve discovered that learning about white wine and seafood pairings is actually super fun and much easier than it sounds!

My Go-To White Wines for Florida Seafood

After years of (very enjoyable) testing, here are my favorite white wines to pair with our amazing local seafood:

Muscadet: Perfect with oysters! This was my first “aha” moment with wine pairing – that clean, crisp flavor makes fresh Apalachicola oysters taste even better. If you’re doing a raw bar at home, this is your wine.

Pinot Grigio: When I’m making a quick shrimp salad for lunch, this is my reliable friend. Nothing fancy, just refreshing and easy. It’s also my beach picnic go-to since it’s widely available and most of my friends enjoy it.

Sauvignon Blanc: This is my Tuesday night standby with almost any Florida fish. That little zip of citrus just works! I especially love it with grouper or snapper in a light lemon butter sauce (though I’m trying to be good about using less butter these days…mostly succeeding!).

Vermentino: The wine that started my obsession! It’s not as common as the others, but worth seeking out. It has this incredible way of making local white fish taste even more like itself, if that makes sense. My husband actually requests this one now, which is saying something!

Feeling Fancy? Try These

When I’m hosting dinner or just want something special, these are my go-to “upgrade” whites:

Unoaked Chardonnay: Not all Chardonnays are created equal! Look for ones that specifically say “unoaked” or “no oak” on the label. These are cleaner and fresher tasting than the buttery Chardonnays many of us know. Amazing with tasty lobster or scallops – I made this for my mom’s birthday dinner and she still talks about it!

Viognier: Okay, I’m not even sure I’m pronouncing this right (vee-own-yay?), but it doesn’t matter because it’s delicious. It has these subtle floral notes that do something magical with herb-crusted fish. I discovered this one at a wine tasting in Winter Park and bought three bottles on the spot.

Albariño: This Spanish white is just perfect for anything with a kick to it – fish tacos, spicy ceviche, or that coconut curry shrimp recipe I’m obsessed with lately. It handles heat really well without getting lost.

Best White Wines to Pair with Florida Seafood

Bubbles Are Always a Good Idea

I’m a firm believer that sparkling wine improves just about any day, and seafood is no exception!

Prosecco: Affordable and fun! I always have a bottle in the fridge for impromptu celebrations or when friends drop by. It’s light enough to go with lighter seafood appetizers.

Champagne: Ok, this is for special occasions only in my house (hello, budget!), but there’s nothing like real Champagne with really good oysters. My anniversary splurge every year!

Crémant: My secret weapon for when I want bubbles without the Champagne price tag. Just as fancy-feeling but usually half the price. Great with crab cakes or stone crab claws when they’re in season.

Tricky Spring Ingredients Made Easy

Let’s talk about those spring vegetables that notoriously hate wine. I’ve managed to tame two of the trickiest:

Asparagus & Seafood: Asparagus can make wine taste weird, but Sauvignon Blanc or Grüner Veltliner (another fun one to try pronouncing after a glass or two) actually work really well. I do a simple sheet pan dinner with asparagus, lemon, and white fish that’s perfect with either.

Artichokes & Seafood: Another tough one! After some epic fails (seriously, don’t try red wine with artichokes unless you enjoy the taste of metal), I’ve found that Sauvignon Blanc or Vermentino can handle artichoke hearts in a seafood pasta or salad.

Try This at Home!

Next time you have friends over, try this fun experiment: serve the same seafood dish with two different white wines and see which one everyone prefers! I did this with grilled mahi-mahi – served it with both Sauvignon Blanc and Albariño. Most of my friends were surprised to discover they actually preferred the Albariño, which none of them had tried before!

Since I’m still trying to stick with my health goals (hello, swimsuit season!), I like that seafood and white wine can be part of a balanced approach to eating and drinking:

  • A 5-ounce pour is good to enjoy with dinner (though I sometimes forget this rule on girls’ night!)

We began our journey in Athens, where ancient ruins, Greek coffee, and fresh ingredients meet bustling….well, traffic. From the breathtaking Acropolis to wandering through the vibrant streets of Plaka, we soaked in every bit of history and charm. The history is just mind blowing really, did you know that democracy as we know it today was born in Greece? How about the fact that West Civilization also started in Greece? While I am not always a fan of big tours, I am very thankful we had the walking tour and our TukTuk tour in Athens because there are so many things we didn’t know about Greek history!

We spent 2 nights in Athens, and that was enough. It’s a big, crowded (about 50% of the population of Greece lives in Athens) city and we were ready for some sea views and relaxing.

Let’s be honest—one of the absolute highlights of our trip was the food. And that love affair with Greek cuisine only deepened when we made our way to Crete.

