Easy Curry Yogurt Sauce

This easy yogurt curry sauce is made with Greek yogurt, curry powder, and fresh lime juice for a creamy, tangy kick. You know, meal time used to feel impossible when the kids were little. I was making different meals at different times, and no one ever seemed to want what I was cooking. It was exhausting! But as they got older, we found a rhythm—eating together, eating the same meals. I got used to cooking for four…sometimes six or eight, depending on how many friends were over.

And now? Now I have just one kiddo left at home (cue mom sniffling), and suddenly, meal time is tricky all over again. Some nights, it’s just me. Other nights, it’s me and my daughter, or me and my husband, or all three of us. And let’s be honest—what my daughter and I eat isn’t always what my husband wants. And if I’m eating alone? I’ll stare into the fridge until I give up and grab whatever’s easiest.

To make things even more fun, I’ve officially entered the perimenopausal stage of life (yay me!). Some days, I can’t make a decision to save my life. I’m constantly overthinking what I’m eating, researching gut health on the regular (no pun intended), and questioning everything. So, I need easy, healthy meals that require zero thinking.

Oh, and on top of all that? My kids have hit the “I need more protein, fewer carbs” phase. Remember when all they wanted was fast food with their friends?! I mean, it’s great. They want to eat healthier, and I love that—but it’s yet another shift in my meal routine.

Speaking of routines…I’m doing WW again, which is great for me, but it means I need to meal plan a bit more. And since the kids are basically following the same eating plan, meal prep has become my new best friend. I haven’t had to do this in a long time.

So, I need all the tips, tricks, and shortcuts to make life easier. Because let’s be real—I have zero desire to spend all day in the kitchen. And who even has time for that?! Not me!

How to make a Curry Yogurt Sauce

Alright, I am going to share one of my tips with you.

I buy about 4-5 pounds of chicken breasts every week (I have found that Aldi has the best pricing) and cook them up on our Blackstone all at once. I season them with one of our favorite seasonings, slice it up and let em cool, toss the chicken strips in a large container and we eat it all week!

My husband dices it up small and adds it to his eggs in the morning and he also uses it in his salads that he packs for his lunch for work.

I will use it in salads, in pita sandwiches or just as a high protein snack when I am starving at 3PM.

My daughter will snack on it all day and loves to use it to make chicken and rice dishes for lunch and in her pita sandwiches.

Overall, it take me about 30ish minutes and we have a bunch of options for lunch all week! It’s perfect!

We currently have two favorite pita sandwiches, one is a Greek-inspired pita with the grilled chicken, homemade tzatziki sauce, then we add cucumber and sweet onion slices.

The other is this beauty…I mean, seriously, is your mouth watering yet? Mine is and I just ate one for lunch! Not only are the flavors in this chicken pita incredible, it’s super easy to make! That curry yogurt sauce is just YUM.

And guess what? That delicious curry yogurt sauce in made with just 3 main ingredients…and it’s ready in just minutes! Not only is it tasty on these easy chicken pita sandwiches, it’s also delicious on salads, on just about any sandwich you can think of, and it’s perfect for dipping fresh veggies.

Ok, let’s make that curry yogurt sauce shall we? Don’t forget to meal-prep some chicken and add in those fresh veggies!

Yogurt Curry Sauce

To make the chicken pita, you will simply add in al the veggies, cooked chicken and add in as much of the curry yogurt sauce as heart desires!

This creamy yogurt curry sauce combines tangy Greek yogurt with warm curry spices and a splash of fresh lime juice for a flavorful, zesty kick. Perfect as a dip, drizzle, or marinade, it’s a simple yet delicious way to elevate any dish!

Ingredients

  • 1 cup Plain Greek yogurt
  • 1 tbsp curry powder
  • 1 lime
  • salt and pepper to taste

Instructions

  • Add Greek yogurt to a bowl
  • Zest lime, add zest
  • Squeeze in the juice of the lime
  • Add curry powder
  • Mix well
  • Enjoy!

