And, of course, I roasted the mushrooms in a beautiful Cabernet Sauvignon, which creates a nice synergy with the flavors in the dish. Serving this appetizer with a glass of the same red wine used in the recipe or a complementary red wine can enhance the overall dining experience. Making the wine pairing for this appetizer super easy π
Why we love CK Mondavi and Family Dark Cabernet Sauvignon
The Dark Cabernet Sauvignon makes a statement with dark, black fruit character and bold jammy flavors. A blend of Petite Sirah makes this wine dark purple – with notes of baking spice along with toasted oak. The finish has hints of mocha and coffee and is long and velvety. It was crafted to celebrate their 75th Anniversary with the first vintage in 2022. Once you try it, you’ll love it. I promise.

The addition of fresh herbs adds a burst of freshness and a pop of color to the dish. The herbs not only contribute to the visual appeal but also provide a contrast to the richness of the goat cheese and mushrooms.
Why roast mushrooms in red wine?
Rich Flavor Profile: The red wine roasted mushrooms add a depth of flavor to the dish. The Cabernet Sauvignon infuses the mushrooms with a complex, savory taste that complements the earthiness of the mushrooms.
Umami from Mushrooms: Mushrooms are known for their umami, the fifth basic taste that adds a savory and satisfying element to the dish. Roasting mushrooms enhances their natural flavors, making them even more delicious.
Does it matter which mushrooms you use?
No! Use the ones you enjoy the most, I used baby bella mushrooms. You can use sliced mushrooms like I did or whole mushrooms. Just make sure they are cleaned.
How do you roast mushrooms?
It’s easy!
Preheat your oven to 400 degrees
Spread the in a prepared baking dish, add the wine and fresh herbs.
Roast the mushrooms in the preheated oven for about 20-25 minutes or until they are tender and have a rich, roasted color.
These wine-roasted mushrooms can be served warm as a side dish, added to salads, pasta, or used as a topping for your favorite bakery bread.
Do you have to use goat cheese on your crostini?
No, you don’t have to. My husband doesn’t like goat cheese (breaks my heart!) so sometimes I will substitute cream cheese or ricotta cheese. You can also leave off the cheese overall for a vegetarian option. Me, I just love goat cheese….and I love it on this appetizer π
What are the best herbs to use?
That’s up to you! I have a ton of rosemary in my garden, so I used that. I also had fresh thyme here, so I used that too. Feel free to experiment. Parsley would also be a good option.
Garlic would also be a delicious addition….Roasted garlic is DELISH.
Why we love this Roasted Mushroom Crostini recipe
Textural Contrast: The combination of the crispy crostini, creamy goat cheese, and tender roasted mushrooms creates a delightful textural contrast. The creamy texture and tangy flavor of goat cheese add a luxurious and indulgent element to the dish. The creaminess can help balance the earthiness of the mushrooms and complement the bold flavors of the red wine. This interplay of textures makes each bite interesting and enjoyable.
Versatility: This appetizer offers a balance of flavors that can appeal to a wide range of palates. The earthy mushrooms, tangy goat cheese, and fresh herbs create a well-rounded taste that can be appreciated by both casual and more discerning diners.
Ease of Preparation: While this appetizer may sound fancy, it’s relatively easy to prepare. The simplicity of the dish combined with its sophisticated flavors makes it an attractive option for hosts looking to impress without spending hours in the kitchen.
Visual Appeal: The vibrant colors of the mushrooms, herbs, and goat cheese, combined with the toasty golden color of the crostini, make the dish visually appealing. Presentation can enhance the overall dining experience.
Ease of Wine Pairing: Since the dish is specifically designed to pair with red wine, the flavors are crafted to complement the characteristics of red wine, creating a synergy that elevates both the food and the wine.
As with any wine and food pairing, personal preferences play a significant role, and experimentation is encouraged to find the combinations that best suit individual tastes. The key is to look for elements in both the wine and the dish that enhance, balance, or contrast in a way that pleases the palate.