Discovering the Flavors of Crete

After our time in Athens, we traveled to Crete and stayed at the stunning Cayo Exclusive Resort & Spa, just outside the picturesque town of Plaka. Nestled into the hillside overlooking the shimmering waters of Elounda Bay and the hauntingly beautiful island of Spinalonga, the resort was the perfect balance of luxury and authenticity.

Cayo isn’t just a place to rest your head—it’s a culinary destination in itself. Every meal was a celebration of authentic Greek ingredients and local Cretan flavors. From tender lamb dishes and fresh-caught seafood to locally sourced cheeses and honey-soaked pastries, each bite told a story. And of course, we couldn’t get enough of the classic Greek dishes: tzatziki, spanakopita, fresh seafood, and moussaka. I actually got tzatziki at just about every meal…absolutely love the fresh flavors!

We were actually there over Easter and were able to participate in the Greek Orthodox celebrations and words cannot express how incredible that was! From the dancers to the food, every moment will be cherished for a lifetime.

I had eaten moussaka before in the States, but enjoying it in Greece was an entirely different experience. The dish was rich yet comforting—layers of roasted eggplant, seasoned ground meat, and creamy béchamel sauce all baked to golden perfection. There was something about eating it on an island in Greece, with the Aegean breeze, that made it truly unforgettable.

My First Attempt at Homemade Moussaka

Inspired by our trip, I decided to bring a piece of Greece into my kitchen. My daughter and I carefully sliced eggplants, made a rich meat sauce with cinnamon, and whisking up a creamy béchamel. Alright, let’s make some Moussaka, shall we? Now, remember, I absolutely loved all the Greek food, but I would never claim that this recipe is a traditional Greek recipe, I will leave that for all the Greek grandma’s and chefs out there. This is just my version of my experiences, brought back home to my kitchen in Florida.

Ingredients

Eggplant

  • 2 lb eggplant cut into 1/4-1/2 inch thick slices
  • 1 tsp salt

Meat Sauce

  • Olive oil spray
  • 1 onion diced (I used sweet onions)
  • 1 tbsp minced garlic
  • 1 1/4 lb ground beef
  • 1/2 cup red wine
  • 14 oz crushed tomatoes
  • 3 tbsp tomato paste
  • 1 cup beef or chicken broth/stock if you use chicken broth add in a beef bouillon cube
  • 2 bay leaves
  • 2 tsp dried oregano
  • 1/2 tsp cinnamon
  • 3/4 tsp salt

Bechamel Sauce

  • 4 tbsp butter
  • 5 tbsp plain flour
  • 2 1/2 cups whole Florida milk
  • 1/2 cup Parmesan cheese grated – more for serving if desired
  • 1 egg
  • 1 tsp salt
  • 1 tsp pepper

Topping

  • 1/3 cup panko breadcrumbs

Instructions

Eggplant

  • Lay eggplant flat, sprinkle with some salt. I placed mine on a cookie cooling rack.
  • Leave to sweat for 30 minutes. Meanwhile, make Meat Sauce and Béchamel Sauce.
  • Preheat oven to 400 degrees.
  • Pat eggplant dry.
  • Bake 15 – 20 minutes or until lightly browned and softened. Remove and set aside to cool slightly.

Meat Sauce

  • Spray a large skillet with olive oil spray, put on medium heat, then cook the garlic and onion for 3-5 minutes.
  • Add the beef and cook throughout.
  • Add wine, crushed tomatoes, tomato paste, beef or chicken broth/stock, bay leaves, dried oregano, cinnamon and salt.
  • Bring to a simmer, then lower heat to medium low and cook for 15 minutes, or until reduced to a thick sauce.

Bechamel Sauce

  • Melt butter in a pan over medium heat. Add flour and cook for 1 minute, stirring constantly.
  • Stirring constantly, slowly add the Florida milk.
  • Stir regularly for 3 to 5 minutes or until it thickens.
  • Remove from heat and whisk in cheese, salt and pepper.
  • Allow to cool, then whisk the egg in.
  • Cover with lid until ready to use.

Assembly

  • Preheat oven to 350F.
  • Place half the eggplant in the bottom of a baking dish (I used my 9" Lodge skillet), then top with all but 1/2 cup or so of the meat sauce.
  • Top with remaining eggplant, then spread on additional meat sauce, pour on the Béchamel Sauce, then sprinkle with breadcrumbs.
  • Bake for 30 – 40 minutes or until golden brown.
  • Sprinkle on additional Parmesan cheese last few minutes if desired.
  • Allow to stand for 10 minutes before serving.
  • Enjoy with a glass of cold Florida Milk!

