My husband and I love salmon and just about anything spicy, so I got a little creative with dinner last night and combined tangerines, jalapenos and made an amazing salmon dish. This easy salmon recipe combines sweet and spicy flavors to create an amazing flavor combination that will quickly become a family favorite. The spicy jalapenos are balanced perfectly with the sweet Juicy Crunch tangerines, making it an unique and flavorful healthy weeknight meal.

Why is salmon considered healthy?


Salmon is a fatty fish that contains high levels of omega-3 fatty acids – an essential nutrient for both physical and mental health. Omega-3s have been shown to reduce inflammation and the risk of heart disease, among other benefits.

How do you know if salmon is good?


Fresh salmon is one of the most delicious and nutritious meals you can enjoy. When selecting salmon at the store, it’s important to know what to look for in order to make sure your purchase is fresh and flavorful. Here are some tips that will help you determine if what you’re buying is good quality salmon:

First and foremost, take a look at the color of the flesh, which should be an even pink or orange color with no signs of discoloration or gray hues. The flesh should also feel firm to the touch and not slimy or sticky – this indicates that it was just recently caught but has been stored properly. Additionally, smell is key: If it smells overly fishy or like ammonia, steer clear!

Why do citrus and spicy flavors taste good together?


When it comes to tasty combinations, citrus and spicy flavors are a match made in heaven. This dynamic duo creates an explosion of flavor that tantalizes the taste buds, making for an unforgettable culinary experience. I used Juicy Crunch tangerines in this recipe because they are a sweetest and juiciest tangerines you will ever find.

It turns out there is science behind it! Citrusy flavors like lemon, lime and orange bring a tartness that helps to cut through the heat of spicy ingredients such as chili peppers or even spices like cumin and paprika. The two components work together to create a balance of sweet, sour and heat that can’t be achieved with either flavor alone. Making dinner is a balancing act, am I right?! On one hand, you want to make sure your main dish is packed with flavor and nutrients so that everyone can enjoy it but we also don’t want to spend a ton of time in the kitchen.

If you’re looking for some delicious side dishes to pair with your salmon dinner that are super easy to make, consider steamed vegetables like broccoli or green beans. Roasted veggies are also delicious! I did green beans and roasted acorn squash for my sides and they were AMAZING.

What wines pair best with citrus and spicy dishes?


A glass of wine is always a good idea in my opinion, but if you are serving something spicy and with citrus, the pairing may have you guessing which will be best. A great option is Sauvignon Blanc or Chenin Blanc – both of which offer subtle floral flavors that enhance the zesty tang of citrus. If you’re looking for something red, try Pinot Noir or Beaujolais – both have delicate fruit notes that balance out the spiciness. But, honestly, at the end of the day – the best wine is the one you will enjoy.

Equipment

Ingredients

  • 2 Juicy Crunch tangerines 1 sliced, 1 for juice
  • 2 limes 1 sliced, 1 for juice
  • 1 lb. salmon
  • 1 tbsp. honey
  • 1 jalapeño chopped
  • Salt and pepper

Instructions

  • Preheat oven to 400°.
  • Spray a baking pan with olive oil spray.
  • Lay lime and tangerine slices in an even layer and place salmon on top.
  • Season salmon with salt and pepper.
  • In a small bowl or glass measuring cup, combine juices,, honey, and jalapeño. Pour over salmon.
  • Bake salmon until center reaches 140° and flakes easily with a fork, about 20-30 minutes depending on thickness of salmon.
  • Enjoy with roasted/steamed veggies and a nice glass of wine.

There’s definitely taste differences!

But before I get into the perfect mimosas, I am going to share a little story about Noble Citrus and Juicy Crunch tangerines.

Back in 2021 I got to go on a tour through some amazing farms here in Central Florida with the Florida Fruit and Vegetable Association. Our first stop with Noble Citrus. Quentin Roe, the President of Noble Citrus, stood amongst his tangerine trees and spoke to our group of influencers about the importance of domestic food security and explained in-depth why we should look for that Fresh From Florida label on our produce.

While I have a huge appreciation for our farmers and what they do for us and our families, I learned so much that day. And I continue to learn more and more about the amazing produce that is grown here in the state of Florida.