To make your Grilled Chicken you will need:
Grilled chicken – *Pro Tip – Make several pounds in the beginning of the week to use all week long on sandwiches, salads or as a high-protein snack
Pita bread – we used Joseph’s Low Carb Pita Bread
Mixed Greens
Sliced Sweet Onions – we used RealSweet Onions
Sliced Mini Sweet Peppers – we used DelFresco Pure SweetTreats
 
Instructions:
Open pita bread and spread the yogurt curry sauce on both sides of the pita bread
Fill pita with greens, sliced onion, sliced sweet peppers and then top with additional yogurt curry sauce
Enjoy with a glass of cold Florida Milk

You all love my Chocolate Peanut Butter Protein Bars, I decided to try to up the protein powder a little and add some dried cherries. The result? DELICIOUSNESS. I mean, the original was good, so this version was bound to be as well!

Plus, both my kids are on a huge protein kick. They both track what they eat in a free app, they make sure they have enough protein in relation to their weight. They both workout about 6 days a week. Which is great, but that also means they eat a lot of what I eat on WW. Which is also great….that means I am making less meals right? Well….they used to eat whatever because they didn’t want “mom’s healthy stuff”, well, now all they want is “mom’s healthy stuff” so that means I am making more meals. Overall, I know it’s good for us all, but sometimes it feels like more work!

But these no bake protein bars aren’t hard to make….and they are a heck of a lot cheaper to make than the mass amount of protein bars I have been buying at the grocery store!

Since the #1 thing my kiddos are interested in at the moment when it comes to eating is the nutritional benefits, I am going to share those first. Just in case you are all on the healthy-protein-kick too 🙂

Ingredients

  • 1 cup ground oats I used old fashioned oats and put them in the food processor
  • 1 cup vanilla protein powder
  • 1 tbsp ground flax
  • 12 oz. peanut butter You can slightly microwave the peanut butter so that it is easier to stir in.
  • ¼ sliced almonds
  • ¼ cup mini chocolate chips
  • ¼ cup dried cherries

Instructions

  • In a medium sized mixing bowl, combine the ground oats, protein powder, and flax seed and stir with a spatula.

  • Add in the peanut butter and stir until the batter starts to form and is well combined.

  • Press firmly into an 8×8 baking sheet lined with parchment paper. You can use the back of a spoon, bottom of a glass, or your hands.
  • Place in the freezer and freeze for 2 hours or until firm.

Notes

Storage Suggestion: Place 2 bars into snack sized baggies and freeze them so that when you want them you can take them out of the freezer and enjoy them after they thaw slightly.

Beyond Napa Northern Wine Regions

When you think about domestically made wines, you almost certainly think about Napa Valley in California. While wines from the Napa Valley are some of the most well known and award winning wines produced in the US, they aren’t the only Northern California wine regions you should be aware of. 

When you are planning your next trip to California to explore their amazing wines, here are five additional wine regions outside of the Napa Valley that you should consider visiting as well.

Clarksburg

This small grape-growing region is located just 15 minutes outside of Sacramento and is home to more than 20 excellent wineries. The terrain in Clarksburg is mostly flat, which is quite different from some of the other California grape growing regions.The soil is dense and filled with rich nutrients which is key to producing some very fine wines. 

Clarksburg offers the unique opportunity to taste the offering from multiple wineries in one location. The Old Sugar Mill is located in a former beet-sugar refinery that was built in 1934. Here you will find 14 different tasting rooms in one convenient location. 

Old Sugar Mill is open daily, although not every tasting room is open everyday, but there is always at least one open. Tastings range from $10-$35 per tasting, and reservations to each room you would like to visit is highly recommended. For more information on the Old Sugar Mill and the wineries in the Clarksburg region, please see Clarksburg Wine Growers Association and the Old Sugar Mill websites.

Amador County

Keep heading west from Sacramento, and you will start the climb into the scenic Sierra Mountains. The foothills are filled with countless notable wine regions, and one of them is Amador County. Home to more than 45 wineries, this is a favorite stop for local wine lovers in the know. Amador and the Shenandoah Valley are said to produce more wine than any of the  other foothill county wine regions.

Amador County is most well known for its Zinfandels along with some other Italian and French (Rhone) style wines. These wines are known for the ability to thrive in the hot Northern California summers, and the grapes are grown in some of California’s oldest, and highest elevation vineyards. Nearly all of the wineries here are family-owned and operated. 

The Amador 360 Winery Collective tasting room is no longer open, however, they do have a wonderful winery map on their website. Here you can find information about the individual wineries, their location, and a link to each wineries websites for their business hours and reservations. 