First of all, it’s easy to make. Second, you’ll have dinner on the table in about 20 minutes. Next, who doesn’t love tomatoes and cheese…and pasta?! You’ve got all the classic flavors of a Caprese salad—ripe cherry tomatoes, creamy mozzarella, and fresh basil—transformed into a warm, spicy pasta dish that’s absolutely bursting with flavor.

What You’ll Need:

  • 1 (12 oz) box of Carbe Diem Penne Pasta (or your favorite pasta)
  • 1/4 cup olive oil, divided
  • 5 cloves garlic, minced
  • Handful of fresh basil, chopped
  • 1 (10 oz) container cherry tomatoes
  • 1 (8 oz) log of mozzarella cheese, cubed
  • 1-2 teaspoons red pepper flakes (more to taste)
  • Optional: fresh basil, thinly sliced, for garnish

How to Make Spicy Garlic Tomato Mozzarella Pasta:

  1. Cook the pasta: Follow the package instructions for cooking the pasta. Once done, drain and set aside.
  2. Sauté the base: In a large sauté pan, heat 2 tablespoons of olive oil over medium-high heat. Add the minced garlic and cherry tomatoes. Cook for about 5-7 minutes or until the tomatoes begin to soften and burst open.
  3. Combine: Remove the pan from heat, then stir in the cooked pasta, cubed mozzarella, fresh basil and red pepper flakes. Drizzle in the remaining olive oil. Toss everything gently until it’s well combined and the mozzarella starts to melt slightly.

If you are looking for a simple and sophisticated cocktail that is easy to make at home, the Negroni Sbagliato is perfect for you. First created in Milan as a “happy accident” at Bar Basso in 1969, the drink remains popular today. In fact, Sbagliato, translated from Italian means “mistake”. You may recognize it as a recent TikTok trend which gave it a boost in popularity. 

A traditional Negroni is made with Campari, vermouth,  and gin. The Negroni version of the drink uses Campari, and vermouth, but the gin is replaced by a sparkling wine like Prosecco. In the version we are going to make today the sparkling wine is French Blue Cremant de Bordeaux Brut. 

How to make a Negroni Sbagliato

For this version of the cocktail, you will need sweet vermouth which has a subtle sweet flavor of caramel and vanilla with a slightly warm and spicy undertone. The Campari has a bitter citrusy flavor that has notes of orange peel, cinnamon, and cloves that go very well with the orange peel garnish. The final ingredient for this simple cocktail is sparkling wine, and in this case, we are using French Blue Cremant de Bordeaux Brut. It has a dry crisp flavor with a creamy citrus finish. You can definitely see how these simple ingredients complement each other! 

Negroni Sbagliato are most often served in an old-fashioned glass, but can also be served in a chilled champagne flute. To make one for yourself, place ice in your favorite glass and pour one ounce each of Campari and sweet vermouth over the top of it. Top your cocktail glass off with one ounce of French Blue Cremant de Bordeaux Brut, and add more to taste if desired. Finish it off with a slice of orange peel for garnish.

My son has always done great in school. He took honors classes in high school and graduated in the top 10% of his class with a GPA of over 4.0, and yet when he got to college, like most students, he definitely experienced a shift in difficulty level.

Do they ask other classmates? That also can be intimidating if they don’t know them well. Do they ask their advisor? Sure. In fact, you can tell your child to do all those things, but if they do it is a whole other game. I actually ended up asking in the UCF Parents group what other parents recommended when their child needed a some help in some of these crazy math classes and that’s how I heard about CramBetter. What is CramBetter?

There’s a lot we like about CramBetter. One of the main benefits is that everything my son’s professor covers in a week’s worth of lectures is condensed down into about a one-hour explanation that’s in plain English, not stuffy, academic lingo.

We were also drawn to the fact that CramBetter is available 24/7, which means if my son doesn’t understand something in class or wants to go into lecture with a bit more background information, he can review the material on his own schedule.

What has worked really well for my son is to log into CramBetter, print the study guides on the topics he’s learned in class over the past week, and fill them out as he watches the explanations. Whenever he feels that he needs more practice or wants to test himself before an exam, he’ll work through CramBetter’s practice exam questions and video solutions. He always tries the questions on his own first, then he checks out the answer key, and if he didn’t get one right, he watches a step-by-step solution video. The few times he’s been confused about something, he’s messaged his tutors and gotten a response right away.

CramBetter honestly saved my son time studying by condensing his classes down into only what he really needed to know for his tests. I’m sure we’ll be back for Physics 2 though.

The program’s structure really helped him stick to a study schedule, which in turn helped him stay on top of what was going on in class. And the explanations were so straightforward, I think I even picked up some calculus along the way (just don’t ask me to solve any problems, haha).
