Roasted Mushroom Crostini with Wine and Herbs

This easy appetizer is ready in 20 minutes and is full of flavor. Perfect for all your holiday gathering or a simple night at home.

Ingredients

  • 8 oz fresh mushrooms - I used sliced bellas 1 package
  • 6 oz goat cheese
  • 2 sprigs of fresh thyme + more for garnish
  • 2 sprigs of fresh rosemary + more for garnish
  • ¼ cup red wine I used CK Mondavi and Family Dark Cabernet Sauvignon
  • Olive oil spray
  • ¼ teaspoon Coarse salt + more for garnish optional
  • Black pepper
  • 12 slices baguette bread

Instructions

  • Preheat oven to 400℉.
  • In a baking dish, spray olive oil spray, add mushrooms, herbs, wine, salt and pepper.

  • Roast mushrooms in oven for 20 minutes, or until the mushrooms begin to soften.
  • While mushrooms are roasting, make the crostini by slicing the baguette and lightly toasting in the oven. *Tip - ask your bakery to slice it for you
  • Spread goat cheese evenly over 10-12 slices of baguette
  • Once mushrooms are done, top mushroom mixture over goat cheese and garnish with more fresh herbs, salt and pepper.
  • Serve with remaining CK Mondavi and Family Dark Cabernet Sauvignon

Notes

Double the amount of mushrooms used to use more of the baguette.
Use the bread that you enjoy most! I used a cuban bread, but a french bread would also be amazing.