Fair Play

The Fair Play wine region is located about an hour outside of Sacramento, in the Sierra foothills of El Dorado county California. Here you will find more than 20 family-owned wineries. Because of its close proximity to Sacramento, this is a very popular region for day trips. The region has well-drained decomposed granite soil, a high elevation to help cool the hot summer days, and grapes of all types thrive here.

White varietals produced in Fair Play include Chardonnay, Sauvignon Blanc, and Viognier. A number of diverse red varietals are grown here as well — Zinfandel, Barbera, Syrah, Cabernet Sauvignon, Cabernet Franc, and Petite Syrah are some of the most well known. 

The Fair Play wineries website has information about all of the wineries in the area. From there you can access the website of all the local wineries and find out more about their hours, pricing, specials, and directions. 

Santa Cruz Mountains

Recognized as one of California’s premier wine regions since 1870, there are more than 80 wineries and 200 growers in this sprawling region that covers nearly a half a million acres. Just an hour south of San Francisco and minutes from San Jose, grapes here are grown in varying elevations from 400 feet to over 3000 feet. 

The high elevations, cool climate, and rugged terrain highly influence the flavor and quality of the wines coming out of the Santa Cruz AVA (American Viticultural Area). This region is easy to explore by car, but it will take several days or multiple trips to fully immerse yourself in the wines of this region.

Russian River Valley

The Russian River Valley is the second most well-known wine growing region in California after the Napa Valley. It has the best climate for Pinot Noir wine and more soil types than the whole of France. The Russian River valley is where Napa valley growers go for their cool-climate grape vines. 

The Russian River Valley was awarded their AVA status in 1983, and has 15,000 vineyard acres and more than 70 wineries. Chardonnay, Pinot Noir, and Zinfandel account for the most vineyard acreage followed by Merlot, Cabernet Sauvignon, and Savignon Blanc. The Russian River Valley is divided into six smaller growing areas known as neighborhoods and each is very unique. 

The Russian River Valley takes time to explore because it is so large and diverse. You can get a list of all of the wineries here. From there you can access each winery’s website to learn more about operating hours, prices, reservations, and special events. 

Northern California Wine Regions

All five of these wine regions produce some truly amazing wines, and are worth a visit if you are in the area. If you can’t plan a visit any time soon you still shop these amazing wineries online and have a bottle, or several shipped directly to your door.

Paris isn’t just about romance; it’s also a great destination for families. The city is filled with fun things to do with kids, from museums to children’s shops. This is a city full of big things that impress little kids, not just adults. Everything here is just more intense than most places: the food, the sights, the sounds, the smells.

We were actually supposed to take a family trip to Paris a few years ago. But that’s when the world stopped traveling. So, I had this post started, but I never published it because I was bummed we never got to go! But now that the world is loving traveling again, I thought that there would be a family somewhere out there that may appreciate the research I did…I hope so! Sample a Special Ice Cream

How many kids can say they’ve had a special type of ice cream you can only find on one small island in the heart of Paris? Hit the lovely and charming Ile Saint Louis to sample some authentic Berthillon ice cream. This rich and delicious ice cream is only made on Ile Saint Louis and has been a Parisian staple since 1954. The shop offers a variety of flavors, from classic vanilla and chocolate to unique options like wild strawberry and salted caramel. While you’re in the neighborhood, explore the quaint children’s shop filled with toys and books, and don’t miss the wonderful puppet shop where you can find beautifully crafted marionettes and puppets that will delight your children.

Start Climbing

Want to help your kids work through some of that restless energy? Hit some of the seemingly endless stairs in Paris. A couple of great choices are the Arc de Triomphe, with a long climb up spiral staircases, and Notre Dame Cathedral, another long climb up a spiral stairwell. The Arc de Triomphe offers panoramic views of Paris from its rooftop, allowing kids to spot landmarks like the Eiffel Tower and Champs-Élysées. At Notre Dame, the bonus is that children can see the famous gargoyles up close and fans of the Disney movie “The Hunchback of Notre Dame” will enjoy seeing the real bell of the hunchback from the tale. Each climb is an adventure and a history lesson rolled into one, making it a fun and educational experience.