Like tangerines.

Since then I have learned about the different variety of tangerines that are grown by Noble Citrus. And different ways to use tangerines in recipes. I have created tangerine cocktails, tangerine pizza, easy breakfast recipes, and more. I really never realized how incredibly versatile tangerines were. I mean, they are delicious all on their own, but you can really use them in a variety of ways!

Especially if you use the tangerine juice.

Now, I just used a lemon squeezer to get the Juicy Crunch juice out when I made my tangerine balsamic reduction on for my Sweet & Spicy Flatbread and my Healthy Tangerine Muffins.

Perfect Mimosas

But, the tangerine juice I used for the perfect mimosas….Well, that’s another story…So bear with me for a few more minutes 🙂

I had the incredible opportunity to drive out to Citrus America and meet with their insanely friendly staff and Quentin Roe where I got to taste-test some Juicy Crunch tangerines and Juicy Crunch juice.

Now, you may wonder why I drove out there to taste-test something that I have had plenty of times. Well, since I absolutely love Noble Citrus and all their products, I’ll be honest, I didn’t ask too many questions, I was just excited to go!

Well, I tasted Juicy Crunch tangerine after Juicy Crunch tangerine and they all tasted the same to me. I started to wonder what was going on, when they revealed to me that some tangerines looked different than others.

My momma taught me to not judge a book by it’s cover, so honestly that didn’t phase me at all. I mean, they tasted exactly the same…so what did I care if the peel was a little different. Lord knows I’m not perfect either 😉

So that day I learned to not judge a Juicy Crunch tangerine by it’s peel, but rather by its taste. And the taste of a Juicy Crunch tangerine is always sweet and juicy.

I snacked on Juicy Crunch all morning, then Jay with Citrus America turned on a JUICING MACHINE. Ok, now I have never tried freshly squeezed juice before…I mean, not like it’s was JUST SQUEEZED. He dumped in a case of Juicy Crunch tangerines and within minutes we had pitchers full of tangerine juice! Have you seen these fantastic juicers in stores?? OMG, they are too cool! They even let me taste-test the juice from less-than-perfect Juicy Crunch tangerines to see if the juice tasted different.

It tasted exactly the same.

Which was PERFECTION.

So, while we sat and chatted about the beauty of Juicy Crunch and the upcoming Florida blueberry season I asked if I could take some tangerine juice home to make the perfect mimosas.

They said yes 🙂

Thank you for bearing with me and my stories….but I guess to make my long story short….to make the perfect mimosa, you need the perfect juice. And the perfect juice is Juicy Crunch tangerine juice.

I had some friends over to celebrate the amazingness, we all toasted to Juicy Crunch and the fact that we learned that not all tangerines look the same, and that’s okay…because we don’t all look the same either. And that doesn’t make us imperfect, it makes us pretty damn special.

Ingredients

  • 2 – 2 1/2 oz fresh-squeezed Juicy Crunch tangerine juice
  • 3 1/2 – 4 oz Champagne brut or other dry sparkling wine
  • Tangerine slice to garnish

Instructions

  • Pour the freshly squeezed tangerine juice into a chilled Champagne flute and slowly pour the sparkling wine over it.
  • Stir gently.
  • Garnish with a slice of orange.
  • Enjoy!

A sip of Champagne, Cava, Prosecco, or other sparkling wine is not only a great way to beat the heat, but it also adds an element of celebration to any occasion.

Ever since the introduction of bubbly wine, people have been experimenting and mixing it with numerous other ingredients. There is now an endless list of sparkling wine cocktails that range from simple and elegant to flashy and elaborate. Any of them will be sure to impress your friends.

Here are a two traditional Sparkling Wine Cocktails that I would recommend switching the juice to tangerine juice for or adding it in:

Bellini

This cocktail was introduced in a bar in Venice, Italy, by Giuseppe Cipriani in 1948 and has now become a classic.

Bellini Ingredients:

Pureed peaches (or peach nectar) – Try Juicy Crunch tangerine juice instead!
1 oz peach schnapps
4 oz Prosecco

To make a Bellini fill a chilled Champagne flute 1/3 full of pureed peaches or peach nectar. Pour the peach schnapps over it and stir it up. Fill the glass with Prosecco.

Sparkling Cosmo

The ladies from Sex and the City made the Cosmo a staple for any party. This fizzy version is a fun alternative.

Sparkling Cosmo Ingredients:

3/4 oz Cointreau
1 1/2 oz cranberry juice – Use tangerine juice instead or add it in as a sweet addition!
3 oz Cava or other dry sparkling wine

To make a Sparkling Cosmo simply pour the Cointreau and cranberry juice into the bottom of a chilled Martini glass. Slowly top off with the Cava.

It’s the start of a new year…are you looking for new healthy recipes to try? Well, I basically always am. Two years ago I lost 20 pounds thanks to Weight Watchers and over the last 6 months, about half of that has creeped back on. Annoying. I know it happens. And trust me, I don’t regret one glass of wine, snifter of bourbon, or cookie…okay, maybe I regret a few of the cookies…But life happens, right??

I was talking to my friend the other day and I said I actually needed a reminder that healthy food is easy to make and delicious. We have been at parties, traveling and at restaurants for so long I feel like I forgot how to cook! Thankfully, I didn’t 😉

I was also pleasantly reminded with this baked Mahi recipe that healthy can indeed be flavorful and easy. Living in Florida, we love seafood…all seafood. Especially fish. Mahi Mahi is one of the those fish that is thick, yet when cooked right is perfect light and flaky. Mahi Mahi actually has a mild flavor, so adding your favorite toppings like this honey parsley sauce, lemons and olives, is an easy way to spice up this fish.

Did you know that another name for Mahi Mahi is dolphin? Now, don’t worry…Mahi is NOT the dolphin you are thinking of….I am 100% sure that would be illegal…and who could possibly eat flipper?? Ok, that thought process is not a good one…so, let’s go back to this yummy Baked Mahi Mahi recipe shall we?

One of my favorite things about cooking fish (all seafood for that matter) is that it’s ready pretty quick. This Baked Mahi Mahi recipe is ready in about 30 minutes…and 20 minutes of that is the baking time! Easy enough.

How does it take to bake Mahi Mahi?

It depends on the thickness of the filet, but your mahi mahi should be ready to enjoy when baked at 375 degrees in about 15 – 20 minutes.

How do you know when Mahi Mahi is done?

The fish will be easily “cut” into with a fork, it will flake and no longer look translucent. Not sure if it’s done? A good rule of thumb is to cook the fish to an internal temperature of 140-145 degrees.

Feel free to experiment! I went a little Greek with this recipe with the addition of olives, I love the salty dimension it adds to the acidity of the lemon and the sweetness of the honey.

Fish is actually pretty versatile when it comes to side dish pairings, rice is always a good option, but as I mentioned above I am trying to up my healthy food consumption so I went with roasted broccoli. And I actually really like roasted broccoli, so it was a win-win.

Light, delicious and full of flavor, you have to try this Mediterranean twist on mahi mahi!

Ingredients

  • 5 Mahi Mahi fillets
  • 2 lemons
  • 1 small red onion
  • ½ cup green olives
  • 1 tbsp parsley
  • 2 tbsp honey
  • olive oil for pan
  • pinch black pepper
  • pinch salt
  • pinch chili flakes *optional
  • 2 garlic cloves
  • 1 tsp thyme
  • 3 tbsp butter

Instructions

  • Lightly oil pan or spray with olive oil. Set aside.
  • Use paper towel to pat fish dry.
  • In a small bowl, mix together honey, minced garlic, thyme, and parsley. Set aside.

  • Slice lemons. 2 per fillet. Set aside.
  • Thinly slice red onion into rings. Set aside.
  • Slice olives in half or thirds. Set aside.
  • Lay lemons on baking pan.
  • Place fish on top of lemon slices, with each fish fillet having 2 slices underneath.
  • Top each fillet with a pinch of the salt, pepper, and chili flakes (if using).
  • Spread the honey/parsley mixture on top of the fillets.

  • Top each fillet with two thinly sliced pieces of butter.

  • Layer the sliced olives and sliced onions on the fillets.
  • Bake at 375°F for 15-20 minutes or until the center of the fillet is flaky and cooked thoroughly with an opaque color.
  • Serve with your favorite vegetable.