Find a Paris Festival

This is Paris, and you can almost always find a wonderful festival that kids will enjoy. Check with the local tourism office for a schedule and enjoy some true French culture. Festivals like Fête de la Musique, which happens in June, offer live music performances throughout the city. The Paris Jazz Festival, held in Parc Floral during the summer, is a great way to enjoy music in a beautiful garden setting. For something more seasonal, the Christmas markets and holiday festivities around the city are magical for kids, with lights, decorations, and festive treats. Your kids are bound to encounter some French kids there as well, making it a cultural exchange and a fun day out.

Let them Eat Cake

OK, if a kid is thrilled in a candy store, imagine how thrilled a kid can be at a French candy store. Take your kids to a candy store, chocolaterie, or patisserie to pick up some fabulous confections to enjoy. Stores like La Cure Gourmande offer beautifully packaged sweets that make for perfect souvenirs. At a patisserie, let your kids try macarons, eclairs, and croissants. The famous Angelina tea house serves a hot chocolate so rich and creamy that it’s like drinking melted chocolate bars, sure to delight young and old alike. Visiting these shops not only satisfies their sweet tooth but also provides a taste of French culinary artistry.

See the French Animals

If you go to the 1st Arrondissement in the heart of Paris, walk to the Seine River, and follow along the river, you will encounter a stretch of several pet stores. This is a lot of fun for kids, especially since these shops have many French bulldogs that you won’t commonly see in other countries. The area around Quai de la Mégisserie is known for its pet shops, where kids can see a variety of pets including birds, fish, and sometimes even exotic animals. It’s a charming and unexpected side of Paris that animal-loving children will thoroughly enjoy.

Art Kids Will Enjoy

Kids may not go for a long tour of Le Louvre, but consider a visit to the Georges Pompidou Centre. This is a modern art gallery, and the unique architecture is colorful and fun for kids. The building itself looks like it was constructed inside-out, with brightly colored pipes and escalators on the exterior, which makes it fascinating even before you step inside. Outside, find the Stravinsky Fountain, where kids will enjoy pointing out the colorful and creative elephant and heart sculptures. The museum often hosts interactive exhibitions and workshops for children, making art accessible and engaging for young minds.

Play at the Parks

Paris is home to numerous beautiful parks and gardens that are perfect for kids to play and explore. Jardin des Tuileries, located between the Louvre and Place de la Concorde, offers a large playground, carousel, and boat pond where children can sail mini boats. The park’s open spaces and beautifully manicured gardens provide plenty of room for kids to run around and enjoy themselves. Luxembourg Gardens is another favorite, featuring puppet shows, pony rides, and a fantastic playground. The gardens are also home to the Medici Fountain, where families can relax and enjoy the peaceful surroundings. Take a Boat Ride on the Seine

One of the best ways to see Paris is from the water. Taking a boat ride on the Seine River is a fun and relaxing way for kids to see the city’s famous landmarks. Companies like Bateaux Mouches offer family-friendly tours that include commentary in multiple languages. These boat rides provide spectacular views of the Eiffel Tower, Notre Dame Cathedral, and Musée d’Orsay, all from the comfort of your seat. It’s a great way to give kids a break from walking while still enjoying the sights. Many of the boats also have open decks, allowing kids to feel the breeze and get a closer look at the passing scenery.

Located within the Cité des Sciences et de l’Industrie, the Cité des Enfants is an interactive science and technology museum designed specifically for children. It features hands-on exhibits, experiments, and activities that engage kids in learning about the world around them. Ingredients

  • 1 ½ cups pistachios shells and skins removed – see below
  • 3/4 cup whole Florida Milk
  • 1 cup vanilla whole milk greek yogurt
  • ½ cup maple syrup
  • 4 tablespoons butter at room temperature
  • 1 tablespoon vanilla extract
  • ¼ cup chopped dark chocolate for garnish
  • ¼ cup pomegranate arils for garnish
  • 1 store bought graham cracker pie crust
  • whipped topping optional

Instructions

  • Remove the shells from the pistachios and add them to a medium-size bowl, cover with water and refrigerate overnight (or a minimum of 6 hours).
  • Rinse the pistachios with clean water and remove as many of the skins as possible.
  • Add all of the filling ingredients to blender and blend until completely smooth.
  • Pour the mixture onto the crust. Cover and place in the freezer to set for about 2-3 hours.
  • Garnish with chopped dark chocolate and pomegranate arils, if desired
  • Top with homemade whipped cream, if desired