Well, the recipe is simple. To make the best tangerine cocktail, you need the best tangerines. And, I am hoping that by now you all know that those tangerines come from my friends at Noble Citrus. Right now, the sweetest, juiciest most amazing tangerine is in season…the Juicy Crunch tangerine.

So, since Juicy Crunch is in season and what better way to celebrate than with a cocktail? You all know that I love a good cocktail…This cocktail is made with just 3 simple ingredients, so it’s a must use only the best ingredients. And that’s exactly why I used Juicy Crunch Tangerines! Sweet, juicy, low-to-no seed and zipper peel make the Juicy Crunch Tangerine a must in this Juicy Tangerine Cocktail. I also recommend a good vodka 😉 You don’t need a low quality vodka messing up the taste of that incredible Juicy Crunch!

Best Juicy Cocktail

To make this cocktail, simply peel open your Juicy Crunch Tangerine, remove three of the segments and squeeze all that high-brix tangerine juice into your favorite cocktail glass. Add in chilled vodka and top with sparkling water. I have about 5 different flavors of sparkling water in my house at all times and my favorite so far in the tangerine cocktail is orange. But lime and plain are also delicious. The sweetness juice from the Juicy Crunch Tangerine is really what makes this cocktail!

As you can see, I also made Infused Ice Cubes. Not only are infused ice cubes pretty in cocktails, but as they melt, they add extra flavor. I simply added Juicy Crunch segments to some of the ice cubes sections, then I added Juicy Crunch and fresh mint leaves to some of the additional ice cube sections. Mint and citrus are a delicious pairing, plus, mint is pretty too 😉

When I think of the holidays I think of all the food and desserts that are shared with family and friends. Cookies are the perfect example. Have you started your baking yet? Cookie swaps are on our Holiday To-Do List and we always bake dozens and dozens of cookies to share with the neighbors. It’s a tradition we have been doing for at least 10 years now. I used to do all the baking, but as of last year, the kids did it! We make at least 10 dozen cookies, plate them all pretty and then the kids put on their Santa hats, grab their favorite portable speaker to play Christmas tunes, then they walk the subdivision to spread holiday cheer. The rule is that they must always choose at least one house that isn’t someone they know well so that they are spreading that holiday cheer to new and old friends. I absolutely love this tradition 🙂

We always make our Peppermint Chocolate Chip Cookies, so this year we just switched up the peppermint frosting for a chocolate peppermint frosting and added our marshmallow hot cocoa cups.

As you can tell, we absolutely love the chocolate and peppermint combination, if you don’t (WHAT?! How is that possible??), it’s okay, just leave the peppermint extract out of the recipe. But seriously…how could you not like peppermint?!

Peppermint Chocolate Chip Cookie Ingredients

  • 2 ¼ cups Flour
  • 1 tsp Baking Soda
  • 2 Sticks Softened Butter
  • ¾ cup Sugar
  • ¾ cup Brown Sugar
  • 1 tsp Vanilla Extract
  • 1 tsp Peppermint Extract
  • 1 tbsp Florida Milk – I used 2%
  • 2 Eggs
  • 2 cups Chocolate Chips

Chocolate Peppermint Frosting Ingredients

  • 2 tbsp butter
  • 1/3 cup cocoa powder
  • 1 1/3 cup powdered sugar
  • 1 tsp vanilla extract
  • 1 tsp peppermint extract
  • 2 tbsp Florida milk – more if needed

Hot Cocoa Marshmallow Cookie Cups Additional Ingredients

  • Jumbo marshmallows
  • Mini candy canes
  • Holiday sprinkles

Instructions

Peppermint Chocolate Chip Cookie Instructions

  • Preheat the oven to 375 degrees.
  • In a large mixing bowl, combine butter, sugar, brown sugar, baking soda, milk, vanilla and peppermint extract using mixer.
  • Beat in the eggs one at a time.
  • Slowly add the flour 1/4 a cup at time.
  • Mix in the chocolate chips.
  • Prepare baking sheets with cooking spray or parchment paper.
  • Make small cookie dough balls, approximately 1 inch.
  • Place the cookie dough balls onto the baking sheet and bake for 10-12 minutes or until golden brown. Allow the cookies to cool completely before decorating.

Chocolate Peppermint Frosting Instructions

  • In a medium saucepan, melt the butter on low.
  • Add the cocoa powder and stir well.
  • Allow to cool slightly.
  • Add the milk, extracts and powdered sugar.
  • Stir well.

Hot Cocoa Marshmallow Cookie Cups Assembly Instructions

  • Break your mini candy canes into smaller pieces and squeeze then into the side of the marshmallow. If you are having a hard time getting it to stay, push it in further or use vanilla/white frosting to get it to stay. We were able to just push it in further.
  • Once the frosting is cool, put it into a ziploc bag and push it to a corner, then clip the tip of the corner. This will make it easier to use the frosting.
  • Once the cookies are cooled, pipe a small amount of frosting onto each cookie.
  • Place a marshmallow on top of the frosting.
  • Pipe a small amount of frosting onto the top of the marshmallow.
  • Add sprinkles to the top of the frosting on the marshmallow.
  • Serve your Hot Cocoa Marshmallow Cups with a cold glass of Florida Milk…and be sure to save some for Santa!

Mexican Street Corn Soup

I have soup every single day for lunch. Every. Single. Day. Why? Well, the reasoning is actually pretty cool. My friend and I are both doing what we can to watch what we eat, so we alternate weeks on making each other lunch. We make a big batch of soup that is loaded with veggies and low in fat and we make enough for the two of us for a week. That means every other week I don’t have to think about what I am eating for lunch. Which is nice because I work at home. Now, we have been doing this for over a year now, so I will admit that we start remaking the same recipes over and over because well, how creative can you get when it comes to making soup? You can make this Mexican Corn on the Cob soup!

Not only because it’s absolutely delicious, but as an added benefit it’s actually pretty darn healthy for you…in fact, it’s really healthy! Loaded with corn (obviously, I know), then added vitamins and nutrients due to the Florida Milk.

I added a jalapeno to our Mexican Street Corn Soup because my family likes everything a bit spicy, feel free to leave that out, but I think it adds a nice punch of flavor.

Easy Mexican Street Corn Soup

Quick disclaimer, I am in no way stating that this is an authentic recipe, but I did make some spins on recipes I saw and have had, but I am stating that it’s delicious and you should definitely make it 😉

You may have heard of Mexican Corn on the Cob or Elote, which is a popular street food in Mexico.

Mexican Corn on the Cob (Elote) is made from freshly grilled corn and smothered with a variety of toppings. This delicious, cheap, and easy-to-make snack has become an international favorite for its unique flavor and texture. I have seen it served in a variety of ways (on and off the cob) in restaurants.

The classic Elote recipe starts with a large ear of corn that is lightly grilled over charcoal or wood fire to give it its signature smoky flavor. Once cooked, it’s slathered with a creamy sauce made from mayonnaise, cotija cheese, chili powder, lime juice and spices. The final touch is a sprinkle of crumbled cheese on top!

I simplified some steps to make my Mexican Street Corn Soup, fresh corn wasn’t in season, so I did use frozen (gasp!, I know) but it was still delicious…hence the reason I warned you that this wasn’t a fully authentic recipe, but the flavors are there my friends, I PROMISE YOU!

In traditional Mexican Street Corn Soup and on Mexican Street Corn you use cotija cheese….I looked just about everywhere for it and I couldn’t find it. I used queso fresco cheese, which is not the same flavor profile, but it was delicious. If you can find cotija cheese, definitely use that!

How to make Mexican Street Corn Soup

I added a jalapeno to our soup because we love just about everything spicy, I also added cilantro because we love cilantro and when I think Mexican food, I automatically feel like cilantro should be in it.

Mexican Street Corn Soup Recipe

The key to making your Mexican Street Corn Soup creamy is the Florida Milk and blending all the ingredients together. The blending adds a little extra time to the cook time, but it’s worth it. I used my blender, but you could use an immersion blender if you have one. In fact, the immersion blender may be easier!