  • 24 gingersnaps crushed

Homemade Whipped Cream Ingredients – optional

  • 1 cups heavy whipping cream
  • 2 tablespoons confectioners’ sugar
  • 1 tsp vanilla extract

Instructions

Pumpkin Spice Mousse Instructions

  • In a large bowl, mix well or beat cream cheese and pumpkin until smooth.
  • Add pudding mix, pie spice and milk. Mix well.
  • Add in whipped topping.
  • Layer your favorite serving cups with ginger snaps and pumpkin spice mousse
  • Top with whipped cream, a sprinkle of pumpkin pie spice and a ginger snap.

Ingredients

  • 1 loaf of bread cut into 1-inch pieces
  • 2 tablespoons finely grated tangerine zest from about 2 Autumn Honey tangerines
  • 3 tablespoons granulated sugar
  • 1 teaspoon cinnamon
  • 6 eggs
  • 2 cups whole Florida Milk
  • 1 tablespoon vanilla extract
  • Powdered sugar for garnish if desired

Tangerine Infused Maple Syrup

  • 1/2 cup maple syrup
  • 2 tablespoons freshly squeezed tangerine juice – approx juice from 1 one Autumn Honey tangerine
  • 1 Autumn Honey tangerine peeled and divided into segments

Instructions

  • Spray your favorite casserole dish or 9×13 baking dish with olive oil spray. Add the bread cubes to the dish and set aside.
  • In a large bowl, add eggs, milk, cinnamon, sugar, vanilla and tangerine zest. Whisk well.
  • Evenly pour the mixture over the bread. Use a spatula or spoon to push the bread down.
  • Cover with plastic wrap and refrigerate overnight.
  • When you are ready to bake, preheat the oven to 350°F
  • Remove the baking dish from the refrigerator and let it sit while the oven is heating.
  • Bake covered for 30-45 minutes until casserole is set.
  • Uncover and bake for another 5 – 10 minutes.

Tangerine Infused Maple Syrup

  • While the casserole is baking uncovered, prepare the syrup. Combine the maple syrup, juice from one tangerine juice, and tangerine segments in a medium saucepan.
  • Cook over medium-high heat, stirring occasionally, about 10 minutes.
  • Remove the casserole from the oven, top with the tangerine segments from the maple syrup and dust with powdered sugar.
  • Drizzle on the tangerine-infused maple syrup.
  • Serve with Florida Milk and/or Mistletoe Mimosas

This board takes caramel apples which everyone already loves, and makes them even better. How do you make something so delicious even better you ask? By letting everyone make them to suit their own taste buds with some fantastic toppings.

Before I could make my caramel apple board I had to make a quick Publix run to grab a few ingredients. I love shopping at Publix, and I know that the purchases I make here help feed my local community through their Feeding America program. So let’s talk about what you are going to need to set up your caramel apple board so that you and your family and friends can enjoy it.

Apples – I used CMI Orchards Hero Gala apples for their sweet, crisp texture, and mild flavor that really stands out with your caramel and toppings.

Caramel – I used Marzetti caramel, you can find it in the produce section of your grocery store. It tastes yummy, and it’s easy to use. Just pop it in the microwave for a few seconds and you are ready to go.

Almonds – I used almonds for one of my toppings for a little crunch and they are so good for you too. I used Mariani Nuts slivered almonds.

Granola – Granola are a great salty nut that pairs well with crisp sweet apples, and your sweet and creamy caramel.

M&M’s – You can use M&M’s or mini M&M’s for your apple board so that everyone can use them to decorate their apple slices.

Pretzels – Apples aren’t the only thing you can dip in your caramel, you can dip pretzels in it too for a sweet and salty snack. You could also stack a pretzel on top of your caramel-dipped apple slice, maybe with an M&M or two… see where I’m going with this? The possibilities are endless!

I also added brownie brittle – well, because it’s chocolate and delicious 😉

Fruit – You can add more fruit to your caramel apple board like grapes, sliced pears, or strawberries. They will give your board a burst of color and offer your guests some variety to choose from.