  • Stovetop
  • Dutch Oven or Large Pot
  • Blender/Food Processor/Immersion Blender

Ingredients

  • 1 tbsp olive oil extra virgin
  • 6 cups corn kernels I used frozen, you can also use canned or fresh
  • 1 cup sweet onion chopped
  • 1 jalapeno chopped *optional
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 tsp paprika
  • 6 garlic cloves chopped
  • 4 cups low sodium chicken or vegetable broth one large carton
  • 1 cup Florida Milk – I used 2%
  • 1/2 cup queso fresco cheese plus additional for garnish (if you can find Cotija use that!)
  • juice from one lime
  • 2 tablespoons cilantro chopped + more for garnish

Instructions

  • Heat oil in a large, nonstick pot or cast iron Dutch oven.
  • Add onion and jalapeno and saute until onions are translucent.
  • Add corn kernels and seasonings. Cook over medium-high heat for 8-10 minutes, stirring frequently.
  • Add garlic and cook until fragrant.
  • Remove 1-1/2 cups of corn mixture from the pot and set aside.
  • Stir broth, milk, and cheese and simmer for 20 minutes.
  • Transfer soup to a blender or food processor (in batches, depending on the size of your unit for safety) to puree until smooth. *You can also use an immersion blender
  • Return soup to pot and if needed, gently reheat to desired serving temperature. Stir in half (3/4 cup) of the reserved corn mixture, lime juice, and 2 tablespoons chopped cilantro. Season to taste with salt and pepper if needed.
  • Use the remaining corn as a garnish with cilantro and additional cheese.
  • Enjoy!

Notes

If fresh corn is in season, use that…Grill it so it’s charred!

The weather has officially started to cool down here in Florida and Fresh From Florida citrus is a plenty. I absolutely love walking into the grocery store and seeing the wide variety of oranges, tangerines, and more. The colors are just gorgeous and immediately make me think of charcuterie boards. Grazing boards. Snack boards. Appetizer board. No matter what you call it, the basics are all the same. You take a board (or even a plate will do!) and fill it with deliciousness for your family and friends to enjoy.

I love making charcuterie boards over the holiday season because the holidays are made for celebrating. Whether it be the football game on TV, the opportunity to spend a lazy Sunday afternoon at home, or entertaining a crowd, a charcuterie board is the perfect way to keep everyone snacking and happy.

What goes on charcuterie boards?

Well, it’s pretty flexible depending on your likes, but there are a few staples:

  • Meat
  • Cheese
  • Crackers
  • Fresh fruits – over the holiday season, I recommend Autumn Honey Tangerines. They are in season from Thanksgiving to Christmas and easy to peel, low acid, sweet and are incredible dipped in chocolate 😉
  • Fresh veggies – I used celery for that pop of green color, plus I love celery!
  • Chocolate – No holiday gathering is complete in my opinion without some chocolate
  • You can also add nuts for a crunchy option.

On my holiday charcuterie board, I added some cranberries and a pomegranate because they are seasonal and give you that pop of red. Perfect for the holiday season.

Easy Holiday Entertaining Board

When making your holiday charcuterie board, I recommend putting ingredients next to each other that people will want to eat together. For example: meat next to cheese, cheese next to crackers. The fresh fruits and vegetables are always good on their own, so just place on the board where you need that touch of color. I used the Autumn Honey Tangerine in various places on my board because I love the color! It stands out and looks beautiful next to everything.

I used Autumn Honey Tangerines in a few ways on my grazing board:

  • Dipped Autumn Honey Tangerine wedges in white chocolate (sprinkles optional)
  • Dipped Autumn Honey Tangerine wedges in dark chocolate
  • Autumn Honey Tangerine slices
  • Whole peeled Autumn Honey Tangerine dipped in white chocolate (sprinkles optional)

I used Ghirardelli melting chocolate for the dipping, it’s super easy to use and it’s Ghirardelli. Who doesn’t love Ghirardelli chocolate??

Tasty Holiday Entertaining Board

You can find Autumn Honey Tangerines at your local grocery store from Thanksgiving to Christmas, here locally I find them at Publix. You will also see them at HEB.

Why we love Autumn Honey Tangerines:

  • Amazing flavor
  • Deep orange..late in season moves to almost red. It’s beautiful – especially on those holiday grazing boards 😉
  • Since they are easy to peel, almost like a zipper…it keeps your (and the kids’!) hands cleans

Clissold Park (North London)
